Quick and Easy Spiralized Carrot Salad [Recipe]

Add color to your plate with this quick and easy side - Spiralized Carrot Salad

Carrots really can turn you a bit orange.  When my sister was little she basically lived off of carrots and cheese.  As a result, she had an orange tint to her and was always constipated.  TMI?

Today’s #strangebutgood recipe is a carrot salad.  No lettuce.  Just carrots.  It’s really good.  Plus its winter and we’re all a little pale.  Eat this side at every meal and you’ll have a natural self-tanner!

Spiralized carrot salad

This recipe came about as a sort of accident.  I wanted to spiralize something, but it didn’t really go with anything else I was eating.  So I made it it’s own menu item.

With Vegas out of town, I wasn’t worried about it tasting too “strange” for her, so I busted out the nutritional yeast to use in the dressing.  It turned out not-so-strange tasting!  So much so that I re-made it for her to try the next night.  (I don’t even think she noticed.)

I loved the parsley in here.  It doesn’t compete with the mustard flavor.  It just lightens it up and gives the salad some green.  Plus it’s good for you!  Parsley is rich in vitamins, acts as a natural diuretic, can help control your blood sugar, promotes carbohydrate metabolism, and is an anti-inflammatory.

There’s one other particular benefit of parsley I always think about ever since Debbie told me about it.  Apparently, parsley makes your lady parts… errrr… smell pleasant.  You’re welcome.

Bike Riding & Cooking for One [WIAW]

It’s been almost a week since my PRP treatment to regrow a ligament my ankle.  I can’t think about running yet, but I can ride a bike!  I’ve been doing 10 miles at verrrrry low resistance on the old folks bike.  You know the one – with the reclined back lounge chair.  No shame!

PRP Update & a Weekend of Not Cooking

I didn’t go to a gym for over a week.

This is some kind of record.

I’m a gym rat.  I legit love to go.  It’s my “me” time.  For more than a week I’d either been traveling, skiing, or on crutches.

Not that skiing doesn’t count as exercising.  I’m really talking about lifting.  We came down from the mountain Wednesday and went right to the doctor for my PRP therapy.  That left me like this for the weekend:

PRP Therapy and My Sexy Cankle

I don’t have a #strangebutgood recipe for you today.

Cankles are a good excuse, no?

Vegas and I came down from Big Bear and went directly to the doctor.  I didn’t get injured – this time it was planned.  Remember when I was going to be an American Ninja Warrior?  Then I sprained my ankle so badly I couldn’t walk properly for weeks?  Turns out it wasn’t just a sprain.

My ankle has been bothering me ever since, but it got really bad last spring when I was playing ball.  I tried acupuncture, heat therapy, rest… nothing seemed to work.  Next step was an MRI.  The MRI showed that what I THOUGHT was a sprain was actually torn ligaments.  Since I didn’t know what I’d done, I didn’t heal it properly.  My choices now are either dealing with pain, surgery, or PRP therapy.

Vegas has been waiting on me all day since I can’t walk – she even made me a Greek yogurt bowl with a green M&M! (You know what the green ones mean 😉 )

Skiing, Snowboarding, and Brusing [WIAW]

I can ski pretty well.

I was one of those 6 year olds on the slopes.

While I grew up skiing, I never wanted to try to snowboard.  I don’t get to the snow very often and when I do, I don’t want to spend my time falling trying to learn something else.

Vegas and I are in Big Bear right now.  I spent day 1 skiing while she spent the day in snowboarding school.  I had a blast shooting down double blacks and navigating a few moguls.

Slow Cooker Sweet Potato and Chicken in Red Wine [Recipe]

On the Healthy Wagon [WIAW]

Catalina Island Anniversary Trip
