Seared Sea Scallops with Grapefruit & Pesto [Recipe]

March 11, 2016 By Laura

Grapefruit is one of my favorite accent flavors.

No, not just with vodka…

I’ve done a lot of breakfast recipes with grapefruit, but I decided to go savory with this one.

It may sound strange, but after seeing similar items on a few menus around town I decided to create a grapefruit and scallop dish.  And oh man, was it good!

Seared Sea Scallops with Grapefruit & Pesto - this light and healthy dish packs a TON of flavor in each bite!…

My First NASCAR Experience + WIAW

March 9, 2016 By Laura

Vegas is an expert at teaching me a lesson in “never say never.”

Marriage, camping… NASCAR.

We’re on an epic camping trip right now.  And by camping, I mean “glamping.”  We have an RV complete with stove, shower, and toilet.  Just my speed.

We started in Vegas for the NASCAR, and we’ll end in Phoenix for a few Padres spring training games.  Today we’re in Page, AZ to see Antelope Canyon.  This is the view I woke up to:

Lake Powell, AZz

Lemon Pepper Roasted Cauliflower [Recipe]

March 4, 2016 By Laura

It’s been a minute since I’ve showed cauliflower some love.

My apologies, cauliflower… but you give me gas.

Gas aside, I felt inspired to give it a go after seeing this recipe from Anna-Marie.  It had a really cool twist – she toss the cauli in stock before roasting it.  I did just that in today’s strange (but good) recipe: Lemon Pepper Roasted Cauliflower.

Did you know yellow cauliflower has more beta carotene than the regular white veggie? Try it in this Lemon Pepper Roasted Cauliflower dish!…

What I Ate In Napa

March 2, 2016 By Laura

I tasted over 60 wines in 2 days.

I didn’t swallow.  TWSS

Vegas and I ran off to Napa to take a wine course.  It was amazing and crazy.  I’ve never tasted so much wine without a drinking a single sip.

Our last day there was meant for fun though – we visited 4 of the best wineries I’ve been to!

Vaider Winery view…

Captain Obvious For President

February 29, 2016 By Laura

I’d totally vote Captain Obvious into office.

You know you’ve wanted to do the same.

If you are friends with me on Facebook or have seen a few recent blog posts, you know I am outraged by this race.  It’s ridiculous.  Leading the country is not a freaking reality show.

Captain Obvious has announced he is joining the race for president by (literally… Forrest Gump-style) running across the country.  Not to be outdone of a certain reality TV star, he threw his hat into the ring via a TV ad while running on a treadmill.

Captain Obvious entered the presidential race and he’s got his running shoes on from Sprint 2 the Table…

Slow Cooker Pumpkin Chicken Curry [Recipe]

February 26, 2016 By Laura

I’ve always wanted to go to Asia.

I mean… I love their food…

Thai food has been on the brain lately.  Vegas and I found a great local Thai spot and it has started a constant craving.  And now that k.d. lang song is stuck in my head.  You’re welcome.

This slow cooker Pumpkin Chicken Curry started out with Thai intentions, but I think it ended up more Indian.  Not that I really cared.  The pumpkin may sound like a strange twist, but it added to the creamy good-ness.

Slow Cooker Pumpkin Chicken Curry - it may not be traditional, but adding pumpkin to curry broth makes it crazy silky. AND you can do this in the slow cooker, making it so much easier.

San Diego’s 5 Peak Challenge + WIAW

February 24, 2016 By Laura

Can I have a Wordless WIAW?

Who am I kidding… I never shut up.

Yesterday I completed San Diego’s 5 Peak Challenge.  It was such a beautiful hike; I wish I could just post 20 pictures today!  That’s a little boring, I know.  Plus the challenge is a fun background story!

I hiked the first two peaks alone on Tuesday and again on Saturday with friends.  Yesterday I did the final three alone.  Well, alone with the company of a few podcasts.

5 Peak Challenge - view from North Fortuna…

My Random List of Accomplishments

February 22, 2016 By Laura

There is a lot of stuff in my head.

You don’t want to be in there.  Trust me.

In an effort to organize myself this week, I made an actual written To-Do List.  I’m normally not that organized, but there’s something especially motivating about getting to cross through things.

In that spirit, I decided to join in Meghan’s Week in Review.  Because I got shit done.  Meghan, what do you think about renaming it “Shit I Got Done”?
