Biscoff Sauce + WIAW

August 3, 2011 By Laura

What I Ate…

errrr... on Friday night of last week.  Details, details… but I promise a real recipe from Wednesday at the end!

I’ve been meaning to write a post about this Underground Supper I went to last Friday.  It is the best supper event I’ve attended to date!  And you guys know I do these a lot.

Atlanta native Zach Meloy started Push Start Kitchen with his wife, Christina.  They recently returned from a stint in Costa Rica where they ran a restaurant.  This supper club is their way to generate some buzz and money in hopes of pushing a restaurant start here in Atlanta.

So my foodie-partner-in-crime (Corinne) and I trekked out to The Goat Farm.

The Goat Farm is a kitschy little hippie-like colony that – in addition to literally being a goat farm – hosts a variety of events (this night included a dance performance and a food truck), is home to a few loft owners, and has it’s own coffee shop/late night $2 beer stop.  I had NO idea places like this existed in Atlanta but I’m moving in.

We were to dine in a small room with 8 others among ancient ceiling pulley systems, discarded books, and cotton mill ruins.

Candles were lit, Dark and Stormy beverages flowed, and the night began to move.

Pictures were taken in front of an old pile of bricks by a local photographer.  A train rolled by.  We found a copy of The World According to Garp.  I ran into a girl I went to high school with (what are the odds?!).

All while enjoying a lovely canape – a small masa biscuit topped with cream cheese and red pepper jam:

After the first round of drinks and the canapes were consumed, we took our seats at a rustic (read: IKEA) dining table for the first course.

First, the wine (served by Zach): a light rose, full of strawberries and refreshing on a muggy night.

I was of course busy ogling the already-plated food on the chef’s table next to my right…

First course: crispy Serrano ham, tomato confit, avocado, smoked chile cornbread, with molasses vinaigrette and basil.

Now.  I don’t like cornbread (bad Southerner!), but this stuff was delicious.  It was soft and smokey, not gritty and dry like the bread I often see.  The Serrano was perfectly crisped and added the right level of salt to compliment the plump tomatoes.

I could have eaten this all night and been content.  Alas, the meal must go on!

Second Course: Sous vide pork tenderloin, roasted plum mole, crispy grits, goat cheese, country ham powder, and greens.

You read me correctly – PLUM mole.  Spiced chocolate plum sauce.  I nearly begged Chef for a jar of the stuff.

For those of you who haven’t had meat prepared sous vide before, it is basically cooking meat at a low temperature in a plastic bag underwater.  This allows you to cook even the thickest cuts of meat evenly at a perfectly controlled temperature, resulting in (arguably) the most juicy meat perfection (sorry if I just made all the vegetarians gag!).

Back to the mole.  It was amazing with the pork not too sweet and a bit smokey.  All of this was complemented by the slightly salty flash-fried grit cakes and creamy goat cheese.  I gobbled up mine so fast Corinne asked if I wanted to finish hers.

The Finale: Rum scented “pan perdido,” condensed milk ice cream, pickled cherries, and galleta maria

I didn’t know what half of that meant until I googled at home later.  My initial description was “deconstructed dessert French toast.”

It turns out I wasn’t too far off!  Pan perdido is essentially bread pudding.  Chef Zach pan-fried it so it was especially french toast-like (nom nom).  Galleta marias are tea biscuit-like brown sugar cookies found throughout Latin America.  They almost crumbled to the touch and their vanilla and cinnamon flavorings only added to my french toast fantasy.  Served with homemade ice cream and pickled cherries… I can now die happy.

The way to my stomach’s heart is dessert.  Someone must have let that cat out of the bag because we were presented with a sweet coconut candy rolled in almond meal:

The bird didn’t want any, so I ate it all myself. 🙂

As promised, I am posting something I actually made and ate this week for a change.

The Biscoff spread Miss Smart gifted me with has been burning a hole in my pantry.  This is an emergency situation, remedied only by having banana soft serve (which I think you all are familiar with) for breakfast.

Why soft serve?  To go with my Biscoff Sauce, of course!

Biscoff spread tastes like a creamed version on the brown sugar cookies served on Delta flights… but better.

Why better?  Let me break this down: Spread = Peanut Butter-like = Awesome.

biscoff spread

In fact, it says right on the jar that it should be used any where you’d normally use PB or chocolate spread.  Cookie spread!!! *swoon*

Can you call 2 ingredients a recipe?  Maybe not… but it’s what I ate for breakfast on Wednesday (WIABW).

Banana Soft Serve

Freeze a banana.  Toss said banana in blender.  Blend until smooth (can add milk if you need to thin it out a bit to blend).

Biscoff Sauce

  • 1 T Biscoff spread
  • 1/8 tsp coconut oil

Place both ingredients in a small bowl.

Microwave for ~10 seconds – just until melted (BE CAREFUL – it will burn).  Stir together.

Try to top soft serve with sauce before you slurp it up

***

This jar doesn’t have a prayer of lasting through the weekend.  It will be used for some epic oats.

What food product have you recently tried and loved?

Does anyone want to write a guest post for me next week?  Pretty please?!

What I Ate (Last) Wednesday

July 27, 2011 By Laura

Happy WIAW!

In lieu of telling you what I ate this week, I’m going share my dinner from last Wednesday night.  (You’ll understand when you see this deliciousness.)

My foodie friend, Corinne, and I attended another installment of the Summer Chef Series @ ONE Midtown Kitchen.  (Remember the 1st one with Chef Hugh Acheson and the 2nd with Chef Bruce Logue?)

This was a special edition, as it was Corinne’s birthday!  Happy Birthday to you, Happy Birthday to you…

This night we brought along friends to help celebrate.  Including my hard-core friend Kathleen who miss my b-day due to breaking her writst via rollerblades.  Hi Kathleen! 🙂

_________________________________________________________________________________________

Chef Ford Fry from JCT Kitchen was the guest tonight.

Sadly, he did not bring his guitar.

Ford is the chef facing the cameras with the guitar. Yes, this is local chef band - 5 Bone Rack.

The night began with a crisp Chenin Blanc.  Actually, it began with a couple of glasses and bread basket since the kitchen was running behind.   We didn’t complain.

They print out the menus – one of my favorite parts of the night is the menu reveal.

My inner fat kid spends the day dreaming about what might be on the night’s menu.

Amuse:

Crispy Pork Trotter with fois gras and beatrice eggplant caponata

It was heavy for an amuse, but good.  Trotter still creeps me out though.

1st Course:

Heirloom Tomato Ceviche with lemon verbena, white chocolate, & horseradish granita

Love, loved the ceviche.  The granita wasn’t bad, but there was a lot of it and chef Drew has done that granita a lot lately.

.

2nd Course:

Maine Lobster with Carolina gold rice “risotto” and buttered pullman toast

…or if you are allergic to shellfish (or think the alternative sounds good), you were presented with a mushroom risotto.

Really, really good; however, my bad because it didn’t get as well with the Pinot Gris pairing.  The lobster risotto was amazing (Corinne gave me a taste).

.

3rd Course:

Roast Black Bass with tiny tomatoes, tomato water, and herb salad

This was probably my favorite course of the night.  The fish was perfectly cooked – meaty rather than fishy.  The tomato water was a little much but that herb salad was fantastic with the fish.

The red wine pairing was surprising.  It was a nice Merlot, but didn’t wow.

.

4th Course:

Housemade Heritage Pork Sausage with crisp belly, Benton’s bacon-wrapped fig, and brown butter jus

The pork belly was some of the best I’ve ever had.  The texture was melt-in-your-mouth good.  The bacon wrapped fig was also delicious.  Perfectly crisped bacon!

The only thing keeping this from being my favorite was the sausage – it was so salty I couldn’t eat more than a small bite!

A South African wine paired with this was our favorite of the evening – it was a bigger, more complex red, my palate’s sweet-spot.

.

5th Course:

Warm 70% Chocolate with almond crisp, raspberry pate, and vanilla lime sorbet

Wellll… chef’s aren’t bakers.  That warm 70% chocolate hardened before it made it out of the kitchen and the almond crisp was more rocky that crispy.   I could have taken a bowl of that sorbet though!

The sherry pairing was too thick and rich for the dessert.  On it’s own I really enjoyed it.  It would have been a great one to serve between 4 and 5 courses or in lieu of the dessert.

.

Overall, we left sated and happy.  Most importantly, Corinne had a happy birthday!

***

Of course, I have another supper club-like even this Friday.  It should be epic!

Are you sick of hearing about these things yet?

What’s the best thing you’ve eaten as of late?

Eggplant Shirataki + WIAW

July 20, 2011 By Laura

In honor of my crazy work week(s)…

I’m copying the growing wordless WIAW* trend.  Does good food really need words?  I think not.

*As usual (except for last week), Wednesday = Tuesday eats.

But first, a run.  I don’t know why I stopped posting these breakdowns… I like to look back at them.  Nevermind the fact that you have to suffer through them. 😉

Stats:

  • Distance – 4 miles
  • Time – 32:37 mins
  • Pace – 8:09 mins

___________________________________________________________________________________

Breakfast

I did say it is almost worldess WIAW, right?

The delicious Chocolate Breakfast Pudding.  So.  Good.

Lunch

Salad topped with carrots, celery, Purple Haze goat cheese, a Lightlife Chick’n Cutlet.  A bit chewy, but it wasn’t bad!

Snack

Cottage cheese tastes really, really good with peanut butter.  Someone call Intervention.

Not pictured: celery and hummus, Think Thin bar, and random handfuls of cereal.

Dinner

Big.  Win.

Mom recently told me about Shirataki Noodles – apparently it is just tofu pressed into noodles.  It’s gluten-free, vegan, low-cal, and – most importantly – a QUICK-FIX.

The only downside is the smell when you first remove them from the package, but that does go away once you rinse them (thoroughly) and pop them in the microwave for a minute.

To go with my noodles, I roasted some eggplant, red onion, and garlic in a quick vinaigrette.  Then tossed it all with an heirloom tomato (because I didn’t get enough at the tomato festival) and more Purple Haze goat cheese.

Perfect light dinner for a summer day!!!

…followed by a little something I like to call…

Dessert

____________________________________________________________________________________

Roasted Eggplant with Tofu Noodles

  • 1 medium eggplant, sliced
  • 1/2 red onion, sliced
  • 5 cloves garlic
  • 1T EVOO
  • 1T marsala wine
  • 1/2 tsp white wine vinegar
  • 1 tsp herbes de provence
  • 1 tsp red pepper flakes (reduce to 1/2 if you are sensitive to spicy foods)
  • 1 package Shirataki noodles (or 2 servings of pasta)
  • S+P, to taste
  • Optional toppings: fresh tomato, cheese (I used goat)

Preheat oven to 425.

Cut eggplants into 1/2 inch slices.  Generously salt the slices, allowing them to sit for 15-20 mins.  Wiping away the beads of water that form (this process removes excess moisture – which makes ggplant “slimey” – and bitterness).

Meanwhile, whisk together the oil, marsala, vineger, herbs, and pepper flakes.

Cut the eggplant slices into 1/2 inch cubes and toss in a large bowl with the garlic, red onion, and vinaigrette.  Spread eggplant onto foil-lined baking sheet and roast for ~3o minutes, tossing once halfway through.

Prepare noodles as instructed on package.

Divide among two plates, adding extra toppings as desired (I loved how the goat cheese melted and clung to mine!).

Makes 2 servings (or 4 sides).

Overpronation, Procrastination, and WIAW

July 14, 2011 By Laura

Active.com is a great resource for runners.

I enjoy their weekly emails with tips on issues such as: how to fuel your body, preventing various injuries, and working out in sweltering heat.

Today’s email included an interesting article on overpronation.

Overpronation is when one’s ankles roll inward too much.

It is widely believed that this can lead to over-use type pain or injury (shin splints, joint pain).  Many people (myself included) get specially fitted for running shoes and/on inserts in hopes to correcting the “problem.”

Today’s article from Active asserts that corrections for over pronation should not always be made.  They say:

“…doing so can and often does result in one symptom going away and another, usually a more complicated one, developing elsewhere.”

Here’s what really resonated with me:

Often over pronation is the symptom of another problem.  Most common is a lack of normal ankle range of motion.  If the foot/ankle isn’t bending properly, the knee is restricted and can’t “travel forward enough for the body to move its center of mass over the foot.”

The result?  Overpronation.  That pronation causes the knee to drift to the midline, which means the hip turns excessively inward.  Snowball.

Correction through shoes and inserts either a) doesn’t work or b) makes the underlying cause worse because the overpronation “is a needed compensation for a lack of mobility elsewhere in the body. Taking this compensatory element away without first addressing and correcting the true underlying cause will inevitably force compensation (frequently accompanied by pain) in another part of the body.”

Source: http://bestrunningshoereport.com/

Source: http://bestrunningshoereport.com/

So what should you do?

See if you over pronate with a squat test.  Stand with your feet shoulder-width apart and attempt a squat.  Are your knees bent 90 degrees or less?  Are your heels still on the ground?  Are your feet still forward (not turning outward)?

No?  If you can’t do the squat correctly, the article says your foot pronation is likely “due to inflexibility of your ankles and that is what should be corrected.”

Bottom line: Before you go out and buy special shoes or inserts, see a professional to have a complete evaluation (pelvis, hip, knee, ankle and foot) done by a professional.

On to my actual Wednesday eats in honor of WIAW.

1 day later than usual due to procrastination/over-sleepiness rather than the pursuit of true Wednesday eats.

Breakfast

Banana Green Smoothie

  • Vanilla protein powder
  • Maca
  • Banana
  • All-Bran (lots of it!)
  • Peanut butter
  • Spinach
  • Coconut milk
  • Cinnamon
  • Vanilla
  • Water + ice, to taste

Lunch

Lightlife Buffalo “Chicken” wings, celery, and cucumber

Salt + Pepper Pop Chips – how did I wait so long to try these?!

Snacks

Kombucha, plum… and a BlackBerry

Similar to breakfast, but with a chocolate casein protein powder

Dinner

I made spaghetti squash and topped with tomatoes AND…

Angela @ Oh She Glows’ Creamy Avocado Sauce.

If you haven’t made this before, you are missing out on some serious creamy deliciousness.  Sooooo good.

My modifications:

  • Added red pepper flakes, nutritional yeast, and red onion
  • Subbed 1 T of coconut milk for the EVOO
  • Used just 1 clove of garlic

Don’t forget to enter my Exceed earbud giveaway!  These are pretty awesome – I’ve never even felt like they were going to fall out.

It’s my birthday eve!!!  The bad part about being an adult is that I still have to work all day.

What do you think about pronation?

Do you over or under pronate?  Have you even been evaluated?

Mexican Sweet Potato Salad + WIAW

July 6, 2011 By Laura

Have you guys been watching all of the Casey Anthony news?

I’m no lawyer, but I am shocked she was found not guilty.

How is it that people who are so terrible and that don’t contribute good to the world walk around alive and free?  Why are people who were amazing human beings, who gave back, who cared for others are taken too soon?

Mr. Billy Joel, why is it that only the good die young?!

I should probably have warned you that today marks 3 years since my dad was taken by cancer.  3 very fast years.  It’s hard to believe…

Not.  Fair.

Maybe I write about it too much, but my dad had continues to have such a huge impact on my life.  Not a day goes by that I don’t think of him.   On the 4th I ran the Peachtree Road Race wearing a ribbon (orange for leukemia) in his honor.

A big FU to the people out there who are just taking up space or – even worse – are harming others.  You’re lucky to have the opportunity to live.  Don’t waste it taking from others.

***Stepping off soap box***

_______________________________________________________________________________________

Lucky for anyone reading this today is WIAW! I have something less depressing to post about!

_______________________________________________________________________________________

Breakfast

These Apple-Carrot Muffins I made a few months back are awesome.  Super filling, especially with the massive glob of PB I iced it with.

Lunch

Garden Lites Zucchini Souffle.  These are surprisingly good for frozen food!  Thanks to the egg, they are pretty filling as well.

Even though I microwaved it, the edges were a crispy (read: not rubbery) texture.  The egg helped make the inside of my souffle fluffy rather then mushy like any frozen meals.

Snacks

Pretty standard – I was super busy at work.

Side note: my dad used to love Think Thin bars.  He liked Chocolate Fudge, but I think Chocolate Toffee is the only way to go.

Dinner

I was underwhelmed by my dinner out, so instead I’m going to share a particularly delicious salad I ate this weekend.

It is no secret that I do NOT like white potatoes.  I do not like thick french fries, potato salad, mashed potatoes, twice baked potatoes.  I just don’t, Uncle Sam I Am.

The 4th of July is a potato salad-centric holiday… so I made a version that I like!

Obviously, it had to be Mexican-inspired.  Nothing says 4th of July like México.

Spinach also must be incorporated.  It is my salad.  Bwhahaha!  Of course there was cheese – I used Daiya
pepper jack but honestly it didn’t nearly spicy enough.  Use regular pepper jack if you eat dairy!

This was a winner.  The spices made the salad taste “special” and I was able to join the potato-salad eating.  Mine was better than that white potato stuff.

________________________________________________________________________________________

Mexican Sweet Potato Salad

  • 1 sweet potato, baked and cubed
  • 1/2 C black beans, drained and rinsed
  • 1 small tomato, diced
  • 1 C spinach
  • 1/4 C red onion, diced
  • 1/4 C pepper jack cheese (I used Daiya)
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1/2 tsp chili powder
  • 1/2 tsp turmeric
  • 1/4 tsp coriander
  • Juice from 1/4 lime
  • Drizzle of EVOO
  • S+P, to taste

Prepare first 6 ingredients and mix in a medium bowl.  Set aside.

Whisk remaining ingredients together in a small bowl.  Adjust spices to taste.

Pour vinegarette over salad and toss to combine.  Enjoy!

Makes 1 entree ensalada or 2 sides.

Tonight I’m looking forward to a meal by a chef you may have seen in Food & Wine. 🙂

Does it make you made when justice isn’t served?

Do you think karma will take care of it in the long run?

Baked Falafel + WIAW

June 29, 2011 By Laura

It’s WIAW time again!

Which means this is What I ate Tuesday. 🙂  (Check out what everyone else at too @ Peas and Crayons!)

I was supposed to be on a business trip this week, but was cancelled last minute.  I can’t say I was terribly upset… sometimes I get to go to cool cities, but that doesn’t mean I get to see any of them!

Due to this (and a lot of dinner plans), I am having a “use what’s in the fridge” week.

The Challenge

I can be am terrible at letting things go bad.  It’s wasteful.  There are starving kinds in Africa.  Money doesn’t grow on trees. *Insert whatever lines your parents used to force encourage you to clean your plate.*

Muffin trial run, eggs, restaurant leftovers, last week’s hummus, dregs of an artichoke jar, the last bottle of beer… they’re all being utilized!

Breakfast

Blueberry muffins, egg, and raw milk.

Recipe will come soon… I need to do some tweaking.  Good, but not quiiiiite great.

Lunch

Last night I met my very pregnant BFF for dinner at Cafe Sunflower, one of the few exclusively-vegetarian restaurants in Atlanta.

Overall it was good.  I liked my Jamaican Black Bean Patties with Pineapple Salsa and ate the leftovers for lunch.

The server was really weird.  He leaned around the wall by our table and whispered that he had a crush on me.  Then, when my friend went to the bathroom, he asked if I had a boyfriend and told me I have a good energy.  (Note: he had creepy energy.)

I’m here to eat, not get hit on! At least it got me a free sample of the 3 Bean Chili (which was horrible, btw).

Snacks

It was a back/bicep weight day, so I got my post-workout 20g of protein from a Banana-Cinnamon Protein Shake.

In the mix:

(measurements are approximations – I eyeball it)

  • 1 banana
  • 1 scoop vanilla protein powder
  • 1 tsp maca
  • 1/2 C unsweetened almond milk
  • 1/2 C frozen kale
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of guar gum
  • Pinch of lemon-salt
  • Ice + water (as needed)
  • Granola sprinkled on top

Pretzels, carrots, cucumbers, and a bowl of cereal were also consumed.

Dinner

After a 5 hour conference call, I played with my food.

Falafel face

One of my 5 million bookmarked recipes included a baked falafel by Sarena @ Non-Dairy Queen.  In the spirit of using what I had, I made Japanese-ish Baked Artichoke Falafel – spicy-style!

I ate my falafel with another recipe I have been meaning to try – Baked Grilled Zucchini with Goat Cheese from one of my new favorite blogs: Rufus’ Food and Spirits Guide.

If you never listen to anything else I say, listen when I say you HAVE to try this Stuffed Zucchini.  Grill or bake it this weekend for the 4th!

It is so easy – cut rows into a zucchini, stuff with cheese (I used goat), drizzle with olive oil, top with herbs, S+P, wrap in foil, bake or grill for 20 mins.  Devour.

Japanese-ish Baked Artichoke Falafel

  • 1/4 C Japanese-ish hummus
  • 1/8 C jarred artichoke hearts, rough chopped
  • 1 T coconut flour
  • 1-1.5 tsp garlic sriracha
  • 1/2 tsp turmeric
  • 1/2 tsp hosin sauce
  • 1/4 tsp baking powder
  • Brine from artichokes, as need to moisten

Preheat oven to 425 degrees.

Mix all ingredients together.  Form 5 balls (1 heaping tablespoon each) and place on foil-lined baking sheet.  Bake for 20 mins.

Note: You can use any hummus or flour to make this.  Add some herbs and you favorite spices and you’ll have your very own customized falafel!

I’m so pumped for tonight – it’s the second in a Chef Series I’ve been attending and tonight features one of my favorite Atlanta chefs.  Full report to come… probably not until Friday though!

Show me your WIAW!!!

Spinach Squash Soup and WIAW

June 15, 2011 By Laura

Thanks for all the well-wishes about my Achilles!

I’m taking it easy. *le sigh*

It still hurts, but the pain isn’t as sharp anymore.  Well, it wasn’t so bad until I tried for a new max set of push-ups (are you doing yours?!).  And then I did this tricep workout (minus the sprints).  I suppose those activities use the Achilles for stability purposes… lame.

Back to resting… and entertaining myself by making soup!  I could hardly wait for WIAW to share it. 🙂

Happy #21 to WIAW!

 _______________________________________________________________________________________

Breakfast

I  had to do a repeat!  It’s rare, but the oh-so-good Zucchini Oatmeal lured me in 2x in as many days. 🙂

I was a little sad when the bowl ended

Lunch

Did you know one sweet potato packs more fiber than a serving of oatmeal?!

Brussels, sweet potato with my homemade spiced almond butter, and coconut curry tempeh.

I <3 pretty food

Aren’t those brussels pretty like flowers?!  #bigdork

There was also going to be a pile of kale chips… but I burned the you-know-what out of them.  Whoops.

Snacks

Avocado Protein Shake with chocolate protein powder (don’t knock it til you try it!)

That’s my chocolate cookie sinking in the middle

The last bit of the orange blob deliciousness – i.e. Butternut Rosemary Hummus:

Still just as good – eaten with spelt pretzels, cherry tomatoes, and celery

Dinner

Have you ever heard of a Delicata Squash?  I had not until a recent trip to the farmer’s market.

Further research revealed that it is an heirloom squash.  It is, indeed, delicate.  Small-ish and probably less and 1/2 a pound in weight.  I’d compare it to a butternut squash, as it is on the sweeter side of the squash family.

Like other winter squash, it contains a ton of Vitamin A, carotenoids, and can act as an anti-inflammatory.

I read that you can eat the skin (it’s much more thin that that of a butternut), but I opted to peel mine since it was being used for a soup.

Did you think I’d repeat the entire day?  *Gasp*

I made a Spinach Squash Soup!  It was filled with all sorts of vitamins, a little heat, and some fantastic flavors like…

Roasted garlic. The other day I posted about roasted garlic and the secret to always having it on-hand (I roast several heads at once and freeze it).  Today was a perfect example of that idea paying off.  Regular garlic would certainly work here (though I’d cut back to 2-3 cloves), but the depth roasted garlic adds was a perfect accent in this soup.

Served with more socca.  I’m an addict.

______________________________________________________________________________________

Spinach Squash Soup

(Inspired by this recipe from 101 Cookbooks)

  • 1 T habanero-infused extra virgin olive oil (I use Sweetwater Growers’ version)
  • 4 cloves roasted garlic, chopped
  • 1/2 medium yellow onion, roughly chopped
  • 1/2 tsp salt
  • 1.5 tsp cumin
  • 1/2 tsp coriander
  • 1 Delicata squash (~1.5 C), cut into 1 in cubes
  • 1 medium zucchini (~ 1C), roughly chopped
  • 1 C chicken or vegetable stock
  • 2.5 C fresh spinach leaves, loosely packed
  • Juice of 1/3 lemon
  • S+P, to taste

In a large, thick-bottomed pot over medium-high heat, add the olive oil.  Add the garlic and onions and saute 1-2 mins, just until soft.  Add in both squash, stock, and water.  Stir to combine, also adding salt, cumin, and coriander.  Bring to a simmer and cook ~15 mins until squash are soft.

Stir in the spinach, allowing it to just begin to wilt.  Stir in the fresh lemon juice.  Remove from heat and puree with a hand blender until smooth.  Taste, adjusting seasonings as desired.  Ladle into bowls, top as desired (I used tomatoes, pepper, and nutritional yeast), and serve.

Note:  If you don’t have habanero olive oil, don’t skip the heat – this soup would definitely be too bland without it.  Add a couple of diced jalapenos (or pepper of your choosing) when you toss in the onion and garlic.

Makes 2.5 cups.  (I wish I’d doubled it to make 5!)

WIAW Pride

June 8, 2011 By Laura

Happy WIAW! (What I Ate Wednesday)

There seem to be a lot of posts lately where people are talking about their accomplishments.  I think that’s awesome!

The part that makes me sad is that many of these posts are pre-faced with something along the lines of:

“I don’t want to sound like I’m bragging…”

Or:

“Not to sound full of myself…”

Why do we have such a hard time sharing our “wins?” Charlie Sheen certainly didn’t and he isn’t even a winner.

Maybe it’s a female thing.  Not to stereotype, but I have never heard a dude apologize or hesitate before talking about a success.

Women tend to be raised to support and nurture.  Society tells us we are “caretakers.”  This doesn’t have to mean we need to keep it to ourselves when we’ve accomplished something!  We are allowed to be proud of ourselves and receive support and kudos from others.  Personally, I love sharing in your successes and cheering you on!

Share a personal success one person today.  I dare you.

______________________________________________________________________________

Today I am proud of myself for 3 reasons:

  1. I got out of bed and ran twice as far as I promised myself I had to
  2. I remembered to take pics of everything I ate for WIAW!  (Yes, I take my pics on Tuesday… I’m told that’s ok. 🙂 )
  3. I made some serious deliciousness with the other half of my butternut squash

Here’s the story of my 3 prideful moments on what I’m now creatively dubbing Terrific Tuesday:

1. Run

Promising low mileage is one way I coax myself out of bed for morning runs.  I don’t really enjoy going right from the bed to the street (that’s what she said), but on work days I don’t have time to chill first.  So I make myself promises:

“If you get up, you only have to run a 5K. It will be easy.  Get up!”

I had some verrry filling Mexican last night, so I didn’t need a snack other than to take my B-12 (awesome AM energy booster) before taking off.  Apparently this was just what the Dr. ordered for me today.

Stats:

  • Distance – 6 miles
  • Time – 49:22
  • Pace – 8:20

I think that’s my fastest time yet at this distance!  Admittedly my leg was shaking on the brake pedal while driving to work, but in a good “I pushed myself” way.

2. WIAW

Typically I realize half way through my food-eating for the day that I’ve forgotten to take pics of everything I ate.  Not the case today!

Breakfast:

My name is Laura and I am chia pudding-obsessed.

Blackberry Almond Chia Pudding

A few days ago I made Peach Cobbler Chia Pudding.  I’ve also done Banana Cashew Chia Pudding.  Today was Blackberry Almond Chia Pudding.

My favorite so far is still the Peach, but this was not bad.  I added a bit of butter extract which make it more pie-like.  Not bad at all, my friends.

Because everything tastes better in a martini glass

Blackberry Almond Chia Pudding

  • 1/2 C blackberries, cut in half
  • 1/4 C unsweetened vanilla almond milk
  • 1 T almond butter
  • 1 T chia seeds
  • 1/4 tsp butter extract
  • 1/2 tsp cinnamon

Place all ingredients in a bowl and mix well, mushing blackberries slightly in the process.  Store in refrigerator overnight.  In the morning, stir and enjoy!

Lunch:

Eaten at my desk, but it was so good I didn’t care.

Roasted Butternut Red Pepper Lentils

Leftover Roasted Butternut Red Pepper Lentils… which may have been even better than they were on day one.  The flavors had a chance to meld, I topped it with the last bits of fresh mozzarella… and I was one happy camper luncher.

Snack #1:

Celery and a freebie PB packet

Snack #2:

Peanut Butter Creme-filled Chocolate Newman-O's

Yesterday I got these in the mail from Mary @ Bites and Bliss.  I won a recent giveaway she hosted… talk about bites OF bliss.  What could be better than FREE Chocolate + PB cookies!?

Dinner:

Easy salad with a couple more of my little kid hidden veggie Chicken Bites.

Simple Salad with Chicken Bites

Snack #3:

Chocolate-Banana Green Creatine Protein Shake w/ Fiber

AND…

3. Serious Deliciousness

Newman's Own Spelt Pretzels and...

What exactly is that yellow-orange glob of tasty with my spelt pretzels?  Check back tomorrow… *insert evil laugh here*
