A Michelin Star Day in Italy

It would have been fun to post a What I Ate Wednesday from Italy…

My first in-person pomegranate tree!

… but I just couldn’t bring myself to sit down and write when there was so much to explore.

So today, 2 weeks later, I bring you: What I Ate on a Wednesday in Italy.


Breakfast:

Typical European tourist fare consists of pastries, cheese, and cured meats.  The novelty wears off after 1-2 days.

At least we know the Nutella is fresh!

That Robiola Rocchetta cheese was pretty amazing.  It is native to the Piedmont region and would be fantastic with the local Barolo wine.  It is a layered, creamy cheese made from goat’s, cow’s, and sheep’s milk.  It’s structure is reminiscent of a brie – pliable rind with a dense, semi-soft texture inside.

Lunch:

Most days this consisted of more cured meat and cheese with bread sticks… served at a wine tasting. 🙂

Snack:

We had a mandatory daily snack of gelato.

Like a kid in a candy shop…

Dinner:

My favorite meal of the trip was at Il Cascinalenuovo, and Michelin star restaurant just outside of Asti.  The restaurant is part of a family-run B&B.  We were lucky to have a tour of the kitchen with Chef Walter.

Upon arrival we were greeted by Walter’s niece, Alice.  Alice was so much fun to talk to and hosted us all evening.  Her father is the front of house and wine expert in the restaurant.

Chef sat with us for quite sometime, asking about our backgrounds and telling us about his inspirations.  He admitted to being surprised that we are “young and skinny.”

He was expecting “fat old ladies.”  Direct quote – I can’t make this stuff up.

He told us the story of when he was invited to California to cook for a United Nations event where he worked alongside greats as Wolfgang Puck.  Puck introduced him to Asian-fuision and inspired one of the dishes we would be eating.  I love hearing the stories behind techniques and dishes.

The kitchen was having dinner when we arrived, so Alice showed us to the pool patio for aperitifs.

Walter came out again to give us a kitchen tour.  He thoughtfully explained each station and process.  Chef Walter is a big fan of preparing meats sous vide.

We were even able to stand in the back to watch the first order being coordinated!

The kitchen was quite tolerant of our paparazzi-like behavior.

We sat down for dinner an elected to let Chef Walter surprise us rather than ordering off the menu.

We do know how to order well!

This turned out to be the best meal of the trip.

The starter alone was mind-blowing: a perfectly silky pumpkin soup with Parmesan gelato.

Followed by the dish inspired by Wolfgang Puck: Sesame-encrusted Amberjack fish with julienned fresh vegetables, wasabi, and passion fruit sauce.

Next was Chef Walter’s signature dish, created in 1987.  It has become his signature dish.  Normally we’d be leery of the ingredients, but this was on a whole new plateau of deliciousness.  Corinne nearly licked her plate.

I’m on a mission of find a set for myself!

This texture combination in the next dish was divine: quail egg, duck carpaccio, marinated porcini mushrooms served atop a bed of butter lettuce.

Last was the region’s Tajarin pasta (homemade) served with porcini and finfirli’s mushrooms.

Did I say last?!  I meant last dish before dessert.  2 girls = 3 desserts.

Chef Walter clearly knows the way to my heart.  He even made one with almond milk!!!

I can’t begin to name all of this… truffles, macaroons, chocolate-covered gooseberries… it was sheer bliss

Thank god we had a driver because a food coma immediately ensued.

Romeo, Romeo: A Day in Verona, Italy

Our first full day in Verona was laid back.

How cute is our B&B?!

We walked from the city center and to meet out new friend Tim, who had offered to show us where to get our first pizza of the trip.  I was so hungry that I FORGOT to take a pic!  Fail.

We ordered 4 pizzas and shared them… they were good, but Southern Italy is really the place for pizza.

Next we were off to tour L’Arena.  The stairs in that place were no joke!  The only stone was quite slippery.  If it were the US, we would have seen some serious “climb at your own risk” signage!

They were setting up for a concert that night with a popular Italian singer/guitarist.  We couldn’t get tickets, but just seeing the contrast of the ancient against the new was surreal.

Next up was Juliette’s balcony.  We took pictures and fought for a spot to rub Juliette’s boob.

Apparently it’s the thing to do here – there were small children feeling up her statue!

When in Rome…

It was unseasonably warm throughout our visit (we, of course, over-packed with all our sweaters).  After all that walking around we were past due for our first gelato of the trip!

Refreshed after our tasty treats, we decided it was time to tackle Teatro Romano (the Roman Theatre).  Doesn’t it look far away?

We got to walk across the oldest bridge in Verona to climbed about a million stairs to the top!

The view from the top was well-worth it!!!

Next is my favorite part of the day – wine time dinner time!

We loved Antica Bottega de Vino so much our first night that we returned again for dinner!  This place is the only restaurant in Verona to be officially recognized as a “historic establishment.”

There are worse places to be trapped!

Tim joined us and we feasted.  Everything was delicious, but I am sad to say that I did not get a picture of my favorite dish.  We started with an amazing plate of polenta topped with some the most deliciously creamy gorgonzola I have ever tasted.

One of the coolest dishes was an Amarone risotto.  I still prefer to drink it in a glass, but it’s depressing funny that Amarone is inexpensive enough in Italy to use for cooking.  In the States it’s hard to find a bottle for less than $80!  

Yes, I realize this looks like baked beans.

You’ll start to see a theme as I post recaps… we ordered pasta with truffles.  For the second night in a row.

The nutty parmesan and fresh olive oil coating homemade noodles combined with earthy, rich black truffles is too much for me to pass up!

You’d think that would be enough, but after dinner Tim had a surprise for us – we were able to meet the restaurant owner, Severino Barzan, who gave us a tour of his impressive 130-year old cellar (seriously – the wine in there was worth more than I can imagine).

The restaurant and it’s owner are quite well-known – we spotted a picture of the Clinton’s on a recent visit!  Can you make out the autograph below?

Not wanting the night to end, we spotted cognac bottles lining the walls dating back to the late 1800s… and decided we needed to have a glass from each of our birth years.

On our 2nd night in Italy we were already making memories more fantastic than I could have dreamed of!

I’m out of town in client meetings for the rest of the week.  I can’t believe I’m already jumping on another plane!

Pumpkin Shortage + WIAW

Don’t panic but…

 

There may be a pumpkin shortage.

Damage from Hurricane Irene is worse than we thought.  The hurricane destroyed hundreds of pumpkin patches in the Northeast.  Prices for the surviving pumpkins have doubled in some cases.
Growers in other regions are shipping pumpkins to the NE, but if you’re in the affected area you still want to get your pumpkins early before the good ones are gone!

No word on whether it will affect canned products or pumpkin ales.


I hope I didn’t alarm anyone.  🙂

Back our regularly scheduled WIAW: The Using Everything in My Kitchen Edition.

Breakfast:

I recently bought what will probably be the last peach of the season.  Sad.

 

Peach Cobbler Chia Pudding isn’t sad though.  This made for a tasty breakfast while on an early conference call with Taiwan.

I did it the same way as usual (click link above for recipe), except I used chunky PB and sunflower seed milk (which was NOT as good almond milk in this!).

 

Not pictured are my 2 cups of coffee.  Black, with cinnamon sprinkled in the grounds (pre-brew).

 

 

Lunch:

I went on a nice little 7 mile run and was starving when I got back.

Monster Salad time.

 

In my bowl:

  • Last of the spinach 🙁
  • Last carrot
  • Salsa
  • Sunshine Breakfast Patty
  • Food for Life Sprouted Grain English muffin
  • Spinach-artichoke hummus

 

I wasn’t a huge fan of Sunshine patties at first, but I discovered that microwaving them half way and then finishing them off in a pan makes it much better.

 

Snacks:

Biscoff Cookie Dough Ball for pre-run fuel.  These kept really well in the freezer… but this was the last one. 🙁

 

I also made another Biscoff spread treat.  Which I will share on Friday… it seems timely since I’ll be eating Biscoff on my flight. 🙂

 

Dinner:

This was a creation inspired by the cooler weather… and fact that tofu, spinach tofu noodles, and tomato sauce are all on list of this to use in my fridge.

 

This Vegan “Ricotta” Pasta Bake was seriously good.  I added artichokes and capers, which made it not-your-mamma’s pasta bake.  And – of course – red pepper flakes.  

 

I love surprising myself.  Recipe coming tomorrow!!!

Chilly Weather Eats + WIAW

Wednesday comes quickly on short weeks!

Short weeks are good and bad.  I love the extra weekend time… but I was at work until 8p last night paying for it.

It’s chilly and drizzling rain here, so I had planned to go to kickboxing for a good, mindless workout.  The last class starts at 730p.

On the bright side, I hit the gym in my building and tried out a new back/bicep workout that I’ll be sharing soon. 🙂

On such a short week I nearly forgot to take pics for WIAW!

 

I did remember nearly everything in the nick of time.  Mas importante because I had a special treat for breakfast.

 

Breakfast:

I pre-gamed breakfast with some cantaloupe because it was going to take a minute before I picked up the main show.

 

FREE Chick-fil-A!!!  It is free breakfast entrée week (with a reservation).  I was pumped to try out their new oatmeal.

I came prepared with my own peanut butter (I never said I was normal).  They provided brown sugar, nuts, and dried fruit as toppings, but I’m not a dried fruit fan and the nuts were all sugar-coated.  Too much sugar in the morning!

The oatmeal itself was pretty good.  The fact that it’s multi-grain gave it a good texture.  It was cooked well – not watery, which I generally find to be the problem.  Only 120 calories and 5g of sugar, but I liked that it had 3g of fiber and 4g of protein.  That said, the serving was fairly small and I was really glad for the peanut butter!

 

Lunch:

Inspired by the cool, rainy weather I made a delicious Indian Eggplant Lentil Stew Monday night and thoroughly enjoyed the leftovers for lunch today.

Side note: Tech wont their first game against Western Carolina Girl’s School Saturday!!!

 

Lentils have many benefits.  They are:

  • High in protein an fiber = filling
  • Good source of iron and magnesium
  • Take on virtually any flavor from other foods/seasonings
  • Low-cost
  • Good left-over!

 

This recipe will be up tomorrow!!!

 

 

Snacks:

Not pictured, but I am pretty predictable consistent:

  • Chocolate-Toffee Think Thin bar
  • Nuts – I caved and ate the Chick-fil-A sugar-coated.  They were good.  🙂
  • Kombucha Green Tea
  • Broccoli and carrot sticks dipped in my new find: Spinach-Artichoke Hummus

 

This hummus is a new Whole Foods find by Nature’s Healthy Gourmet.  You really get the good artichoke flavor in it!

Nature’s Healthy Gourmet is a small company based out of Florida that specializes in vegetarian and Kosher foods.  Nature’s hummus is also dairy- and gluten-free.  If you can find it, this hummus is worth a try!

 

Dinner:

Since I got home from work so late I opted for a lighter dinner.  A salad with raw french green beans, sprouts, and mission figs.

 

Did you really think that’s all I ate?  Bwhahahaha!

 

That salad was protein’d up with sriracha-marinated tempeh and hummus dressing (the aforementioned hummus mixed with a bit of apple cider vinaigrette).

I finally learned how to spell sriracha!!!  Gotta celebrate the small victories. 😉

WIAW: The Rockies Edition

Starting the week 3 hours behind is weird.

 

I woke up Monday morning in Denver, CO.

  • The Good: I woke up super early because I was on East Coast time
  • The Bad: By the end of the day I was pooped
  • The Weird, cont.: Now I’m in Chicago… in another time zone

 

Have you guys ever been in the Denver airport?  Having a massive airplane inside the airport gives it extra cool points.

I checked into the Hampton Inn (which was surprisingly well-kept/updated) and discovered that they had little pictures outside each guest room.  Pretty cool – they were all different!

However… don’t you think mine was a little risque?!

I swear I’m not running a prostitution business out of my hotel room.

Waking up super early meant I got in a couple of good workouts.  Hooray for hotel gyms!  Note the motivational sign across the mirror.

The WIAW part of my week is… weak…

Breakfast:

Luke-warm hotel instant oatmeal.  Made with water.  Eaten out of a styro-foam bowl with a plastic spoon.  Thank god for peanut butter.

Instead, let’s pretend I ate some of this:

Zucchini Bread Oatmeal with homemade quick blueberry “jam” was one of my better ideas.

I may stop for zucchini on my way back from the airport Friday…

Lunch:

How one conference could offer SO MUCH bad food is beyond me.

This was some sort of attempt at enchiladas.  I picked out the chicken and made a salad with the shredded lettuce.  Maybe one of those tortilla chips was eaten – they were ridiculously salty (even for a generic brand).

Snacks:

Not pictured, but these items were key to my survival:

  • Apple taken from the hotel breakfast bar
  • Peanuts I saved from my flight
  • Chocolate-Toffee Think Thin bar from home

 

 

Plus copious amount of tea to keep warm in the very well-air conditioned room and remain heavily caffeinated.

 

Dinner:

Again, not worthy of a picture.  It was an airport salad with 2 cucumbers and 2 tomatoes (not kidding).  I did manage to convince them to give me some hummus then regretted it.

This would have been much more delicious:

 

A big salad with hummus dressing (basil hummus mixed with a bit of apple cider  vinaigrette) and a side of roasted brussel sprouts (coated with herbed dijon mustard and olive oil).

Served with 1/2 a Food for Life Sprouted Grain and Seed English muffin and a big ‘ol scoop of my new favorite oil-free, vegan condiment:

Beet Sunflower Pesto.

 

You should try the pesto.  No need to like beets.  Guaranteed.

Everybody’s WIAW

Happy Hump-WIAW!

With football season so close (Tech’s opener is 8 days away!) and the Italy trip in less than 5 weeks, I’m getting really antsy.  Ants.  In.  My.  Pants.

Here’s our high-level Italian wine region/city itinerary:

  • Days 1-3 – Veneto/Verona
  • Days 3-5 – Friuli/Cormons
  • Days 5-6 – Lombardy/Milan
  • Days 6-8 – Piedmont/Alba
  • Day 9 – Driving/Hike Cinque Terre(!!!)
  • Days 9-11 – Tuscany/Lucca/Sienna
  • Days 12-13 – Tuscany/Florence

 

Of course, there will be side trips to smaller towns.  We are working out the winery strategy now.  Our trip also falls at the beginning of truffle season and I couldn’t be more excited.  One stop in the Piedmont region includes 2 hours hanging out with the chef at a family run, Michelin star restaurant before enjoying dinner there.

It is looking like this will be a trip to remember!

After listing all of that my day’s eats seem anti-climatic, right?

 

Breakfast

 

 

A hodge-podge overnight oats mix in poor lighting at 7am:

  • 3/4 C unsweetened almond milk (a little too much… maybe just 1/2 C next time)
  • 1/2 scoop cookies and cream protein powder
  • 1/2 banana, mashed
  • 1/2 C uncooked oatmeal
  • 1/2 tsp cinnamon
  • Blueberries

 

Lunch

Here I go again with leftovers!

I made my Chili Nutty Tofu again – I think this is the recipe I repeat most often (which says a lot since I rarely repeat anything).  The spicy chili with the sweet, nutty peanut butter (use chunky!) is addicting.  It’s a baked tofu, which is my favorite way to eat it because of the way the tofu fluffs up in the oven while the outside becomes nice and crispy.  My only edit this time was to add freshly grated ginger to the marinade.

 

Served with a leftover raw kale and oyster mushroom salad (full recipe for the raw kale salad tomorrow).

Everybody’s Pizza

Mom and I ate dinner together in honor of my dad.  He would have been 56 yesterday.

Is it the best pizza in Atlanta?  No.  But it’s the most memory-filled.  My parents used to hang out at Everybody’s when they were in college.  Growing up, he would take the family there and sometimes as a special treat on Friday nights he would take just me.

I always ordered the same thing – a pie with pepperoni and feta.  They are huge individual pies, but I conquered it.

20 years later… my order has changed!  Mom and I split 2 massive pies.

The Pizza Salad has a pizza base, but is piled with salad on top.  We chose the Panzanella – a pie topped with lettuce, basil and Roma tomatoes tossed with house roasted chicken, mozzarella, provolone, sun-dried tomato and onion on a pesto cheese pizza.  Yes, it was as good as it sounds.

 

Pie #2 was a Cheeseless Pizza.

 It consisted of oven roasted zucchini, fresh spinach, mushrooms, onion, fire-roasted red peppers, Roma tomatoes, broccoli artichokes, sun-dried tomatoes, sesame seeds, and hot pepper-infused E.V. olive oil.

My first helping:

 Dad didn’t like to miss dessert and we honored that tonight.  The last part of the tradition at Everybody’s is to order bread pudding.

It’s the only dessert they serve and it is rich amazing.  I often wonder how many they could possibly sell since it’s not even on the menu… but I like to think it as a cult following. 🙂

Coconut Milk Greek Yogurt + WIAW

Jen’s WIAW is becoming my favorite weekly feature.

 

 

I get SO many great ideas reading other people’s posts!  Head over Peas & Crayons to check them out.

 

Breakfast

I was fortunate enough to receive samples of the new So Delicious Greek-style yogurt.  The flavors include blueberry, raspberry, chocolate, and plain.  Made with coconut milk, the Greek-sytle yogurt is VEGAN.

 

The nutritional information overall is good.  The fiber contect is awesome – 8g!  For those who prefer flavored yogurt, it only has 11g of sugar.  That’s a lot for my taste, but it is pretty low compared to others on the market.  It also have a ton of Calcium, Vitamin D, Vitamin B12, and Magnesium.

Admittedly, I was a bit disappointed with protein.  One of the reasons I love Greek yogurt so much is the high protein content.  This coconut version only contains 2g.

 

I tried the blueberry version first.  While I did like it… it was very different than Greek yogurt.  The texture wasn’t as creamy and it didn’t have the tartness.

Recognizing that this may be a plus for some of you (especially if you don’t like/have never had Greek yogurt), I like the “real” thing better.

 

Had I tried it expecting a traditional yogurt, I would have been happier.  I think it’s better than “regular” yogurt!  (Disclaimer: I don’t like regular yogurt.)

 

I gave it some more “oomph” with my new love: Peanut Flour.  Why didn’t you guys beat me over the head to order this sooner?!  It’s life-changing!!!

 

It’s incredible.  Just add a little liquid and salt and you have a protein and fiber-rich peanut butter substance with less fat.  Did I mention it’s also gluten-free?!  I cannot wait to make pancakes and cookies with this.

From a galaxy far, far away...

 

PBJ Vegan Yogurt Deliciousness

  • 2 T Peanut flour
  • 2 T So Delicious unsweetened vanilla coconut milk
  • Pinch of salt
  • 1 container So Delicious Blueberry Greek-style yogurt

 

In small bowl, mix together first 3 ingredients to form a peanut butter-like substance.  Swirl in yogurt.  Inhale bowl of deliciousness.

 

 

Lunch

Moroccan Carrot Salad is even better a day or 2 later!  I made some extra so I could eat it through0ut the week and I thoroughly enjoyed it in a wrap today.  I used a Rudi’s spelt tortilla and stuffed it with hummus, carrot salad, cucumber, celery, spinach, and green pepper.

With lots of water throughout the day in my Georgia Tech glass.  (16 days until the beginning of the GT football season!!!)

Insert 4 mile, music-less run here.  Silly Shuffle was out of juice. 🙁

Do you see that sweat?!  It was so flipping hot.  No music.  630pm.  I think I ran fast just to get ‘er done.

I fantasized thought about dinner the WHOLE way.

Dinner

More carrots!  This time with Shirataki tofu noodles and peanut sauce (yes, more peanut flour!).

Snacks

I cannot believe I FORGOT to take a pic of my snack today.

 

Pinkberry yogurt.  Sheer deliciousness.  I got the watermelon (only in stores until August 19th!) with mango and toasted almonds on top.

I also sampled the Salted Caramel.  It was good, but I prefer yogurts in fruity flavors.  “Dessert” flavors (like chocolate and caramel) are reserved for ice cream treats.  Clearly I don’t mind a fruity tart!  (That’s what she said.)

 

My nighttime snack doubled as dessert – a chocolate-peanut butter protein shake.  With spinach, of course.

Almost forgot the pic.  Lucky me – I was chatting with the famous Jen while drinking it and remembered just in time.

In my shake:

  • 1 scoop chocolate casein protein powder
  • 1/2 C spinach (I ran out!)
  • 1/2 C unsweetened vanilla almond milk
  • 1 T crunchy peanut butter
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon

Apple-Fennel Salad + WIAW

Cheers to another WIAW!

This one is more of a “what I ate in preparation for and while on the road this week.”  One day life will slow down… right?!

Who am I kidding – I totally thrive on running around with my hair on fire.

Anywho… it’s a quickie because 7am meeting are a bad idea for night owls.  That does NOT mean that you should discount my Apple-Fennel Salad.  I actually surprised myself with this one.

Breakfast

Like warm… err… cool apple pie

Post-Run Apple Pie Smoothie

  •  1/4 Gala apple
  • 1 C spinach
  • 1 C unsweetened vanilla almond milk
  • 1 scoop vanilla whey protein powder
  • 1 tsp Maca powder
  • 10 drops vanilla NuNaurals Stevia
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • Sprinkle guar gum
  • Ice + Water, to taste

Lunch 

An exercise in using what’s left in my fridge before jumping on a plane turned out pretty damn good!  Loved the licorice crunch of the fennel with the sweet apple and the punch from the chili pepper.  (Scroll to bottom for the recipe.)

Insert power walk through the Atlanta airport.

We have a lot of African sculptures in the ATL airport. I don’t know why…

Snacks

Biscoff Cookie Dough Ball

Not pictured: Think Thin bar, peanuts, and a kombucha.

Insert arrival in Charlotte and pleasantly brief wait in taxi line.

The gym was nice in my hotel – they provide foam rollers (I won’t think about how many sweaty, hairy legs rolled on that thing before me) and post workouts on the walls to inspire!

Dinner

Dinner out with family in Charlotte.  I didn’t want to take pics and the lighting was terrible… but I did take a pic of the guy rocking a ‘hawk in the kitchen.

Good Food (creative name, right?!) in Charlotte, NC is worth a stop!

Small plates not-to-miss:

  • Sauteed Mushrooms with herb and garlic
  • Steamed Bun with five spice rubbed pork belly, hoisin & pickled vegetables
  • Braised Duck Fettuccini pancetta, peas & sweet onion cream
  • Macademia Nut Pie with banana ice cream

Apple-Fennel Salad

  • 1/2 medium Gala apple, diced
  • 1/2 medium fennel bulb, thinly sliced
  • 1/2 small shallot, minced (~1/2 tsp)
  • 1/4 C celery, thinly sliced
  • 1/4 fresh cayenne pepper, minced (~1/4 tsp)
  • 1 tsp lime juice
  • 1 tsp extra virgin olive oil
  • 1 tsp apple cider vinegar 
  • 1/2 tsp tarragon
  • S+P, to taste

Mix all of the veggies together to combine.

Whisk together the remaining 5 ingredients.  Toss with veggies until just coated.

Enjoy!

Serves 1 main or 2 as sides.
