No, not just with vodka…

I’ve done a lot of breakfast recipes with grapefruit, but I decided to go savory with this one.

It may sound strange, but after seeing similar items on a few menus around town I decided to create a grapefruit and scallop dish.  And oh man, was it good!

Lemon Pepper Roasted Cauliflower [Recipe]

It’s been a minute since I’ve showed cauliflower some love.

My apologies, cauliflower… but you give me gas.

Gas aside, I felt inspired to give it a go after seeing this recipe from Anna-Marie.  It had a really cool twist – she toss the cauli in stock before roasting it.  I did just that in today’s strange (but good) recipe: Lemon Pepper Roasted Cauliflower.

Slow Cooker Pumpkin Chicken Curry [Recipe]

I’ve always wanted to go to Asia.

I mean… I love their food…

Thai food has been on the brain lately.  Vegas and I found a great local Thai spot and it has started a constant craving.  And now that k.d. lang song is stuck in my head.  You’re welcome.

This slow cooker Pumpkin Chicken Curry started out with Thai intentions, but I think it ended up more Indian.  Not that I really cared.  The pumpkin may sound like a strange twist, but it added to the creamy good-ness.

Slow Cooker Pumpkin Chicken Curry - it may not be traditional, but adding pumpkin to curry broth makes it crazy silky. AND you can do this in the slow cooker, making it so much easier.

Sweet or savory breakfasts?

I’m forever caught in the dilemma.

I know several people who eat the same thing every morning – oatmeal, eggs, fruit.  I just can’t do it.  Breakfast is my favorite time to get strange.  Thank god it’s usually good, because I can get HANGRY in the morning.

Today’s Sweet Potato and Spinach Hash may not be terribly strange, other than the fact that it could be a dinner side were it not for the egg.  It came together out of my usual end of the week “use all the random leftover things.”

Pasta is an easy go-to dinner, but you can make it extra fancy with a strange but incredibly good twist.  Why not boil the pasta in red wine?  This simple move makes a complex, beautiful pasta.

Quick and Easy Spiralized Carrot Salad [Recipe]

Did you know that eating enough carrots can turn you orange?

Why wasn’t Bugs Bunny orange?

Add color to your plate with this quick and easy side - Spiralized Carrot Salad

Carrots really can turn you a bit orange.  When my sister was little she basically lived off of carrots and cheese.  As a result, she had an orange tint to her and was always constipated.  TMI?

Today’s #strangebutgood recipe is a carrot salad.  No lettuce.  Just carrots.  It’s really good.  Plus its winter and we’re all a little pale.  Eat this side at every meal and you’ll have a natural self-tanner!

Spiralized carrot salad

This recipe came about as a sort of accident.  I wanted to spiralize something, but it didn’t really go with anything else I was eating.  So I made it it’s own menu item.

With Vegas out of town, I wasn’t worried about it tasting too “strange” for her, so I busted out the nutritional yeast to use in the dressing.  It turned out not-so-strange tasting!  So much so that I re-made it for her to try the next night.  (I don’t even think she noticed.)

I loved the parsley in here.  It doesn’t compete with the mustard flavor.  It just lightens it up and gives the salad some green.  Plus it’s good for you!  Parsley is rich in vitamins, acts as a natural diuretic, can help control your blood sugar, promotes carbohydrate metabolism, and is an anti-inflammatory.

There’s one other particular benefit of parsley I always think about ever since Debbie told me about it.  Apparently, parsley makes your lady parts… errrr… smell pleasant.  You’re welcome.

Slow Cooker Sweet Potato and Chicken in Red Wine [Recipe]

2015: A #StrangeButGood Year

Happy New Year!!!

Please god let 2016 be a little more sane.

In true fashion, I spent this year in a #strangebutgood whirlwind.  I eloped in January, sold my condo in February, moved across the country in March, became certified as a trainer in April, honeymooned to Greece in May, helped my mom sell my childhood home in September, made my first money as an independent marketing consultant in December… and squeezed a lot of trips to Vegas with Vegas in between it all.

I thought I was someone who sailed through change, but it’s no walk in the park.  It may look like life is a party; however, the reality is that I have felt a lot of loss… I miss my hometown, my family, and my friends.  I’m still trying to get used to being jolted awake by a screaming bird, a parrot banging on a cow bell, and a dog incessantly whining.  Needless to say, I learned to cry.  A lot.  I feel like I am literally losing my mind sometimes.  I’m adjusting to living in a new city where I don’t yet have a tight group of friends.  Vegas has become my best friend as well as my wife this year.  (You should all feel sorry for her.)
