I’m not Crabby Smoked Gazpacho

September 25, 2012 By Laura

I’m a crab sign.

Admittedly, I can be crabby.  Like when some dude at the gym is reading TIME magazine on the captain’s chair.  Really?  You can’t do that at home?!

Despite the astrological connection, the last time I ate crab I was 7.  We were at the beach and my dad paid me $1 for every crab claw I could eat.  I ate 10 claws.  Greed > Gag

That was the last time I ate seafood until this year.  Incidentally, I also didn’t eat tomatoes until recently.  In another dad-related traumatic event, he gave me a big slice of tomato and told me it was watermelon.  I happily took a bite before choking it back up.  Talk about being crabby… not cool, Dad.

Thankfully I grew out of that.

Things I still won’t eat: caviar (he told me they were mini grapes) and sour cream (thought I was eating a spoonful of ice cream).

I also won’t east white potatoes, though I don’t remember a traumatic event associated with those.

I’m glad I did get over the crab and tomato hatred.  This tomato-based gazpacho is a tasty soup, and the meaty crab gives it the protein to fill you up.

One my favorite parts about gazpacho is its resemblance to salsa.  In order to leave those delicious chunky pieces of tomato and pepper, I reserved some of the soup when I blended the base.  After pureeing part of the mixture, I manually stirred in the rest of the remaining chopped veggies.

The other fun component here is the addition of liquid smoke.  It adds just a touch of… well, smokiness… as if you’d first roasted the tomatoes over wood chips.  It’s a fantastic way to add more flavor to dishes without adding salt.

If you don’t eat seafood, you can leave off the crab.  If you do eat seafood, you will love the rich, slightly sweet crab again the spicy soup.  Another option would be to top this with tempeh bacon, or possibly a firmly pressed tofu marinated in sweet citrus.

Either way, don’t skimp of the cilantro.  It’s wonderful with the late-season tomatoes and tangy lime. (Unless you don’t like cilantro… in which case parsley would be a fine sub!)

Crabby Smoked Gazpacho

  • 1 clove garlic
  • 1/4 c diced red onion
  • 1/2 C fresh cilantro
  • 1/2 jalapeno
  • 2 large tomatoes
  • 1/2 large red bell pepper
  • 1/2 cucumber
  • 1 T white wine vinegar
  • Juice of 1/2 lime
  • 5-6 drops liquid smoke (optional)
  • Crab
  • S & P, to taste

Place garlic, onion, and cilantro in blender.  Roughly chop remaining vegetables into 1 inch cubes.

Add 2/3 to the blender.  Pulse briefly to coarsely puree the contents.

Add remaining 1/3 of vegetables, vinegar, lime juice, and smoke.  Manually stir to combine.  Chill before serving, as the flavors develop the longer gazpacho sits.

To serve, top with fresh crab meat, fresh cilantro, and pepper.

Makes ~3 cups.

***

I still get crabby if I fall for something silly.  Scarred for life. 😉

Did your parents ever trick you into eating something you didn’t like?

What food(s) will you absolutely never touch?

Sorry I’m Not Sorry

September 21, 2012 By Laura

I’m exhausted.

After a killer leg day (more on that Monday), I’m too pooped to poop.  Good thing since I’m so sore I can’t lower myself to the toilet.

So today is a random post.  I hope you don’t mind. #sorryimnotsorry <— new favorite has tag.

1. Inspiration

I find this especially appropriate after the afore-mentioned leg day.  It’s contains some language (as my mother would say), but I think it’s appropriately used. #sorryimnotsorry

2. Things I Should Care About More At The Gym

I really loved this post from Sarah.  Flashing people accidentally?  I’m probably guilty.  #sorryimnotsorry

The Someecard pic she included was especially awesome… because I’m a klutz and have the shin bruises and oven scars to prove it.

3. Smoothie Demo

I’m doing my first “food” demo this weekend!  My trainer and his wife asked me to do a smoothie demo at their gym to show people how quick and easy it is to get a good protein punch.

There will be 4 blender recipes, including my Carrot Cake Protein Shake… and a new smoothies that I’ll post on Monday.  Confession: I’m nervous. #sorryimnotsorry

4. Jamaican Tofu Chowder with Collards

This vegan chowder recipe from Janet has been on my Soup Pinterest board for ever and I really want to try it now that it’s getting cooler.

Or Allie could just make it since she has too many collards and bring me some when she visits in a couple of weeks. *Yes, I’m that lazy right now. #sorryimnotsorry

5. Pumpkin S’Mores Cake

Does this really need an introduction?  I’m making this Pumpkin S’Mores Cake from Stephanie after my competition.  It could trump last winter’s Sweet Potato and Toasted Marshmallow Cake.

And I might eat the whole thing. #sorryimnotsorry

 ***

One more (did I take it too far?).  I’m ravenous today.  Leg day is an appetite booster.  #sorryimnotsorry

What is your #sorryimnotsorry today?

What’s your favorite recently pinned/bookmarked recipe or inspiration?

Boycotts and Friday Finds

July 20, 2012 By Laura

 Please excuse my soap box.

If you live in the South (a.k.a.: the land of Chick-fil-a), then you have probably heard the Chick-fil-a COO made a statement that Chick-fil-a supports anti-gay causes.  This isn’t a political blog, but I was outraged that I felt the need to speak up.

One of the great things about this country is our freedom of speech.  However… it’s hard for me to believe that in 2012 any company would waste their breath with such discriminatory sentiments.  Grow up, Chick-fil-a.

Yes, they have a right to do whatever they please with their influence and their money.  So do I.  That’s why I signed HRC’s pledge to let Chick-fil-a know that I don’t support discrimination.  And I can live without your waffle fries dipped in Polynesian sauce.

 *steps off box*

________________________________________________________________________________________

Now for some positive reporting!  It’s FRIDAY!!!  In honor of my favorite day, here are some of my favorite recent “finds.”

Products, recipes, and blogs I’ve been loving lately:

1. New Flavors

Cake Batter.  Sizzlin’ Bacon.  Double Chocolate.  Caramel.

My favorite is the Cake Batter.  The others were ok, but the Bacon was a little disappointing.  It’s basically like liquid smoke.

These were ordered online thru Capella… the Heather @ Kiss My Broccoli hipped me to the fact that they are even cheaper here.

2. Peach Protein Powder

The guys at my local nutrition store gave me a sample packet of this Peach Sensation protein powder made my Allmax Nutrition.  I wasn’t familiar with the company before, but I will be now!  This stuff was really good.  The ingredients are pretty clean, and it’s low in sodium and carbs, and contains no sugar.

I blended it with cinnamon, ginger, and a little water to make a spiced peach protein smoothie.

3. Runny Eggs, Protein Bagels, and Roasted Cauliflower

Ok, that’s 3 things… but they are all so good!  I got permission from my trainer to have an egg yolk!  this is big news because I am obsessed with runny eggs.  It goes perfectly atop my other new obsession – P28 Protein Bagels.  Just 1/2 a bagel has 14g of protein.  Egg + Bagel = 20g protein

I also am on a cauliflower bender.  Today’s was cheesy chocolate.  I kid you not.  1/2 tsp cocoa powder, 1 T nutritional yeast, 1 T rice vinegar, 2 drops lemon stevia.  Roast.  Devour.

4. Surprises in the Mail

I came home last night to a package from the far away land of Canada.

Meg @ A Dash of Meg sent me a bag of her favorite ginger-flavored David’s Tea!  If you don’t know Meg, you should.  This is literally the sweetest girl I’ve ever “met.”  And we have discovered we’re food twins.  And this tea smells like heaven.

5. Green Spiced Protein Pancakes

I have made some pretty bad pancakes in my day.  This was not one of those days.

When I saw this green pancake recipe by Sara @ Stories and Sweet Potatoes (isn’t that the best blog name?), I knew I had to give them a whirl.  My tweaks were:

  • Add nutmeg
  • Subbed 2 T of coconut flour for quinoa flour
  • Left out yogurt

I made the batter the night before and let it rest in the fridge overnight.  In the morning I dumped it in a well-greased (PAM) pan and made one tasty, gigantic pancake.  Note: Don’t skimp on the spices – go big in order to give the monster some flavor.

Topped with cinnamon, apple, and sugar-free maple syrup.

Bonus: Cold Soup

Ok, this is a little self-promoting, but I really have been loving cold soup in the hot weather.  So much so that when rockstar athlete and foodie Lauren @ Oatmeal After Spinning asked me to write a guest post for her, I decided that would be the soup topic du jour.

Click here to check out my Peach-Cucumber Chilled Soup guest post, and say hi the the vacationing Lauren!

Chilled Cucumber Spinach Detox Soup

June 15, 2012 By Laura

Jet lag.  3 out-of-control inboxes.

…and a big smile after a stellar vacation.

I can’t wait to share all the fun with you guys, but today it’s going to be short and sweet as I play catch up.

Yes, I ate the red meat, but surprisingly more fish (more popular in Chile).  I’m still committed to a plant-based diet at home though.  In fact, this is all I’ve wanted coming back today:

A chilled summer soup packed with green nutrients.

It was a bowl-licking moment.

Chilled Cucumber Spinach Soup

  • 1 cucumber
  • 2 C spinach
  • 2-3 celery stalks (don’t use if you are using a regular blender)
  • 1/2 jalapeno
  • 1/2 C cilantro
  • 2 T hemp seeds
  • 1 tsp apple cider vinegar
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon
  • 1/4-1/2 C water (adjust to your preference)
  • S&P, to taste
  • Optional garnish: radish, cilantro, red pepper flakes, freshly ground pepper

Toss everything in a Vitamix (or regular blender) and blend until smooth.

Adjust spices and liquid to your preference.

Serves 2.

You guys should see my Reader.  I missed you guys and I have a LOT to catch up on!

What was the best thing you ate/did in the past week?

Sweet Potato Leek Soup

June 5, 2012 By Laura

It’s a good thing I can’t reach the bottom of my Vitamix with my tongue…

…because I would have sliced it open trying to lap up the remnants of this soup.

Sweet potato with onion-y leek and rich garlic.  Add a little mid-eastern spice blend and some nutritional yeast.  Perfection.  Who cares if it is 85 degrees outside!

The spice lend I used is called ras hanout.  You can find the recipe here with my Babaganoush Soup post.  The base is cumin, ginger, turmeric, and cinnamon.  What’s not to love?

I was inspired to make this when I saw a few Potato-Leek Soup recipes pop up around the web.  The problem with those is that I don’t like white potatoes.  Only the orange for me!

I questioned how the sweet potato would be with the leek, but it actually works well with the mild onion.  Once sautéed, both the leek and the garlic flavors develop a richness that is perfect for a roasted sweet potato soup!

Sweet Potato Leek Soup

  • 1 C vegetable stock (I used low sodium)
  • 1 small sweet potato, pre-baked
  • 1 leek, sliced about 1/4 in thin
  • 1 clove garlic, minced
  • 1 T nutritional yeast
  • 1 tsp ras hanout spice mix
  • Cilantro (optional, to garnish)

In a medium-sized pan (or pot if not using Vitamix), saute leeks with a bit of water, oil, and/or vinegar (basically, you’re just adding some liquid so they don’t dry out and burn) over medium heat just until tender (~7-8 mins).  Add garlic and saute ~2 mins more until golden and fragrant.

If using a Vitamix: Place all ingredients in Vitamix and blend on high until hot (6-7 mins).

If using stove top: Mash sweet potato (doesn’t have to be perfect – a rough mash with a fork works).  Combine all ingredients in the pot and stir to combine.  Let the mixture come to a boil for 10-15 minutes to allow flavors to combine.  Remove from heat.  Pour into a blender or use an immersion blender to mix until smooth.

Optional: Garnish with cilantro and freshly ground pepper.

Makes 1 large or 2 small servings.

One more day until ARGENTINA!!!  P.S. That giant bag of spinach is almost gone.

Do you eat soup in the summer?

What is your favorite airplane snack?  I need some trip-packing inspiration!

Will Blog for Food

April 24, 2012 By Laura

Food is my favorite topic.

When I was my friend Parita @ My Inner Shakti post this quiz about her food preferences… well, I was a little too jazzed to fill it out.  Honestly, I probably would have completed it even if I wasn’t going to share it on the blog.

***Warning: there are a lot of yummy junk food-related questions.  Do not fill this out late at night near a plate of brownies.  Not that I would know anything about that.***

________________________________________________________________________________________

Coke or Pepsi?  I quit drinking soda at least 8 years ago… but Coke is far superior to Pepsi.

Lemonade or Fruit Punch?  I don’t drink a lot of juice either, but I do love homemade lemonade on a hot day.

Carmel Apple or Cotton Candy?  It’s been years since I’ve had either!  I have to say the caramel apple wins – that used to be a “treat” for us as kids when my parents took us to the mountains.

Butterfinger or Snickers?  Really tough… but I’m going with Snickers.  Especially if it’s frozen.

Pudding and Jell-O?  No contest – chocolate pudding.  I cannot stand jell-o (sorry, Bill Cosby).

Turkey or Chicken?  I haven’t had either since Janurary-ish, but I always preferred chicken to turkey.  Turkey is always dry!

American or Provolone Cheese?  Neither?  I like stronger cheeses such as goat, gouda, and really funky blues.

Crackers or Cookies?  Silly survey.  Cookies > Crackers.  Particularly if they are homemade and chocolate.  Like these Chocolate Sea Salt Cookies:

Pretzels or Chips?  Chips – but they have to be the fancy kind from places like Whole Foods – Sweet Potato or Salt & Pepper flavors are my favorite.  No Lays here!

Mexican food or Japanese food?  Yet another silly question.  I love Mexican.  The hotter the better.  I even eat it for breakfast in this Raw Mexican Bulgur Bowl:

Chinese food or Italian food?  Italian food.  In Italy.  Did you check out my food and wine tour back in October?

Pie or Cake?  Cake.  The chocolate kind.  Though one of my favorite quotes is about pie: “When you die, if you get a choice between going to regular heaven or pie heaven, choose pie heaven. It might be a trick, but if it’s not, mmmmmmmm, boy.” – Jack Handy

Ice Cream or Cookies?  It’s seasonal – I love a fresh-baked cookie, but on a hot summer day ice cream wins every time.  Either way, it must involve chocolate. 🙂

Pasta or Pizza?  Pizza – but it must be “real” Italian-style pizza.  No Pizza Hut here.

Soda or Juice?  Kombucha!!!

Chocolate Bars or Chocolate Truffles?  Truffles.  Dark chocolate and filled with something boozy like whiskey ganache.  This quiz is making me HUNGRY.

Apples or Bananas?  Apples!  I love them as a pre-workout snack.

Salad or Soup?  Salad… unless it’s really cold outside.  Then I want this Butternut-Apple Soup:

Cauliflower or Broccoli?  Just a year ago I would have said neither.  However, with all of the fun cauliflower recipes floating around the blog-world lately, I’ve caved.  I love cauliflower.  Still won’t touch the cooked broccoli (raw is ok).

Onion Rings or French Fries?  Onion rings of they aren’t too greasy.  Fries if they are sweet potato and have a kick to them.

Blizzard or McFlurry?  Blizzard!  With Snickers.  I’ve never even had a McFlurry.

Fried or Poached Eggs?  Fried eggs – cooked perfectly and over an english muffin with truffle salt.

Crepes or Pancakes? Pancakes!  Can’t beat a fluffy stack covered in syrup green slime protein icing and blueberry sauce:

Hashbrowns or Roasted Potatoes?  I don’t actually like potatoes, so I’m going with hashbrowns “well-done” (so you can’t tell they are potatoes) with onions and jalapeno.

Oatmeal or Cereal?  Oatmeal.  No contest!

Facebook and Eating Disorders + WIAW

April 4, 2012 By Laura

Facebook may lead to eating disorders.

Last week it was narcissism, this week it’s eating disorders.  Poor Facebook is taking a hit!

A new study that found that “51% of respondents felt more self-conscious about their physical appearance after looking at pictures of themselves on Facebook.”  These Facebook users are checking out their friend’s photos, which leads them to be more critical of their own physiques.

I don’t know about this… you can compare yourself to other people just walking down the street.

Want to know how to feel better?  Eat some veggies!

Yesterday I asked you all to join me in the Green Giant Veg Pledge to add an additional cup of veggies to your daily eats.  Jenn @ Peas and Crayons is also taking part in the challenge, so this month her  What I Ate Wednesday theme is…

Check out my veggies below; then click here to see how everyone else incorporated extra servings.

Breakfast:

Do you ever wake up starving?  After Sunday’s jam-packed day of softball and plyometrics, I was in need of an extra-filling breakfast.  I mixed this concoction and let it sit in the fridge to thicken (~15 mins) while I downed a glass of water and got the coffee started.

Those blackberries on top were incredible – the first perfect berries of the season!

In my oat bowl:

  • Rolled oats
  • Chia
  • Greek yogurt
  • Chia seeds
  • Unsweetened almond milk
  • Vanilla extract
  • Cinnamon
  • Blackberries

Lunch:

I failed to take a picture of the final result… but here’s what my veggie-centric lunch consisted of:

I am fully aware that gazpacho is easy to make yourself… but with my crazy schedule, Whole Foods’ soup had to happen.  It was delicious with some red pepper flakes and avocado (unpictured) on top.

I devoured this with some spinach, broccoli slaw, and ak-mak crackers.  These crackers were new to me – they were delicious and reminded me of Wasa crisps.

Snacks:

It was a snack-y sort of day – handfuls of this and that here and there.  A few munchies:

KIND bars are my new addiction

Bowls of grapes and edamame

My two favorite drinks - coffee and kombucha

Dinner:

I was starving by dinner time.  You know what that means…

All that remained were 2 strips of tempeh when I remembered to take a pic.  My cousin and I hit up a local vegetarian spot called World Peace Cafe for dinner.  It was my first time there, but certainly won’t be the last!

That tempeh was sitting on top of a huge salad with shredded beets, carrots, and tomatoes.  On the left is a bowl that held a delicious mushroom–kale–lentil soup.  The crumbs around to bowl belonged to a slice of rye toast.  The tea pot in the background was filled with lemon-gnger tea.

We also split a piece of vegan chocolate-almond cake.  It was divine.

***

Adding veggies isn’t so hard… I think I could eat edamame all day long.

Did you incorporate an extra veggie serving to your day?  If so, how?

Any thoughts on the Facebook story?  Do you think it’s any worse than the millions of other way you can compare yourself to others?

Feeling Irish on a Green WIAW

March 14, 2012 By Laura

I’ve never had a Shamrock Shake.

Out of curiosity I want to try one of the “healthy” Shamrock Shakes everyone has been posting… but I really don’t like mint desserts.

This time 2 years ago I was in Ireland!  Time flies… I was there on St. Patrick’s Day by accident.  When I booked the trip that happened to be the week I had free.  It wasn’t until we were leaving that I realized it was St. Patrick’s!  Only me.

Check out my Top 5 Things to Do in Ireland and the souper spinach-asparagus soup pictured below by clicking here.

Since I don’t post on weekends, it seemed that today is the perfect time for an Irish shout out because it’s a green-themed What I Ate Wednesday.

Green is my favorite food-color; however, I managed to fail a little at eating food that was colored green.  It was all plant-based though!

Breakfast:

Surprise, surprise… I had a smoothie!  Thank god it’s getting warmer because my smoothie addiction is only growing as I find more and more things I can thrown into the Vitamix.

I’ll be drinking all of my smoothies this week from my trusty Guinness pint glass. 🙂

In my smoothie:

  • Spinach
  • Raw beet
  • Carrot
  • Cucumber
  • Celery
  • Flax meal
  • Ginger
  • Maca
  • Vanilla protein powder
  • Unsweetened almond milk
  • Almond extract
  • Stevia
  • Ice + water

Lunch:

Salad box!  This is such a convenient way to travel – I toss veggies and dressing in a half-eaten container of greens to take to work.  Easy and there are no dishes to clean up!

In my box:

  • Broccoli sprouts
  • Broccoli and carrot slaw
  • Cabbage
  • Celery leaves
  • Celery
  • Spinach
  • Asparagus
  • Spicy Peanut Flour Dressing

Snacks:

I was bad about picture-taking with all my snacks.  Un-pictured was a kombucha, a sweet potato with nooch, and a handful of almonds.  My Piñata apple did make it (barely)!

A new (to me) waffle was scarfed down as well.  I normally buy the Kashi brand, but I liked this Nature’s Path waffle even more!

The actual waffle didn’t make it to the camera, but I assure you it was delicious with protein sauce (protein powder, almond milk, cinnamon, and stevia).

Dinner:

Parsnip rice finally happened.  I think I like it even better than parsnip fries!  I enjoyed it with roasted veggies and a cashew-curry sauce that will be posted tomorrow!

Doesn’t it feel like it should be Friday already?

Vote-begging time! I was honored with a nomination as a “Best Healthy Eating Blog” for the 2012 Fitterati Blog Awards on FitnessMagazine.com.  Not to sound desperate (I’m never going to reach the 400+vote mark, I know), but pretty please click here and vote for me. 🙂

How are you celebrating St. Patrick’s Day this year?

Have you ever traveled to a city/country specifically to celebrate a holiday there (other than to grandma’s house for Christmas 🙂 )?
