Being reduced to crutches has given me a lot of time to catch up on stuff.

And drink wine… but that’s neither here nor there.

Today I thought I’d share a list (does this count Meghan?) of some of random things I’ve been up to and/or loved lately – recipes, articles, things we’ve been up to… all marvelous.  I’m bored, can you tell?

1. Did you know Glutamine is good for IBS?  Vegas has IBS big time.  She’s got some gummies headed her way this week!

A Relaxing Weekend

This weekend was relaxing.

 

My version of relaxing… which is active relaxed.

This was the first weekend in a long time where I didn’t HAVE to do anything productive.  I still did lots of things, but it was nice to not have a set agenda.

Friday night I had an impromptu dinner with my mom at local Italian restaurant Double Zero.  We had a great time catching up and eating. I hadn’t seen her since my competition!

My favorite dish was the grilled octopus with pancetta hash, asparagus puree, and citrus vinaigrette, but the lamb farro was a close second.  It was a smoke and braise lamb shoulder with apricots, figs, fresh ricotta, and a poached egg.  Next to all that the beet salad was underwhelming.

This next morning I woke up ravenous, so I threw together some quick pancakes.  I am not the Pancake Queen, so I was surprised when they turned out to be quite good!

I posted this Almond-Chocolate Pancake recipe here.  The topping was the icing on the (pan)cake. I used Lorann Oils Irish Cream flavor in it!

Then it was off to the gym for a glute workout with some of my teammates.  I normally workout solo and forgot how much fun it is to have a gym morning with friends!

After the workout we stood around talking about food (of course), and my friend Rachael revealed she hadn’t been to Whole Foods before!   I suggested a post-workout trip and off we went.  2 hours later, we were full of samples and hot bar boxes and Rachael learned why we lovingly call it “Whole Paycheck.”  She Instagrammed her finds – have you ever tried any of these items?  Black bean pasta and no-salt mustard are awesome!

Saturday night I had a friend date with Kat.  I’ve been looking forward to catching up with her for weeks!  We talked and laughed for hours. You know those friends who just “get” you?  That’s Kat.

We ate at the bar at Kimball House.  Their cocktail program is incredible!  Their take on a Manhattan used cola bitters – coolest thing ever!  The food was ok… I’d go back for a pre-dinner drink or a nightcap.

Sunday was a beautiful day in Atlanta.  It was sunny and there wasn’t a cloud in the sky!  I decided to go for a run and enjoy the weather… as soon as I stepped outside I realized that – despite the sun – it was in the 30s.  About a mile into it I thawed out and enjoyed myself.

I love the trees with the red leaves.  They look like they’re on fire!

 

When I returned I had a lot to do in the kitchen.  All fun creations!  It was kombucha-brewing day.  I have been brewing my own for over a year now.  It’s really easy, especially if you have a starter kit (you need a “mother” called a scoby).  Mine was from Brooklyn Kombucha, but you could also beg a friend who brews for a scoby.

This week’s flavors are cranberry-ginger-lemon and blackberry-lemon-mint.

I also did some baking for the Sunday evening end of season party at my training gym, House of Payne.  I’ll share my #strangebugood brownie recipe next week. 😉

This is what happens when a bunch of competitors get together for a post-season party.  It’s ok… we’re bulking… 

 

There were plenty of green veggies, clean sweet potato casseroles, and protein.  That pic just wasn’t as much fun.

I am so thankful to have found Steve and his gym.  This group of competitors is top-notch.  Everyone is kind and always willing to lend a hand.  They are funny, genuine people who I am proud to be associated with.

Many of these are new to me – toffee stevia, Walden Farms caramel, and the peanut butter protein powder.  I have been out of tahini and coconut flour for a while, so I’m excited to use those again.  I bet I can use it all together!

Do you think I got enough peanut flour?  I love that stuff.  It’s better than the other stuff (ahem… PB2) because it’s just the de-fatted nuts.  No added sodium or sugar.

This WIAW was a good one.  I was much more prepared this week to stick to my plan.  I’m using more quinoa to help me hit my carbs.  This time I made extra to keep in the freezer for quick access next week too.

Breakfast:

Of course I had my morning cocktail (apple cider vinegar, water, Glutamine, and Fitmixer Aminos) to start my day out right.

Then it was on to the #yolkporn.  I made Toad in a Hole with my P28 bread and local eggs.  I ate it with a side of kiwi and cottage cheese mixed with cinnamon.

Mid-Morning Snack:

This was my post-workout refuel.  I made a Chocolate-Beet Protein Smoothie with extra spinach.  Topped with my custom granola and blueberries.

Side note: It drives me insane when people call them “bloobs.”  Is that silly?  #sorryimnotsorry

Lunch:

Cod that I baked in marinara sauce and mushrooms with a side of quinoa mixed with hummus, white bell pepper, and broccoli slaw.

It was pungent, so I also had one of the office soft mints. 😉

Afternoon Snack:

Sandwiches aren’t a staple in my life, but I’m really liking them lately!  This was turkey made at the local farmer’s market on Ezekial bread with local greens and hummus.

The salad was a Quinoa Tabbouleh.  The recipe will come tomorrow!

 This is when the day got awesome.  I left work to get a massage… where I realized exactly how badly I need to get them regularly.  My back was a knot forest.

Kombucha is good for muscle recovery, so naturally I headed to Whole Paycheck Foods to get a one on tap.  And a few other things I didn’t really need.

Dinner:

Ripped Recipes shared my Cheese-less Cauliflower Crust recipe on Instagram last night… which sparked a craving.  Pizza time!

I topped mine with marinara, broccoli slaw, baked tofu, and a slice of Daiya Provolone.  I eat cheese, but I actually love Daiya.  I do not; however, think it tastes like real cheese.

I am finally getting smart about making this pizza – I make a few crusts at a time to keep in the freezer for quick week night dinners.  MUCH better than pizza from the freezer section!

Side note: I recently discovered and really like Ripped Recipes as a resource for creative, protein-rich ideas.  Have you guys ever heard of them?

Dessert:

I really, really love carrots.  Hence – once again – my Carrot Cake Protein Batter.  I added some of the protein powder from my iHerb box and used a tiny bit of the Walden Farms caramel.  Both were a little fake.  The custom granola crack and the figs were good!

Sweet Potato Ribbons + Other Marvelous Things

Sometimes you need a hug.

 

Other times you need to punch someone something.

This weekend I needed a hug.  Lately I’ve been feeling like I’m chasing my tail.  I’m frustrated with where I am and I need to ACT.  Marvelous is being honest about needing a hug and getting a bunch of love from Facebook land.  Marvelous is unplugging with a movie and popcorn on the couch.  Marvelous is a wise friend telling you what you needed to hear:

“You have everything you want right in front of you.”

Branching out.  I’ve taken a brief break from kabocha.

Sweet potato may not be an earth-shattering ingredient, but this dish stopped me in my tracks.  Let’s put it this way, there was Sea Bass on my plate and I still saved the sweet potato ribbon as my last bite.  The privilege of being the last bite is a serious thing.

I have no idea why I don’t cook with coconut oil more.  I tend to reach for olive oil… but definitely go the coconut route in the recipe.  It’s absolutely delicious with the sweet potato and softens the slight bitterness of the greens.

I enjoyed this with a side of roasted beet that was a great compliment to the sweetness of the potato.  The beet was topped with a Greek yogurt curry sauce that I threw together.  Just 2 T Greek yogurt, 1/2 tsp curry powder, and a wedge of lime juice.

 Sweet Potato Ribbons

Sweet Potato Ribbons

  • 1 small sweet potato
  • 1/4 tsp coconut oil
  • 1 T fresh rosemary
  • 1 C greens (I used red spinach)
  • 1/4 tsp cinnamon
  • Juice of 1/2 lime
  • Pepper, to taste

 

With a very sharp knife or a mandoline, carefully slice sweet potato lengthwise into thin strips.  

Once sliced, use a knife and cut them to about 1/4-1/2 inch thickness and set aside.

Heat a medium saute pan over medium heat, grease with a bit of oil, and add in sweet potato ribbons.  Continually stir until cooked through to desired doneness (~6-7 mins).

Add coconut oil, rosemary, and greens.  Stir and cook until greens are just wilted.  Sprinkle in cinnamo nand lime juice to finish.

Plate and top with freshly ground pepper (if desired).

Back to Reality + WIAW

A smart blogger would have posted a “What I Ate on Vacation” today.

I got too excited and posted my favorites on Monday.

There are a few things I didn’t yet share from Napa (besides the wine – that post is coming!).

The thing that earned me the strangest look from Lisa was probably my extreme excitement over seeing GT’s Classic in the CalMart (not to be confused with Wal-Mart).  The Classic is the version GT’s was forced to quit selling at many major markets due to the alcohol content.  This is silly.  Kombucha is fermented tea… but there’s not even enough booze for a buzz!  I chose the Gingerberry and didn’t get drunk in the least.

This next item DID pack a punch.  A Maple Bacon Manhattan from JoLe.  It was bacon-infused rye, Carpano Antica, and maple syrup… with a side of candied bacon.

I was only going to have a taste… but holy yum.

Lunch somehow was missed in my Monday food post.  Our driver in Napa recommended that we try a new concept called R+D Kitchen.  It’s owned by Hillstone, which makes it a chain (I’m morally opposed to eating at chains)… but we bit the bullet and tried it out.  So very glad we did!

As with Houston’s, the food and service were top-notch.  We shared toasts to start – one with hummus and one with goat cheese and figs.  The hummus was very good – heavy on the tahini, which is ideal in my book!

For my meal I ordered a omelette with spinach and goat cheese.  It may look funny, but the omelette was fantastic.  It was done french-style.  It’s difficult to find a good one, but they executed it flawlessly!

It also came with roasted tomatoes and a side salad.  Those tomatoes made the meal!

I know this is getting long… but one more!!!  Remember the “scenic” walk to dinner I took my friends on?  I think this view at Sol Bar was worth it:

Most of the meal was too dark to take pics of and we were in such a night place I felt wrong using a flash (*gasp* I do have some shame).  The entire meal was mind-blowingly delcious, and our server couldn’t have been more fabulous.

I did get one decent shot of my birthday dessert.  Chocolate Decadence with Ortiz Farms raspberries, soft cream, and cocoa nib dentelle. Words cannot describe.  It’s the last (30th) birthday cake I’ll have, I swear.

This day of WIAW eats was fun for me!  Monday morning I woke up to find that my fridge and freezer were not working.  After a brief panic, I managed to get a handyman out and have the thing fixed for less than $150.  It was also the perfect excuse to clean out my food stash and restock!  Restocking is the best – the farmer’s market didn’t know what hit it!  I was SO excited that I got home and did my food prep right then.  Snapper, cod, gazpacho, roasted kabocha, and bison burgers.  At 9pm.  🙂

Breakfast:

My morning cocktail (apple cider vinegar, water, Glutamine, and Fitmixer Aminos) is still going strong.  I am now so addicted that I brough the Fitmixer to Napa and purchased a bottle of ACV from the market there.

Something lit a fire under my butt, because I woke up in the mood to run sprints.  I can’t explain it.  Anyway, after the humid 30 minute run I couldn’t think of anything but a smoothie bowl.  Cold and now chewing required.  Does anyone else have a hard time chewing foods after workout?

In my smoothie:

  • Vanilla protein powder
  • Wheatgrass
  • Spinach
  • Cinnamon
  • Fresh ginger
  • Lemon liquid Stevia
  • Cardamom
  • Toppings: plum and raw oats

Lunch:

I was so excited for this meal that I didn’t bother with my usual mid-morning snack.  During my Monday night food prep I roasted snapper with cilantro, fresh ginger, lime juice, pepper, and cherry tomatoes.  That was eaten for lunch along side a cup of gazpacho and a bag of veggie Pirate’s Booty.

Afternoon Snack:

Despite having had a hearty lunch, I was still unnaturally excited for my afternoon snack.  Bison burgers!  I’ve been craving them for a long time.  This burger was so easy – I just mixed each patty with steak sauce and added red pepper flakes before cooking them in a pan.

I don’t use pre-made sauces often, but I did find this Robbie’s Naturals brand a Whole Foods that I love.  It’s low-sodium, low-sugar steak sauce.  (I also dig their BBQ sauce.)

The side salad was also delish – red spinach, zucchini, asparagus (it’s been long enough to bring it back), shiitake mushrooms, thyme, lemon juice, and black pepper.

Dinner:

I’d been thinking of this all day long.  Sea Bass.  I think it’s passed swordfish as my favorite fish.  I ran home from my workout, coated it in thyme, rosemary, garlic, black pepper, and lemon juice before putting it in the oven for 12 mins (400 degrees on convection roast).

This gave me time to prep my salad: red spinach (nothing like spinach – it has a thick stem and is a little spicy), cherry tomatoes, and Persian cucumber.

Obviously I needed carbs after leg day, but I saved it for a little dessert…

Kabocha squash!  I roasted it as instructed in Friday’s #strangebutgood post and topped it with Peanut Butter Cannoli.

Dessert:

Nothing wrong with two desserts!  I almost had more roasted squash but decided to aim for variety.  And #strangebutgood-ness.

Shredded carrot, no salt cottage cheese, cinnamon, stevia, ginger, and vanilla topped with chocolate protein fluff made from vanilla protein powder, cocoa, beet powder, and stevia. Topped with massive blackberries and cacao nibs.  Just trust me.  It’s good.

Marvelous in My Random Monday

Making it reflective of the thoughts that run through my head.

I’m really loving the idea of focusing on why life is good on my (former) least favorite day of the week.  Katie’s Marvelous in My Monday link up is a great reminder to keep the good weekend-vibes up!

There was a lot of awesome this weekend.  Most of it is completely unrelated… if you aren’t a fan of unfocused posts this will drive you nuts. #sorryimnotsorry 😉

At the end of last week I was inspired by a FitFluential twitter chat to make my own standing desk at work.  I’ve long been a fan of sitting on a stability ball at work, but I still dislike sitting ALL day.  In a big company it’s hard to get approval for a fancy standing desk, so I did a little improv:

Side note: I made it through cookie season only having eaten 1/2 of a Samoa.  I would have eaten a Tagalong, but never did find a box of those lying around.  No one wanted to share the best flavor ever?!

 

Saturday morning called for pancakes.  I finally got around to trying out the Strange But Good pancake recipe Alina shared a couple of weeks ago.  Her Chocolate Chip Cookie Pancakes were inspired by my Oatmeal Cookie Shake!  I loved the creativity.  Please overlook my inability to make brown food look appetizing.  These were amazing.

My only modifications were to replace the 2 T of banana with more pumpkin puree and to use carob chips instead of chocolate chips.  The nutritional yeast in these (and the shake) may sound strange, but it makes the recipe!

I topped them with sugar-free syrup, but they honestly didn’t need it.  Next time I’m eating them plain like a cookie.

 

After my workout, I did a little shopping.  I don’t know what happened, but over the past couple of years I have totally lost interested in clothes shopping.  I’d rather buy workout clothes and fun groceries!  Saturday’s goal was to buy new clothes for work, but instead I found a jacket and some lip plump.

This jacket was on sale and then an addition 40% off at Banana Republic – $180 jacket for $90.  Score.

And the lip plump… that was an impulse buy at Sephora.  It added a little more pout to lips, but it tingled more than anything!

Saturday night I had a date with my best friend for the first time in MONTHS.  I really missed her!  We had a fabulous meal at Miller Union.  One of my favorite ways to eat is to order a bunch of small plates and a single entrée to share.  I have to try everything!

This is round 1 of the small plates.  A kale salad with pecans, fennel, and orange and grapefruit segments, massaged with creme fraiche dressing.  In the middle is a feta cheese dip with fresh veggies.  And wine.

Sunday was going to be a rest day… but I got restless.  And I had some wine to sweat out.

I popped in my old DVD standby – P90X Plyo.  After all that bouncing I had to get a calf shot.  My trainer has had me doing weighted calf raises 3x a week to elongate my calves… but I never really believed it was possible.  Now I think it actually worked!

I refueling with an old favorite: my Carrot Cake Protein Smoothie.  Xanthan Gum is one I’ve used for a long time to thicken smoothies up, but after this Butternut Banana Shake post I took several of your suggestions and bought Guar Gum to use too.  What resulted was a creamy concoction so thick I ate it from a bowl with a spoon.

Xanthan was great for getting smoothie thick, but that Guar really amped up the creaminess.  Definitely worth a try if you don’t already use it!

 

After my workout I heard a massive thud.  I wasn’t sure what it was, but I live in a city.  I have become accustomed to tuning out noise.  I’d totally forgotten about it until I left for the farmer’s market.  That noise was this happening:

After days of rain storms, this huge old tree split at the base.  The marvelous part?  That building is abandoned and no one was hurt!

 

Finally, one of my favorite activities.  Kombucha brewing!  I love kombucha, but it does get pricey.  Months ago I purchased a Brooklyn Kombucha home-brew kit on Open Sky and I brew my own stash every week.  It’s unbelievably easy.  Click here to head over to Open Sky if you’re interested in starting!

I’m a Brewer

True, a fair amount of this happened last weekend:

However, the brewing I’ve been doing doesn’t involve beer.

I bit the bullet and decided to brew my own kombucha!  There are “how tos” all over the web for starting from scratch and growing your own scoby (the bacterial component you need to start the process).  While that seems very noble, I took a short cut and purchased a starter kit from Kombucha Brooklyn.

 

 

The kit came with everything I needed – a jar, tea bags, sugar, and a baby scoby.  All I has to do was follow their simple instructions, cover the jar, and wait 14-28 days.

For the record, mine took 20 days.  I’m not exactly sure how to tell when it’s ready… I just got bored with waiting.

 

 

The process was fun to watch.  It bubbled a little and my scoby-starter grew huge!  It covered the top of the ‘buch and was about 1/3 inch thick.

Once it’s done, you remove the scoby, saving it along with 1.5 cups of the brew to start your next batch.

 

 

Warning: The scoby is a little gross looking.  Don’t be scared.  It won’t hurt you.

 

Next I bottled my ‘buch in old GT’s Kombucha bottles and a Bragg’s bottle.  Then I added flavors to two of them – one ginger and one cinnamon.  The others I left plain.

 

 

They are all pretty tasty, but next time I’d add more flavor.  I’d also remember to let it sit on the counter bottled for a few days.  That apparently adds more effervescence and allows the flavors to develop as it continues to ferment.  Someone didn’t read all the directions…

I drink a lot…

 

 

…of KOMBUCHA!

At $3 a bottle, it’s an expensive habit.  When Stacy Tweeted to tell me about a deal on OpenSky (click for invite!) for a Kombucha Home Brewing Kit  from Kombucha Brooklyn I jumped at the opportunity.

 

 

My kit came with a jar, tea bags, sugar, and my very own scoby.  The instructions were idiot-proof easy to understand… with very little effort I’m 14-28 days away from home-brewed kombucha!*

*I fully realize that you can brew Komubcha without buying a kit.  Still, $30-something to get started is still less than what I spend on the stuff at Whole Foods.  And I actually DID it.

Two weeks ago marked the beginning of the Green Giant Veg Pledge to add an additional cup of veggies to my daily eats.  Despite some terrible food choices over the weekend (french fries happened… I can’t say I regret it), I’m back on track this week and greening it up with everyone for What I Ate Wednesday!

Breakfast:

After a quick tabata-style workout found on Pinterest, I needed to cool down before getting in the shower.  Don’t you hate when you’re still sweating AFTER getting out of the shower?

 

I slurped down up a little Liquid Sweet Potato Pie Smoothie topped with hemp seeds while I got a head start on work email.

 

Lunch:

Massive collard greens are everywhere in Georgia grocery stores.  Traditional Southerners cook them with things like ham hocks.

Not me!  I use the greens as raw taco shells!

 

I filled my “tacos” with raw asparagus, carrots, celery, cucumbers, red pepper flakes, and a massive amount of my new favorite hummus.  The spinach-flavored hummus is made by a company called Roots.  Not sure how widely available it is, but I found this a Whole Foods. The rest of the container was enjoyed with some Sesame Wasa crackers on the side.

 

Snacks:

Unpictured was the daily Kombucha, a piece of dark chocolate, and handful of cashews.

An apple with peanut butter and a surprise from Nature Box did make it for a photo shoot:
 
I really loved the Smokey Pepitas and Dried Pears.  More to come on this awesome company later! 

 

Dinner:

Baked is my favorite way to do tofu.  The outside gets all crunchy and the inside becomes marshmallow-fluffy.

Tonight’s dinner was a Baked Sesame Tofu with lemon roasted asparagus and an heirloom tomato.

Tomato season has arrived down South!  That was the sweetest tomato I think I’ve ever had.  I made the mistake of cutting the tomato too early… only 2 little slices remained to go with dinner.

What was left of my tom was delicious with the light spice and nuttiness of the tofu marinade.  Recipe to come tomorrow!

 

 

Dessert:

It was a healthy post workout dessert – a chocolate protein shake topped with cereal.  Packed with spinach, of course.

I can’t believe I didn’t like tomatoes until a couple of years ago.
