Forced rest is tiring.

This may be the understatement of the year.

Energy begets energy… sitting around does just the opposite.  Come 4 o’clock, my eyes have been glazing over and I am ready to be done working.  Since that’s not an option, I’ve been enjoying a new pick-me-up.

I 100% love the taste of both the chocolate and vanilla.  I didn’t notice a sky-rocket effect on energy, but I did wake up after eating my smoothie bowl.  At 4p, this was a great snack to curb hunger and tide me until dinnertime.

Unable to simply mix powder with liquid and drink it, I created a Cardamom Cheesecake Protein Bowl for my afternoon snack.  With spinach… because isn’t everything better green?!  The cardamom and ginger made for a fun, refreshing flavor on a hot Atlanta afternoon!  (Recipe at the bottom)

I went to the Monday Night Brewery on Friday night.  They were the location Gather‘s launch party.  It was awesome.  Lots of good food, good beer… and beer rests in the bathroom.

Saturday I took shots.  Juice shots, that is.  This is called the “Grand Slam” at Arden’s Garden.  It’s shots of wheatgrass, ginger, lemon, and cranberry.  That ginger is intense.  They also gave me a little smoothie sample to chase it with.

Cardamom Cheesecake Protein Bowl

Cardamom Cheesecake Protein Bowl

  • 1 scoop Designer Whey Sustained Energy (or other protein powder)
  • 1 C fresh spinach (optional)
  • 1/2 C no-salt cottage cheese
  • 1/2 in piece fresh ginger (or /14 tsp grated)
  • 1/2 tsp cinnamon
  • 1/4 tsp fresh cardamom
  • Ice, to taste

Place all ingredients in blender and blend until smooth.  Add additional ice to achieve thicker, ice cream-like consistency.

Sweet Corn (Protein) Shake

Since discovering my love of corn, there is only one thing to do.

Besides simply “eat it.”

Turn it into a smoothie.  Duh.  You have to trust me on this one.  Corn seems strange, I know.  but it’s good.  I mean… have I lead you astray before?!  Don’t answer that.

Raw corn is super sweet.  Actually most raw veggies are sweeter to me raw than cooked.  This makes them perfect candidates for smoothies – Carrot Cake and Zucchini Bread smoothies happen weekly in my house – and you KNOW I add spinach to everything.

The avocado adds creaminess to the smoothie.  You could also use banana (I was out).  I never finish a whole avocado before it goes bad, so I eather bake with it or cut the leftovers into slices and store it inthe freezer for smoothies.

Lemon may seen weird, but that zestiness can actually bring out sweet flavors.  I added just a twist here!

Ginger also gives this drink it a teeny zing… you could leave it out, but remember it (and lemon) is a great detoxifier!!!

Sweet Corn (Protein) Shake

  • 1/4 C raw corn
  • 2 T avocado
  • 1 scoop vanilla protein powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/4 tsp ginger
  • 6-7 drops vanilla liquid stevia (or sweetneer of choice)
  • 1/2 cup almond milk (or other liquid)
  • Ice, to taste
  • Optional: squeeze of lemon, xanthan and/or guar gum (to thicken)

Put everything in the blender and mix until smooth.

Slurp away!

What I Ate at Blend

Everyone in a while you meet total strangers who aren’t.

 

I swear that made sense in my head…

I hope I’m not the only one that feel like they “know” bloggers.  So many of the fabulous ladies I met at Blend this past weekend are bloggers I’ve been reading for so long that I felt like they were my “real” friends already!

Rather than a “traditional” WIAW post, today is all about What I Ate at Blend!  We were totally spoiled all weekend, and I’m still enjoying all the tasty schwag-bag selections at home. 🙂

Friday:

We arrived at the hotel excited and famished from travel.  Famished.  The schwag gods were smiling though… check out all the goodies we had to munch on: protein from Vega, Zevia, SoyJoys, a Lara Bar, muesli and granola from Bob’s Red Mill, Attune Foods chocolates, Healthy Bites (so in love)…. and more!

After a photo ops, we gabbed, snacked… and headed to event #1: a pre-happy hour with Justin’s Nut Butter!  I was careful to sample everything, but stopped for a pic with one of the lovely organizers – Katie!

My top butters were: Maple Peanut and Chocolate Hazelnut.  They were even better on Attune Foods graham crackers.  All I needed was some apple juice.

The kind folks at Silk must have wanted to make absolutely sure the Blends were happy, so they set up a Happy Hour where we could unwind from travel and begin the photo-taking frenzy.  Heather was patient enough to take a gorgeous pic of her ginger-Silk drink.

There was also an amazing buffet of black bean cakes, veggie summer rolls, and cute veggie sticks in jars (how did they know bloggers like Mason jars?!).  Let’s pretend like I didn’t attack this… the temptation was too tasty and I couldn’t wait until dinner!  Plus, we all know it’s bad to drink on an empty tummy. 😉

Dinner itself was off the chain.  It was a buffet… but a good buffet.  Normally I’m anti due to the rogue dirty hands and food sitting out too long.  That didn’t happen here.  My Blends were nice and clean, and the hotel staff couldn’t have done a better job and keeping the food refreshed.

There were salad options, quinoa patties, roasted veggies, chicken breasts, and lemon-y fish filets.  There was literally something for everyone!  And it was all good!

No dinner is complete without dessert!  there was Chobani panna cotta, apple pie, and berry tarts.

A few of us decided to split all 3… which I graciously finished off.  Starving kinds in Africa, you know.

Saturday:

One would think that after all that I’d still be full… well, GPP Fitness fixed that with a little workout that left me waddling.  More on that tomorrow but let me just say 200 burpees (I did refuse to yell “Yay burpees!” after each rep as instructed) is a certain cure for lack of appetite.

The highlight of breakfast for me was getting to try a new granola – Muesli Fusion.  They have an “Athlete’s Fuel” mix that rocks my socks off.  NO added sugar or sodium, and 7g of protein per serving.  It’s like they designed it for me.  I poured my unsweetened Silk all over that!  There was a ton of fresh fruit (holy pineapple deliciousness), and a fabulously strong brew from Green Mountain coffee.

Then we had another workout!  Zoomba.  I’ll spare you the pics of this white girl shaking her thang… until tomorrow. 😉  Following that we did what any normal blogger does – we went to Whole Foods.  I totally failed at life and didn’t take a pic.

I DID take a pic of the snack break that followed – Onnit provided us with some amazing chocolate-banana hemp protein smoothies and rice cakes with cashew-walnut butter (totally crave-worthy). What’s better than these blogger staples?  Getting them handed to you by Miss United States!  Whitney is one of the sweetest girls I’ve ever met.  How cute is she?!

And then there was dinner.  Calee, Michelle, Heather, Heather, Heather (that’s not a typo – there were 3 beautiful Heathers) found an amazing restaurant on Main St. in Park City called Riverhorse.  The food was incredible.

We started with a great Pinot Noir, chosen by fellow-wine lover Michelle (who I will gush about meeting later) and a beet salad served with micro greens, brie cheese, and a potato crisp with tarragon vinaigrette.  Calee and I split the Trio of Wild Game for our entrée.  It came with buffalo, venison chop, and elk over broccolini and asparagus with a port wine and huckleberry reduction.

I was nice and full… but when I saw the dessert menus I had to place one more order.  Peanut Butter Bread Pudding with caramelized bananas and a chocolate drizzle.  Can you blame me? 🙂

Every dish was near perfection.  Lucky because our server was terrible.  I swear I have the worst luck.  She basically ignored us all night, added 20% gratuity (for a party of 6 who was clearly spending money… WTF?!), and when Heather asked about the charge (there was NO warning note on the menu) she snatched the bill out of Heather’s hand and stalked off.  We tipped the man refilling our waters in cash on the side and spoke to the manager on the way out.

Like I said, the food was great.  That combined with the fantastic company made for a great evening and we laughed about our crazy experience all the way back to the hotel (the cab driver was thoroughly entertained).

 

Sunday:

Holy breakfast heaven.  This was the best breakfast out of any Blend Retreat.  They had an omelette station!!!  Protein at breakfast?!  Color me happy.  Thank you for this sponsored deliciousness, Chobani!

I got an egg white omelette with mushrooms, garlic, onions, and spinach.  And a Chobani yogurt pancake.  And fruit.  I wanted ALL the foods! 😉

Embrace Your Inner Child

Change is a good thing.

 

And it’s inevitable (except from vending machines), so you might as well embrace it.

I’ve been changing up my workouts post-competition, doing things like kickboxing, “real” boxing, and spinning.  Yesterday I got back in the weight room for a chest and bicep day.  I wrote my own workout, as I haven’t gotten my new plan from my trainer yet.  That felt surprisingly intimidating, but I kicked my own arse!

The best part?  Even after not lifting as often as I was, I hit 3 PRs!!!  Change can be a booster, friends.

After that routine, I was in serious need of recovery.  I (like the day before) weren’t for an old favorite: my (vegan) Carrot Cake Batter Shake.  I did change it up a bit – this time I used my Growing Naturals Vanilla Rice Protein.  I swear this stuff is amazing.  I actually forgot to add Stevia until the end, but when I tasted it I realized I didn’t need it.  The Growing Naturals has added just the right amount of sweetness – enough to be batter-ish, but not so much that it was nauseating after a hard (and HOT) workout.

Embrace Your Inner Child with TVP Sloppy Joes

2012, was a year of healing, mending, and replanting my seeds on so many levels.  I began trail running (and became addicted).  I was healing from injuries and a number of other personal obstacles.  I was healing from life.  I learned to accept things, I learned to become centered, and this whole year really has already followed the change.

I started my year with a yoga class, and I am truly living my philosophy.

It’s easy to walk the walk, but to be authentic and fearless is often another story.

Do the rest of you have that same internal dialogue that I have?  I’m ready for change… no I’m not… yes I am… no I’m not.  Then you realize you just have to let yourself be fearless.  In an effort to really keep this in the forefront of my mind… and to really remember daily to embrace my commitment to living fearlessly, I got a new tattoo!  Like?!  (Editor’s note: I LOVE!!!)

 

In the spirit of embodying fearlessness (and letting my inner adult-child out a little more)… some trail runs have lately taken me on… well, adventures!  Saturday, I went on a run called “Janice’s Wheel of Misfortune,” where halfway through the 8.5-ish run, you meet Janice, spin her wheel and are dealt a “misfortune.”

These took place on some of my favorite trails. (Laura, you’ve totally been here, on a different route! – Editor’s note: YES!  That was a great run and I want to do it again!)

Such an awesome idea!  The two guys smiling in the picture below together… yeah, they had to run/walk/struggle to get through 4.5 miles with their ankles tied together. (No, they didn’t know each other before the run).

The girl I’m laughing at in the picture had to eat something.  While she started off with a 6-count of Chocolate-Covered Krispy Kremes, she ended up with anchovies wrapped around capers (her other options included an entire can of spam, an entire bag of powdered doughnuts, or two cans of Vienna sausage… yeah….).

Others had to carry life-sized stuffed animals, drink warm beer, take a time out, do trivia, drink buttermilk, among other fun misfortunes.  I know it’s not fair that I spun and had to do trail math trivia.  (Editor’s note: Warm beer?!  Whattt?!)

I would do this trail running event again any day!  I embraced my inner fearlessness and my inner adult child.

Embracing a fearless spirit also makes me feel way more comfortable in my own skin… it’s going pretty well! 🙂

 

Speaking of comfort… I’ve got a great comfort food recipe for the gluten-free vegan that will help you to embrace your inner child!  (Editor’s note: Seriously?  Where am I when you’re making all this deliciousness?!)

Sloppy

Vegan TVP Sloppy Joes

  • 1 C TVP
  • 1 C boiling water
  • 1 16 oz can tomato paste
  • 1 16 oz can garlic tomato sauce
  • ½ C honey
  • 2 T Tamari (or soy if you’re not GF)
  • 1 tsp salt
  • 1-2 tsp pepper
  • 1 tsp cayenne
  • 3-ish T seasoning/dried herbs (mine had some rosemary, basil, thyme, paprika, garlic, onion, and parsley)
  • Garlic powder, to taste (I don’t know… maybe about 1.5 tablespoons??)
  • ½ large white onion, diced
  • 3 garlic cloves, minced
  • MAYBE extra ½ cup of water at the end (depending upon the TVP)

 

First add the boiling water to the TVP and let it sit.  Then, sauté the onion & Garlic in some oil (and butter if you like), on medium/medium-low heat (~7-10 minutes, let them get pretty translucent). 

Then I like to add the TVP to the pan where you are doing the sautéing and add ALL the dry seasonings.  Sauté until the TVP looks like it’s drying out a bit, and is completely coated in all the beautiful seasonings (this is how you give the TVP a more “meaty” taste), which should take about 7-10 minutes.

Next, add your tomato paste, tomato sauce, honey and tamari (and I needed an extra ½ cup of water).  Simmer for ~15-20 minutes.  Then you can adjust the seasonings to taste as you like!

At the end, you know, serve the way you remember loving your Sloppy Joes!

I used Udi’s Gluten Free Buns, toasted, and served with Sea Salt Kettle Chips and roasted brussels sprouts.

I also topped them with the most delicious vegan, soy-free, gluten-free cheese I have ever had, Daiya .

If you haven’t tried their products yet, I highly recommend them, in fact, for these sloppy joes, I liked them better than regular cheese.

This cheese melted like regular cheddar, but seemed lighter and was a bit milder than regular cheddar cheese.  A must try!

Beautiful comes in all forms.

 

Much like diet, it’s personal!

There’s no right or wrong definition.  When I heard about Under Armour’s What’s Beautiful competition aimed at getting women to set epic goals and prove themselves, I was really excited.  You goal, your definition of what beauty is, is totally customized!

To me, beautiful is embodied by spirits unwilling to settle for less than they are.  Strong woman are beautiful to me, so of course that’s what my goal involves. 🙂

Breakfast:

Per usual, I started my day with a cocktail (apple cider vinegar, water, Glutamine, and Fitmixer Aminos).

Breakfast was a 2 course event today:

Atlanta Farm Fresh Greek yogurt is the best ever.  I don’t know if you can get it outside of the Southeast, but you can check out their website and see!  In Atlanta, you can find it in Whole Foods and Kroger.

Their plain is really good (I normally only eat plain Greek), but I couldn’t resist this in lieu of a fruit this morning: Strawberry Basil Balsamic.  It’s as good as it sounds.

Part 2 was Toad in a Hole.  Made with one of my local eggs and a slice of P28 protein bread.  Topped with fresh basil, pepper, and red pepper flakes. #yolkporn

Post-Workout:

All of that deliciousness fueled one helluva spin class.  Did I mention I don’t spin?  This was my 3rd class ever.  It kicked my butt.  By the time I got home I was ready to eat ALL the foods.

I settled for a Carrot Cake Batter Shake:  This is one of my favorites – it was the first time I’d used tofu in a smoothie, but not the last.  Gives it the perfect texture!

Lunch-ish:

I saw Janet’s post about Black Bean Tostadas and knew I had to make them immediately.  I made a single serving, eliminated the salt, and added onion powder, turmeric, cilantro, lime juice, red bell pepper, and jalapeno.

It fell apart (probably due to the pepper), but it was delicious!  I just ate it as crackers alongside my sea bass and broccoli slaw.

Then I had “dessert.”  Roasted kabocha squash with coconut oil, cinnamon, ginger, cayenne, and maple extract.  Topped with a peanut sauce made from peanut flour, cinnamon, ginger, maple extract, water, and stevia.

Dinner:

I got my tickets.  To the Gunshow!  Chef Kevin Gillespie lead one of my favorite Atlanta restaurants, but recently left to do his own thing.  Last night I got to try it out for the first time.  The fact that it’s called Gunshow was just the icing on the cake.

This is an entirely new format for a restaurant – there are no servers and the kitchen and dining room are one.  Everything is made fresh.  There is no set menu, they aren’t concept-driven.  The food served that day is based on what’s available locally and what they’re in the mood to cook.  The kitchen brings the food out dim sum-style on a cart or tray as they finish the dish.  The chef that made your food is also delivering it to your table and describing the dish.  How cool is that?!  One thing I love about cooking is seeing the reaction people have.  That must be hard for a chef in a restaurant who’s trapped in a kitchen all night.

Our group of 10 ordered one of everything.  And it was all amazing.

My top 3 dishes: a goat cheese ball rolled in burnt bread crumbs with a house made strawberry jam, the braised short ribs, and the spring vegetables and ramps with bee pollen.

The great part was that after splitting all this among 10 people, we weren’t over-stuffed.  Don’t get me wrong – I was full – but it was a happy amount of indulgence.

My friend Jessica had the description of the night:

The food spans such a spectrum and I love that [Kevin Gillespie] doesn’t box himself, or the other folks in the kitchen, into a defined style.  I told someone tonight that it reminded me of a first date.  Perhaps he was trying to impress and over time we may learn each other and reach a warmness and familiarity.  I was impressed and even more excited that we have somewhere else to discover that is different, although not better

We had to try the desserts too!  I would be hard-pressed to choose between the strawberry cheesecake (top pic) and Kevin’s great grandmother’s banana pudding (bottom right).

Marvelous in My Random Monday

Making it reflective of the thoughts that run through my head.

I’m really loving the idea of focusing on why life is good on my (former) least favorite day of the week.  Katie’s Marvelous in My Monday link up is a great reminder to keep the good weekend-vibes up!

At the end of last week I was inspired by a FitFluential twitter chat to make my own standing desk at work.  I’ve long been a fan of sitting on a stability ball at work, but I still dislike sitting ALL day.  In a big company it’s hard to get approval for a fancy standing desk, so I did a little improv:

Side note: I made it through cookie season only having eaten 1/2 of a Samoa.  I would have eaten a Tagalong, but never did find a box of those lying around.  No one wanted to share the best flavor ever?!

 

Saturday morning called for pancakes.  I finally got around to trying out the Strange But Good pancake recipe Alina shared a couple of weeks ago.  Her Chocolate Chip Cookie Pancakes were inspired by my Oatmeal Cookie Shake!  I loved the creativity.  Please overlook my inability to make brown food look appetizing.  These were amazing.

My only modifications were to replace the 2 T of banana with more pumpkin puree and to use carob chips instead of chocolate chips.  The nutritional yeast in these (and the shake) may sound strange, but it makes the recipe!

I topped them with sugar-free syrup, but they honestly didn’t need it.  Next time I’m eating them plain like a cookie.

 

After my workout, I did a little shopping.  I don’t know what happened, but over the past couple of years I have totally lost interested in clothes shopping.  I’d rather buy workout clothes and fun groceries!  Saturday’s goal was to buy new clothes for work, but instead I found a jacket and some lip plump.

This jacket was on sale and then an addition 40% off at Banana Republic – $180 jacket for $90.  Score.

And the lip plump… that was an impulse buy at Sephora.  It added a little more pout to lips, but it tingled more than anything!

Saturday night I had a date with my best friend for the first time in MONTHS.  I really missed her!  We had a fabulous meal at Miller Union.  One of my favorite ways to eat is to order a bunch of small plates and a single entrée to share.  I have to try everything!

This is round 1 of the small plates.  A kale salad with pecans, fennel, and orange and grapefruit segments, massaged with creme fraiche dressing.  In the middle is a feta cheese dip with fresh veggies.  And wine.

Sunday was going to be a rest day… but I got restless.  And I had some wine to sweat out.

I popped in my old DVD standby – P90X Plyo.  After all that bouncing I had to get a calf shot.  My trainer has had me doing weighted calf raises 3x a week to elongate my calves… but I never really believed it was possible.  Now I think it actually worked!

I refueling with an old favorite: my Carrot Cake Protein Smoothie.  Xanthan Gum is one I’ve used for a long time to thicken smoothies up, but after this Butternut Banana Shake post I took several of your suggestions and bought Guar Gum to use too.  What resulted was a creamy concoction so thick I ate it from a bowl with a spoon.

Xanthan was great for getting smoothie thick, but that Guar really amped up the creaminess.  Definitely worth a try if you don’t already use it!

 

After my workout I heard a massive thud.  I wasn’t sure what it was, but I live in a city.  I have become accustomed to tuning out noise.  I’d totally forgotten about it until I left for the farmer’s market.  That noise was this happening:

After days of rain storms, this huge old tree split at the base.  The marvelous part?  That building is abandoned and no one was hurt!

 

Finally, one of my favorite activities.  Kombucha brewing!  I love kombucha, but it does get pricey.  Months ago I purchased a Brooklyn Kombucha home-brew kit on Open Sky and I brew my own stash every week.  It’s unbelievably easy.  Click here to head over to Open Sky if you’re interested in starting!

Ok, maybe that’s dramatic… but it can change your state of mind!

I was feeling pretty down about having to postpone my next competition.  All of your comments lifted me up yesterday.  Thank you, thank you, thank you.  It’s funny how “strangers” can make you feel warm and fuzzy supported and put you in a more positive place.

Not that I really think of you as strangers… we Tweet, email, Instagram, Facebook… some of my best friends are people I’ve never met in person!

 

Speaking of strange… it’s Kat’s day to post!  We haven’t gotten to hang as much lately, yet she’s still managed to write a post that hit home for me.  And included a green smoothie, which you know I love. ♥

LIFE is hitting me right now.  I think I just realized that I’m going to be an attorney later this year! (Editor’s note: YAYYYYYY Kat!)

I’ll be studying for the bar this summer.  I can’t imagine the focus that will take!  I’m used to doing 100 things (I currently hold 3 jobs and go to school) and keeping up with yoga and running and all the other fun workouts and friend time I fit in!  OH BOY!

Wanna know a secret?  I’m scared.  I’m afraid of whatever job I end up with, I’m afraid of failing, and I’m afraid I won’t come up on top.  I’m afraid of fitting in, and I’m afraid of standing out.  Let’s face it  – I’m weird… if you hadn’t noticed.  (Editor’s note: I think that’s why we get along so well. 🙂 )

My strategy?  Continue to be myself and just keep breathing!  I just need to keep being myself, embracing my life, and things will fall into place.  (Read: I will conquer the world.)

I’m working on my business plan actively and figuring out how I will be a successful attorney even if I don’t land a job at a firm – I am capable of business generation.  However, I’m also considering the big firm world, something I never thought I would do!  Cheers to trying new things!  *Raises Glass!*

It’s okay to be WEIRD (like I always say), so I’m going to share a couple of other WEIRD secrets today.  Something many of you will be surprised to hear… you may not even believe me.  (Editor’s note: I’m ashamed to admit that this made me think of Honey Boo Boo… “Nothing wrong with being gay.  Everybody’s a little gay!”)

Whoever has been reading my blog posts knows by now that my metaphor for life is what will make you happy in the long run… and a lot of little things add up to a lot of happiness!  Why not do a couple of little things that will just ease stress and help you live a happier, longer, healthier life?

Here goes nothing… the secret….  You should know: I hate the grocery store.  (I know, shocking –but it’s true).  It is my least favorite chore on the face of the planet, and for a while there, I refused to go!  That’s right, refused.  Rule number 1. Stop doing things you don’t want to do.

How did I get food in my house, you ask?  Great question.  I paid a grocery shopper!!  That’s right, she went grocery shopping for me, paid, and brought them back to my house, and I would write her a check, which included her fee.

Now, before you judge me, this is an excellent strategy.  Think about it – you are prohibited from randomly getting something NOT on your list that seems tempting while at the store (thus, saving money).  It saves you time because you don’t have to mull over decisions like… “Which salsa – the Publix Organic or Newman’s?  One is on sale, but I think I like the other one better…”  You save precious time and gas (which makes the money worth it!).

I think this is the greatest tip of all time.  And then you get to tell foodie friends like Laura about your secret and they give you a seriously hard time – which is just funny!  (Editor’s note: True… I LOVE grocery shopping… but I will pay to have someone clean my condo!)

The trying new things part of this is that I started doing my own grocery shopping at the beginning of the New Year!!  Look at some of the fun things you remember to get when you shop!

Green Amazing

Green Amazing Smoothie

  • 2 Tbsp Chia
  • Some Banana-Based Green Juice (Some might be ¼ cup)
  • Some water (maybe 4 tbsp or so)
  • One scoop of Protein Powder
  • One scoop of Green Vibrance
  • ¼ – ½  Cup pumpkin (canned OR fresh if you’re not lazy like me!)
  • Cinnamon, Salt, and Maple to taste

 

Mix it up and refrigerate for a few hours.

BOOM!  ENJOY THAT SHIT!

 

The best part – you can’t go wrong on any measurement.  The other best part – you are FULL forever.  Yes, forever. (I’m lying)  One more best part – people will look at you weird when you get a green mustache, or when they see the concoction.

The other new but not-so-new part of this – it’s fun to eat weird, dark, dark green pudding-ish food at the office to freak out your co-workers! 😉

 

Know what else freaks your co-workers out?  Telling them how crazy you are.  I think they all have mini heart attacks when they hear I’m about to run the Georgia Death Race – 60 miles is definitely nuts, but totally me.  Check out the award we get at the end:

One more secret.  I never learned how to cook for one person.  NEVER.  That’s right.  But I recently have been attempting this.  See my beautiful salmon with brussels, onions, and mushrooms?  BAM dinner for one.  And it was delicious and perfectly cooked.  GO ME!

Butternut Banana Protein Shake

There is something in the water.

Ok, there are probably lots of things in our water… I don’t think about it.

This weekend I must have been drinking the ‘roid water because I was hitting PRs all over the gym.  I don’t feel any different in terms of ability, but for some reason the weights were lighter these past few days.

My Saturday PRs were: (unassisted) dumbbell chest press, include bench press with a twist, and pullovers.  Then on Sunday I PR’d on the read delt machine.  I’d been stuck at the same weight forever… but I turned up the music and told the thing is was going to move Cee Lo-style.

The only thing I’ve changed is to make sure that immediately following a workout I have whey protein with a complex carb.  That works for me because my favorite post-workout snack is a protein shake.

I had not been making many – it’s too cold – BUT Heather gave me a good reason to being them back into my life with her Meatless Monday A-Z ingredient: Xanthan Gum!

Xanthan gum is a thickening agent and it prevent separation.  These qualities make it a perfect smoothie/shake addition!  If you read the ingredient list for most ice creams and milkshakes, you’ll find Xanthan gum, as it gives these desserts a fabulous creamy texture.

Bananas are often used to make shakes thicker in the healthy-living community.  I used it in my Oatmeal Cookie Shake!  Never one to settle for “normal,” I began using alternatives like butternut squash or sweet potatoes to thicken my protein-laced creations.  What I never thought to do until this weekend was use BOTH.

Sweet banana and butternut make for one fabulous combination.  It’s almost like a cold pie filling!  I loved it with the almond extract – it makes everything taste like cookies to me.

This shake is especially good to have post workout – you get your 20g of protein from the powder, carbs from the banana and butternut, potassium for muscle recovery from the banana, and anti-inflammatory benefits from ginger and cinnamon.

A little bit of Xanthan goes a long way here with the already-creamy banana and butternut combo.  What results is a treat so fantastically thick you’ll need to eat it with a spoon.

If you’re so inclined – and I am ALWAYS inclined – you can toss in some spinach for an extra serving of greens.  You can’t taste it.  Don’t be scared.

Butternut Banana Shake

  • 1 scoop vanilla protein powder
  • 1/3 C butternut squash, pre-cooked
  • 1/2 banana
  • 1/2 tsp cinnamon
  • 1/2 tsp almond extract
  • 1/2-1/4 in piece fresh ginger
  • 1/8 tsp Xanthan gum
  • 6-7 drops liquid Stevia (optional)
  • Spinach (optional)
  • Ice + water, to taste

Place everything in a high-speed blender (I used my Vitamix) and blend until smooth.  

Transfer to a glass and enjoy!

I know some one will ask… that spoon is from this Etsy shop.  Good luck.  I spent an ungodly amount of money on spoons.
