Spring is Marvelous

April 8, 2013 By Laura

Something about Spring makes life better.

Until the pollen hits.

Last week I was in a bit of a funk.  It was rainy and cold, I was tired… but spring arrived just in time for the weekend!  I want to carry over this weekend weather high into the week, and Katie’s Marvelous in My Monday link up is my favorite way to focus on the good and start the week out right!

Marvelous Monday

Almost everything involved the outdoors – something I’d forgotten how much I love!

_______________________________________________________________________________________

There’s only one right way to start the weekend – pancakes!  I made Heather’s Peanut Butter Cookie pancakes and topped them with a fresh strawberry sauce.  My only change to her recipe was to omit the rice flour and reduced the liquid to 1/3 C.  They were perfect!

With the spring berries on top, it was like PB&J cookies for breakfast.

Peanut Butter Cookie Pancakes

Those pancakes fueled the best workout I’d had in DAYS.  This week in the gym I had just not been feeling it.  I’d be half way through a workout coaxing myself with post-workout foods if I finished.

Not only did I have a great shoulder/glute day in the weight room, but I was feeling so good I decided to run some sprints before heading home.  Those sprints are great for the glutes and I could feel it the next day!

Carrot Cake Smoothie

After than calorie torch, I made myself a massive Carrot Cake Smoothie… I needed some cool-down fuel because I then met Carol and her puppy for a 6 mile walk in the park!

I don’t know how we walked so long – I was already tired.  We just started talking and the time FLEW by!

piedmont park

We parted ways and I headed home for a (much-needed) shower before meeting a friend for dinner.

I don’t know about you, but my #1 favorite thing about spring is patios.  Sitting outside with my flip-flops on, a teensy sunburn, and a margarita makes me happy.  Simple pleasures.

_______________________________________________________________________________________

Sunday I woke up early (read: before 9am on a weekend) to play softball.  We won both games!  Our team is undefeated in a men’s league.  Hahaha! 🙂

I didn’t have time to make Sunday morning bacon… but my favorite meat-treat still managed to make a cameo.

Bacon socks

Sunday is also my grocery store and meal prep day.  I hauled my sweaty, dusty self (#sorryimnotsorry) to the farmer’s market and Whole Foods for the weekly stock up.  No real diet changes yet, but the competition is coming up fast and next week it will be lock down time.

Despite having bags of groceries from 2 stores, I made it up to my condo in one trip.  I saw this on Pinterest, which perfectly captures the moment.  Please tell me I’m not the only person who is this stubborn:

two trips

I also bought myself flowers.  Flowers go a long way in brightening up my week, especially when I work from home.  It’s nice to look over and see their natural brightness after staring at a computer screen for hours!

Besides, if I waited for someone else to do it I’d be waiting a looong time. 😉

Another favorite of mine in the warm weather is watermelon.  After a long 2 days in the sun, I was happy to have a refreshing watermelon salad… and finally, my Sunday bacon.

Sweet, salty, and a little earthiness from the beets.  It’s the perfect spring salad!  #strangebutgood

Watermelon, Beet, & Bacon Salad

  • 1 C watermelon, diced
  • 1/4 C beets, roasted and diced
  • 2 strips crispy bacon
  • Cilantro, to taste
  • Freshly ground pepper, to taste

My teensy sunburn got worse on Sunday.  I forgot that with spring comes the need for sunscreen.  #fail

Do you ever buy yourself flowers?

What is your favorite part about spring?

Healthy Travel Food + WIAW

February 6, 2013 By Laura

I am traveling for work this week.

Ohio

In the cold.  So very, very cold…

Finding healthy food option is one thing if I’m headed to a bigger city, but when I head to smaller towns I know I have to PLAN.  With less than 2 months until my next competition, I’m not “wasting” cheat days on crappy travel food.  I mean, did you see this post?  Why would I eat fast food when I can save it for dinners like that?

The night before I go, I pack up vitamins and supplements.  And then I pray that I don’t get arrested for traveling with white powder (it’s just BCAAs and glutamine!).

Traveling with supplements

I also gather my protein powders, gum, my own salt-free spice blend, “emergency” bars and tuna.  Most of these items are “back up” in case I get stuck somewhere.

Healthy travel snacks

Last, I portion out proteins and veggies.  This trip I am taking chicken burgers, lamb, no salt deli turkey meat, balsamic grilled chicken, sweet potatoes, carrots, celery, zucchini, snow peas, and Greek yogurt (see Meal 7 pic below – mixed with fruit and frozen for safe travel).

Protein and veggies to go

Check out this post for a super-detailed explanation and tips for traveling with healthy foods!  And yes, I made it through security with ALL of this, no questions asked.

________________________________________________________________________________________

This WIAW my task was to eat everything left in my fridge.  I not-so-secretly love these days because they lead to come fun concoctions!

WIAWbutton

Check out my 7 meals below, and then click here to head over to Jenn @ Peas and Crayons to get to see how others dined this week!

________________________________________________________________________________________

Meal 1:

As usual, I enjoyed my morning cocktail (mix of Apple Cider Vinegar, Glutamine, and Fitmixer Aminos).

Upon hearing on GMA that it was National Pancake Day, I consulted the Pancake Queen’s blog for an appropriate breakfast.  I settled on her Ginger-Pear Pancakes.

Ginger-Pear Pancakes

These were heavenly!  I followed the recipe, with a few additions:

  • Added 1/8 tsp cardamom
  • Added 1/2 tsp cinnamon
  • Used ground ginger
  • My pear was an Asian Pear
  • Made syrup by mixing sugar-free syrup, almond milk, and cinnamon

Meal 2:

This week I had the find of a lifetime at Trader Joe’s.  NO SALT canned salmon that is boneless and skinless!!  Now I can make my Lemon-Thyme Zucchini Salmon Cakes without the nauseating task of de-boning and skinning the can.  *shudder*

That’s not what I made today though.  Today was a blood-salmon salad!  It’s not a gross as it sounds… it’s a blood ORANGE salad.  Hee hee.

Salmon and Blood Orange Salad

Blood Salmon Salad

  • 1 can no salt salmon
  • 1 blood orange, sectioned
  • 1/4 C chopped fennel
  • 2 T plain Greek yogurt
  • Freshly ground pepper, to taste

Meal 3:

Lunch was a two-part affair.  Part 1 was mahi mahi and a roast of brussels, fennel, and eggplant tossed in coconut vinegar and herbes de provence.

Mahi Mahi and roasted veggies

Part 2 was “dessert.”  Sweet potato topped with cottage cheese and tons of cinnamon.

Let’s pretend I didn’t add more cinnamon post-pic…

Sweet Potato with cottage cheese and cinnamon

Meal 4:

I roasted a leg of lamb before work yesterday.  I’m told that’s not normal.  Either way, it was delicious!  And it was a great mid-afternoon meal with spinach, cabbage, and nutritional yeast!  Does anyone else top their meat with vegan cheese-like substances? 😉

Lamb salad

Meal 5:

This was my last meal before making a mad dash to the airport.  I had 1/2 a serving of chili left, a little deli turkey, avocado, and smokey blue cheese.  Down the hatch and sprinting… 2 the airport.

Chili

Meal 6:

Airplane meal!  I knew I’d have to eat this cold, and a salad seemed more appealing than a burger… so I crumbled a chicken burger and mixed it with Greek yogurt, carrots, and zucchini.  Chicken Burger Salad!  People were appalled fascinated.  Better than peanuts, no?

Chicken Burger Salad

Meal 7:

This is one of my yogurt creations.  I took a single serving plain Greek yogurt container and mixed it with blood orange, cinnamon, and a couple of stevia drops.  Then I froze it overnight to take with me.  This serves two purposes: it keeps it cold enough for travel and acts as and extra ice pack for my cooler.

Being on the road doesn’t mean I can’t have a clean dessert… with a little treat on top.  A crumbled Quest peanut butter cup!

Blood Orange Greek Yogurt

***

The protein count for the day: 171.4g.

Have you had any interesting run-ins with airport security?

Do you pack healthy food for the road?  What are your favorites?  This week’s Strange But Good link up is going to be fun with all my packed eats! 😉

Healthy Traveling Food (BYOP)

October 25, 2012 By Laura

Operation Bring Your Own Protein (BYOP) is in full swing.

Keeping it clean while traveling is daunting.  Traveling while on a competition diet is downright terrifying.

When I realized I was going to have to fly to a client meeting at 3 weeks out from my competition, I immediately panicked started planning.  Eating 7 meals per day is hard enough without throwing airport security, conference rooms, and clients into the mix.

10 Healthy Travel Tips

I had to think about what I could transport, how I could keep it at a safe temperature (food poisoning isn’t the ideal way to cut pre-contest), and what I could do to avoid disrupting meetings when I needed to eat.

The packing process was simple.

I gathered all of the dry/room temperature foods and packed most of them in my suitcase.

The refrigerated stuff I measured out in advance and divided it into baggies.  This was my effort to avoid the last-minute panicked rush to get out the door.  All I needed to do was pull everything out and put it in a cooler when it came time to leave (the panicked rush still ensued… but food prep wasn’t the cause).

The following 8 meals were all eaten on the fly (tee hee).  I thought a meal-by-meal explanation would be easiest to follow, but there are bullets tips at the bottom if you don’t feel like reading the whole post (I know it’s long).

1. Airport Dinner

My flight was scheduled to depart at dinner time.  For this meal, I needed a protein, a carb, and 2 vegetable servings.  Of course, my flight was delayed… which was fine since it enabled me to spread out and eat dinner at the gate.

  • Chicken
  • Spinach salad (squirted with lime just before leaving the house)
  • Zucchini and celery sticks
  • Butternut squash cubes

2. Plane Snacks

No peanuts for me!  This meal required a protein and a vegetable.  I enjoyed homemade fro-yo.  The night before leaving, I mixed peanut flour, cinnamon, and a little Stevia into a single serving container of Greek yogurt.  Then I wrapped foil around it and stuck it in the freezer.

By the time I was ready for this snack, it had thawed just enough to be a fro-yo treat!  It was also dark on the plane – sorry for the fuzzy pic.

Added bonus: the frozen container helped keep my other items in my bag cool.

3. Dessert

I bought an orange, but spied apples in the hotel lobby and opted for that instead.  I made a peanut butter-chocolate protein “pudding” dip for my apple using protein powder, peanut flour, and water.  Stirred up in a hotel cup (I never use the glass cups – according to an ABC expose those are NOT properly cleaned).

4. Room Service Breakfast

The night before I filled out the breakfast order form and hung it on my door.  (Tip: time the delivery so that it also acts as wake up call.)  Breakfast consists of fruit, a protein, and a carb.  I request oatmeal prepared with water only (no milk, butter, or salt), fresh fruit, and coffee.  Pretty basic, right?

Then I request some special sides: ice water and tons of lemon (a cleansing way to start the day since I couldn’t bring my apple cider vinegar cocktail), and cinnamon.  Sometimes I ask for peanut butter too, but that wasn’t on the meal plan this week.

In my oatmeal went ground flax seed and protein powder brought from home, the hotel cinnamon, and blueberries from the fruit plate.  Brown is beautiful.

5. A Bathroom Snack

Meal 2 had to be eaten at an awkward time.  No one else in the meeting was eating, and I needed a protein and a fruit.  I packed my Curried Tuna Salad (sans apple) in a baggie.  It is delicious, but curry and tuna have a strong scent.

One of the benefits of being female is that I can bring my bag to the bathroom without anyone questioning me.  this is exactly what I did.  I camped out in the Ladies with my tuna and a fruit squeeze.  I promise it tasted better than it looks in that baggie.

6. Bringing In Lunch

Predictably, they ordered sandwiches for lunch.  I needed a protein, a carb, and a vegetable.  I can’t have “regular” bread or deli meat, so I brought my own carb and protein.  Curried chicken and butternut squash cubes.

I took a gamble that they would have vegetables and I was right.  Carrot sticks and celery, courtesy of the deli.

7. Taxi To-Go

My afternoon snack is a protein and a vegetable.  I had one last serving of chicken – this time it was an herbed flavor.  I saved celery to eat at the end of the trip, as it’s the most travel-friendly veggie.  It can take a lot of abuse!

8. Airplane Food Doesn’t Have to Suck

Well, it doesn’t suck when you bring your own.  I had a packet of low-sodium tuna, peanut flour, a seasoning packet, red pepper flakes (stolen from pizza day at my office), and previously frozen edamame.  In the airport I purchased a salad.  They didn’t have a plain one, so I had to throw out the deli meat.  I hate to waste, but what was I going to do with all that salty deli meat?

On the plane I assembled my meal.  From the flight attendant, I requested water to mix my peanut flour and seasoning.  I put the tuna and edamame on the salad, then drizzled my spicy peanut dressing on top.  Delicious and pretty!

The lady next to me was a sleep and didn’t even stir at the smell of tuna.  😉

See?  Not that hard, as long s you plan!

Here are the 10 things I keep in mind on every trip.

Pumpkin Pie TVP “Oatmeal” + WIAW

October 17, 2012 By Laura

Just when you you’re getting used to a “special” diet…

…you have to go on a business trip.

I actually like travelling for work.  Airports and hotels don’t phase me one bit.  Unless I’m 17 days from a figure competition and have a diet more strict than I ever thought possible.  Between the protein, super-clean eating, and max of 500 mg of sodium per day the trip I’m taking today has been a lesson in food prep.

#sorryimnotsorry

I’m hoping to put all this together for a fun post… but that requires me remembering to take pics tomorrow!  In the meantime, my friend Kat is going to write guest post for me tomorrow!  She’s awesome – a rockstar endurance athlete, avid foodie, and law student.  I think she unlocked the secret to adding hours to a day.

Kat is going to be doing a bi-weekly feature, so please drop by and say hi to her tomorrow when she introduces herself!

_________________________________________________________________________________

We’re still rolling with this month’s Halloween-themed  What I Ate Wednesday.  I did alright for breakfast and meal 7…. I’m not sure if the rest ties in, but it was delicious and seasonal!

Check out my “special” low sodium, high protein, super-clean eats below, and then click here to head over to Jenn @ Peas and Crayons to get to see how festive everyone else got this week!

_________________________________________________________________________________

Meal 1:

After my morning cocktail (mix of Apple Cider Vinegar, Glutamine, and Fitmixer Aminos), I downed a grapefruit while I waited for some deliciousness to cook (not that the grapefruit wasn’t delicious… but it can’t compare).

TVP Protein “Oatmeal” has become a low-sodium staple, but I’ve had this particular version 2 days in a row so far.  It’s vegan, gluten-free, protein-filled, and involves pumpkin.  What’s not to love?

The fall spiced TVP “oats” with a creamy protein pumpkin pie mixture swirled in… I can’t even describe.  It’s the most decadent deliciouness!  Full recipe is at the bottom.

Meal 2:

As much as I’ve been making salmon and fruit mixes lately, I don’t know if I can still call them #strangebutgood.  Strange or not, this was a good mix!

In my not-so-strange but good mix: curried salmon, pepitas, blackberries, and arugula.

Meal 3:

It’s the steak of the sea again!  Swordfish has become a weekly staple for me.  This one I grilled with onion, Herbs de Provence, pepper, and lemon juice.  Eaten with sautéed asparagus and shiitakes, and 1/2 a sweet potato.  On a hippo plate ’cause I was a hungry, hungry hippo yesterday.

Meal 4:

So I braved raw chicken again.  Last night I grilled a bunch to bring for lunch this week.  As much as I hate touching it, I do like the taste when it’s cooked to perfection (read: not dried out).

I always prepare it 1 or 2 different ways.  That way I don’t have  a pound of chicken that all tastes the same.  This piece had onion powder, pepper, oregano, cayenne, and lemon juice.  Eaten with cucumber and carrots. dipped in a quick sauce made of nutritional yeast, paprika, and cumin.  Yes, I recycled the plate.

Meal 5:

Apparently Tuesday night is pizza night.  I’ve become addicted to making a “crust” out of Kamut flour (no sodium, relatively high protein).  I make it just like socca crust, adding whatever flavors I’m in the mood for.  Lat night I added garlic, rosemary, and paprika.

My Indian-ish Pizza:

  • Curried chicken
  • Mint ricotta spread
  • Red onion
  • Fennel
  • Zucchini
  • Arugula

The ricotta mixture  of the week was simply fat-free ricotta with fresh mint, paprika, and a little water to thin.  Like last week, I sautéed the veggies before topping the pizza and sticking it under broil for a few mins.  That mint in the ricotta was awesome with the curry chicken!

Meal 6:

For once I wasn’t in to mood for something sweet yet!  Probably because I was up prepping food for a business trip.  (Holy mother of planning – travel on a “special” diet is interesting.  More to come on this strategic extravaganza.)

I made one of my favorite simple salads.  Arugula with asparagus tossed with lemon juice and freshly ground pepper.  The protein on top is swordfish (the same pre-grilled batch from lunch).  Three cheers for food prep.

Meal 7:

Guess who’s still under her sodium for the day.  THIS girl.  Woo hoo!  Make that day 2 of successful sodium control.  My reward was a Butternut Squash Pudding.

I mixed no-salt cottage cheese, Greek yogurt, and mashed butternut squash with cinnamon, nutmeg, maple extract, and vanilla stevia.  Topped with melted cherries.  #strangebutgood

__________________________________________________________________________________

Pumpkin Pie TVP “Oatmeal”

  • 1 serving TVP Protein “Oatmeal” (without the egg whites)
  • 2 T pumpkin puree
  • 1/2 scoop vanilla protein powder (1T)
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • Pinch of cloves
  • 5-6 drops liquid stevia
  • 1.5 T water (or other liquid)

Cook TVP oatmeal as instructed here.

Meanwhile, mix together remaining ingredients in a small bowl to make your pumpkin pie “filling.”

Once TVP is cooked, transfer to a bowl and swirl in the pumpkin filling.  Top as desired (I used cinnamon and cacao nibs).

Serves 1.

The protein count for the day: 166.1g.  The all-important sodium count: 535.7mg (a little over, but I get some allowance for naturally occurring sodium in veggies).

Quick shameless plug: in case you missed it, check out yesterday’s post for another way to vary your workout.  It’s the 2nd in my “Work It Out” series!

Has anyone started tracking or cutting back on sodium since last week?  Is it harder than you expected?

Curried Apple Tuna Salad

October 15, 2012 By Laura

Did you see Friday’s Strange But Good?

The mystery stranger was a Curried Apple Tuna Salad.  You guys know I’m a fan of the sweet and savory.  This recipe is a perfect storm!

The tuna salad my mom made for lunch after church on Sunday’s always included apple.  I stopped eating seafood for years, but I always enjoyed the crispness of chopped apple in salads.  When I was looking for a new way to jazz-up my tuna salad, it was an obvious addition.

Mom also added a boat-load of mayo to our tuna (Hellman’s not Duke’s).  Mayo is certainly NOT on my diet these days.  No big deal – I haven’t liked the stuff for years.  But I do need something to add moisture to my tuna, and to make the flavor less like… errrr… canned tuna.

The sauce I came up with is a rich tahini curry.  Tahini’s sweet sesame flavor is perfect with a little nuttiness from nutritional yeast.  Both are natural pairs with the warm, almost ginger-like curry powder.

Turmeric is a big component of yellow curry powder.  I’ve always loved the flavor, but it is also a great source of antioxidants.  Just a teaspoon of curry powder has as many antioxidants as ½ cup of red grapes!

Arugula is one of my favorite greens.  In fact, it may be my absolute favorite.  Its peppery taste is perfect with curry, and the sweet apple balanced those stronger flavors.

This is an awesome tuna salad for those who don’t particularly like tuna salad.

Recipe at bottom.

Workout Recap

This week we moved up to doing 15 reps of each exercise.  You wouldn’t think 3-5 more reps would make a big difference, but I assure you it DOES!  Between that and the 100 pull-ups, I stayed sore all week.  It hurts so good.

Saturday I picked out my suit (if you follow me on Instagram you may have seen the fabric), and this week I need to go find costume jewelry and get some super-dark make up for my soon-to-be orange skin.  The sodium cut and the pull-ups are working.  I’m really starting to see a difference in my body.  It’s pretty cool… though I have a lot to work on in the next 19 days.  Time is flying!

Workout Recap (10/8 – 10/14):

  • Monday – Chest/Bis, 100 pull-ups, Calf raises, 2 mile incline walk
  • Tuesday – Shoulders/Glutes, 1.5 mile incline walk
  • Wednesday – Back/Tris, 100 pull-ups, Calf raises, 1.75 mile incline walk
  • Thursday – Shoulders/Glutes, 100 pull-ups, 2 mile walk
  • Friday – Chest/Bis, 100 pull-ups, Calf raises, 1 mile walk
  • Saturday – Legs (with trainer)
  • Sunday – Back/Tris, 100 pull-ups, Calf raises, 2 mile walk

Curried Apple Tuna Salad

  • 2 oz canned Albacore tuna*
  • 1/2 apple, diced
  • 1/2 C arugula
  • 1 T nutritional yeast
  • 1 tsp tahini
  • 1/4 tsp curry powder
  • Red pepper flakes, to taste (optional)

Combine the tuna, apple, and arugula in a bowl.

In a small bowl, mix together the remaining ingredients with enough water to form a sauce.  Pour sauce over the tuna mixture and stir to combine.

*Note: Tempeh would work well here to make this vegan.

Makes 1 serving, easily doubled.

Super Tuesday

October 2, 2012 By Laura

You’re unique.

Just like everyone else.

It seems like everyone has done a “September Superlative” post!  I’m being a copy cat… but in a unique way because I’m doing it late.  😉

1. Most Popular:

Microwave Protein Cookie + WIAW – This nutty, protein-filled 30 second cookie was the most viewed post in September.  I also loved this post because it highlights a few of the many reasons women should lift weights.

2. Most Likely to Win a Bar Fight

This Tequila-Lime Tilapia would kick your dinner’s butt.  And it would walk out in a perfectly straight line ’cause the booze (mostly) cooks out.

3. Most Versatile

What isn’t better layered like a parfait?  I’m awarding my Protein Parfait the Most Versatile because I’ve made it a million ways.  The original was a Tiramisu Protein Parfait, but September’s flavor-of-the-month is a Pumpkin Tiramisu.

A few friends have made their own versions.  Check out this Chocolate-Peanut Butter version from Sarena:

4. Most Unique

This is a no-brainer.  #sorryimnotsorry to be Captain Obvious, but most unique is all about the “Strange But Good” posts.   I’m craving peaches, so I’m going to call out the post with the Salmon-Peach Salad:

But you should check out the follow-up post for more #strangebutgood… like Mexican Hot Chocolate Protein Ice Cream.  If that’s still not enough strange, click on over to Lauren’s blog.  She’s featuring some weird combos today, including my PB & Jeggs!

5. Most Photogenic

It’s no secret that I abhor taking pics.  It’s a necessary evil for me as a blogger… so when I get one that I really like, I get excited.  This Fig and Edamame Salad with Sriracha-Lime Vinaigrette was pretty and delicious (fashionable and functional?).

Honorable Mention

This isn’t a September post, but I have to give it some love… my Mexican Cauliflower “Rice” Bowl was included in Fitness Magazine’s 11 Easy Lunches to Lose Weight!

***

I wasn’t cool in high school, so no superlatives for me.  Even more reason to Bogart an entire blog post giving them to myself.  Bwhahaha!

Did you get a superlative in school?

What would your superlative be for the month of September?  Brag on yo’ self!

More Strange, Still Good

September 28, 2012 By Laura

It’s a theme in my life.

Except in the dating scene.  Strange = bad.

Two Fridays ago I wrote a post of some of my favorite Strange But Good concoctions… and 2 weeks later I of course have more to share!

Before we dive into the realm of odd: there is an Atlanta blogger potluck meet up this weekend.  If you want to come and haven’t received an email, send me a note and I’ll forward the invite to you!  The more the merrier. 🙂

Ok.  Back to the strange fun stuff:

1. Salmon + Blackberry Salad

You guys may have seen this on WIAW…

I mixed 4oz salmon, 2 T fat-free ricotta, a little cinnamon, a little unsweetened almond milk, and blackberries.  It was strange but oh-so-good.

2. Mexican Hot Chocolate Protein Ice Cream

Hot ice cream?  Why yes… there is cayenne in it!  this sweet-heat treat was a fantastic midnight snack.  The green tint comes from spinach… but that’s standard, not strange.

Mexican Hot Chocolate Ice Cream

  • 1 scoop chocolate protein powder
  • 1 tsp cinnamon (or 2 sticks)
  • 1/2 in piece ginger
  • 1/4 tsp cayenne (can adjust to taste)
  • 1/4 C unsweetened chocolate almond milk
  • 2 C spinach
  • 5-6 drops liquid stevia
  • 1/8 tsp guar gum (optional)
  • Ice, to taste

It’s topped with Walden Farm’s Sugar-Free Caramel… but honestly… that’s more strange than good.

3. Bacon-Ricotta Stuffed Sweet Potato

After news of the impending bacon shortage… I was craving bacon.  I stuffed a locally-grown pre-cooked sweet potato with with ricotta and then crumbled a small piece of pre-cooked bacon on top.  Then I placed it int he oven under broil while I made a quick vegan tempeh stir-fry.

Vegan + Bacon = Tasty Dinner.

4. Zucchini Bread Protein Batter

This is Strange But Good PROOF!  Debbie @ Accidentally Delish gave it a try for WIAW:

From Debbie: “You don’t even taste the zucchini. I promise.”

Click here for the full recipe.

5. Lightlife Portobello Burger with Sweet Potato-Chipotle Spread

This was strange but good on 2 counts.  First, this Lightlife Portobello Mushroom Burger tasted downright meaty.  I was shocked – I even went back to check the ingredient list.  All vegetarian!

The best part?  It has a full 20g of protein. 🙂

Second, the sweet potato as a condiment.  It’s addicting… I’ve topped my salmon tortilla pizzas with it too.  I love sweet with a little heat (as if you couldn’t tell from the Mexican ice cream), and that was perfectly balance here with the sweet potato and chipotle.  Cumin added a warm, earthy flavor that was especially good with the meaty ‘shroom burger.

My dinner guests and I enjoyed the burgers in a very green way – on a field of spinach, cucumber, cabbage, broccoli, cilantro, and a few cannellini beans.

Sweet Potato-Chipotle Spread

  • 1/4 C pre-cooked sweet potato, mashed
  • 1 tsp chipotle in adobo
  • 1/2 tsp ground cumin (or curry powder – both are good here)
  • 1 T unsweetened almond milk

Place all ingredients in a small bowl and mash to combine.

Use as a condiment on burgers, pizzas, sandwiches… or a dip for your favorite veggie sticks or chips!

I just realized how much sweet potato I’ve been eating.  These local ‘taters are just so tasty!

Do you have a favorite veggie burger?

What is your #strangebutgood this week?

My Favorite Topic

Food.

Anyone surprised?

You know how they say men think about sex every 5 seconds?  That’s me with food.   It’s my 50 Shades of Grey.

When I saw this quiz on Matt’s blog I was filling it out in my head as I read through his answers.

Breakfast

1. Favorite cereal as a child?

Lucky Charms.  I used to get in trouble for only eating the marshmallows.

2. Coffee or Tea? With milk or without?

Coffee.  Black like my soul.

Since I started having my morning cocktail, I no longer need to drink coffee before noon.  When I’m in the office, I am wondering down to reception to get a mid-afternoon pick-me-up cup!

Sometimes I eat it in Tiramisu Parfaits or drink it in a Pumpkin Frappuccino.

3. The one food you eat most often at breakfast?

That’s tough!  I don’t like to repeat meals a lot… but lately I’ve been all about my PB & Aggs.

Lunch

1. Sandwiches are generally considered a “lunch food.” If you had to choose between a grilled cheese and a peanut butter and jelly, which would you pick?

Grilled Peanut Butter and Jelly.  the “real” thing was my favorite growing up, but now days I eat this tofu-laced, low-fat, protein-filled version:

2. You can only put four ingredients in your salad (not including greens); what do you throw in the mix? Additionally, which greens and dressing do you pick?

It really depends on the mood!  Right now I’m thinking cucumber, red onion, celery, and walnuts on a bed of spinach and dressed with a mix of hummus, apple cider vinegar, and sriracha.

3. One food you can’t live without at lunch?

Again, I’m not a creature of habit!  I like to shake it up, but no matter what I need a little something sweet at the end… like a bite of dark chocolate.  Or these days on my training plan… I have a calcium chew. *sigh*

Dinner

1. It’s the end of the day. You’re tired, hungry, and your fridge is empty.  If fast food (from a chain) is your only option, where do you go and what do you order?

I’m copying Matt and saying Whole Foods.  Whatever is looking good on the hot bar (usually a bite of everything). It’s the closest thing to fast food that I will eat!

2. TV/computer on or off while you’re eating?

Computer.  In fact, I’m filling this out as I eat.

3. The one food you eat most often at dinner?

Lately it’s been my Cauliflower Pizza.  It’s a delicious addiction.

Dessert

1. Choose between these two American desserts: cheesecake or apple pie?

Cheesecake.  I don’t like cooked apples… but really I’d rather have chocolate cake than anything.

2. Choose between these two foreign desserts: tiramisu (Italy) or flan (Spain)?

I like them both, but I have to go with tiramisu.  Like the parfait above. 😉

3. Ice cream: cone or cup?

Cup.  More toppings.  Duh.

Sometimes I wonder if everyone else thinks about food as much as I do… or if I have OCD.

I want your answers!  Is there anything you HAVE to have in your salads, or for lunch every day?

How much time to you each day spend thinking about food?
