PB&J Vodka + Chocolate PB Smoothie

New products sometimes blow my mind.

 

Often they seem like obvious conclusions (hello, peanut butter Oreos), at times they aren’t as obvious but still delicious (Vega’s vanilla chai protein powder)… and then there are times when I have to say WTF?!

Ladies and gentlemen, PB&J Vodka, by Van Gogh.

 

 

I wish I were kidding.

From Van Gogh’s website:

In other news, I made a smoothie.  *One you could really drink for lunch.

 

 

A chocolate peanut butter protein smoothie was all I wanted after a particularly hard weight session in the gym.  This totally hit the spot… special thanks to the avocado for making this a perfectly creamy treat.

Topped with my new love Hemp Seeds.  If you haven’t tried them yet… you should.  They are fantastically chewy and nutty.  I eat them standing in the pantry doorway.

Chocolate Peanut Butter (Avocado) Smoothie

  • 1 scoop chocolate protein powder
  • 1/4 avocado
  • 1 handful spinach
  • 1 C unsweetened almond milk
  • 1 T peanut flour
  • 10 drops cocoa NuNaturals liquid Stevia
  • 1 tsp cocoa (optional – I like it extra-chocolate-y)
  • shake of salt
  • pinch guar gum

 

Put it in a blender and blend away!

Sweet Potato Peanut Butter Ice Cream

I’ve been keeping secrets.

A few weeks ago you were all asking what this ice cream creation was:

It still needed some tweaking… and to avoid scaring people off I re-dressed it.  It’s not easy being green.

This was the end result:

Sweet Potato Peanut Butter Ice Cream.

Sweet potatoes have long been abused.  For years they been drowned with brown sugar and marshmallows at your grandmother’s Thanksgiving table.  These tasty ‘taters don’t need to be hidden by all that sugar-laden stuff!

It’s time they were liberated.  In fact, sweet potatoes don’t even need to be served hot to be delicious.  It’s 80 degrees outside!  Let’s celebrate with ice cream.  And peanut butter.

Beware: it will soften in the sun while you take pics

This sweet, nutty creation was especially good with the cinnamon and ginger additions.  Just enough to add a hint of flavor, these spices brought out the sweetness of the potato and highlighted the peanut element.

Topped with a little more cinnamon and enjoyed in the sunshine, this was the perfect afternoon treat.

Sweet Potato-Peanut Butter Ice Cream

  • 1 medium garnet sweet potato, baked
  • 1 scoop vanilla protein powder (optional)
  • 1/2 C unsweetened vanilla almond milk
  • 1/2 in piece of ginger
  • 2 T peanut flour (can sub peanut or other nut butter)
  • 8 drops stevia
  • 1/4 tsp cinnamon
  • Pinch of guar gum (or other thickener)
  • 2 C ice

Place all ingredients in Vitamix.  Turn on machine and increase speed to #10; then to high. Use the tamper as needed to press the mixture into the blades while processing. In ~45 seconds, four mounds will form in the mixture.  Stop blending and serve immediately.

Note: Do not over-mix or your ice cream will melt. If your ice cream is more of a milkshake, firm it up by adding more ice cubes.

You may also use an ice cream maker; prepare according to maker instructions.

Serves 2.

A Cure + WIAW

The mystery has been solved.

I think.

Since mid-January I haven’t been able to run due to a strange knee pain.  After seeing a PT and seeing no improvement, I paid a visit to my old chiropractor.  This is the guy that fixed my right knee a couple of years ago.  Why did I wait so long to see him for my left knee?

The theory is that I have Patellofemoral Syndrome.  In English, I have Runner’s Knee.  Damaged cartilage under my knee cap (patella) from years of abuse.  I didn’t realize your knee cap wasn’t supposed to crunch when you push down on it…

 

 

The plan is for me to see the Doc regularly and do some daily “homework.”  I have one exercise to strengthen my inner quad, a quad stretch, a way to push on my knee cap to break up scar tissue, and then I end with 10 mins of ice.  In one week I try running again and see what happens.

 

Speaking of afflictions… in Georgia we have had record pollen counts.  Thank god I don’t have allergies.  A stuffy nose would certainly affect my taste, which would make Jenn’s What I Ate Wednesday less fun!  Who wants to eat when they can’t taste?

The green theme continues… and is especially appropriate since I ate lunch outside and fell victim to the yellow-green pollen film.

Breakfast:

I pre-gamed my workout with this Raspberry Barked Oatmeal To-Go.  Delicious from the freezer and zapped in the micro for 30 seconds.

 

 

My post workout protein smoothie was a lovely red and green.  Translation: brown. 

 

It was this Beet-Citrus creation from Valentine’s Day; however, I added more spinach this time.  Hence the brown.


Lunch:

Like any good American, I love Mexican.

Today’s lunch featured a couple of tacos made from collard greens.

 

In my tacos:

  • Pinto bean dip
  • Dr. Praeger’s Veggie Burger
  • Carrots
  • Avocado
  • Tomato
  • Salsa verde
  • Cumin
  • Nutritional Yeast

 

Best new lunch idea in recent memory.  These are going into regular rotation!

 

 

Snacks:

It was a carb-y snack day.  Mostly brought to you by Trader Joe’s: Rice and Bean Chips, Sweet Potato Chip Rounds, Popcorn, and a Cherry-Dark Chocolate KIND bar.

Dinner:

A  night out with mama at a new -to-us place called Three Sheets.  Cute name, right?

Hummus, falafel, veggies, and lamb for mom.  Of course, there was a bottle of wine involved. 🙂

5 on Friday + Vanilla Chai Frappuccino

Life gets crazy.

 

I have about a million things that I ran out of time to do this week.  There are pictures on my computer of things I’ve been meaning to share with you all for weeks.  It’s embarrassing.

 

This Friday I am going to begin to catch up!  Here are 5 things I’m digging lately:

 

1. Dandy Blend

I won a bag of Dandy Blend in a giveaway from Tiffany @ Como Water.  It’s an herbal dandelion powder that supposedly has a coffee-like taste.

You know what?  It does!  Granted, it’s no replacement for your fancy Ethiopian blends… but for you non-fancy coffee drinkers and herbal drink lovers, I would recommend it.

 

 

The bag says to mix 1 rounded tsp with a mug of hot water.  That didn’t cut it for me.  I had to use 2 heaping tsp to get that coffee taste.  Hot “coffee” is good, but my favorite way to drink it was been mixed into other things.  Namely, mixed into a vanilla chai frappuccino.  (Recipe at bottom.)

2. Vanilla Chai Vega Nutritional Powder

Vega’s re-formulated Vanilla Chai also had a starring role in my  vanilla chai frappucchino.  I have previously tried Vega’s plant-based protein powder and didn’t care for it.  They did a great job on the reformulation!  I loved the 15g of protein to keep me full, and that it only contained 2g of sugar.

 

 

With many powders I find that the flavors are either too diluted or leave an artificial aftertaste – the new Vega doesn’t commit either crime.  It made an awesome chai-spiced cold drink to start out the crazy-winter-balmy 75 degree day!

 

3. Super Me! Wrist Cuff

This rockin’ cuff was ordered from Horse Feathers several weeks ago.

(Side note: Does any one else think “finger cuffs!” every time they hear the word cuff?  Chasing Amy reference?  Any one?)

 

 

Check out the website here.  They sell a bunch of different items and other cuffs with various quotes.  Mine says: “If I gotta be me, I’m gonna be super-me.”

They shipped fast and it arrived in a cute blue bag.  Sold.

 

4. So Delicious Chocolate Dairy-Free Ice Cream

This deliciousness is almost sugar-free – only 1g of sugar!!!  It was on sale (mind you, on sale meant it was still $5 a pint) at Whole Foods, so I treated myself.  My expectations were low… but OMG it is delicious!!!

 

 

 

5. YOU

You guys have been making me smile all week.

One of my new favorite bloggers, Lauren @ Oatmeal After Spinning made a variation of my Chili Nutty Tofu and declare it “perfection.”  If you haven’t tried baking tofu yet… you should! 🙂

Vanilla Chai Frappuccino

  • Vega Vanilla Chai protein powder
  • 2 heaping tsp Dandy Blend (or instant coffee, to taste)
  • 2 big kale leaves (optional)
  • Handful of wheatgrass (optional)
  • 1/2 c unsweetened almond milk
  • 1/2 tsp cinnamon
  • Ice

 

Toss everything in your blender of choice, mix until smooth, and happily slurp away!

I topped mine with a few cacao nibs.  Whipped cream would have also been good. 😉

Crossfit update: I’m so sore that I actually did yoga yesterday.  I hate yoga.  It helped.

Many women are fearful of weight training.  They don’t want to look bulky or manly.

I lift weights 3-4 times each week and this is what I look like:

DON’T BE SCARED!!

Without steroids or a crazy amount of weight gains/supplements, there is no way you will ever look like picture #2. Women just don’t have enough testosterone in their bodies.

Today’s workout is one that I do once a week.  It’s the one that I largely credit for gains in strength and definition.  Note: Every 3-4 weeks I switch it up and do this workout or P90X DVD to avoid a plateau.

As always, do at least do 5-10 mins of light cardio to warm up.  This is especially important if you workout first thing in the morning before your muscles have a chance to loosen up.  It will go a long way in injury prevention!  It can be anything from a jog to jumping jacks.

During nearly any workout, concentrate on keeping your core tight, as if you are bracing to be punched in the stomach. This way you are protecting your back and getting bonus core work!

The Workout: Biceps and Back

1. Dumbbell Power Rows

Source: Women’s Health

Holding a dumbbell in your left hand, bend your hips and lower your torso until it’s almost parallel to the floor. Your knees should be slightly bent – don’t lock them out!  Let the dumbbell hang with your palm facing in.

In one motion, explosively pull the dumbbell toward your body and turn your working-side shoulder up at the top of the rep so the dumbbell travels past your chest.  Pause, then lower the weight back to start. That’s one rep. Complete all reps, then repeat on the other side. If needed, you can use a bench or chair for stability.

Perform 2 sets of 8 reps with a heavier weight.  Rest 30 secs between sets.

2. Barbell Bent-Over Rows

Stand with your feet shoulder-width apart and your knees slightly bent.  Keep your core tight, and a slight arch in your back as you lean forward at the hips. Your torso should be close to parallel to the floor. Grab the barbell off the floor with an overhand grip with arms shoulder width apart.  Retract the shoulder blades and pull the bar up to the lower part of your chest.  Pause at the top, with your chest sticking out toward the bar.  Slowly return to the starting position to complete 1 rep.

Try to keep your torso in the same position throughout the movement.  Concentrate on using your back muscles, avoiding using momentum and making rocking or swinging motions.

Note: This can also be done with dumbbells if you don’t have a barbell.

Perform 2 sets of 8 reps with a heavier weight.  Rest 60 secs between sets.

3. Pulldowns

Grab the pulldown bar with an overhand grip.  Your hands should be just outside of the bend in the bar for a wide-grip.  Pull down to your upper chest level.  As you pull down, think about pinching something between your shoulder blades and stick your chest out. This will ensure your back is fully engaged.

Return to the starting position, extending your elbows, but allowing your whole shoulder to rise with the weight.

Note: These are a great substitute for pull-ups.

Perform 3 sets of 6-8 reps with a heavier weight.

4. Straight Arm Lat Pulldowns

Stand in front of a lat pull-down or other overhead cable machine.  Grip a bar with both hands at slightly wider than shoulder-width, and lock the elbows.  Keep your body upright and your core tight.  Pull the weight down to your thighs, squeezing the lats hard.  Be sure not to bending your arms.  Slowly allow the bar to return to the starting position and repeat.

Perform 3 sets of 20 reps.  Rest 60 secs between supersets.

5. Reverse Curls

Use with either bar or two dumbbells.

With the bar: Use an overhand, shoulder-width grip on a barbell or curled bar, with the bar resting on the thighs.

With dumbbells: Holding a dumbbell in each hand, with arms hanging straight down and palms facing down.

Inhale and curl the barbell or dumbbells up toward your chest until your elbows are completely bent.  Pause for 1-2 seconds, then exhale and lower the barbell or dumbbells back down to the starting position.

Note: Keep your core tight and the back straight and avoid swinging the body throughout the movement.  If you use  dumbbells you can perform this move using alternating arms.

Perform 2 sets of 6-8 reps with a heavier weight.  Rest 30 secs between sets.

6. Incline Dumbbell Curls

 Grab a pair of dumbbells and lie on your back on a bench set to about a 45-degree angle.  Let the dumbbells hang straight down from your shoulders.  Turn your arms so that your palms face forward.  Without moving your upper arms, bend your elbows and curl the dumbbells as close to your shoulders as you can.  Pause, then lower the weights.

Note: Be sure to return to the start position for a full-extension.  This will help develop long, lean “pretty” muscles.

Perform 3 sets of 20 reps.

7. Decline Dumbbell Curls

 Grab a dumbbell in each hand.  Lie on an incline bench set to about 60 degrees.  Your shoulders should be near top of the incline, and your legs can be straddled to either side.  Fully extend your arms, allowing them to hang in front of you so that they are perpendicular to the floor.  Face your palms forward with your elbows in by your side.

Raise the dumbbells, contracting your biceps until your arms are fully flexed.  Take care that only your forearms move. The upper arms should remain stationary at all times.  Lower the dumbbells until your arms are fully extended to complete 1 rep.

Note: You can perform using an e-z bar, a barbell or alternating arms.

Perform 3 sets of 25 reps.  Rest 30 secs between supersets.

Survival of the Crossfit-est + PB Banana Shake-which

I took Dynamics this weekend.  Dynamics is the 5 hour “training” course you are required to take before they throw you to the wolves you can join a regular class.  I left that class feeling alright.  We did a couple of workouts.  I finished second both times – just behind a guy who rock climbs and looked like he was born in a gym.

Walking into class last night I realized I was nervous.  These people are hardcore about their workouts.  Would I be good enough to not embarrass myself?

I’m pretty confident when it comes to gyms. I have worked out for the better part of the last 5-6 years.  I lift free weights in the “boys” section.  This was a whole new ballgame.

Self-doubt set in full-force.  I caught myself looking at the pic below and thinking “there’s no way I could do that.”

The first move was deadlifts.  3 lifts, 2 min rest, add 50 pounds, 3 more lifts, 2 min rest, add 50 pounds, and so on.  Women start at 85 lbs.  I got through that 85, but decided to play it safe and add just 20 lbs.  Did that and added 20 more.  Did that.  Got irrationally scared.  Started to do 3 more when the time gods smiled upon me and we were DONE.

One girl lifted 300 lbs!!!  I’m pretty sure I looked like a version of this:

Then we did the WOD.

(WOD = workout of the day.  I’m so fancy with the lingo. 😉 )

  • 4 mins pull ups
  • 3 mins handstand push-ups
  • 2 mins push-ups
  • 1 min double under jump rope (I have yet to master the double under.  Thank you, hopeless white girl coordination.)

First day thoughts:

  • It’s very humbling to feel intimidated in the gym
  • You shouldn’t be intimidated, just give it all you have
  • Crossfit-ers are very friendly people
  • I learned that I kind of like handstand push-ups
  • I’ve been working hard, but it’s time to get out of my comfort zone
  • A “can-do” attitude can take you far… growth comes from pushing past the point of can’t
  • This style of workout makes me ravenous

I’m scheduled to go back to Crossfit tonight.  In the wise words of my best friend’s mother: “Don’t let that dog know you’re scared of it!”

Naturally, I came home and made a smoothie to end all smoothies.  This dream shake was served in a Guinness pint glass.  The excess was slurped from the Vitamix spatula.

 

 

It’s only a few days into March, but my Crossfit-bruised ego is ready to declare smoothie victory.  This is the best smoothie of the month.  Not just because it was consumed out of a beer mug (though that didn’t hurt).

 

Avocado.  Banana.  Peanut flour.  Spinach.  Avocado and banana make for an incredibly creamy smoothie.  Add peanut flour to that and you have a liquid PB + Banana shake-wich.

I’ve recently been adding a lil’ lemon to smoothies too.  I find it helps draw out flavors, not to mention that lemons are good for digestion!

 

 

Praise Jesus I can’t fit my face into the actual blender to lick up the remnants… I would lose a tongue on those blades.

PB + Banana Shake-wich

  • 1 C spinach
  • 1/2 banana
  • 1/4 avocado
  • 1 scoop vanilla protein powder
  • 1/2 C unsweetened vanilla almond milk
  • 1 T peanut flour
  • 1 wedge lemon
  • 1 tsp cinnamon
  • 1 tsp bourbon vanilla extract
  • 5-6 drops stevia
  • 1/8 tsp guar gum (optional)
  • Ice + water, to taste

 

Put it all in the blender and mix until smooth!

 

Top with nuts/seeds if so desired.  My topping is a crumbled Endurance Crackers (recipe here from Oh She Glows).

Makes 1 pint.

Raw Sweet Potato Hummus + WIAW

Can eating too much orange food really tint your skin?

I think I may be in danger.  

Between the carrots and sweet potatoes I’ve been eating today, I’m going to look like a Jersey Girl.  GTL!

For real – it’s called Carotenosis.


 

Luckily Jenn’s What I Ate Wednesday doesn’t go green until March.  Orange fits perfectly with the February vegetable theme.


 

Breakfast:

This morning I met my boss for breakfast a “famous” local breakfast spot, The Flying Biscuit.  While boss-man is used to my picture-taking, my stomach wasn’t used to waiting so late to eat.  Totally forgot to take a picture.

No matter.  My tofu scramble wasn’t that great.  I would have rather had my homemade Indian-Inspired Tofu Scramble:

Lunch:

My Foodie Penpal, Laura, has created a monster.  I made another round of Bibimbap using the ingredients she sent me in this month’s package.

It’s an addiction.  That crunchy rice and  spicy sauce ain’t whack.

Click here to check out the recipe I posted yesterday.  The only change today was that I served it with cucumber rather than carrots.

Snacks:

First us was my first juice creation in the Vitamix.  It was all veggie and all delish!  This was a post workout snack, so I added my Sun Warrior protein powder.  I was worried that would make it a weird consistency, but it was quite pleasant!

In my juice:

  • 1 scoop vanilla protein powder
  • 1 tsp maca
  • 1 C spinach
  • Handful of wheat grass
  • 1/4 C parsley
  • 1 carrot
  • 1 celery stalk
  • 1 in piece of ginger
  • 3-4 drops stevia
  • 2 in piece of cinnamon (I tossed a real stick in and it WORKED!)
  • 1/2 C water

Snack #2 was a recipe I’ve had marked from Rande @ The Vegetable Centric Kitchen.  Can you guess what this deliciousness is?

RAW Sweet Potato Hummus.  It was insanely good, and an embarrassing amount was consumed… much of it straight from the blender.  I made a few modifications (recipe at the end of this post).

The only difference in using a raw sweet potato is that it isn’t quite as sweet as it would be if it had cooked and caramelized a bit.  To me, this makes it a perfect hummus candidate.

The liquid smoke added a neat dimension with the nutty-sweet tahini, and the spices were just enough to give it a kick on the end.  Even cooler was the addition of Meyer lemon and miso.  These added some sweetness, along with a little tang and saltiness!

Of course, I also had my daily Kombucha!  Served from my growler of Buchi Fire from Whole Foods.

Dinner:

The orange didn’t stop at snack time.  Even post-cleanse I have been craving an increasing amount of raw food.  For dinner I ate the rainbow in the form of this giant salad.

In my salad:

  • Spinach
  • Broccoli and radish sprouts
  • Shredded red cabbage
  • Cucumber
  • Carrot
  • Celery
  • Tomato
  • Onions
  • Sweet Potato Hummus Dressing (1 T hummus + 1 T apple cider vinegar + 2 drops stevia)
  • Angela @ Oh She Glows’ Endurance Crackers

Angela’s Endurance Crackers have been on my list to try for a long time as well.  I needed something to go with all that hummus, so today seemed the perfect day to try them out!  My only modification was to use 2 tsp of the Ras al Hanout spice blend made for my Babaganoush Soup rather than her onion-salt-herb blend.

If you haven’t tried this recipe, I highly recommend it.  I’d love to try a sweet-cinnamon version in the future!

Dessert:

Cinnamon-Vanilla Ice Cream.  The Vitamix was me on a wintertime ice cream bender.  I was working late and felt yet another treat bowl was in order.  Thank god it can be made healthy!  This purple bowl inefficiently hides a “secret” ingredient.

The ice cream blend is really easy – unsweetened vanilla almond milk, vanilla, stevia, cinnamon, and ice… and the secret ingredient.  Purple Cabbage.

I know you think I’ve lost it, but I swear on my shoe collection that not a trace of cabbage taste could be detected.


 

Sweet Potato Hummus

Modified from this recipe from Rande @ The Vegetable Centric Kitchen

  • 1 medium sweet potato (raw and unpeeled)
  • 2 T tahini
  • 4-5 drops liquid smoke
  • 2 cloves of garlic
  • 1/2 Meyer lemon
  • 1 T water
  • 1 tsp yellow miso
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 2 T fresh thyme

Toss everything in food processor or blender and until smooth.

Note: If using Vitamix, toss the whole lemon in; otherwise, only use the juice of the lemon.

Make 1.5 cups.

Butternut Squash Chia Pudding

Book Club dinners when you’re on a cleanse are hard.

They’re even harder when you’re hosting and therefore responsible for food.  The icing on the cake is that the theme is French (to go with this month’s book selection).  Who ever heard of French vegan food?!

This may have had me sweating a bit.

So I said to myself:  Man up.  You can do this thing.  I think. 

Predictably, I’m got a late start today so the details will have to come later, but it went really well!  Like, 100x better than I expected.

The menu included:

  • Provençal Spread and Veggies
  • Salade Niçoise with Tempeh “Tuna”
  • Oven-Roasted Tomatoes Stuffed with (vegan!) Goat Cheese
  • Roasted Eggplant Bruschetta

I warned everyone ahead of time that it would be a clean dinner… and they subsequently brought meats, desserts, and wine. 🙂

French wine Dessert was the saddest thing for me to miss.  There are so many possibilities for making French desserts that would have been fun to create.  There will be many other dessert opportunities in my life though.  And bottles of French wine.

In order to feel a little less left out, I created my own dessert to enjoy.  And you know what… I can honestly say it was satisfying.  (But I did swoon a little over homemade banana pudding.)


 

Chia pudding has long been a breakfast favorite.  As of last night, it’s been upgraded to dessert.

No this isn’t chocolate cake.  But it is good.

Made like a traditional chia pudding (chia + liquid + congeal in the fridge), the twist here is the sweet squash and a quick blend at the end.

The cocoa-flavored stevia did give it notes of chocolate-y goodness.  I also loved the classic pie flavors the vanilla, cinnamon, and nutmeg lent the dish.

A spin mix in the Magic Bullet at the end smoothed out the chia to make this like the pudding you grew up eating,  (Thanks to Kasey @ Power Cakes for the idea!)

Yes, you can have your pudding even if you don’t eat your meat.


 

Butternut Squash Chia Pudding

  • 1/2 butternut squash, roasted
  • 3/4 C unsweetened coconut milk
  • 1 T chia seeds
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 7-8 drops cocoa stevia
  • Shake of salt

In a small bowl, mash up butternut squash until it becomes a puree (some small pieces are ok).  Stir in remaining ingredients.  Cover and refrigerate for at least 30 mins (or overnight for breakfast).  The chia will absorb most of the liquid.

Place mix in a blender (I used my Magic Bullet) and blend until smooth (about 20 seconds).  Remove, place in bowl, and enjoy!

Note: This would make a great post-workout snack!  Just add a scoop of protein powder and increase the amount of liquid you mix in.
