Running for My Supper

Literally.

I spent a good 9-10 miles of my 13.1 thinking about lunch.  My inner fat kid knows no bounds.  Plus it entertained me while I struggled ran.

Once I remembered I had a body warmer in my jacket which was making me want to pass out, the first 4-ish miles flew by.  Somewhere between 4 and 6 I had to stop to tighten my laces and lost my 1:45 pace group (not too devastating – 1:45 was a bit ambitions).

Stopping apparently caused me to miss the 5 mile marker, so I was pleasantly surprised by mile 6.  Things were still ok until about mile 8.  My legs were cramping and I had to stop for 30 seconds and stretch.  After that it got hard – not a shock since I really only trained for up to 8.

Seeing my Aunt Teresa somewhere near mile 9 was a huge pick-me-up (thanks Teresa!), and I got another push around 10 when the 1:50 pace group caught me.  I knew I didn’t want to finish far behind them so I ignored my screaming legs and cranked out the last 3 to finish with them.

Official time: 1:49:52.  PR!  I looked back at my 2009 Half time – it was 2:17:12!  HUGE improvement in 2 years!

My younger cousin Molly also ran and finished seconds ahead of me.  Congrats to Molly!!

My mom and sisters were there at the finish line with lots of hugs.  It was really great to have a support group after a hard-fought race.

More to come about the fantastic Turkey Day eats (see little taste below), but for now I’m off to the grocery store.  It shouldn’t be crowded… everyone is stuffed and at Wal-Mart… right?

Rockstar Riff On Spaghetti + WIAW

My sister is a rockstar.

Which is the goose and which is the fox?

Alli played a local venue on Monday night with her boyfriend, Noah.  It was an open mic contest (well-known for launching John Mayer’s career).  They didn’t win but I think they were one of the best.  There is just SO much talent in Atlanta.

Given that we have a huge food-focused holiday one day away, it seems funny to be posting a tame WIAW… but at least it involves balls!

Pre-Breakfast:

I made a late-night post-concert trip to Kroger for melting chocolate so I could coat more Red Wine Cake Balls!  They looked so pretty and smelled so good… they were calling my name!  So I may have pre-gamed breakfast with balls…

Don’t judge me.

The winner so far has been these Red Wine Balls, but the Sparkling have received a ton of votes.  It comes down to preference.  Do you prefer your… desserts… sweet and white or dark and rich?

Pass the dark and rich over here.

Breakfast:

In preparation for the Thanksgiving Half, I’m loading up the carbs and protein.  This morning’s oatmeal with egg whites hit the spot.

Check out that nut butter good-ness!

In my Oats:

  • 1/2 C oatmeal
  • 1/2 C unsweetened almond milk
  • 1/4 C water
  • Shake of salt
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 egg white
  • 1/4 C blueberries
  • Scoop of Cinnamon Cacao Nut Butter

Prepare oatmeal according to package instructions.  When almost done, quickly whip in the egg white.  Add blueberries.  Transfer to bowl and top with nut butter – I used Cinnamon Cacao Nut Butter I made yesterday.

Delicious and super filling thanks to the protein and “good” fat.

Lunch:

Just before lunch, I jogged to the Thanksgiving Half Expo to get my number.  Only 1 more day – eek!  I signed up with the 1:45 pace team.  In hindsight, that may be a little ambitious.  Guess I’ll find out tomorrow.

On the way back I passed Evos, a small chain that claims to make a healthier burger.

Their fries are air baked, burgers are made with naturally raised beef, milkshakes use organic milk and sugar – they even offer fruit shakes!

I settled on a Veggie Garden Burger.  The vegetarian patty was pretty good (they also offer a vegan variety) – plenty of veggie and bean chunks in it (a must IMHO).

I really enjoyed the avocado spread, but the BEST part was the ketchup.  They make their own flavors – Original, Cayenne,  Mesquite, and Garlic.  The garlic was pretty fantastic. 🙂

The problem was the bun – it was one of those sticky, chewy grocery store buns with the sesame seeds on top.  Change the bun and I’ll come back, Evos.

The lady at the counter was really patient nice and let me sample an air baked french fry.  I didn’t order my own, but they were pretty good!  They tasted a lot like McDonald’s (which I haven’t had in years… but they remain my favorite)  but only have 170 calories and 5g of fat.  No, it’s not a health food but it is a healthier option when you want to indulge.

Dinner:

One of the most creative bloggers I know, Sarah @ The Smart Kitchen, created this vegan, “adult” version of Spaghetti-O’s.  Sarah is also the queen of repurposing items to create the coolest dishes (airplane bottle of V8 –> tomato-vegetable soup?!).

Eying the last of a carton of Trader Joe’s Tomato and Roasted Red Pepper Soup, I channeled my inner Smart Kitchen and went to work.

See my bastardized modified version at the end of this post.

Snacks:

Lucky (pre-race moment of brilliance?) me scheduled a late-afternoon massage!  It was one of the best I’ve had in a loooong time.

I made a quick pre-massage protein shake to tide me over until dinner.  It was my basic: spinach, protein powder, almond milk, almond extract, and banana (trying to get the potassium in).

This is all that was left when I remembered to take a pic.

A massive Asian Pear and pomegranate made up a great “dessert.”  I cut the pear into bite-sized pieces and sprinkled it with fresh pomegranate seeds, freshly ground cinnamon, and a teensy bit of paprika.

Normally I scoff at the idea of fruit for dessert, but this was shockingly satisfying.


Saucy Soup & Spaghetti

  • 1.5 C TJ’s Tomato & Roasted Red Pepper Soup
  • 2 T nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp ancho chili powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp red pepper flakes
  • Freshly ground black pepper
  • 2 servings pasta (I used a veggie-laced fettuccine)

Prepare pasta according to the package.

Meanwhile, combine first 6 ingredients in small pot and warm over med-high heat.

When pasta is cooked, drain and pour into 2 bowls.  Top with soup-sauce, garnish to taste with red pepper flakes and fresh black pepper.

Makes 2 servings.

Liquid Sweet Potato Pie Smoothie + WIAW

Deck the halls with tubs of frosting.

 

Last Wednesday I mentioned that holiday baking had begun.  If it began then, it has EXPLODED now.  There are 3 different containers of icing in my fridge right now.  It’s a little ridiculous.

P.S. Does any one have tips for freezing icing?  How about making room in the freezer to store said icing?

 

It’s Hump Day!  Time for another installment of Jenn’s What I Ate Wednesday.  As always, check out Peas and Crayons to see the ever-growing collection of what everyone else dined on.

 

Pre-Breakfast:

This morning began with a 4 mile run.  Normally I don’t run after eating (I get bad cramps), but I woke up starving.  Balls.

 

 

Lisa @ Healthful Sense recently posted a this recipe for Raw Chocolate Chip Cookie Dough Balls and I had 2 left in my freezer.  Perfect pre-run stick-to-your-ribs snack.

I followed her recipe except I left out the Stevia (my banana was sweet enough), added almond extract, and subbed cacao nibs for the chips.

Apparently it worked – 4 miles at an average pace of 7:20.  Fastest time yet!

 

 

Breakfast:

It was a 65 degree muggy morning, so I was hot and sweaty from my run.  Perfect time for a Sweet Potato Pie shake!  (Recipe at the end… yes, its green. 🙂 )

If you haven’t tried almond extract before, I highly recommend it.  It gives smoothies an almost cookie-esque flavor that I crave.

 

Lunch:

I’ve been inspired by a lot of bloggers lately – today I used this this Vegan Pumpkin Mac ‘N Cheeze sauce from Angela @ Oh She Glows to coat my barley.

My modifications: halved the recipe, subbed olive oil for butter, 1/2 tsp red pepper flakes, 1/2 tsp Herbs de Provence, and sauteed 1/2 a fresh red bell pepper.

It was fantastic – I loved having the bell pepper to chew on and the addition of red pepper flakes gave it a pleasant heat.

 

 

Dinner:

Last night I worked late and then baked for the office potluck today (just wait until you see what I made – OMG).  Dinner was a hodge podge I cooked.

 

 

Sparkling Squash, roasted tomato, white asparagus (which oddly doesn’t make your pee smell like the green stuff), toast with this Pumpkin Basil Cheese Spread by none other than our WIAW host (Jenn @ Peas and Crayons)… and stuff I was baking…

 

I know, I know… another teaser… I promise it’s all coming soon!

 

The Sweet Dumpling Squash was surprisingly good.  It was a new (to me) variety – I had Prosecco left over from a certain baking endeavor (which may or may not be pictured above).  People cook with wine all the time… why not the bubbly?  In it went!  Add in some red bell pepper, scallions, spices, and vegetable broth and you have a lovely (mashed) Sparkling Squash!

 

Snacks:

I had a new flavor of the Think Thin bar – Cookies and Cream.  Better than the Chocoalte Toffee after the recipe change… still not my fav.

 

Snack #2 was Kombucha and jerky.  Vegan, gluten-free jerky.  Hickory Smoked VEGAN Jerky.

The awesome people at Primal sent me a whole box of flavors to sample and I couldn’t be more happy.  It’s made from soy protein and is 100% vegan.  So far I love the Mesquite Lime and the Hickory the most… Hot and Spicy tomorrow though!

 

One of my favorite thing about Primal’s jerky is that they are just under 100 calories and contain 10g of protein.  That protein is key to a satisfying snack!

Sweet Potato Pie Smoothie

  • 1 C spinach (optional)
  • 1/2 large sweet potato (baked)
  • 1/2 C Unsweetened vanilla almond milk
  • 1 scoop vanilla protein powder
  • 1 tsp maca powder
  • 1/2 tsp almond extract
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp allspice
  • 1/8 tsp nutmeg
  • 1/8 tsp Guar gum
  • Shake of salt
  • Stevia drops, to taste
  • Water + ice, to taste

 

Place everything in your blender of choice and mix until smooth.  Bottoms up!

Note: It’s a long ingredient list, but the spices are super-easy.  I don’t even measure anymore, so it takes all of 30 seconds to make this smoothie.

Hijacking a Brunello Wine Tour

Caution: this post involves drinking, gluttony, and theft.

In other words, my favorite things. 😉

We left Siena from Montalcino on a tour bus with 4 strangers and a tour guide, Mattea.  It was to be a relaxing wine tasting, followed by lunch, another tasting, and then a ride back to the hotel.  Little did Mattea know, this was no ordinary tour group.

First fateful stop: Il Cocco

It was here that we met our new BFF – Christal.  A New Mexican woman living at the winery with Giacomo, her wine-maker boyfriend (yes, we were all jealous of this modern-day Cinderella story).

Wayward Wandering Wino Tour Group

At Il Cocco we tasted a fabulous Rosso di Montalcino and a Brunello di Montalcino.

Montalcino is a small hill town about 30 miles outside of Siena in the Tuscan region.  It is believed to have been founded in the early 9th century.  The town is famous for its Brunello – and rightfully so.

Brunello is the first wine to be awarded DOCG status.  It is made from the sangiovese grosso grape and must be aged 5 years before it is ready to be sold.  The Riserva must be aged 6 years, and is only produced only during the best vintages.  Brunello is a smooth, fruit-forward wine, often with notes of blackberry, black cherry, and chocolate.  I like the leather taste more commonly noted in the Riserva.

Rosso di Montalcino (aged just one year) is made from the same grape and is often called “Baby Brunello.”  It is good, but much lighter (and less expensive) than Brunello.  It’s all much cheaper in Italia.

Check out the price tag on the bottle below.  I paid $80 USD or the same bottle at a restaurant in Atlanta.

Back to our crime novella.

We needed to leave Il Cocco to get to our lunch reservation… but how could we leave our new BFF behind?!  Into the van went Christal the winemaker’s girlfriend!  Bwhahahaha!

After a lunch (and a limoncello digestif) we were off to…

Second fateful stop: Le Potazzine.  A Potazzine is a small bird found in the hillside, but it is also and endearing term used by adults to refer to children.  The two birds on this winemaker’s label represent his two daughters.  How cute is that?!

Here’s where the hijacking begins.  We were supposed to be dropped back in Siena after this stop.  Tour over.  What had happened was…

There was a bottle of their absolutely fabulous 2004 Riserva.  And there were several of us that thought it would be a good idea to buy this bottle – it was one of the last bottles left!  Did I mention this was a magnum bottle?  Wine is better in magnum bottles.  How could we NOT buy it and solidify our friendship by sharing with the backdrop of a Tuscan sunset?

It only took a little convincing, but eventually Matteo caved to the pressure and agreed to take us all back to Il Cocco to drink the bottle.

I wish we had more time to open the bottle and let it breathe (often these wines will be opened the day before drinking to allow it to open up), but we did hold off for an hour.  It was fabulous.

We took our glasses and walked down to Giacomo’s vineyards, where we cheered to our perfect, unpredictable day and took in the most beautiful sunset I have ever seen.

Bright green vines, the smell of fresh grapes, a Tuscan sunset, and a special bottle of wine with friends.  La dolce vita.

I’m going back to Il Cocco next year to help with the harvest.  Not kidding.

Pumpkin Pie BYOgurt + WIAW

Some things make being on the road all week a little better.

Another thing that makes a long week brighter is my favorite weekly event – Jenn @ Peas and Crayons‘ What I ate Wednesday.  Here’s my WIAW (technically Tuesday… but whatever).

Breakfast #1:

Breakfast #2:

Remember the Sweet Potato BYOB Greek Yogurt?  Same idea, same Sky mag (the new one wasn’t out until the flight home – SJP looks amazing in it!), different flavors.

Pumpkin Greek Yogurt

Pumpkin Greek Yogurt with Fage.  I think the secret is using a thick yogurt (this may also help when getting through security!) and not being afraid to add spices/flavors.  Shout out to almond extract and ginger in this cup.  YUM.

You should have see the guys next to me on the plane wondering WTF I was doing taking multiple pics of my BYOgurt. 🙂

Lunch:

Lunch today was from a deli in the bottom of an office building.  It is barely worth mentions and certainly not worth picturing.  Over-salted but otherwise flavorless vegetable soup and a dry roll.

I would have rather had my Wild Mushroom Soup from last week.

Snacks: 

Unpictured pretzels and an apple on the plane.  I did get a shot of a gorgeous sunset.

Dinner:

Totally made up for lunch.

My boss and I had to work late.  Since we were at the airport already, we decided to check out One Flew South in the ATL airport.  It was recently featured in Food & Wine!

There weren’t any vegetarian options on the menu, but they did have tofu in a salmon dish.  I asked the server if they would make a tofu-only dish and they surprised with me an amazing tofu-veggie sauté.  It included sweet potato straws, butternut squash, snow peas, carrots, fennel, spinach, and shittake mushrooms over a parsnip puree.  Absolutely delicious.

Dessert was fantastic – Banana Pudding with ‘Nilla Wafers.  So much so that I forgot to take a picture until there was barely a bite left in the jar.

I had NO idea airport food could be this good!


Homemade Pumpkin Greek Yogurt

Pumpkin Pie Greek Yogurt

  • 1/3 C pumpkin puree (here’s how to make it yourself)
  • 1 C (1 individual container) Fage 0% Greek Yogurt
  • 1.2 tsp almond extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1.8 tsp freshly grated nutmeg
  • 2-3 drops NuNaturals Pure Liquid Vanilla Stevia
  • Shake of salt

Mix all ingredients together in bowl or recycled yogurt container.  For best results, let refrigerate 1-2 hours or overnight to allow flavors to meld.

Add toppings as desired.  Mine included: pomegranate seeds and these Cardamom Roasted Pumpkin Seeds.

Get through security and enjoy your yogurt-pie as a reward!

Halloween Pumpkin Roast

Halloween is the perfect day for roasting pumpkin.

Before I get into that tastiness, I need to talk a little football.  In addition to being Halloween weekend, it was a HUGE football weekend.  Georgia Tech‘s Homecoming game was against the undefeated Clemson Tigers.  Tech won pretty 31-17, making me one happy girl Saturday night. 🙂

Every fall people go crazy over the return of canned pumpkin to grocery store shelves.  While the canned stuff is good (and convenient), it doesn’t hold a candle to homemade pumpkin puree.

Don’t use your jack-o-laterns for this.  

Recycling is good, but those are different pumpkins.  What you want to use is the smaller Sugar Pie Pumpkin, which has a sweeter, softer flesh.  They can be found at most grocery stores.

Yes, it is slightly more time-consuming than opening a can.  The end result is well worth it.  There is just something about the flavor and the texture that is much, much better.  It will take your pumpkin pies and breads to a new level of delicious.

You’ll notice a huge difference when using it for non-baking purposes too.  I love mixing it in my Greek yogurt, smoothies, and pasta dishes.

Some people lick batter out of bowls… I may have done something similar with this pumpkin skin.

Yesterday I even mixed my pumpkin puree with coconut milk and cayenne and used it as a marinade for my  tempeh before pan-frying it.  Lunch doesn’t get more fall than that!

The puree can be portioned and frozen for later use (if you don’t eat it all at once).  Pumpkin muffins year-round!

The puree is decadent.  Fresh pumpkin contains more moisture than canned, making the texture absolutely fabulous.  You won’t be able to resist sprinkling some cinnamon and nutmeg on it for a mid-morning snack.

It wasn’t a bad fitness week.  Thank you all for your well-wishes regarding my injury.  I did make the call not to run my portion of the relay.  It was a tough decision, but I just literally couldn’t run more even a mile Saturday morning.   Now I’m concentrating on healing up and being able to run the Half Marathon on Thanksgiving.  I can’t believe its less than a month away!

Workout Recap (10/24-10/30)

  • Monday – 4 mile run, 6 min plank sequence, 100 push-ups
  • Tuesday – Biceps/Back, P90X Ab Ripper X, 100 push-ups
  • Wednesday – 100 push-ups
  • Thursday – 6 mile run, 100 push-ups
  • Friday – Triceps/Chest, Ab Ripper X
  • Saturday – Shoulders/Butt, 45 mins elliptical, 100 push-ups
  • Sunday – 15 mins abs, 45 mins stationary bike, 100 push-ups

Roasted Pumpkin

  • 1 sugar pie pumpkin
  • olive oil
  • salt

Preheat oven to 400 degrees.

Cut the pumpkin in half.  Scoop out the “guts” (save the seeds to roast later), and then slice each half once to create a total of 4 pieces.  Rub the wedges with olive oil and sprinkle with salt.  Place on a foil-lined baking sheet to bake for about an hour (or until tender).

Scoop the meat out of the skins and puree in food processor.

Eating Through Siena

Today the Italian adventures continue in Siena.

I took a little recap break to post some of the dishes I’ve made.  Some – like this and this – were inspired by my travels… only I made them like your vegan-ish Italian grandmother would. 🙂

The Tuscan region was home to some of the best food on the trip.  Certainly the best gelato!

In order to get to Siena, we braved the overnight trains (not recommended without a seat reservation… using the restroom on the train also not recommended) and arrived in Siena sometime around 6am.  Thank god our room was ready early and we were able to take a nap before exploring the city.

Despite the train-lag, we got moving in time for lunch.  The view from our room had me bouncing out of bed!

For lunch we followed a Rick Steve’s recommendation that promised vegetarian fare (we were deprived of veggies after all that travel).  He was spot on – this Osteria was awesome!

The servers were very nice (and patient).  One was even wearing a Fenway Park shirt.  The veggies were just what we needed to begin the day:

We wandered through town before resting at the main piazza to enjoy a coffee while people-watching.  Followed by gelato (banana and nutella for me).

Next on the agenda was the Duomo (the tallest point you can see in the pic of our view from the hotel room).  They sell a pass for the whole artistic complex of “Opera della Metropolitana di Siena” for 10 Euro!  Sold.

In the opera museum we were able to view some incredible paintings, sheet music from operas, and sculptures.  It still blows my mind to think the history behind it all.  From the museum there is a long, winding staircase to the top of a tower offering a view that will take your breath (so will all those stairs!).

 The 10 Euro tour then took us inside the Cattedrale, followed by the Cripta below.  I was most excited about the crypt, but they must have been renovating because much of it was blocked off or not labeled (unmarked mounds containing bodies = not as exciting).

The cathedral was stunning.  I was back to my over-used phrase: This doesn’t even look real!

At this point my camera died… which didn’t stop me from making everyone pose for a pic in the Battistero (a smaller church housing works from many of the greatest Renaissance sculptors).

 Dead cameras don’t end the day – we hauled it back to out hotel to re-charge batteries – electronic and our own.  We had met a friend along the way earlier in the day who promised us a delicious dinner.

He was the chef at a restaurant we had also found via Rick Steve: Antica Osteria da Divo.  If you are ever in Siena, I highly recommend this place.  It’s a gorgeous dining room and the food is top-notch.

2007 Castello di Ama Chianti Classico

Rolled zucchini filled with pecorino cheese from Pienza and kale served over caramelized red onions

Scallops browned with citrus-bread crumbs, served over pumpkin cream and watercress

Risotto with fresh Porcini mushrooms and Saffron served table-side in a form of demi-seasoned pecorino cheese

I almost asked for seconds

Hand-rolled Senese pasta with Selvatic meat (Wildboar-Venison-Deer) sauce, “Taggiasche” olives, juniper berries and rosemary-scented crispy bread

Rolled pork stuffed with spinach and fresh pecorino cheese, truffle sauce and caramelized scallions

Rolled pan biscuit ,vanilla cream, and pear cooked in Chianti Classico with a caramel net

A picture cannot begin to do that dessert justice.  It was a work of art.

Feeling fat and happy, we took a walk back to our hotel.  The chef and waiter invited us for drinks,  but we were still tired from the train and needed to wake up early.  The next day would bring a trip to Montalcino to learn about Brunello wine.*

*This is the part of the trip where we hijacked a tour bus.  No joke.  Check back for the rest of that story. 🙂
