French Elvis Toast

My love affair with breakfast continues.

I couldn’t choose between something peanut butter-y and French toast.  Like a true healthy-living blogger I want nut butter at every meal, but I’d been thinking about french toast ever since receiving a loaf of P28 Bread.

French toast was my favorite childhood breakfast.  Mom used to make it on challah bread with lots of cinnamon and a drizzle of honey.  She would then warm syrup with butter to pour over the decadent toast.

Obviously that’s not on my training diet, and I had not attempted to make a healthy version due to my protein requirements.  There’s no way French toast would pack 20g of protein… until I received high protein bread.

You may have seen me mention P28 bread in previous posts.  I absolutely love it.  One slice packs 14g of protein!  Count me in.

P28 bread is chewier than regular bread.  Some people (Lee‘s husband) like that.  I don’t mind it, but prefer the bread toasted.  The toasting turns it perfectly soft with a nice crunchy exterior.  Note: Due to the whey, it toasts faster than regular bread, so keep an eye on it.

Now about the french toast…

Peanut butter-coated and topped with caramelized bananas, I had to name it after The King.

You know how good warm, runny nut butter is?  Imagine that, but soaked into bread.  A little vanilla and cinnamon makes it almost like eating dessert for breakfast.  Dessefast?  Deckfast?

For my topping, I sliced the bananas and let them briefly caramelize in the pan.  Arranged atop of the peanut-y toast and drizzled with cinnamon-lace syrup, those bananas added just the right amount of richness and creamy texture.

No peanut flour?  No problem!  Just use regular peanut butter.  (It will be easier to mix if you warm it just a bit.)

French Elvis Toast

  • 2 T peanut flour
  • 1/2 tsp cinnamon
  • 1/4 C egg whites
  • 2-3 T milk (I used unsweetened almond)
  • 1/2 tsp vanilla
  • 4 drops liquid stevia
  • 1slice P28 Bread (or bread of choice)
  • 1/2 banana, sliced

For Syrup:

  • 2 T sugar-free maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp butter extract

For the Toast:

Combine all ingredients in wide bowl.  Dip bread in mixture until saturated.

Cook in pan over med-high heat until golden brown on each side.

When almost done, place banana slices in pan and allow to caramelize slightly (they will turn a bit brown on top).

For the Syrup:

Pour syrup in small bowl.  Mix in cinnamon and butter extract.  Microwave for ~20 secs, until warm.

Plate your toast and top with caramelized bananas and syrup.

Makes 1 serving.

Note: If using regular bread, you may need 2 slices.  P28 slices are large and more dense than a standard slice.

Vegan Option: First, use a vegan bread source.  Second, replace the eggs with more almond milk and add a tablespoon of flax.  Let it sit for 10 mins to thicken before dipping your bread.  Proceed to cook.

Approximate Nutritionals (without syrup or bananas): 223 calories, 5.9g fat, 342.5mg sodium, 16.2 carbohydrates, 4.1g fiber, 4g sugar, 28.8g protein

Gratitude and a Simple Giveaway

I have a confession.

When I added dairy back to my diet, I worried people would be pissed I wasn’t going vegan forever.

When I added seafood last week, I wondered if people would think I sold out.

When I read all of the encouraging comments you left, I felt gratitude.

Pushing myself to the limit in this past month of training has left me feeling a little vulnerable.  I’m feel strong and I am proud of what I’m doing, but I am outside my circle of comfort and that can be unsettling at times.

You reminded me that:

  1. The people who read my blog (yes, YOU) are amazingly supportive
  2. I shouldn’t worry about what others think of my eating habits (you’d think I’d never forget this since I blend spinach into everything)
  3. If you focus on doing what is right for you, and the rest will fall into place.

We’ve all struggled at some point in life with body image – if nothing else, its part of growing up!  What I continue to learn (re-learn?) is that you shouldn’t CARE what others think about you.  Especially when it comes to diet.  Your diet is just that – YOURS.  It’s a personal thing.

Some people are naturally teeny.  Some people have bigger bones.  Some were built to bench 200 lbs.  Some are aerodynamic sprinters.  Some people can eat red meat with no problems.  Some people can’t stomach the thought of eating an animal product.  And that’s fine.  Just don’t wear fur and we can all get along. 😉

Sunday will mark the beginning of the 29th year of my life.  The last year of my 20s.  Sometimes I’m amazed at what I’ve done in that time… and sometimes I panic because I wanted to accomplish more (wasn’t I going to rule the world by 30?).

From my perspective, the important thing this to keep your goals in sight and stay focused on the things that mean the most to you – family, career, athletics, crazy food creations, etc.  If you believe you can’t, you won’t.  If you belive you can, you will.

You can do anything you want to if you want to badly enough.  Bring it, world domination!

Thank you all for reminding me to stay true to myself, and that support will follow when you are genuine.  It sounds simple, but sometimes it’s hard to remember.


Speaking of simple…

Breakfast Bulgur + a Giveaway!

Promises, promises.

 

Do you ever get yourself out the door to run by promising your body you only have to do 3 miles?

That’s what I had to do yesterday.  And then this happened.

Stats:

  • Distance – 9 miles
  • Time – 1:12:51
  • Average pace – 8:06

That calls for a substantial breakfast.

Thankfully I’d planned ahead (unknowingly, but I’ll take what I can get!).  As I was eating my Blueberry Cilantro Bulgur Salad the other night, it occurred to me that bulgur is a lot like oatmeal.

 

It has a similar flavor profile.  It’s only a bit nuttier, which is a plus in my book.  Another plus is the protein content – 1 serving has 5g!

 

Using a bit of almond extract here with the NuNaturals Vanilla Stevia and vanilla extract highlights the bulgur’s nuttiness and makes the dish even more rich.

This was one hearty, satisfying breakfast!

I’ve been playing a lot with the samples NuNaturals sent me lately.  I’ve truly been impressed with the quality – it doesn’t leave an artificial taste in my mouth, even when added to smoothies!

Banana Bulgur Breakfast Bowl

  • 1/2 C cooked bulgur
  • 1/2 large banana, mashed
  • 1/4 C Greek-style yogurt
  • 1/4 C unsweetened almond milk
  • 1 T goji berries 
  • 1 tsp cinnamon
  • 10 drops NuNaturals Vanilla Stevia Liquid
  • 1/4 tsp vanilla extract
  • Splash of almond extract
  • Shake of salt

 

Mix everything together in a bowl and refrigerate overnight.  Wait until morning (or at least 3-4 hours).  Devour.
