Be My Veggie Valentine – a Giveaway!

I’ve been excited to announce this for weeks.

 

Cookie Underground and I would love for you to be our Veggie Valentines!

You may remember me posting about the Atlanta Underground Market where I first discovered Cookie Underground.

 

 

The fabulous Kim has built a business around making (delicious) cookies out of vegetables.  Each cookie is ~50 calories and filled with good, clean vitamins and nutrients from fresh veggies.  Thank God because I could eat a whole box.

 

 

Forget flowers, nothing says “I love you” like cookies.

The Giveaway:  You’ll get 15 bright pink Almond “Heart Beet” cookies (their top seller) and 15 light pink Grapefruit Fennel cookies.

 

 

There are 3 boxes up for grabs!  Receive up to 4 entries by:

    The cardamom carrot cookies sound really good. I made a cardamom spiced carrots for a side dish last xmas.
    But coming up with an original cookie maybe parsnip and pear.

    I first tried these incredible cookies at the Alpharetta farmer’s market last summer, and was amazed by how delicious they are! My mom and I soone became regulars at Kim’s booth, and I’m always willing to sample the lastest flavor. I have to say, my dream cookie would be a huge cookie cake mix of almond beet, vanilla parsnip, and the spicy sweet potato.

    My dream veggie-cookie flavor would be…that’s hard because I don’t care so much for veggies. I’m hoping above all others these cookies can change that. The only veggie I really like is cucumbers, and I don’t know how well that would work for cookies. Maybe Cauliflower?

    Oh my gosh, how cool! I’ve never heard of such a thing as a veggie cookie, but these sound amazing! Especially those cocktail versions. Mimosa cookie? That is actually justifiably health? Amazing.

      I don’t know that it was necessarily a health food (it was cream-filled), it was more redeeming that a cream pie (and tastier!).

      For sure! You can’t detect the veggies in many of them (the kale does come through in her lemon kale).
