Atlanta is a great place to be if you love food.

 

I love all of the restaurants, markets, a food events.  There is a Green Market across the street from my building every Saturday morning.  It’s where I pick up my farm-fresh eggs, tomatoes, and various other locally grown produce.

The market also features a weekly chef’s demo.  This week was Chef Daniel Chance from Campagnolo, an Italian restaurant in the neighborhood.  He made a tasty basil risotto with green bean from the market and a seared lamb with rosemary.  I was paying close attention as my next demo is in less than a week!

 

Atlanta also is a great spot to be a blogger.  We have a ton of bloggers in the metro area, as we all make an effort to get together on a regular basis.  This weekend was hard for people, but we managed to get a group of 5 together to meet in the park for a potluck picnic.

All of the food was wonderful, but even better was the chance to catch up with everyone.  We sat in the park and talked for a few hours – I didn’t notice it had gotten so late until my stomach began to growl again!

Foodie friends aren’t always local!  One of my favorite online blogger events is the Foodie PenPal program.  I love getting to try new things from across the country!

This month my “pal” was Sharlene @ Solar Cooking.  She was so sweet to put together a box of goodies I could eat on my training diet.  Admittedly, I was leery of the turkey jerky at first.  after a few people on Instagram encouraged me, I sucked it up and tried it.  It was really good!  Added bonus: it’s surprisingly low in sodium (for a jerky).

Workout Recap

This week was hard for me.  I have been feeling under the weather and wasn’t able to lift as heavy as I would have liked some days.  Working until 2 am almost every night could have been the culprit too…

We also added 100 pull ups (assisted – for now) to my repertoire.  Those are no joke.  I didn’t get them in every day due to feeling sick-y and  being pressed for time, but I’m starting out on Monday full-force!   Bicep day always makes me feel a little better, so here’s a pic from my favorite day:

 

 

I also had my first posing practice in a competition bikini.  I felt neekid.  There are pics… but I lack the kahunas to post them.  Less than 5 weeks out from competition… AHHHHH!

Friday Foodies

If you are passionate about food, we might be BFFs.

 

 

Unless you take the last bite of dessert.

Why my  “in real life” friends (IRLFs) don’t want to talk about food 24×7 is beyond me!  One of the coolest things about blogging is discovering other people who are just as passionate about food and the creative process as I am.  I  think that’s why the IRLFs friends encouraged me to start a blog…

 

I get some of the best inspiration from bloggers.  For instance, yesterday morning I tried a new version of my Apple PB Socca Pie.  This idea was made even decadent when combined with the Pure 2 Raw twins’ Socca French Toast!

 

 

I followed my breakfast socca recipe, but dipped it in a version of their french toast coating.  My dip was simply 1/4 C egg whites, 1/2 tsp cinnamon, and a few drops of  liquid stevia.  Then I topped with a mix of sugar-free syrup and protein power and a fresh nectarine.  So. Good.

 

This Friday I want to talk about some of my best foodies.  These ladies took an idea I had and made it their own.  I can’t wait to try their interpretations!

 

Allie @ Forgotten Beast (who is also training for a figure competition!) took my Cauliflower Crust Pizza and turned it into a Cabbage Crust topped with tomato and a TVP “sausage.”

 

 

Sarah @ Chunky Tales doubled my recipe for Low-Fat Peanut Almond Butter and put it in a jar for safe keeping.  Why didn’t I think of jarring it?!

 

 

Ashley @ Freckles and Spice took my Oatmeal Cookie Dough Smoothie to a new level adding figs and maca.

 

 

Lauren @ Oatmeal After Spinning made my Chick-Less Nuggets and used them as a salad topper.  He meat-eating husband even proclaimed “it tastes like chicken!”

Note: Wednesday I posted about her Vegan Bread Pudding, which I turned high-protein with P28 Bread.  It’s a must try.

 

 

Last, but never least…. my “twin” Meg @ A Dash of Meg wrote the sweetest post yesterday where she mentioned trying my Carrot Cake Protein Batter, Cauliflower Pizza Crust, and PB & Jeggs.  In a genius move she ran with that last idea, turning it into a a fall dish by making a “Pumped Up Egg Scramble.”

Pumpkin and Eggs?!  I would have never thought of that one.

Speaking of foodie friends… it’s also time from another Foodie Penpal reveal!

 

This month my “pal” was Rachel @ The Health Revival.  Rachel put together the cutest package full of protein powder, almonds, and a few treats.

 

 

Unfortunately a lot of the proteins had too much sugar for my nutrition plan, but you better believe I saved that fig, fennel, and almond chocolate bar for cheat day!  And my concierge thoroughly enjoyed what I could not. 🙂

The Mailman Makes Me Smile

He delivers my packages!

 

Last week was a good week in terms of goodies.

Bulu Box was kind enough to send a sample of their July sample box.  Bulu is a monthly subscription service.

For $10 a month, you can get a box filled with 4 to 5 nutritional products from top brands.  Products include vitamins, supplements, sports nutrition, meal replacement, energy, protein, natural remedies, endurance… and more.  Honest opinion: this was $10 worth of goods.

 

In my box:

  • Life Equals Omega-3 (2 pills)
  • RevHoney (a tube of energy – created with freeze-dried fruit and honey)
  • Pure Matters Vitamin D (this was a full bottle!!!)
  • NightFood Cookies ‘n Cream Bar (nutrition bar formulated for better sleep)
  •  Cellucor Super HD (fat-targeting weightloss supplement)

 

 

My favorites were the Omega-3s, Vitamin D, and NightFood.

The Omega-3s – as advertised – didn’t product “fish burps.”  I take Vitamin D every day and had just run out, so I was elated to get this bottle.

 

The NightFood Bar was only 150 calories!  It was low in sodium (90mg) and had 6g of protein.  The taste made me forgive the 9g of sugar.  Did you guys ever eat those Cookie ‘n Creme Quaker Oats Bars?  This bar tasted just like those!   Nom.

That box would have been enough… but there was another box!

I also received an incredible thoughtful box in the mail from my Foodie Penal, Edwina.  She doesn’t have a blog, but she is an avid blog-reader.

 

 

She did her research!  The items she sent were EXACTLY the sorts of things I like to eat.  She read my blog and knew I had a love of spicy food, protein, peanut flour.

She also must have known that I drink 120oz of water per day, because she sent me a tasty bottle of spring water from her home state of Idaho.

 

In my Foodie Box:

  • Chocolate-flavored PB2
  • Spring Water from Idaho
  • Melinda’s Habanero Hot Sauce (it’s hot, ya’ll)
  • Bhuja cracker mix (with wasabi peas)
  • Oatmega-3 Protein Bars
  • Annie Chun’s Wasabi Seaweed Snacks (I eat these ALL the time and love them!)

 

 

I used the hot sauce last night to spice up my marinade for this favorite Chili Nutty Baked Tofu recipe.  It gave it one helluva kick.

Served with quinoa, shiitakes, asparagus, and radish sprouts.  I was one happy Foodie Penpal. 🙂

And one more box, though this one was FROM me!

My July Foodie Penpal, Peggy, doesn’t have a blog.  She was introduced to the program through her daughter, Bethany @ One Girl’s Taste On Life.  Peggy sent me the sweetest write-up of the box I set her to share:

 

My daughter, Bethany, a member of Foodie Pen Pals, strongly encouraged me to join. I was reluctant at first because I am not the primary “chef” in our home. My partner, Wes, has spoiled me in many ways; one of which is his culinary abilities.

I hit the jackpot!  Thank you, Laura, for making my first swap so much fun!  Her package arrived and I couldn’t wait to tear (gently mind you) into it to see what goodies I had.  Oh my, such great finds.

 

OK, so my eyes first focused on the Goo Goo Cluster.  I had my first sampling of this yummy treat when I moved to Tennessee in 1984.  I held off opening this true delicacy until I had taken the picture.  It was hard to do, but you will be proud of me.  I DID IT! I originally thought of slitting the back of the package.

I LOVE nuts and cranberries.  Laura must have had a spy in my house.  I’m going to savor this little baggie of treats until I have finished this write-up.  Work first, eat second is my motto.  Dumb motto, huh?

 

 Laura is health conscious.  What a good partner I have.  Her mission, which she chose to accept, was to send something healthy to inspire me to “live long and prosper” in the words of Star Trek’s Dr. Spock.  Quinoa is something I have had one time.  It was a very Plain Jane variety.  I think I did something wrong in the making because it tasted burnt.  Laura has given me a second chance to redeem myself.  Sun-dried tomato AND basil flavor.  I KNEW she sent a spy; I love anything sun-dried.

 

Last, but certainly not least…

Recently, I went to lunch with friends.  One of them had this product I had never tasted: Stevia.  She invited me to add to my tea.  It was quite good; I especially liked it because it was liquid and blends much better than some granules.  I made a mental note (they don’t work at my age) to buy myself some.  Never did, but GUESS what arrived in my “goodie box”.  I told you I won the jackpot.  Not only was it Stevia BUT it was orange flavored.  It was delicious in my sun tea.  Just added numerous drops to my glass pitcher and voila!  Oh YUM!!!!

The running is still “eh” thanks to my bum knee.  I’m taking it sloooow (which kills me), but it is nice to be able to do a little bit.  Even if that little bit isn’t pretty.

I’m at a work retreat for the latter part of this week, so I’m a bit light on the post today.  Translation: perfect time for a survey post!

You may have seen this “ABCs” survey circling the blog world… I’m about 2+ weeks behind the times, but thought I’d finally be a joiner. 🙂

A is for age: 28.  When did I get so close to 30?!

B is for breakfast today: Nothing yet, but it will be conference food (which is 100x better than average, I must say).

C is for currently craving: Kombucha!  Since I’ve been travelling, it’s been 3 days without!!!

D is for dinner tonight: I’m going to a mother-daughter dinner with my mom, my BFF, and her mom.  Atlanta, beware!

E is for favorite type of exercise: Weight lifting!  Although not being able to run has really made me appreciate/crave running.

F is for an irrational fear: Roaches.  I can’t handle them.

G is for gross food: I know this is weird, but I cannot STAND white potatoes.

H is for hometown: Atlanta.  Where that playas play.

I is for something important: Being the best you possible.  Why bother doing anything half way?

J is for current favorite jam: Tough choice!!!  Anything by Mumford & Sons.

K is for kids: I know what causes that… nothankyou.

L is for current location: In my cute cottage at my work retreat.

M is for the most recent way you spent money: I bit the bullet and bought the VitaMix.  Best purchasing decision EVER.

N is for something you need:  A good sweat.  If I don’t get moving for at least for 15 mins every day, I start pacing like a caged animal.

O is for occupation:  Consulting in the area of Sales Effectiveness.

P is for pet peeve: When servers start clearing plates before everyone is done.  In the words of Stephanie Tanner, “How rude!”

Q is for a quote:  “You can do anything you want to if you want to badly enough.” – My Dad

R is for random fact about you: I would love to do a tri, but I can’t swim.  Actually, I downright hate swimming.

S is for favorite healthy snack: I legit LOVE healthy snacks – protein shakes or chia pudding are my go-tos.  Loved this Roasted Beet and Orange. 

Unhealthy Snack: Hmmm… my snacks really aren’t bad.  Desserts are my weakness. Warm chocolate chip cookies, anyone?

T is for favorite treat: Really, really good wine (Amarone, anyone?) and chocolate cake.  Preferably together.

U is for something that makes you unique: I’m special just like everyone else!  Maybe having played roller derby? That’s a pretty cool adventure.

V is for favorite vegetable: Spinach!  Every smoothie I make is a peculiar shade of green. 🙂

W is for today’s workout: A quick HIIT thing in my room this morning.

X is for X-rays you’ve had: Jaw (see letter U), teeth, knee (fractured)… I think that’s it (surprisingly).

Y is for yesterday’s highlight: Meeting my new colleagues AND doing a “Cooking Experience” activity with the founder of Serenbe.

Z is for your time zone: East Coast, represent!

Foodie Penpal Delivers – Vegan Bibimbap

Monday was a day for firsts.

 

Thank you for all of the supportive comments yesterday!  Many of you asked what my first post-cleanse meal was… I don’t know if you could count it as a meal, but at midnight on Sunday I ate a massive spoonful of peanut butter.  It was everything I hoped it would be. 🙂

Monday morning I had a PB&J protein shake post workout.  I had good intentions of taking a picture, but got a little too excited.

 

Many of you commented that giving up caffeine would be hard, but a cup of coffee didn’t even cross my mind yesterday morning!

 

For an afternoon snack I enjoyed a carrot + PB “sandwich”:

 

Oh, and there was a handful of pistachios for snack too.  I love nuts.  You can quote me on that. 😉

I’m really excited about today’s recipe – it was courtesy from my Foodie Penal this month, Laura @ Laura Lives Life.  In one of the most creative penpal boxes I’ve heard of, Laura sent me the (non-perishable) ingredients to make her favorite meal: Bimbibap.

 

 

Thank to Laura, the other first on Monday was my first time making the Korean dish.  The traditional version is served as a bowl of warm white rice topped with sautéed vegetables, gochujang (chili pepper paste), a raw or fried egg, and beef.

Asian foods are some of my favorite, so I couldn’t wait to try out my own version of her recipe (and this NYT recipe she based it on) and share it with you all!  I took un-traditional, vegan liberties.

 

 

The coolest part about this dish was the crispy rice.  I was nervous about it because, as Laura mentions in her post, this is usually made in a clay pot.  Making it in a skillet worked out perfectly though!  Mine certainly didn’t stay in perfect pieces, but it had a fantastic crunch.  I don’t know how I’ll ever eat rice the “normal” way again!

 

 

The other thing I loved about this dish was the nutty flavor from the sesame seeds and the rich saltiness from miso tamari.  It perfectly complimented the zucchini and the meaty shiitakes.  Add to that the sweet, raw carrots… it was texture nirvana.

 

You guys know how I love heat, so I was of course in love with the gochujang.  It is a chili paste, but is different from sriracha in that it has just a hint of sweetness.  I tossed in a few more red pepper flakes for good measure. 🙂

 

 

This recipe is several steps, but you can have the rice going while you prepare the veggies.  It actually helps since you forget about the rice long enough for it to get a proper crunch.  I would have been messing with it too much if the rice had been given my undivided attention!

Vegan Bibimbap

  • 1 C wild rice, cooked (or rice of choice)
  • 1 medium zucchini, cut into ~1/3 in thick quarters
  • 1 tsp dark sesame oil
  • 2 cloves garlic, minced
  • 3-4 drops stevia, or other sweetener
  • 1 C thinly sliced shiitake caps
  • 1/2 tsp miso tamari (or soy sauce)
  • 2 C packed spinach leaves
  • 1/2 tsp rice wine vinegar
  • 1 green onion, chopped
  • 1 carrot, julienned in 2-inch lengths
  • 1 tsp toasted sesame seeds
  • 1 T Korean red chili sauce (gochujang)
  • 1/2 tsp red pepper flakes (optional)
  • Cilantro
  • Slice of lime

 

Prepare rice according to package instructions.  Spray a medium-sized skillet with lubricant (oil or PAM) and place over medium heat.  Add cooked rice and flatten to form a pancake-like covering bottom of pan (~1/4 in thick).  Cook until crisp and light brown on underside (7-8 mins).  With spatula, flip rice over, and continue cooking until crisp (~5 mins.  Remove from heat until veggies are prepared.

In a medium skillet a medium skillet over medium heat, and add 1/2 tsp sesame oil, zucchini, garlic, and stevia.  Sauté until zucchini is tender (7-8 mins).  Transfer to a plate and set aside.  

Return pan to burner and add remaining 1/2 tsp teaspoon sesame oil, shiitakes, and miso tamari.  Sauté until tender (5-6 mins), then transfer to plate and set aside.

Return pan to burner and spinach with rice wine vinegar.  Sauté until just wilting (4-5 mins), adding green onions in for the last 30 seconds (just long enough to warm them).  Remove from burner.

On a large plate, arrange rice in a layer across the bottom.  Next, place vegetables on top in individual piles.  Top with toasted sesame seeds, cilantro, chili sauce, and red pepper flakes.  Serve with lime wedges.

Makes 2 servings (easily doubled).

Indulging in 2012

Happy New Years Eve!!!

 

 

In case you do get a little over-zealous while welcoming 2012…

 

Top 5 Hangover Helpers:

  1. Sleep – roll over and pray it goes away
  2. Hydrate – before you roll over and go back to sleep, chug a big glass of water or Gatorade (taking a Motrin or Excedrin Migraine with it may not be a bad idea either)
  3. Exercise – nothing works better than to sweat out all those toxins (not that I would know)
  4. Hair of the Dog – there’s a reason bloody’s and mimosas are breakfast drinks.  They work.  Just watch out or you’ll only have a worse hang over the following day!
  5. Kombucha – It may be in my head, but I swear this stuff lessens a hangover.  Is it the tummy-pleasing enzymes?  The fermentation?  The carbonation?  Who cares.  It works.

 

 

Other ideas include: Waffle House, coffee, (caffeine), Pedialyte.  Mom says orange juice.  Baby sis says Emergen-C before going out and pickles the next day.

 

You can thank us later (when your head stops pounding).

 In all the excitement I almost forgot to post about my December Foodie Penpal treats!

The amazing Rachael @ The Avid Appetite sent me a package not to be forgotten!

 

 

In it was homemade marshmallows (which were gone in about 30 minutes!), a fantastic loaf of banana bread, KIND bars, and a couple of holiday teas.  Sometimes I think bloggers have ESP – how did she know that banana bread is my favorite loaf and that KIND bars have been on my “to try” list for literally a year?  Thanks, Rachel!!!  And thank you for organizing, Lindsay!
