Thin Mint Protein Dough Balls

Every year I feel a mix of excitement and dread when I see the first Girl Scouts outside the grocery store.  I love Girl Scout cookies.  The only reason I was ever a Brownie was for the cookies.  That said, I hate seeing them because I cannot say no.  Who am I to say no to the girls?  They’re just trying to meet their goal!  25 boxes later… *eye roll*

Thankfully, this only happens once a year.  The rest of they year I have these balls to keep me happy.  (That’s right, I went there.)

If you read my Chocolate Chip Cookie Dough Ball recipe, the base of these may look familiar.  I used the same healthy dough hacks – almond flour, protein powder, and nut butter.

To make these more chocolate-y, I used unsweetened cocoa powder.  For the mint, I added a high quality peppermint extract.  I specify high-quality because it makes all the difference in the taste.  If you’ve ever used cheap extract in a raw recipe, you know what I mean.

To mix these Thin Mint Protein Dough Balls, just dive in with your hands.  It’s 100x easier, plus it’s like getting to play with your food.

Protein powders and nut butters will vary in consistency.  If you find the batter to be too dry, just add a bit of almond milk.  Your balls shouldn’t be too wet, but you need enough moisture to mold them into balls.

Red Velvet Protein Balls [Recipe]

Thanksgiving is over.

Officially… we’re still celebrating!

I am of the belief that you cannot begin with the Christmas festivities until Thanksgiving has passed.  And – for the love of god – don’t even think about Christmas before Halloween!

Now that we’re officially past Thanksgiving, I bring you Christmas Balls.  I’m not trying to discriminate and leave out Hanukkah… but I couldn’t get through a blog post about blue balls.  So these strangely good (for you) balls are red.  Red Velvet, in fact.

I made these with my favorite flower-sender in mind.  Side note: the flower sender is hereby known as Vegas, as that is where the flowers originate.

Vegas loves red velvet cake.  Since I’m in Arizona with Vegas this Thanksgiving holiday (how’s that for confusing?) and these days my favorite activity is making Vegas smile, I bring you post-Thanksgiving, pre-Christmas balls.

Not just any balls though!  These red velvet-y delights are protein-packed and get their red tint from… beets!  How’s that for strange?

In conclusion, Vegas and I wish you a pre-Merry Christmas (and Hanukkah) from Arizona the day after Thanksgiving.

Now, bust out your healthy balls and celebrate the most wonderful time of the year!

These red velvet-y protein delights are protein-packed and get their red tint from… beets! Perfect for a healthier Valentine's Day treat!

Red Velvet Protein Balls

  • 1 scoop chocolate protein powder (I used Growing Naturals Rice)
  • 1 T coconut flour
  • 1 scoop Cocoa Cardio*
  • 1/4 tsp cinnamon
  • 1/4 tsp honey
  • 1/2 T coconut oil
  • 4 Drops Capella Flavor Drops, Cake Batter (or 1/4 tsp vanilla)
  • 1/4 C unsweetened vanilla almond milk

Combine wet ingredients.  Mix in wet, adjusting milk as needed.

Roll into roughly 4 balls.  Put in freezer for your own safety storage.

Note: I order my Cocoa Cardio on iHerb (use discount code USO924 for $5-10 off your order!).  If you don’t have beet powder, you can use tsp beet powder and 1 T cocoa powder.  You can also use pureed beets here, but you’ll probably need to cut the milk in half (I haven’t tried it).

Blend Your [Growing Naturals] Protein

My Blends are Strange.

But oh-so-good.

Today I am in Utah for the annual Blend Retreat!  I look forward to this retreat all year… and I feel especially lucky because I get to represent Growing Naturals again this year.  I wish I could share them with everyone (but scroll on down for a sweet freebie offer).  You should all come to Blend next year!  If you can’t be there this year, be sure to follow along on Twitter and Instagram for the live action.

Last year they were a huge hit with the other bloggin’ ladies, but here are a few reasons I personally love them:

Dijon Thyme Turkey Meatballs + WIAW

Meatballs are the ultimate winter food.

Too bad it’s normally more like spring by now!

With the weather still cold, I prepped a big batch of balls this week.  Rather than going the traditional route, I opted for a mustard-laced turkey version.

These Dijon and thyme balls were full of flavor.  Because I baked them, they were light enough not to put me to sleep after lunch.

Thyme is a herb that I love but rarely think to use.  It retains a fresh flavor even after cooking.  It’s pungent but not offensively so.  With the spiciness of Dijon, it made for the perfect turkey meatball mix.

Baked Lamb Meatballs & Cucumber Raita

Certain meats are associated with major holidays.

 

Do we do this with veggies?  Other than pumpkin at Halloween?

Thanksgiving is turkey, Christmas is often ham, the 4th of July is for burgers… and Easter is all about the lamb.

I really, really love lamb.  It’s probably my favorite meat.  Rich without being too fatty, it’s more decadent than a steak to me.  It’s especially delicious with paired with my favorite herb – rosemary.

Lamb Meatballs and Cucumber Raita

 

This year I decided to get with the theme and create a meatball with this Easter meat.  I used a blend of ground lamb and pork.  While I love lamb, it can be heavy.  Pork is often used in beef-based meatballs.  When I saw Gabby make her lamb balls, I couldn’t believe I did think of it first!  (Thank you, Gabby!)  The addition of a little pork gave the flavor of the meatballs more dimension.

 

Another fun ingredient was ricotta cheese.  With this addition, it is almost impossible to dry the meatballs out during baking.  The ricotta gave the meatballs a perfectly tender, almost silky quality!

One other note: when you make these, be sure to mince/finely chop rosemary, onion, and garlic.  This way their flavor distributes evenly throughout.

Finally, I needed a sauce!  Lamb always make me think Greek food, so I thought a Greek yogurt-based concoction was in order.  Fresh cilantro pairs with the classic Mediterranean flavors of lemon, garlic, and coriander to liven up the heavier lamb, and compliment the cumin and cinnamon used in the meatballs.

The dip can be made a day in advance and stored in the fridge.  It’s also delicious as a veggie dip, or used in place of mayo in chicken or salmon salad.

In conclusion, you should try my tasty (lamb) balls.

Did you really think I could get through a whole post without a ball joke?!  Puh-lease.

Lamb Meatballs and Cucumber Raita

Baked Lamb Meatballs with Cucumber Raita

For the Balls:

  • 3/4 lb ground lamb
  • 1/4 lb ground pork
  • 1 egg white
  • 1/4 C fat-free ricotta
  • 1/4 C red onion, finely chopped
  • 2 cloves of garlic, minced
  • Juice of 1/2 lemon
  • 1 T fresh rosemary, finely chopped
  • 1 tsp ground cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • 1/4 tsp black pepper (or to taste)

 

For the Cucumber Raita:

  • 1/2 small cucumber, finely chopped or grated
  • 1/2 C Greek yogurt
  • 1/4 C fresh cilantro leaves, chopped
  • 1 clove garlic, minced
  • 1/2 tsp ground coriander
  • 1 T fresh lemon juice
  • Freshly ground pepper, to taste

 

For the Balls:

Preheat oven to 400 degrees F.  Line a rimmed baking sheet with non-stick foil or parchment.

In a mixing bowl, combine the ground lamb, pork, egg, ricotta, onion, garlic, lemon, rosemary, cumin, cinnamon, cayenne, and black pepper until the spices are all well incorporated into the meat.

Form the meat into balls  (1 heaping tablespoon each), taking care not to pack too tightly.  Arrange on lined pan.

Bake for 15-20 minutes, or until the meatballs are just slightly pink in the center (150 degrees).

Makes 22 meatballs.

 

For the Cucumber Raita:

Grate cucumber with the skin on.

Squeeze out excess water from grated cucumber and place in a medium bowl.

Add remaining the ingredients and mix well.

Makes ~1 cup.
