I’m not Crabby Smoked Gazpacho

Admittedly, I can be crabby.  Like when some dude at the gym is reading TIME magazine on the captain’s chair.  Really?  You can’t do that at home?!

 

Despite the astrological connection, the last time I ate crab I was 7.  We were at the beach and my dad paid me $1 for every crab claw I could eat.  I ate 10 claws.  Greed > Gag

That was the last time I ate seafood until this year.  Incidentally, I also didn’t eat tomatoes until recently.  In another dad-related traumatic event, he gave me a big slice of tomato and told me it was watermelon.  I happily took a bite before choking it back up.  Talk about being crabby… not cool, Dad.

 

Thankfully I grew out of that.

 

Things I still won’t eat: caviar (he told me they were mini grapes) and sour cream (thought I was eating a spoonful of ice cream).

I also won’t east white potatoes, though I don’t remember a traumatic event associated with those.

 

 

I’m glad I did get over the crab and tomato hatred.  This tomato-based gazpacho is a tasty soup, and the meaty crab gives it the protein to fill you up.

One my favorite parts about gazpacho is its resemblance to salsa.  In order to leave those delicious chunky pieces of tomato and pepper, I reserved some of the soup when I blended the base.  After pureeing part of the mixture, I manually stirred in the rest of the remaining chopped veggies.

 

 

The other fun component here is the addition of liquid smoke.  It adds just a touch of… well, smokiness… as if you’d first roasted the tomatoes over wood chips.  It’s a fantastic way to add more flavor to dishes without adding salt.

 

 

If you don’t eat seafood, you can leave off the crab.  If you do eat seafood, you will love the rich, slightly sweet crab again the spicy soup.  Another option would be to top this with tempeh bacon, or possibly a firmly pressed tofu marinated in sweet citrus.

Either way, don’t skimp of the cilantro.  It’s wonderful with the late-season tomatoes and tangy lime. (Unless you don’t like cilantro… in which case parsley would be a fine sub!)

Crabby Smoked Gazpacho

  • 1 clove garlic
  • 1/4 c diced red onion
  • 1/2 C fresh cilantro
  • 1/2 jalapeno
  • 2 large tomatoes
  • 1/2 large red bell pepper
  • 1/2 cucumber
  • 1 T white wine vinegar
  • Juice of 1/2 lime
  • 5-6 drops liquid smoke (optional)
  • Crab
  • S & P, to taste

 

Place garlic, onion, and cilantro in blender.  Roughly chop remaining vegetables into 1 inch cubes.  

Add 2/3 to the blender.  Pulse briefly to coarsely puree the contents.  

Add remaining 1/3 of vegetables, vinegar, lime juice, and smoke.  Manually stir to combine.  Chill before serving, as the flavors develop the longer gazpacho sits.

To serve, top with fresh crab meat, fresh cilantro, and pepper.

Makes ~3 cups.

Smoothie Demo + Cherry-Ginger Smoothie

I admit it.  I enjoy being the center of attention.

I’m the oldest child.  I can’t help myself.

Surprisingly public speaking does NOT appeal to me.  It’s not the standing in front of people part that gets me.  It’s the opportunity to look like an idiot while standing in front of people.

Last weekend I did a “things you can make in a blender” demo for my gym.  Speaking AND making food in front of people.  Lots of room for error.  I was nervous.

My trainer’s daughter was nice enough to take some action shots.  I *think* this pic is the carrot cake batter smoothie.

I’m relieved to report it went well!  Nothing exploded or tasted bad.  It wasn’t a large crowd, but people liked my food!  For my demo I made 3 smoothies and a lemon-rosemary bean dip.  You guys have seen 2 of the smoothies before:

The new smoothie was the crowd favorite.  It is also my submission to Heather’s ginger-themed  Meatless Mondays from A-Z challenge this week.


I wanted to create a recovery smoothie for gym-goers that would help muscles bounce back fast after an intense workout.  (My gym is called “House of Payne” for good reason.)

The recovery drink I concocted is a Cherry-Ginger Smoothie. Cherries have been found to have unique anti-inflammatory properties; they may aid muscle recovery, reduce oxidative stress in athletes, and are good for pain relief.

Ginger also has anti-inflammatory properties, and is a powerful natural pain-killer. It has long been used to settle stomachs and relieves migraines. And ladies, it can be used for menstrual cramp relief. Wine works too… but you didn’t hear that here.

Of course you need a protein powder in this smoothie. Taking in 20g of protein within 30 mins of a workout is the key for muscle repair and building. To learn more on this topic, click here.

Aside from making a great recovery smoothie, the cherry-ginger combo tastes delicious too.  Sweet, dark cherries compliment the spice of the ginger.  I love how the flavors balance each other.  In this recipe I used my favorite Growing Naturals Vanilla Rice Protein Powder. However, you can shake things up by using chocolate for a Cherry Bomb twist.

Workout Recap

I realized I’m always complaining about leg day in these recaps.  This week I’m praising leg day.  I have always complained about my “chicken legs.”  Even when I was 30 lbs heavier than I am now, I had chicken legs.

This weekend I saw some pics of myself in posing practice.  There was a lot I wasn’t happy with size-wise, but for the first time I realized my legs didn’t look terrible.  Also this week I PR’d on my dreaded hack squats.  And I lived to tell the story. 🙂  Hard work pays off. 

Workout Recap (9/17 – 9/23):

  • Monday – Back/Triceps, Calf raises, 2 mile walk
  • Tuesday – Shoulders/Butt, 1.5 mile walk
  • Wednesday – Chest/Biceps, Calf raises, 2 mile walk

Cherry Ginger Protein Smoothie

Cherry-Ginger Smoothie

  • 1/2 C cherries (fresh or frozen) 
  • 1 scoop vanilla protein powder (I use Growing Naturals Rice Protein)
  • 1 in piece of fresh ginger, grated
  • 1/4 tsp almond extract
  • 1/2 tsp cinnamon
  • 1/4 tsp Guar Gum (optional)
  • 1/4-1/2 C unsweetened almond milk
  • Ice, to taste
  • 1 C spinach (optional)

Place everything in a blender and blend until smooth.

Serves 1.

Notes:

  • You can adjust the milk and ice to suit your preference.  I like my smoothies super thick, so I use more ice and less milk.
  • Guar Gum is optional, but I recommend investing in some.  It’s often used as a binder and volume-enhancer in ice creams and shakes, making them more creamy and thick.
  • I include a giant handful of spinach in nearly all of my protein smoothies.  I swear you can’t taste it.  This is a great way to sneak in another serving of greens and add a little more iron to your diet to promote muscle health and energy metabolism.  Warning: Spinach will turn your pretty red smoothie a funky green color!

Taming a Sweet Tooth + WIAW

Cooler weather is a trigger.

For my sweet tooth.  Sure, it exists year-round, but something about the fall and winter seasons makes me yearn for decadent baked goods.

Is it just that sweets are more prevalent?  Spring and summer offer delicious naturally sweet fruits, maybe it ‘s the pies and candies that come with certain winter holidays that are to blame.  We can always blame advertisers:

Some of you may have seem my tweet about Candy Corn Oreos last week.  Is this really necessary?  *I must admit I’m biased, as I don’t even like candy corn.

Whatever the case may be, I have found a few ways to keep my sweet tooth at bay.  Even when I have a kitchen full of Maple-Bacon Pancake Cookies. 


5 Tips to Tame a Sweet Tooth

  • Walk it out.  When I was baking all those treats I found myself unable to stop “taste testing,” so I took a 10 min walk.  Unbelievably, it worked!
  • Freshen your breath.  Get the taste out of your mouth – have a mint, gum, or just go brush your teeth.  You won’t want to mar the minty freshness with more food.
  • Drink water.  Are you really hungry, or just have the munchies?  Chug a glass of water and see!  The body can’t distinguish between thirst and hunger, and ad after a 16 oz glass of water, you’ll probably feel too full to eat that break room cookie.
  • Try an alternative.  If you really are hungry and your body wants something sweet, try a piece of fruit or a “treat” sweetened with a natural sugar-alternative like Stevia or Xylitol.  I like to keep my Granola Cookies (ahem… only 74 cals and 3g sugar) or Chocolate Zucchini Muffins (100 cals and 2g sugar) on hand in the freezer for a dessert-emergency.
  • Stop and think.  The first bite of that treat is going to taste the exact same as the last bite.  So… do you really need more than one bite?

Meal 1:

My usual, morning Apple Cider Vinegar, Glutamine and BCAA cocktail was a little different this morning.  At Jenn’s urging, I tried it mixed with kombucha in place of some of the water.  I used my ginger-cinnamon homebrew and it was fantastic!  Jenn also just posted a great testimonial about how great this is for your skin.  It is a great energy boost too – it’s replaced coffee in my life. 

In keeping with the fall theme, I went pumpkin for breakfast.  Meg made a fabulous pumpkin Fall Scramble inspired by my PB & Jeggs.  I’ve had it pinned to try for weeks and today it finally happened.  Why did I wait so long?! 

I reduced the amount of pumpkin to 1/4 C (personal preference), and added a few extra spices because I just can’t help myself.  In addition to cinnamon, I added pinches of fresh nutmeg and allspice, plus a little vanilla extract.

It was like eating pie for breakfast.  I kid you not.

Meal 2:

Plums have never been my favorite fruit.  I like them, but they weren’t a craving.  Lately I can’t get enough!  Today’s Mid-morning snack was cottage cheese mixed directly in the almost-empty container with a little protein powder, cinnamon, fresh plum, and a scoop of Sunbutter.

Meal 3:

Scallops are a great seafood protein source, but I’d never attempted to make my own.  Inspired by Heather, I finally took the plunge.  My first batch was a little overcooked.  This second try was MUCH better.  I used this recipe from Rufus for Orange-Lime Scallops (sans sauce), and added some cilantro, shallot, and jalapeno to the marinade. 

Served a top a tortilla with arugula, nutritional yeast sauce (nooch + water + cayenne + cumin), and cauliflower.  And 1/3 piece of left over bacon.

The plate? It was a koala. These plates = greatest breakroom find ever. 

Meal 4:

Yes, I’m in a grilled tilapia rut.  However, I did change-up the marinade a little.  This one is basil, peach schnapps, jalapeno, and cardamom.  It was delish with a side of carrot sticks as my mid-afternoon snack.

Meal 5:

Did you guys check out Instagram last night?  The cauliflower crust pizza made another appearance.  Topped with Uncle Dude’s Ridiculous Marinara, tempeh, arugula, asparagus, red pepper, shallot, a teensy bit of avocado, nutritional yeast, and a drizzle of balsamic.

This beast was ~350 calories and packed 25 of protein! 

Meal 6:

I was feeling something custard-like for Meal 6.  Since this meal is a veggie and a protein, my ice cream had to be creative!  Pink is creative, no?

Beet Frozen Custard.  Sounds weird… tastes good.  This is a theme in my life.

I added 1/2 a scoop of casein for the protein (and the recovery – my poor legs are SORE), and amped up the flavor with my favorite spices: fresh ginger and cinnamon.  A little Stevia and I had a delicious pink bowl of creamy frozen “custard.”

Meal 7:

Bringing back an old favorite with a new twist.  I tool my Banana Creme Brownie Parfait, but made it a cherry-flavored treat.  Cherries are supposed to help with soreness and recovery (reducing inflammation and oxidative stress), which I am in desperate need of after Monday’s leg day.  They also are high in melatonin, a hormone that regulates the body’s sleep cycles.

I replaced the banana flavored yogurt cream with cinnamon (also good for pain-relief), and topped it with melted cherries (frozen black cherries microwaved until juicy and tender).  The perfect end to a looooong day.


Beet Protein Frozen Custard

  • 1/3 C beet, roasted
  • 1/2 scoop vanilla casein (or other protein powder)
  • 3 oz tofu
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 inch piece fresh ginger
  • 7-8 drops liquid stevia (adjust to desired sweetness)
  • 1/4 unsweetened almond milk (or liquid of choice)
  • Ice, to taste 

Place all ingredients in Vitamix or high-powdered blender and blend until smooth.

Serve immediately, or store in freezer until snack time.

Serves 1.

Key Lime Pie Smoothie

To be honest, I’m not a big Key Lime Pie fan.

When Allie requested a smoothie version, I cringed a bit.  She was the inspiration for the Oatmeal Cookie Dough Shake, which is one of the most popular I’ve made… so I trusted her idea and set my mind to filling her request.

My problem with key lime pies in the past is that the balance of tart and sweet is not right.  Have you ever taken a huge bite of a too-green-to-be-real pie and nearly spit it out because it’s too sour, or so sweet that your teeth hurt?  One bad experience can ruin you.

My dad would order a slice anywhere we went, and after one such achingly sweet bite I decided I would forever stick to my usual chocolate dessert orders.  Tragic, I tell you.

I guarantee that this smoothie won’t end in such a tragedy.  The lime is balanced with the natural sweetness of banana and a bit of stevia.  Hints of vanilla and almond give it more depth  of flavor, also helping to balance the lime.  The key lime green color is all-natural from spinach, rather than the neon glow of food coloring.  One of my favorite features is the creaminess.  The banana gives it a great texture, and – if you use the Guar Gum – it will further enhance the decadent smoothness.

Of course everyone’s favorite part of pie is the crust.  Rather than the usual buttery calorie bomb, I rimmed my glass in a mix of crushed cereal and sugar-free maple syrup.  Crunchy goodness with each sip!

Whipped cream topping is standard on many pies.  A drinkable version shouldn’t lack that finishing touch!  For this shake, I made a quick cream from coconut flour and vanilla almond milk.

The fluff floated atop my pie-drink and you better believe I hoarded that deliciousness until the last drop was gone.

Cool down after a workout with this healthy, vegan Key Lime Pie Protein Shake!

Key Lime Pie Protein Shake

  • 1 C spinach
  • 1 scoop vanilla protein powder (I use Growing Naturals)
  • 1/2 banana
  • 1/4 C unsweetened vanilla almond milk
  • 4-5 T fresh lime juice (or 1/4 small lime if you have a Vitamix)
  • 1 T ground flax
  • 1/4 tsp almond extract
  • 1/4 tsp Guar Gum (optional)
  • 7-8 drops liquid stevia (or other sweetener)
  • Ice, to taste

For “Crust”

  • 2 T cereal crumbs
  • Sugar-fee maple syrup
For “Cream” Topping
  • 1 tsp coconut flour
  • 2 tsp water
  • 1 drop liquid stevia

Combine all smoothie ingredients in blender and blend until smooth.

For the “crust,” lightly coat the rim of your glass with maple syrup and dunk in cereal crumbs – it’s just like rimming a margarita glass with salt.

For the “cream,” mix all ingredients in a small bowl.  Adjust liquid as needed.

Carefully pour your smoothie into the rimmed glass and top with cream.

Tales from the Gym + Caffeinated Giveaway

There’s one in every crowd.

You  know the one.  The dude that you keep catching staring at you in the gym.  You know it’s just a matter of time before he comes over to chat.  Monday was that day.

First, you have to picture this guy.  Mid-30s, frat boy hair cut, tattoos up on arm… fairly big guy with a little beer belly.   He sauntered up to me while I was adding weight to the seated row machine.

He opened his mouth to reveal one of the most Southern accents I’ve heard in Atlanta.

Frat Man: “I believe that’s more than you weigh.”

Me: “Not quite, but close.”

Frat Man: “I’ve been watching you.  You’re strong.”

Me: “Thank you.”

We went our separate ways, but I notice he’s still glancing over at me.  Later I was doing my calf raises and he asked if he could work in.  I obliged, but before he started, he had to add more commentary.

Frat Man: “I’m sorry I keep staring at you.  I can’t help it – you look just like Tinkerbell.”

Me: “Well… thanks!  I love Tinker.”

Frat Man: “I mean it.  Straight from the TV… how much do you weigh?”

Me: “I’m not really sure.”

Frat Man: “Well, you look good.”

Me: “Thanks.  Have a great workout.”

All of this went down in the least creepy way possible (trust me – I know creepy).  Well, aside from the fact that he said he’s been watching me.  LOL!

Slightly less funny, but still amusing.  This was on the television at the gym yesterday morning:

But I mentioned a giveaway, right?

This is one of the more exciting giveaways I’ve done, IMHO.  Reason being is that I LOVE this product.  Often I see giveaways for products that aren’t so great.  Of course, everyone has different tastes… but I do make it a point to try samples before agreeing to a giveaway.  There have been products I’ve turned down – I feel like it reflects badly on me if you are sent something that isn’t that great!

Who needs Starbucks when you can have a homemade protein mocha frapp with a fraction of the sugar?  If you were to order a Grande (16 oz) Mocha Frappucchino Light at Starbucks, you’d be drinking 130 calories, 28g carbs, 26g sugar, and 4g of protein.  You might as well just swallow 2 tablespoons of sugar.

With 20g of whey protein, 23 vitamins & minerals, and just 2g sugar, this powder makes for a perfect pre-workout shake.  Sunday I was feeling really sluggish after eating too many salty truffle fries on cheat day (I woke up feeling hung over!), but I downed this before meeting my trainer and had a great leg workout.

In my re-creation of the frappuccino, you’ll only have the 2g of sugar from the Chike protein powder and an additional 6-7g from half of a banana.  This is a mocha (any excuse for chocolate in the morning), but you could change up the flavors to recreate your favorite.

Check out this Pumpkin Frapp I did last fall, for example.

You guys know I can’t make a smoothie without adding spinach, so this delicious beverage has a slightly green-ish tint.  The banana added natural sweetness and lent a creamy texture to the drink.

I can never stress enough – use good cocoa!!!  Your drink will be 10x better and 1T of the good stuff won’t break the bank. 🙂

Carrot Cake Batter Shake

It’s perfectly acceptable to drink your dessert.

My sister made me my faovrite carrot cake for my birthday.  It was amazing, but sadly I can’t eat like that every day.  Well, I could, but it would require me to live in a sugar coma.

I’ve been working on a healthy alternative to my favorite cake for a while now.  In protein shake form, of course. 🙂

After a few weeks of tweaks with the spice levels, I hit it spot on.  This protein-rich carrot cake batter even got the stamp of approval from my trainer.

He’s picky, so I kept the green out for him.  Feel free to toss in a handful of spinach as you see fit.

I love the ginger and cinnamon in the “batter.”  Those spices are what seals the deal to make it reminiscent of carrot cake.  The tofu makes it creamy, like batter.  Add some vanilla and nutmeg, and you have a cake batter you can feel good about eating.  Yes, you may lick the spatula.

Last night I tried it one last time pre-posting.  I increased the spices slightly so that I could add more ice to create ice cream in my Vitamix without losing flavor.

It worked.


Carrot Cake Batter Shake

Carrot Cake Batter Shake

  • 1/4 C unsweetened vanilla almond milk
  • 1 scoop vanilla protein powder
  • 1 carrot
  • 3 oz silken tofu
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 in piece fresh ginger
  • 1/8 tsp nutmeg
  • 7-8 drops liquid stevia
  • Ice, to taste
  • 1/8 tsp Guar Gum (optional, but will add creaminess)

Combine all ingredients in a high speed blender and mix until smooth.

Makes 1 serving.

I actually went back and checked the ingredients a few time because I couldn’t believe anything so cake-like could really be healthy.  True story.

Loving Friday + Zucchini Bread Smoothie

On Wednesday I thought it was Friday.

 

That makes for a looooong week.  It’s not even a holiday weekend.  We only get 1 day off for the 4th.  Grrrrr…  Let’s focus on the good.

 

It is indeed finally FRIDAY!!!  And I have a cheat day!  After 1 week on the nutrition plan, I’m more than ready.  I’m sure most people look forward to these days so they can have pizza or cookies.  I’m just looking forward to a day where I don’t have to eat 7 protein-packed meals.

Vegetables are what I crave.  Raw, leafy delicious vegetables.  In fact I’m going to a vegetarian underground dinner tonight.  I love veggies.  *blissful sigh*

 

Here are 5 other things I’m feeling love for today:

1. Sunshine and Sunroofs

It may be 100 degrees, but I still love the sunshine.  Also, I love my car.  I couldn’t own one that lacks a sunroof!  Smog be damned.

 

2. Olympus Greek Yogurt

One of the packages I returned home to post-Chile was from Olympus.  They sent me a TON of yogurt to sample, and I am so grateful.  This is one of the best I’ve had in a long time.  Theirs is directly from its namesake – one of the only Greek yogurts in the US to be imported from Greece.  It’s SUPER thick and creamy, and it only has 88 calories (as opposed to the typical ~130).  This leaves plenty of room for me to add my own mix-ins.

 

In my bowl:

  • 1 6oz container non-fat Olympus Greek Yogurt
  • 2 T peanut butter flour
  • 2 T unsweetened vanilla almond milk
  • 1/2 C blackberries (cut in half and roughly mashed)
  • 1/2 tsp cinnamon
  • 1/8 tsp cardamom
  • 4-5 drops vanilla liquid stevia

 

3. Fitmixer

I swear I’m not a product whore.  This stuff has legit been a lifesaver in this first week of heavy weights with my competition training.

The Fitmixer Amino powder has made a big difference in my recovery time and energy level (note: I like the fruit punch much better than the grape flavor), and their chocolate protein powder is actually tasty.

 

4. Nutty Butter

Ok, I do admit to being Sarah’s pimp.  I order my first batch of her Nutty Butter and I am in nut heaven.  Whatever you do, get the Cookie Dough.  The Oatmeal Cookie is a close second.  You really can’t go wrong with any of them.

 

5. Zucchini Bread Smoothie

I came up with this little oddity when trying to find a snack that had 20-25g of protein and a vegetable (Meal 4 of the nutrition plan).  When I threw everything in the blender I was nervous.  This was a weird one even for me.

Miraculously, the combo worked!  Despite the arctic temperature of my office, I slurped down this creamy glass of goodness faster than you can say “protein.”

Zucchini Bread Smoothie

  • 1 scoop vanilla protein powder
  • 1/2 medium zucchini
  • 1 C spinach
  • 1/4 C 1% cottage cheese
  • 1 tsp cinnamon
  • 1/2 in piece fresh ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp almond extract
  • 7-8 drops vanilla liquid stevia
  • 1/4 tsp guar gum
  • 1/4 C unsweetened vanilla almond milk
  • Ice, to taste
Place all ingredients into blender and mix until smooth.

I might even have a salad for breakfast.

Ultimate Veggie Trail Mix

It would be impossible to make this dish any more healthy.

Filled with raw, fresh veggies, you would probably ascend into some new level of raw health food heaven if you ate it all in one sitting.  Either that or have some serious gas.

When I saw this recipe for a Detox Salad from Angela @ Oh She Glows, I knew I had to make it post-Chilean tour of gluttony.  In my version I use her base of cauliflower and broccoli, but added some extra nutrients with kale and mushrooms.  I love the meaty earthiness the mushroom adds!

To dress the veggie mix, I used fresh lemon juice and my new Chilean spice blend, merkén.  You can read more about it here, but it’s basically a mix of red chilies, coriander, cumin, and salt.  Spicy and smokey!  The other blend in the pic above is a sea weed flake mix: dulse, laver, and sea lettuce.  I picked it up a Whole Foods recently and am addicted to the briny, slightly sweet flakes.

All mixed up it looks like trail mix, hence the name.  However, I wouldn’t recommend adding chocolate in this type of trail mix. 🙂

I finally have workouts to recap!  This week I was back on it full-blast.  I’m embarking on a new fitness endeavor… after my first leg/glute workout with a trainer on Monday, I was so sore that I could barely walk until Friday.  At one point I (slowly) lowered myself to the floor to do push ups, gave up at 40, and then just laid there in downward dog for a sold half hour.  More this new punishment journey tomorrow!

Today I am sore from playing 4 softball games in 90 degree weather.  I drank 150 oz of water and I STILL had a headache until bedtime.  At least I my socks looked cool.

Workout Recap (6/18- 6/24):

  • Monday – Ab Ripper X, Legs/Glutes (w/ trainer), 40 push-ups
  • Tuesday – Tris/Chest, 1.5 mile walk, 100 push-ups
  • Wednesday – Shoulders, 3 mile walk, 100 push-ups
  • Thursday – Biceps, 3.5 mile walk, 100 push-ups
  • Friday – Back/Tris (w/ trainer), 2.5 mile walk
  • Saturday – Butt/Shoulders, 20 min bike ride
  • Sunday – 4 softball games

The Ultimate Veggie Trail Mix - this might be the healthiest thing you could put in your mouth!

Ultimate Veggie Trail Mix

  • 1 small head broccoli, stems removed
  • 1/2 small head cauliflower, stems removed
  • 1 large carrot, shredded or finely chopped
  • 2 large kale leaves, finely chopped
  • 5-6 baby bella mushrooms, diced
  • 2 T red onion, minced
  • 1/4 C pumpkin seeds (pepitas)
  • 1 T fresh rosemary, finely chopped
  • 1/4 C fresh lemon juice
  • 1/2 tsp merkén (or mix of smoked paprika, coriander, cumin, and salt)
  • 1/2 tsp garlic powder
  • Dulse or lavar flakes (optional)
  • 4-5 drops NuNaturals orange liquid stevia (or other sweetener, to taste)
  • S&P, to taste

In a Vitamix or food processor, process the broccoli until fine. Place in a large bowl.  Repeat with cauliflower, then with carrots.

Stir in kale, mushrooms, onion, pumpkin seeds, and rosemary.  

In small bowl, stir together lemon juice and seasonings to taste.  Pour over salad and mix well.  Allow to marinate at least 1 hour before serving.

Makes ~5 cups.

Approximate nutritionals: 94 calories, 5.9g fat, 8g carbohydrates, 2.7g fiber, 2.6g sugar, 5.1g protein.

I brought this trail mix to the ball field for lunch.  Amazingly, people didn’t stare.  They must have been too busy having heat strokes.
