Nature Box is a monthly mail order snack company.  For $19.95 they will send you a box with 5 new healthy, all-natural snacks each month.

 

They were kind enough to send my April’s box to sample, and the snacks inside did not disappoint!

In my box:

My favorite was the Spicy Pumpkin Seeds (obv – I love me some heat).  Each bag contained 3-4 generous servings… not a bad deal for $20!  That’s only $5 a bag.  It’s less than your latte. 😉

The running is still “eh” thanks to my bum knee.  I’m taking it sloooow (which kills me), but it is nice to be able to do a little bit.  Even if that little bit isn’t pretty.

Friday in general is a win, but there were so many this week…

1. Grain-Free, Sugar-Free Cookie for 1

This brilliance was found here on Avi’s blog.  I made it Thursday night and thought I’d gone to heaven.  Of course, I added sugar with the dark chocolate M&Ms. 🙂

My modifications:

  • Reduced coconut oil to 1 tsp
  • Added 2 T unsweetened almond milk
  • Replaced the banana with 5 drops of vanilla liquid Stevia
  • Dark chocolate M&Ms 

2. Raw Thai Pineapple Parsnip “Rice”

This was a huge win!  This unusual (yet easy) recipe can be found here on Janet’s blog.  My only modifications were to add cilantro and a bit of sriracha.

3. Peanut Butter and Pumpkin Cottage Cheese

You know when you feel snacky, but you’re not sure if you want something sweet or salty?  I found the perfect solution yesterday. 

Peanut Butter and Pumpkin Cottage Cheese

  • 1 C cottage cheese
  • 1 T peanut butter flour
  • 2 T pumpkin puree
  • 1/2 tsp cinnamon
  • 1 drop NuNaturals Lemon Liquid Stevia

I am told this sounds like a weird combo.  It’s not – this is a delicious combo.  Not unlike the combo below…

4. Stuft Mama’s Protein Pumpkin Cookie Dough

How did it take me soooo long to make this?!  It’s amazing.  Doh.

Do not – I repeat – DO NOT skip the PB on top.  It’s sends the whole thing over the edge.

Raw Bulgur Breakfast Bowl + A Giveaway

Breakfast is my favorite meal of the day.

 

My breakfast is usually some sort of protein shake to follow a workout; however, I’ve been working out at night more and decided to shake up my breakfast routine.

Lat year I experimented with a raw bulgur – it’s not so different from overnight oats!  You simply soak the bulgur in water for 15-20 minutes and add whatever mix-ins you like.

 

 

When NuNaturals reached out to me to check out a few of their new orange and lemon liquid Stevia products I was particularly inspired by the orange-flavored liquid Stevia.  I could smell it before I even opened the bottle!  The best part was that is actually smelled like oranges (i.e. not like some your granny’s potpourri) – both of the new products use real lemon and orange.

 

 

I decided it would be perfect for breakfast in my raw bulgur bowl.  The bright orange sweetness went perfectly with cinnamon and a bit of cardamom.

Topped with fresh coconut, I felt like I was having breakfast on a tropical island rather than in the early morning dimness of my condo. Recipe at the end of this post.

Let me start be saying I am NOT complaining but…

I finally got a referral to an orthopedic doc for my knee.  I took the first available appointment (May 22!).  THEN on my walk Saturday I realized I was feeling pretty good and decided to try running.  5.5 miles later, my knee was still fine!  Now, I didn’t run all of that 5.5.  I didn’t even try to run more than 1/2 a mile at a time, but all told I think I ran 2.5 miles… wayyyy more than I’ve been able to do since January.

Did simply making the doctor appointment cure me?!

Orange and Coconut Raw Bulgur Breakfast Bowl

  • 1/4 C bulgur, uncooked
  • 1 T chia
  • 1/4 C + 2 T water
  • 5-6 drops NuNaturals Orange Liquid Stevia
  • 3/4 tsp cinnamon
  • 1/4 tsp cardamom
  • 2 T unsweetened coconut
  • 2 T chopped nuts

 

Mix together everything except the coconut and chopped nuts.  Allow to soak for 15-20 mins.

Stir and top with coconut, nuts, or other toppings as desired.

Note: You could sub a bit of orange extract and your preferred sweetener here if you don’t have the NuNaturals orange liquid Stevia.

Home Brewing + WIAW

I drink a lot…

 

 

…of KOMBUCHA!

At $3 a bottle, it’s an expensive habit.  When Stacy Tweeted to tell me about a deal on OpenSky (click for invite!) for a Kombucha Home Brewing Kit  from Kombucha Brooklyn I jumped at the opportunity.

 

 

My kit came with a jar, tea bags, sugar, and my very own scoby.  The instructions were idiot-proof easy to understand… with very little effort I’m 14-28 days away from home-brewed kombucha!*

*I fully realize that you can brew Komubcha without buying a kit.  Still, $30-something to get started is still less than what I spend on the stuff at Whole Foods.  And I actually DID it.

Two weeks ago marked the beginning of the Green Giant Veg Pledge to add an additional cup of veggies to my daily eats.  Despite some terrible food choices over the weekend (french fries happened… I can’t say I regret it), I’m back on track this week and greening it up with everyone for What I Ate Wednesday!

Breakfast:

After a quick tabata-style workout found on Pinterest, I needed to cool down before getting in the shower.  Don’t you hate when you’re still sweating AFTER getting out of the shower?

 

I slurped down up a little Liquid Sweet Potato Pie Smoothie topped with hemp seeds while I got a head start on work email.

 

Lunch:

Massive collard greens are everywhere in Georgia grocery stores.  Traditional Southerners cook them with things like ham hocks.

Not me!  I use the greens as raw taco shells!

 

I filled my “tacos” with raw asparagus, carrots, celery, cucumbers, red pepper flakes, and a massive amount of my new favorite hummus.  The spinach-flavored hummus is made by a company called Roots.  Not sure how widely available it is, but I found this a Whole Foods. The rest of the container was enjoyed with some Sesame Wasa crackers on the side.

 

Snacks:

Unpictured was the daily Kombucha, a piece of dark chocolate, and handful of cashews.

I really loved the Smokey Pepitas and Dried Pears.  More to come on this awesome company later! 

 

Dinner:

Baked is my favorite way to do tofu.  The outside gets all crunchy and the inside becomes marshmallow-fluffy.

Tonight’s dinner was a Baked Sesame Tofu with lemon roasted asparagus and an heirloom tomato.

Tomato season has arrived down South!  That was the sweetest tomato I think I’ve ever had.  I made the mistake of cutting the tomato too early… only 2 little slices remained to go with dinner.

What was left of my tom was delicious with the light spice and nuttiness of the tofu marinade.  Recipe to come tomorrow!

 

 

Dessert:

It was a healthy post workout dessert – a chocolate protein shake topped with cereal.  Packed with spinach, of course.

PB&J Vodka + Chocolate PB Smoothie

New products sometimes blow my mind.

 

Often they seem like obvious conclusions (hello, peanut butter Oreos), at times they aren’t as obvious but still delicious (Vega’s vanilla chai protein powder)… and then there are times when I have to say WTF?!

Ladies and gentlemen, PB&J Vodka, by Van Gogh.

 

 

I wish I were kidding.

In other news, I made a smoothie.  *One you could really drink for lunch.

 

 

A chocolate peanut butter protein smoothie was all I wanted after a particularly hard weight session in the gym.  This totally hit the spot… special thanks to the avocado for making this a perfectly creamy treat.

Topped with my new love Hemp Seeds.  If you haven’t tried them yet… you should.  They are fantastically chewy and nutty.  I eat them standing in the pantry doorway.

Chocolate Peanut Butter (Avocado) Smoothie

  • 1 scoop chocolate protein powder
  • 1/4 avocado
  • 1 handful spinach
  • 1 C unsweetened almond milk
  • 1 T peanut flour
  • 10 drops cocoa NuNaturals liquid Stevia
  • 1 tsp cocoa (optional – I like it extra-chocolate-y)
  • shake of salt
  • pinch guar gum

 

Put it in a blender and blend away!

Being Serene

Sunny weekends seem shorter.

 

I never want them to end!  

Before diving head first into a crazy week, here are the top 5 highlights that I remembered to take a picture of:

 

1. Serenbe Cooking Demo

While at my team’s retreat we were treated to a cooking demo by the founder of Serenbe, Marie Nygren.  Serenbe (“be serene” spelled backwards) is a small sustainable community just outside of Atlanta.  It reminds me of Seaside (where The Truman Show was filmed), but without the ocean.

 

Marie led us though a short cooking demo in her home.  She prepared collard greens two ways, kale, and cabbage.  It was all delicious… and her house was GORGEOUS!

 

 

2. *Almost* Justin Timberlake Sighting

Justin Timberlake is in Atlanta shooting “Trouble With the Curve,” with Clint Eastwood and Amy Adams.  Below is the camera crew.  No Justin… but I swear I saw Jessica Biel walking down the street the other day.

 

 

3. Softball Sunday

My team won!!!  The second game.  

Our problem is that we aren’t morning people.  We don’t wake up until half way through the first game.

 

My groin woke up too early thanks to play at first base.  I did a full split and caught the ball for the out.  And pulled my groin.  Ouch.

 

 

4. Powdered Hummus?

On my weekly trip to Whole Paycheck Foods I came across hummus powder in the bulk bins.  The instructions say all you need to do is add is water and olive oil.

Does this sound awesome or weird?

I haven’t tried it yet, but will report back soon!  They also had a powdered black bean dip.

 

 

5. Green Thumb

I’ve mentioned before that I have killed every plant I have owned.  I even killed mint.  Yesterday I helped my mom plant flowers.

 

They are so pretty, right?!  I hope my black thumb doesn’t affect them.

I miiiiight be allowed to try running again tomorrow.  I go back to the doc and he’s going to give me the green light.  Or not.  I’m a little nervous since by the end of softball today it was a little sore from running bases, but nothing like before.

This week was a little light on workout intensity… and the clean eating… but I’m not going to kick myself too hard over it.  Sometimes you just need to take it easy.

I’m at a work retreat for the latter part of this week, so I’m a bit light on the post today.  Translation: perfect time for a survey post!

You may have seen this “ABCs” survey circling the blog world… I’m about 2+ weeks behind the times, but thought I’d finally be a joiner. 🙂

A is for age: 28.  When did I get so close to 30?!

B is for breakfast today: Nothing yet, but it will be conference food (which is 100x better than average, I must say).

C is for currently craving: Kombucha!  Since I’ve been travelling, it’s been 3 days without!!!

D is for dinner tonight: I’m going to a mother-daughter dinner with my mom, my BFF, and her mom.  Atlanta, beware!

E is for favorite type of exercise: Weight lifting!  Although not being able to run has really made me appreciate/crave running.

F is for an irrational fear: Roaches.  I can’t handle them.

G is for gross food: I know this is weird, but I cannot STAND white potatoes.

H is for hometown: Atlanta.  Where that playas play.

I is for something important: Being the best you possible.  Why bother doing anything half way?

J is for current favorite jam: Tough choice!!!  Anything by Mumford & Sons.

K is for kids: I know what causes that… nothankyou.

L is for current location: In my cute cottage at my work retreat.

M is for the most recent way you spent money: I bit the bullet and bought the VitaMix.  Best purchasing decision EVER.

N is for something you need:  A good sweat.  If I don’t get moving for at least for 15 mins every day, I start pacing like a caged animal.

O is for occupation:  Consulting in the area of Sales Effectiveness.

P is for pet peeve: When servers start clearing plates before everyone is done.  In the words of Stephanie Tanner, “How rude!”

Q is for a quote:  “You can do anything you want to if you want to badly enough.” – My Dad

R is for random fact about you: I would love to do a tri, but I can’t swim.  Actually, I downright hate swimming.

S is for favorite healthy snack: I legit LOVE healthy snacks – protein shakes or chia pudding are my go-tos.  Loved this Roasted Beet and Orange. 

Unhealthy Snack: Hmmm… my snacks really aren’t bad.  Desserts are my weakness. Warm chocolate chip cookies, anyone?

T is for favorite treat: Really, really good wine (Amarone, anyone?) and chocolate cake.  Preferably together.

U is for something that makes you unique: I’m special just like everyone else!  Maybe having played roller derby? That’s a pretty cool adventure.

This is me breaking my jaw.

V is for favorite vegetable: Spinach!  Every smoothie I make is a peculiar shade of green. 🙂

W is for today’s workout: A quick HIIT thing in my room this morning.

X is for X-rays you’ve had: Jaw (see letter U), teeth, knee (fractured)… I think that’s it (surprisingly).

Y is for yesterday’s highlight: Meeting my new colleagues AND doing a “Cooking Experience” activity with the founder of Serenbe.

Narcissism + WIAW

Facebook is an indicator of narcissism.

Raise your hand if you’re in trouble…

According to a recent study, there is a link between the number of “friends” you have and narcissism.  The participants were assessed on the based on the Narcissistic Personality Inventory (NPI).  Who knew that even existed?!

The study wasn’t fully representative, but the theory is that a high friend count indicates you need excessive attention.

Clearly these people never played in a ~100 person roller derby league or went to grad school.  That’s like 50% of my friend count!


 

But I digress.  Today is the last  green themed What I Ate Wednesday!  Give my day of eats some attention, and then give Jenn’s blog some attention by clicking here to see what everyone chowed down on.


 

Breakfast:

I was in a rush, so I did a quick 15 min HIIT workout before breakfast… which left me starving.  I scarfed another Raspberry Barked Oatmeal To-Go (perfect in-a-hurry-meal), along with slices of the best grapefruit I’ve ever eaten.

This fruit was so sweet I couldn’t believe it wasn’t an orange or maybe an Ugli fruit.

Lunch:

Again with the busy theme, I ate lunch on the road.  Literally – I was driving with my knees with a cell phone in one hand and my burrito bowl in the other.

Safe, I know… at least is didn’t try to take a picture!

I wish I had gotten a pic because Willy’s is the only Mexi-rito chain I have seen that offers tofu.  Vegan tofu burrito bowl, FTW.

Snacks:

Random, but yummy:

  • Cashews
  • Squash sticks dipped in marinara
  • TJ’s Sweet Potato Chips + Eggplant Garlic Dip (sooooo good!)
  • Grapes
  • Beer… it was a pre-tennis snack! 🙂
  • Rick’s Picks Mean Beans – spicy pickle green beans

Dinner:

A quick post-tennis veggie stir-fry served with apple slices, and seed bread over a bed of mixed greens.

In my quickie stir-fry:

  • Yellow cauliflower
  • Squash and zucchini
  • Collard greens
  • Onion
  • Garlic
  • Nutritional yeast
  • Liquid aminos
  • Thyme
  • S+P

Dessert:

One of these Chewy Granola Cookies from the freezer.  I love a low-sugar quickie dessert.  I may have had 2.
