Satisfying Creamy Asian Kale Salad + WIAW

There are no short cuts.

That doesn’t seems to stop people from trying .

Satisfries?  Really Burger King?  According to this article, the fast food chain has developed a lower fat french fry.*  One serving is 190 calories, 8 grams of fat, and 210 milligrams of sodium.

*Yes, they are really called Satisfries

Apparently Satisfries taste like regular fries – they are made with the same oil as the full-fat version.  The trick is that Burger King uses an oil-repelling agent in the better that lowers the fat content.

This is kitchen wizardry, not a nutritious french fry.  I can’t stand when companies do this because it’s misleading to consumers.  Yes,ultimately it’s up to the individual to do their research… but they DON’T.  They see these products come out and think eating fries for lunch every day is a good choice (with a burger and a diet coke).

Right or wrong, the timing couldn’t be better.  The U.S Patient Protection and Affordable Care Act is requiring restaurant chains to post calorie counts on their menus next year.  I wonder how many more menus items like these will be popping up?

This is WIAW was crazy.  I was in back to back meetings and pretty much only left my office long enough to pee and run to the fridge for more food.  Thank god for food prep.  I’m sure people think I’m nuts.

Breakfast:

I’m still going with my new Aminos in my morning cocktail.  I am liking it!  It’s not a sweet, but I think that’s nice on my taste buds early in the AM.

The food part… well, let’s just say I won’t be leaving the house without tasting my breakfast first ever again.  This was going to be a genius idea – mixing ingredients for an oatmeal mugcake the night before so all I had to do was nuke it in the morning.  2 mistakes: I tried a totally new recipe and I microwaved it WAY too long.

Mid-Morning Snack:

Porgy with celery sticks and my lentil hummus.  Porgy was a new fish to me.  I really liked it – it’s heartier, more similar to chicken than a flaky fish.

Lunch:

This was salmon sashimi with lavar, Ezekial bread, and a massaged kale salad.

The dressing (massage lotion?) was my take on Heather’s Creamy Chickpea Salad.  If you’ve never use tofu in dressing before, you MUST try it.  I can’t believe how creamy and delicious this was!

Creamy Asian Kale Salad

  • 1 bunch of kale
  • ~10 shiitake mushrooms, diced
  • 1/2 C chopped asparagus
  • 3 ounces firm tofu
  • Fresh lime juice (from 1 lime)
  • 1 tsp dijon mustard
  • 2 cloves garlic
  • 1 1/2 tsp dulse (seaweed flakes)
  • 1 tsp apple cider vinegar
  • 1 tsp nutritional yeast
  • 1/2 tsp coriander
  • 1/4 tsp black pepper
  • Red pepper flakes, to taste

Toss together kale, mushrooms, and asparagus.

Blend together dressing ingredients, and massage into kale mix.  

Can eat immediately, but best if allowed to marinate overnight so that veggies soften and flavors infuse..

Mid-Afternoon Snack:

Pork Belly of the sea! Sea bass is my favorite fish.  Hands down.  I ate it in my office with roasted cauliflower and sweet potato (topped with the cinnamon I keep in my desk).

Dinner:

Dinner continues to be more snack-like on my new schedule.  I snacked on some (unpictured) granola before hustling to the gym.  When I came home after 9p, all I wanted was my chocolate-beet smoothie.

I was out of beet powder (my Whole Foods quit carrying it!!!), so I tossed in a raw beet!  The Vitamix blended it like a champ.  Topped with more granola, then inhaled.

Then I needed round two.  Double roasted kabocha and peanut flour sauce.

I could eat this every meal.

Dessert:

I’m so sad about this… I made my Carrot Cake Batter Protein Bowl using French Vanilla Designer Whey.  Was planning to top it with a Banana Nut Quest Bar.  And I did.  But not before I burned it.  I ate it any way, obv.  Note to self: Don’t put your Quest bars under the broiler and walk away.

Topped with cocoa powder-coconut flour sauce and Nuttzo.  Because that makes everything better.

While whole proteins (eggs, chicken, fish, tofu, legumes, etc.) should be you main sources of protein, but I believe that having protein powder in my diet is beneficial for several reasons.

Sunshine and Pumpkin Pan-lettes

It’s a sunshine-y day!!!

Hey, we’re supposed to start the week on a positive.  #cheese

This weekend was beautiful and sunny in Atlanta.  I spent Saturday morning working out, then did some shopping. I purchased fresh eggs from the farmers market before heading to Fresh Market for some goodies:

I really love the wraps and the lentil hummus!  Hatch chilies aren’t new to me, but I was thrilled that they were grilling them fresh outside the store to sell.  Score!  They went really well with the shrimp I bought (pre-cooked and tails removed – I can’t stomach doing those myself just yet).

Then I got dressed to watch two of my favorite people get married.

Admittedly, I was a little anxious about the reception.  Open bar, lots of tasty reception food… and cake.  I mustered all my motivation and commitment.

I knew I wouldn’t last without my own treats, so I came prepared.

Bring your own food to a wedding?!  Why not?  I made a quick turkey salad with my hatch chilies, parsley, and tomato.  That was tossed in a sauce of nutritional yeast, apple cider vinegar, cumin, and smoked paprika.  I also brought some green bean chips, a chocolate calcium disk, and kombucha.  The kombucha was awesome to have so I felt like I had a “drink.”

Confession: I took a teeny cake sample.  It was worth it.  So there.

Sunday there was more marvelous with a great workout followed by a trip to Whole Paycheck Foods.  On bike.

It was supposed to help with self-control… but really it translated to weighted cardio on the ride home.  It’s 6.5 miles round trip!  The need for kabocha is not to be denied!

See that beer in the middle?  It’s a pumpkin beer.  I’m afraid it will all be gone by the time I can drink it after my competition, so I asked the beer man (Max) to recommend the very best.

I purchased a single and it will remain in my fridge until mid-November.  Wish me luck.

1. Do you believe in aliens?  Why or why not.

I don’t know… I’ll say yes.  Because who are we to think we’re all that’s out there?!

2. If you could do ANYTHING in the world and have that be your career and your skills, paycheck, or anything else was not an object… what would you do?

I’d travel.  That my one day get boring, but being able to explore and experience the world without the chains of time or monetary needs is my idea of heaven.

Like that time I ended up in Chile by accident and found myself on board a US Navy ship… 

3. What is your earliest childhood memory?

That’s tough… I don’t remember?  Maybe dancing around the living room to old records at Christmas time with my dad.

How about last night?  That’s what I have a picture of.  😉  It was one of my new wraps spread with salsa and topped with shrimp, broccoli slaw, and a little local #yolkporn.

5. What was the most fabulous vacation you have ever been on in your entire life?

Italy.  2 weeks traveling to small towns on a self-guided food and wine extravaganza.  I almost didn’t come home.

6. If you HAD to give up one of your senses (touch, taste, sight, hearing, or smell) which would it be?

NOT taste or smell!  Maybe hearing?  It seems like that’s the easiest one to accommodate for, especially if you’re able to hear prior.

I’d rather not hear half the shit that comes out of people’s mouths anyway… 😉

7. Would you rather always be super freezing cold or ridiculously overheating hot? (and no, you can’t have a warm blanket or AC to combat the issue!)

Bring on the heat!  I hate being cold.  I have Raynaud’s Disease and it’s uncomfortable and creepy when my fingers go white-purple.

8. Why did you start blogging?

My mom told me to.  Seriously.  I was reading a lot of blog and getting inspired to make all of this #strangebutgood stuff and my mom said “you should start a blog!”  So I did!

9. What was the last compliment you received and what was the last one you paid to someone?

Yesterday I Instagrammed a sneaky selfie from the gym and my girl Meg sent me the sweetest text that made my night:

“Wow girl you’re looking phenomenal.  Be proud of yourself.”

*Please don’t be offended, Zumba people.  I just thought it was funny.  I tried it at Blend and it was HARD for this white girl.* 

I’m struggling through this prep and someone noticing progress that’s hard for me to see in myself feels really, really good.

I paid it forward by telling a girl in the elevator that the homemade (paleo!) fudge she was bringing up looked amazing.  Then I tried to steal one.

10. What is your most favorite thing to eat?

I hate this question (sorry Janetha!).  I love different foods for different reasons, and it depends on the mood!

Right now I’m digging the Pumpkin Pan-lette (remember when I did it with sweet potato?) I made Saturday morning.  There’s no flour in it – the base is just pumpkin and egg whites.  Like a pumpkin omelette, but cooked like a pancake.  Pan-lette. Get it?

Whatever you call it, it is a fluffy cake of fall deliciousness.  I topped with a peanut flour sauce, which we all know I’m addicted to.

Pumpkin Pan-lette

  • 1/2 C pumpkin puree
  • 1/2 C egg whites
  • 1/2 tsp butter extract (or vanilla)
  • 1/2 tsp pumpkin spice
  • 1/4 tsp cinnamon
  • Pinch of cloves
  • 4-5 drops vanilla liquid stevia (optional)

For the sauce:

  • 1 T peanut flour
  • 1 T Greek yogurt
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 2-3 drops vanilla liquid stevia
  • Almond milk or water, to thin

Combine all pancake ingredients into a medium bowl and stir until smooth.  Pour into a prepared (I used PAM) skillet and cook as you would a pancakes (~2-3 mins on each side).

Note: I made this as one huge pancake, but I’d advise you to turn it into 2.  It required some serious acrobatics and two spatulas to flip.

Meanwhile, stir together sauce ingredients in a small bowl.

Plate your pie-cakes, top with peanut butter syrup, and enjoy!

Many of these are new to me – toffee stevia, Walden Farms caramel, and the peanut butter protein powder.  I have been out of tahini and coconut flour for a while, so I’m excited to use those again.  I bet I can use it all together!

Do you think I got enough peanut flour?  I love that stuff.  It’s better than the other stuff (ahem… PB2) because it’s just the de-fatted nuts.  No added sodium or sugar.

This WIAW was a good one.  I was much more prepared this week to stick to my plan.  I’m using more quinoa to help me hit my carbs.  This time I made extra to keep in the freezer for quick access next week too.

Breakfast:

Of course I had my morning cocktail (apple cider vinegar, water, Glutamine, and Fitmixer Aminos) to start my day out right.

Then it was on to the #yolkporn.  I made Toad in a Hole with my P28 bread and local eggs.  I ate it with a side of kiwi and cottage cheese mixed with cinnamon.

This was my post-workout refuel.  I made a Chocolate-Beet Protein Smoothie with extra spinach.  Topped with my custom granola and blueberries.

Side note: It drives me insane when people call them “bloobs.”  Is that silly?  #sorryimnotsorry

Cod that I baked in marinara sauce and mushrooms with a side of quinoa mixed with hummus, white bell pepper, and broccoli slaw.

It was pungent, so I also had one of the office soft mints. 😉

Afternoon Snack:

Sandwiches aren’t a staple in my life, but I’m really liking them lately!  This was turkey made at the local farmer’s market on Ezekial bread with local greens and hummus.

The salad was a Quinoa Tabbouleh.  The recipe will come tomorrow!

 This is when the day got awesome.  I left work to get a massage… where I realized exactly how badly I need to get them regularly.  My back was a knot forest.

Kombucha is good for muscle recovery, so naturally I headed to Whole Paycheck Foods to get a one on tap.  And a few other things I didn’t really need.

Dinner:

Ripped Recipes shared my Cheese-less Cauliflower Crust recipe on Instagram last night… which sparked a craving.  Pizza time!

I topped mine with marinara, broccoli slaw, baked tofu, and a slice of Daiya Provolone.  I eat cheese, but I actually love Daiya.  I do not; however, think it tastes like real cheese.

I am finally getting smart about making this pizza – I make a few crusts at a time to keep in the freezer for quick week night dinners.  MUCH better than pizza from the freezer section!

Side note: I recently discovered and really like Ripped Recipes as a resource for creative, protein-rich ideas.  Have you guys ever heard of them?

Dessert:

I really, really love carrots.  Hence – once again – my Carrot Cake Protein Batter.  I added some of the protein powder from my iHerb box and used a tiny bit of the Walden Farms caramel.  Both were a little fake.  The custom granola crack and the figs were good!

Getting Big is Marvelous

This weekend was especially marvelous.

 

Not that all weekends aren’t good.

After several weeks in a row of go-go-go, it was nice to be in town and left to my own devices.  One might say it was absolutely marvelous.

Saturday I had brunch with some friends from grad school.  We had a great time catching up and resolved (again) not to go some long without a reunion.

On my way home, I stopped at The Fresh Market and picked up a few treats.  Apparently I was feeling ginger?

Then I hit the gym.  Hard.  I am finally feeling comfortable lifting again, and seeing some good progress.  A guy I don’t know, but had seen around for a year or so know agreed… he stopped to tell me I was making some good progress and looked a lot bigger than I did a year ago.  I almost hugged him.

Just a couple of years ago I would have killed someone for telling me I look big.  On Saturday I was flattered and thrilled.  So much so that I had a photo shoot in the locker room… paying no mind to the lady changing and giving me the “WTF?!” look.  #sorryimnotsorry

When I got home, I had a package.  The timing couldn’t have been better.  It was a delivery of my favorite protein powder from Growing Naturals!

I immediately busted out the vanilla and made a smoothie with spinach and raw sweet potato. It was good, but I want to perfect before sharing.

That night I went to see an artist I used to listen to in college – Melissa Ferrick.  The group of friends was totally random; they all responded to my plea for a concert buddy via Facebook.  Crowd sourcing concert buddies. 🙂

The venus is a listening room where there are tables and a full menu.  I brought my own food in.  It was really good!  And I saved some carbs to have a Guinness.  The best part about bringing your own healthy food to a show?  Coming home to a healthy dessert in an almost empty Greek yogurt container!  This was my favorite Carrot Cake Protein Batter, topped with granola and cocoa powder sauce.

Sunday I got up and made my Fluffy Cauliflower Protein Pancakes and a broiled grapefruit.  Is it just me or are pancakes are the perfect way to start the day?

I semi-homemade my own syrup.  It was 1 tsp sugar-free syrup, 1 tsp peanut flour, cinnamon, and a little water to thin.  I’ll be doing that again!

There was a little snafu.  I left to run errands and forgot to turn off the stove.  The black beans I was cooking for the week turned to a char.  Oops.

No matter!  I had a date with some new friends to run sprints up Stone Mountain!  Even more fun was getting to introduce them to my favorite market, where I bought some things to make the dish below.  

I will share later.  Bwhahaha…

In other marvelous news, it was actually sunny and warm in Atlanta most of the weekend.  A nice change after our monsoon season.

Samsung Galaxy Camera + WIAW

Once in a blue moon I surprise myself…

 

Get it?  Last night was a blue moon…

I’ve always lamented having to take pictures of food.  I just want to make it and chow down.  My inner fat kid doesn’t like to wait for a photo shoot.  

Then there’s the transfer of pics to the computer.  Then editing.  That is less painful than I build it up to be, but it doesn’t stop me from some serious procrastination.  In short, I’m lazy and I’d rather do everything on my iPhone via Instagram.

But a new toy has come into my life and saved the day.  Thanks to Verizon and the Fitfluential Ambassador program, I was given a Samsung Galaxy Camera with Verizon 4G LTE network to try.  ***As always, all opinions are my own.***

I was entertained on the drive to the mountains by taking pics of my iPhone and posting them to IG from my camera… while playing with IG on my iPhone too.  Simple minds, simple pleasures…

 

The Samsung Galaxy is basically a iPhone in camera form.  It even has a preloaded Instagram app to make over sharing stupid easy.  Sharing is done quickly, directly from the camera over Verizon’s 4G LTE network.

Instant gratification, for the win. 😉

Some of you camera enthusiasts might appreciate that fact that it’s a 16 megapixel and 1080p HD video camera that features a 21x optical zoom lens.  I appreciate that there are pre-set modes allowing a total novice to take decent pics – even at night.  (Never fear for the camera geeks – there’s also an Expert Control mode to manually adjust shutter speed.)

The large HD LCD touch screen makes it convenient to edit photos and videos right from the camera.  You can share it on any number of social networks, add it to your Dropbox, and even email it to yourself!

This WIAW was a bit disorganized.  Deciding to stay an extra day in the mountains meant I missed my farmer’s market run (Worth.  It.).  Most of this was obtained from the freezer or from a 15 min sprint 2 the local grocery chain. 😉

Breakfast:

My favorite addiction, my morning cocktail (apple cider vinegar, water, Glutamine, and  Fitmixer Aminos) started my day out productively… if you know what I mean…

It was an egg-y morning.  I made a quick omelette seasoned with cumin, cayenne, and cilantro.  It was stuffed with avocado and turkey.  That was followed up with a side of grapefruit.

Mid-Morning Snack:

This was my post-workout refuel.  I made a Zucchini Bread Protein Smoothie , only I subbed 1.5 oz of tofu for the cottage cheese and left out the spinach (I’m all out!).  I topped it with my custom granola from last week.  Really, really loving it!

And a cherry on top (followed by a few more on the side).

Lunch:

Swordfish (surprisingly good from the freezer) with red bell pepper, zucchini, and a slice of Ezekial bread.

Afternoon Snack:

Another lazy man’s turkey salad.  I ripped up some no salt added turkey meat from the deli and mixed it with celery, red pepper flakes, cumin, nutritional yeast, and apple cider vinegar.

I ate my Dora edamame on the side.  Kid food is 100% acceptable as a single adult, no?

There was also a new gum involved.  I really liked the Pomegranate flavor, and I appreciate the crew at Pur Gum sending me these samples … but I wish the flavor had lasted more than 5 mins. 🙁

Dinner:

Sea Bass (also surprisingly good from the freezer) with some hard-core roasted brussels and Injera (Ethiopian bread made of teff flour and water).

“Dessert” was what I was really excited for… roasted kabocha!  I topped it with peanut flour sauce and more of my custom granola.

Dessert:

Still struggling to hit my carbs, I added a little extra yum to my Carrot Cake Protein Batter.  I stirred in oats and topped it with my custom granola (again) and a cocoa powder sauce.  And cherries. I’m still a little low, but it was close!

You know I’m excited about a camera when I go wandering through the park after dark to take pics of the moon.  I’m a little shocked I didn’t get mugged…

Work It Out: Embrace Your Inner Puma

In my head, I look like a Puma when I workout.

In reality, notsomuch.

No matter.  I workout hard and encourage my inner puma to shine.  One thing you learn early on in weight lifting is that half of it is mental.  There are many times when I am sure there is no way a weight was going to move, but I talk to myself.  I tell myself that I can do it, that its only 5 lbs more than what I just lifted, that I am strong.  And there are times that they guy next to me just did it and my ego won’t allow me to back down.

Since my surgery, I’ve had to dig deep to find my inner Puma.  It’s been hard working with new physical limitations and with the way my body as changed as a result.  I refuse to hold myself back though!  Today’s Work It Out is dedicated to working with limitations, reaching deep, and grabbing your inner Puma by the tail.

Lucky me, PUMA just so happened to challenge me to design a workout while trying out some of their new gear!  I knew immediately what I would do – legs!  It’s the area that I can really push myself on right now.

The awesome folks at PUMA sent over the ribbed performance tank, tech performance wear compression pants, and Formlite XT Ultra Shoes.

The tank is nice.  It’s clearly well-made and I like the breathable material.  It IS pretty long, so if you are a short-waisted person (like me) you might check out another style.

The Formlite Shoes rock!  They are super light and flexible.  They don’t quite provided the support I need for running, but they are great in the gym.  I also love the bright orange color.  Normally I’m opposed to bright color, but on my feet I like a little neon. 🙂

And now my favorite.  The Performance Bodywear Tech ACTV Long Tights SHOCKED me with their perfect fit and breathability.  Typically I only workout in shorts because I hate feeling over-heated, but these actually kept me cooler than my booty shorts during the leg workout below!

Puma describes them and “next-to-skin” and they aren’t exaggerating!  The really cool part is that they’re compression tights lined with a sort of athletic tape that works to enable energy supply to muscles and maximize performance.  Basically, it feels like an extra boost during a bangin’ leg day!

I wore my tights for a killer leg day.  This Puma-like leg workout left me sore for a solid 3 days, which is hard for me to do on my own.  When I have leg day with my trainer I am guaranteed to be using the handi stall, but without a sport I find it hard to go as heavy.  These pants were like a mini-spot.*

Chocolate Peanut Butter Rice Crispy Treats (Lightened Up)

Treat ‘yo self.

That is my favorite saying from my friend Sarena.

This weekend I (rice crispy) treated my self and my friends!  My best friend’s favorite treat is the crispy variety.  In honor of the holiday weekend, I decided to make her a batch.  Of course, I couldn’t just follow a recipe… regular ‘ol rice crispy treats have been done before!

What I came up with was a chocolate and peanut butter crispy treat.  While these will never be a health food, they are slightly cleaner than the treats of your youth (recipe at the bottom).  Here are a few of the cuts/subs I made:

  • Cut the amount of marshmallows and butter in half by using natural peanut butter
  • Replaced the bit of butter with coconut butter
  • Used brown rice crispy cereal rather than the usual snap, crackle, pop brand

One of my favorite things about these bars is that they aren’t as sticky-sweet as the traditional treats.  Cutting back on the marshmallows really helps!

Before taking them to my friend’s house, I had to share then with a couple of my favorite people: Lee and Carol!  We ran the Peachtree Road Race (the world’s largest 10K) together on July 4th.  Clearly that deserved treats!

Lee and Carol both gave me the thumbs up, so I bought the concoction to the bestie’s house for dinner that evening.  They received a stamp of approval there too – from 4 adults, a 2-year-old, and a couple of crumb-eating dogs.

Bonus: they paired really well with a certain impulse buy (thank you, Whole Foods):

Rogue Chocolate Peanut Butter Banana Beer

Chocolate, Peanut Butter Banana Beer from Rogue.  I figured it would be really good or repulsive.  The taste was quite layered – chocolate up front, then a hint of peanut butter, and finally the banana came on the end.  Surprisingly it wasn’t too sweet, but there is no way I could have drunk a bottle.  We split tastes between 4 people – it was just the right “side” with the chocolate peanut butter rice crispy treats.

Chocolate Peanut Butter Rice Crispy Treats

Chocolate Peanut Butter Rice Crispy Treats (Lightened Up)

  • 4 C marshmallows
  • 2 T coconut butter
  • 1/2 C crunchy peanut butter
  • 1/2 C semi-sweet chocolate chips
  • 1 tsp vanilla 
  • 1 tsp cinnamon
  • 4 C brown rice crispies

Place marshmallows, coconut butter, peanut butter, and chocolate chips in a non-stick pan and melt over low heat, stirring constantly to prevent burning.  Add cinnamon and vanilla, stirring to combine.  (Note: if it is too thick, stir in almond milk 1T at a time.)

Quickly add rice crispies and stir to combine.  Press mixture into an 11 x 13 pan.  

Cover and chill in the refrigerator for at  least 2 hours to set.

Remove from fridge and cut into squares to serve.
