Vanilla Bean Cupcakes with Nutella Frosting

48 cupcakes is a lot.

But can you really have too many Chocolate Cupcakes with Nutella Cloud Frosting?  Notsomuch – they were GONE by the end of the wedding shower.  The chocolate part was good, but the frosting is what stole the show.  And I have Sweetapolita to thank.  Click here for her phenomenal recipe.

The final dish I’ll share from the wedding shower catering experience wasn’t actually made for the shower.  I did use that leftover icing though!  Obvious that meant I needed more cupcakes…

I had found some vanilla beans in Mom’s pantry and she didn’t have to ask me twice to put them to use in an Easter dessert.

These Vanilla Bean Cupcakes were fantastically light.  A perfect pairing for the rich Nutella Dream Icing.

My Easter cupcakes were slightly more healthy less bad for you than the chocolate cupcakes, yet no less delicious.

 

Without butter, these were fluffy to the point that you barely realize you’ve eaten the whole thing before it’s gone.  Sub in non-dairy milk and vinegar for the buttermilk and you’ve got a vegan cupcake (except the frosting – it’s full of butter).

Vegan or not – try these.  You won’t regret it.  In fact, you won’t even notice that you’ve just eaten 3 of them.

Vanilla Bean Cupcakes

  • 1 1/4 C all-purpose flour
  • 2 T cornstarch
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 teaspoon salt
  • 1 C buttermilk
  • 1/3 C canola oil
  • 1/2 C sugar
  • 1/4 C xylitol
  • 1 1/2 tsp vanilla extract
  • 1 vanilla bean, split lengthwise and scraped
  • Nutella Dream Icing

Pre-heat the oven to 350 degrees.  Prepare muffin tin with cupcake liners.

Sift the flour, cornstarch, baking powder, baking soda, and salt into a medium bowl.

Beat together milk, oil, sugar, vanilla extract and vanilla bean in a large bowl.  Add the dry ingredients to the wet, stirring until just combined.

Fill cupcake liners 2/3 full and bake for 10-12 mins.  Allow to cool completely before icing.

Notes:

  • Use a full 3/4 C sugar, or an alternate sugar substitute if you do not have xylitol
  • Make it vegan by using non-dairy milk and 1 tsp of apple cider vinegar.  Let stand 5-10 mins before using to allow milk to curdle

Makes 12 cupcakes.

Catering, Cupcakes, and Chillaxing

This was the sort of weekend where you stay so busy you aren’t really sure it ever happened.

Not that I’m complaining – catering and cupcakes iced with a little chillaxing is a good time.

This week I am looking forward to sharing some fun new recipes with you, but for today I’ll stick to the highlights.  Here is the Top 5 from a weekend so crazy that I was in bed by 11p last night (that’s unheard of for me).

1. Say Cheese

Though I spent a lot of time prepping Saturday’s catering gig, I took a little break to make a hummus, veggie, and cheese board.

A wandering afternoon in the cheese department while was supposed to be catering-shopping lead to the discovery of a new favorite cheese.  Mitica Quadrello di Bufala (buffalo’s milk cheese).

I’m not ashamed to admit… I couldn’t stay vegan for the love of cheese.

2. Wedding Shower Catering

This was my second “official” catering job and it went really well.  The event was a was a joint wedding shower for a bride and groom.  I was asked to come up with a “Southern” menu for ~30 people.

On the Menu:

  • Chipotle Roasted Corn Hummus (remember this from last summer?) with veggies and chips
  • Spring Endive Boats
  • Caper and Chive Deviled Eggs
  • Mac ‘n Cheese Minis
  • Whiskey BBQ Turkey Sliders
  • Chocolate Cupcakes with Nutella Frosting

If it’s any indication of success, there was hardly any food leftover. 🙂

3. Easter Bunny

Sunday I woke up still exhausted from the previous day’s catering; however, I was energized by the fact that the Easter Bunny had come!

I will always spend the night at my mom’s on holidays.  Shameless.

4. Poolside Mimosas

A girl’s day by the pool with my mom and baby sister was just what I needed.  That and a tasty mimosa.

We laid out, talked, and ate a poolside Easter lunch of watermelon salad, endive salad, pretzel bread, carrot soufflé, and mac ‘n cheese.  I was too busy chillaxing to take pics of any of it. #fail

5. More Cupcakes

4 dozen Chocolate-Nutella cupcakes in one weekend clearly wasn’t enough.  We came in from the pool and wanted something sweet.  Being a good kid, I whipped up some vanilla bean cupcakes to go with the last but of Nutella icing.

This week I was all about the P90X.  I’m still not following the prescribed program, but I did a workout with Tony Horton just about every day this week.  Good thing because my diet was abysmal.

Double Feature

Remember double features at the movie theater?

 

You could pay for one ticket and see 2 movies.  Some of you just snuck in, I know. 😉

I haven’t seen them do that in so long!  We should start a petition to bring it back in time for Oscar season next year.  This year I spent too much money going to see the nominees.  And I did NOT like Shame.

 

While this post has nothing to do with movies, it does contain some features!

First up, I was THRILLED (and shocked) when Fitness Magazine reached out to me and asked if I’d be willing to do an interview and submit a recipe for a spot in their “Fit Blogger We Love” series.

Raspberry Baked Oatmeal To-Go

I am not a morning person.

After hitting snooze too many a few times, I’m forced to race through my morning routine.  I squeeze in a quick workout, shower, try to make my face look presentable for work, and inhale breakfast.  This means I NEVER have time for something a decadent as baked oatmeal.

That is until now.

In honor of National Nutrition Month I was contacted by a representative from Driscoll’s Berries to share a recipe I use to fuel up.  I was not compensated in any way; the only stipulation was that the recipe must use fresh raspberries as an ingredient.

Berries are one of the seasonal spring items I most look forward to.  Aside from the deliciously sweet taste they add to dishes, they also pack a ton of nutrients.  Raspberries have a high fiber content and are rich in antioxidants, which can fight inflammation and degenerative disease processes in the body.

Baked oatmeal is a favorite breakfast in my house.  Until recently it was also a rare breakfast.  Who has time to bake in the morning?!

Then light bulb went off.  Pre-Baked Oatmeal.

These baked oatmeal bites were made in advance to be frozen.  All you have to do is grab one or two from the freezer and pop it in the microwave to defrost.

Baking these in muffin liners is especially convenient for shoveling delicately eating your oatmeal on the run.

Bananas help to bind these together; and those bananas with the pieces of raspberry provide pleasant bites of sweetness.  Depending on your berries and bananas, you may not need to add any sweetener!  It’s still early in the season, so I added a bit of liquid Stevia.

These also make for a great snack while cheerleading. 🙂

These baked oatmeal bites can be made in advance and frozen for a quick breakfast or snack.  All you have to do is grab one or two from the freezer and pop it in the microwave to defrost!

Raspberry Baked Oatmeal To-Go

  • 2 ripe bananas, mashed
  • 1 C raspberries, lightly mashed
  • 1 egg (I used a flax egg – 1T ground flax + 3T water)
  • 1 tsp vanilla extract
  • 1/2 tsp maple extract
  • 2 C rolled oats
  • 1 T cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 8 drops liquid stevia
  • 3/4 C unsweetened almond milk (or other liquid)
  • Topping ideas: Walnuts, pecans, chocolate chips, shredded coconut

Pre-heat oven to 350 degrees.  Line a muffin pan with cupcake liners, or grease with cooking spray

Mix together banana, raspberries, flax egg, and extracts.  Stir in oats, cinnamon, baking powder, salt, and sweetener.  Mix in milk and stir until combined.

Pour batter evenly into tins.  Sprinkle with desired toppings, pressing lightly into batter.

Bake 20-25 mins, or until a tooth pick comes out clean.

Enjoy a few fresh, and allow the remaining to cool completely before placing in a freezer bag for storage.  For a quick breakfast, remove muffin from the freezer and microwave ~30 seconds (until warmed through).

Note: Depending on the size and ripeness of bananas, you may need to adjust amount of liquid used.  Don’t worry if you don’t have maple extract; you can also use maple syrup (be sure to adjust sweeteners) or omit.

Makes 12 muffins.

5 on Friday + Vanilla Chai Frappuccino

Life gets crazy.

 

I have about a million things that I ran out of time to do this week.  There are pictures on my computer of things I’ve been meaning to share with you all for weeks.  It’s embarrassing.

 

This Friday I am going to begin to catch up!  Here are 5 things I’m digging lately:

 

1. Dandy Blend

I won a bag of Dandy Blend in a giveaway from Tiffany @ Como Water.  It’s an herbal dandelion powder that supposedly has a coffee-like taste.

You know what?  It does!  Granted, it’s no replacement for your fancy Ethiopian blends… but for you non-fancy coffee drinkers and herbal drink lovers, I would recommend it.

 

 

The bag says to mix 1 rounded tsp with a mug of hot water.  That didn’t cut it for me.  I had to use 2 heaping tsp to get that coffee taste.  Hot “coffee” is good, but my favorite way to drink it was been mixed into other things.  Namely, mixed into a vanilla chai frappuccino.  (Recipe at bottom.)

2. Vanilla Chai Vega Nutritional Powder

Vega’s re-formulated Vanilla Chai also had a starring role in my  vanilla chai frappucchino.  I have previously tried Vega’s plant-based protein powder and didn’t care for it.  They did a great job on the reformulation!  I loved the 15g of protein to keep me full, and that it only contained 2g of sugar.

 

 

With many powders I find that the flavors are either too diluted or leave an artificial aftertaste – the new Vega doesn’t commit either crime.  It made an awesome chai-spiced cold drink to start out the crazy-winter-balmy 75 degree day!

 

3. Super Me! Wrist Cuff

This rockin’ cuff was ordered from Horse Feathers several weeks ago.

(Side note: Does any one else think “finger cuffs!” every time they hear the word cuff?  Chasing Amy reference?  Any one?)

 

 

Check out the website here.  They sell a bunch of different items and other cuffs with various quotes.  Mine says: “If I gotta be me, I’m gonna be super-me.”

They shipped fast and it arrived in a cute blue bag.  Sold.

 

4. So Delicious Chocolate Dairy-Free Ice Cream

This deliciousness is almost sugar-free – only 1g of sugar!!!  It was on sale (mind you, on sale meant it was still $5 a pint) at Whole Foods, so I treated myself.  My expectations were low… but OMG it is delicious!!!

 

 

 

5. YOU

You guys have been making me smile all week.

One of my new favorite bloggers, Lauren @ Oatmeal After Spinning made a variation of my Chili Nutty Tofu and declare it “perfection.”  If you haven’t tried baking tofu yet… you should! 🙂

Vanilla Chai Frappuccino

  • Vega Vanilla Chai protein powder
  • 2 heaping tsp Dandy Blend (or instant coffee, to taste)
  • 2 big kale leaves (optional)
  • Handful of wheatgrass (optional)
  • 1/2 c unsweetened almond milk
  • 1/2 tsp cinnamon
  • Ice

 

Toss everything in your blender of choice, mix until smooth, and happily slurp away!

I topped mine with a few cacao nibs.  Whipped cream would have also been good. 😉

Crossfit update: I’m so sore that I actually did yoga yesterday.  I hate yoga.  It helped.

Roasted Eggplant Bruschetta

This has been the LONGEST week.

Maybe because I know I’m 3 days from NUT BUTTER?!  That’s really been the biggest hole in my life.  That and oatmeal, but going without oats has been a little easier since Atlanta has turned into San Diego with 65-70 degree temps.

Spiced Almond Butter

As I think about what foods will and will not enter back into my life after Sunday, I am thinking more and more about what it means to eat clean on a daily basis.  Should I cut out meat completely?  Dairy products?  Eggs?

After the first Standard Process Cleanse I did in November of 2010, I drastically reduced my intake of red meat and sugar.  It has made a HUGE difference in the way that I feel.  Red meat and I don’t process well together.  Does that mean I won’t help myself to a bite of the tasty burger you ordered?  Nooooo… I quite like Sarah‘s concept of being “vegan with benefits.” Maybe we can start a movement, Miss. Smart?

Sugar will remain an item I try to avoid.  There are so many great alternatives out there, you don’t really need it!

Candy @ Healthy in Candyland just wrote a great post on sugar and my favorite alternative – Xylitol.  Apparently it could have anti-aging properties!

Check out my Chewy Granola Cookies for a great start to using xylitol in baking!

How will I eat on post-cleanse on Monday?  I don’t yet know what the right answer is for me.  I do know that I will enter into the non-cleanse world by reintroducing one “new” food at a time, and pay close attention to what my body says about it.


Cleanse or no cleanse, I WILL be making many of this week’s French vegan dishes again!

I ran into my friend and his partner in Whole Foods last night, and they shared with me that my Vegan Goat Cheese Stuffed Oven-Roasted Tomatoes were on their menu!  Keith (the “chef”) posted this pic later:

The two meat-eaters served vegan stuffed tomatoes with homemade organic Shepherd’s Pie with grass-fed Georgia beef and sweet potatoes, paired with a Vintage 2008 South Australian Shiraz.

The next party dish I want to share is this Eggplant Bruschetta – installment #3 in the Vegan French Book Club Dinner Series (don’t you love how I made it so official-sounding?).

It was created a traditional bruschetta in mind, only the eggplant replaces the baguette to create a light, flavorful finger food.

Healthy and full of flavor, it was also the easiest dish.

Remember this Provençal Tomato Spread?  I saved some and blended it with extra basil and olive oil to make a creamy sun-dried tomato-olive topping that was reminiscent of SDT pesto.  It took less than 5 minutes.  Wham, bam, thank you ma’am.

Topped with a little basil for color!


Roasted Eggplant Bruschetta

  • Olive oil
  • 2 medium eggplants, cut in 1/2 inch slices
  • Salt and freshly ground black pepper
  • Garlic powder
  • Provençal Tomato Spread
  • 1/2 C fresh basil

Preheat oven to 425 degrees.

Line a large baking sheet with foil.  Spray liberally with olive oil.  Place eggplant rounds in a single layer on sheet. Sprinkle with salt and freshly ground black pepper.

Roast for 15 to 20 mins. Flip each piece, checking to be sure the undersides have browned and become and a bit puffy.  If they’re not, cook a bit longer.

Once flipped, sprinkle them with more pepper and some garlic powder.  Place pan back in the oven for ~15 mins, until the undersides brown to match the tops.

Meanwhile, blend 1/2 C of the Provençal Tomato Spread with basil.  Taste and adjust seasoning as needed. Add more olive oil (I added 2 tsp), if desired.

When the eggplant is cooked, arrange on a platter.  Top each disk with 1-2 tsp of the purred provencal spread and a small bail leaf.  Eat immediately.

Serves 8-10 as appetizers.

Note: Some people swear you don’t have to do this, but I always lay my sliced eggplant out, sprinkle generously with salt, and allow to sit for 10-15 mins.  This helps remove some of the bitterness and excess moisture.  If you do this, wipe off the excess moisture with a paper towel and proceed to bake as instructed.

3 days to go on the Standard Process Cleanse – I can’t believe it’s almost over!  Like I said above, the idea is to add back one food at a time to see what you may be sensitive to…. I’m thinking nuts are coming back first!  That’s what she said.

Speaking of foodies… we had an Atlanta Blogger Potluck on Saturday night.

It was awesome to get to try the food from the people whose posts make my stomach growl.

In attendance: Emily (former blogger), Tina, Stacy, Carol, Traci, Laura (another former blogger), Alayna, and me.

 

Lee was the photog… and was also nice enough to offer up her house to us, which was fantastic because we could all sit around a coffee table and talk.  It’s hard to have a group conversation in noisy restaurants at long tables!

 

 

The food was delicious, as you might imagine.

 

At our table:

And you better believe I cleaned my dessert plate too!

 

 

We sat around talking and eating for 4 hours!  Topic ranged from running to general gossip to horror stories.  Seriously – do NOT ever see the Human Centipede.

As you might imagine, it was all amazing and I left Lee’s house smiling and stuffed.

Now that the gluttony portion of this post is complete… it’s time for the workout recap.

The Dr. said to take 2 weeks off of running and focus on correcting the balance or strength between my hamstrings and quads, so I’ve been good.  Today’s 70 degree Southern California-esque weather made me miss running a lot, but I did get out for a good walk.  And a treat.
