Island Cottage Cheese

I’m in need of a vacation.

While I can’t be skipping off on a luxury tour of exotic islands, I can pretend.  It’s not the same, but it tastes good and that makes me happy.

Island Cottage Cheese

It was a warm, rainy morning in the tundra of Atlanta.  I eyed the pineapple in the fridge and debated a protein pairing.  Cottage cheese is one of my favorite protein choices.  If I’m feeling particularly motivated, I love to put it in the blender to whip it into icing.  It melts like a tasty marshmallow in my protein mug cake.  There’s something  satisfying about the sweet and salty flavors when you swirl it into oats with strawberries.

There’s also something satisfying about pineapple and coconut together.  I think it’s the piña colada.  That’s not safe for work though.

Island Cottage Cheese

One thing I like about Daisy Cottage Cheese is the simple ingredient list.  There’s nothing on the ingredient list I can’t pronounce.  Since I eat cottage cheese almost every day, that’s important for me.

The other important factor is protein.  Not only is cottage cheese a good source of protein, it is a compete protein.  This means that it contains amino acids your body needs to repair and grow muscle.

All of this makes cottage cheese an ideal post-workout or nighttime snack.  Protein is important for rebuilding, and helps you stay full longer.  No one wants me to get hangry!

Island Cottage Cheese

Island Cottage Cheese

  • 1/2 C cottage cheese
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 3-4 drop lemon liquid stevia
  • Pineapple
  • Blueberries
  • Coconut shreds

Mix together the cottage cheese and spices.  Add a bit of almond milk to thin, if desired.

Tops with fruits and coconut.  Enjoy!

This was obviously pre-clease.  I hope to god I never have a dairy allergy!

    I LOOOOOVE whipped cottage cheese! It’s one of my favorite desserts! Mixed with cacao and honey it definitely tastes like a decadent pudding.
    And ya know – I don’t have a beach here, but tons of great vacation activities, so – book!!!

    Hawaii HAHHAA partly bc I’m part Hawaiian & other part bc it’s just awesome. Mmmm I can taste the food… In my mind!!! So expensive so I can dream… Dreams are free hehe ;-). And I love cottage cheese & pineapple & then u add coconut… U got me 😀

    I am right there with you on the pineapple and cottage cheese! LOOOOVVVEE it! Will definitely use your additions to see if it can be improved! I am a little worried of just how good it can be though, I may not be able to a move for a while….standing staring in awe 😛 If you do not see me for a few days, I am with the pineapple and cottage cheese 😛

    I usually eat cottage cheese plain as a snack, but the addition of fruit for a sweet treat is great!

    Growing up I never liked fruit with my cottage cheese but I wonder if I would like it now? I’m thinking I need to give it another chance- especially when there is pineapple and coconut in the mix!

    Oh great use for the lemon stevia. I have tons of it and never know what to do with it (and the orange). Love pineapple in greek yogurt or cottage cheese.

      I had the same problem! Now I just tend to add it ti fruity creations or anything with beets. Or mustardy to create a sweeter dip!

    This looks tasty, but I can’t get past the texture of cottage cheese! I don’t mind it blended up into pancakes and such but those curds weird me out for some reason 🙁 maybe I can try this with yogurt. 🙂

      I get that. I have done it with yogurt too and it is good. Or you could whip the cottage cheese!

    I love cottage cheese, but prefer it wish savory flavors. Cottage cheese with dill or basil is awesome!

    I don’t think I have ever tried sweet style cottage cheese. I love pineapple though, and anything that reminds me of a tropical vacation is a win.
