Lately, that includes me.

6 months post-ACL surgery

Does this look as janky as I think it does?

In the past two days, I have shattered my favorite wine glass, spilled hemp seed all over the floor, broken the arm off of a chair, dyed my hair a pretty tragic color, and SLAMMED my (surgery) knee against the shower door.  I still don’t know how I did that.  I DO know that it hurt so bad that I literally hit the floor and cried.  For an hour or so I seriously thought I’d broken my kneecap.

Does this mean I have a horny knee?  HAHAHA!

Breakfast:

Vegas is out of town, so there was no one to bring me coffee.  Instead, I made my Vanilla Matcha Latte.  Then I had my morning cocktail and started breakfast.

Lunch:

I had leftover steak on a salad while icing my knee.  I didn’t take a picture… because self-pity.

Dinner:

I’d made cauliflower crusts (they’re dairy-free!) to keep on hand for quick meals.  This is one of the oldest recipes on my blog, and one of my all-time favorites.  I love to make a bunch and freeze them for a quick “frozen pizza” night.  Just take it out and throw it under the broiler until it is thawed, add the toppings, and put it back under the broiler until it’s hot.

This pizza was southwestern-ish thanks to my selection of leftovers.  It had black-eyes peas, grilled bell peppers and onions, spinach, and tempeh.  Plus a healthy drizzle of sriracha.

There was an unpictured Tiramisu Bread Pudding topped with Halo Top ice cream for dessert.  Pancakes & Waffles flavor = SO GOOD.

    So proud of you for being brave and getting your act surgery and I’ve been watching your progress. Oh no, you broke your favorite wine glass? Now that really sucks. I can’t wait to see your hair, I’m sure it’s not tragic, I bet you it’s awesome. Oh, That bump on your knee is bad, hope it’s all better now. Mmmmm give me some of that avocado toast. Ok Ok, I’ll have a piece of cauliflower crust pizza too. lol

      At least I dyed it with a washout thing. It’s supposed to be gone after 8 washes… 3 to go…

    I can not even imagine how much that must of hurt your knee! Thats one hell of a bump. Your cauliflower crust pizza looks amazing on the bright side!

    OH I’m so sorry about your knee! Hope it heels up! And I haven’t seen the pancakes and waffles Halo, that flavor sounds amazing!

    I’m such a klutz. I’ve often see than God keeps my too proud heart humbled by being a klutz. I have sooo many bruises everywhere, but I’m thankful to have never broken anything yet.

    Hope your knee starts feeling better soon. I’ve been having a klutzy week too. You can tell you’re having a rough one when a highlight is pressing pus through a tiny hole in your thumbnail.

    I just tried pancakes & waffles Halo Top for the first time yesterday – it’s definitely interesting! Not sure if I love it yet though. I also tried the dairy free Halo Tops for the first time – a few of them were a bit too coconutty for me, but I liked the PB one.

    And you are definitely having a klutzy week!! I totally have weeks like that. Actually, currently I have a burn on one of my fingers from hitting it on the oven, a cut on my hand from trying to slice something quickly without a plate/cutting board, & my pinky finger is still a little swollen & has a mark from getting stung by a bee…. so I guess I’ve been a bit klutzy lately too haha

      I love waffles, so it was immediately a win. Vegas came in for a kiss after I’d been eating it and asked if I’d been eating syrup. LOL!

      You might tie me to klutz! Be careful! I’m so sorry I bailed today… trying to fit too much in. I’ll text you later to see when we can catch up!

      Yes. Yes, they do. They just came out with a tome of new flavors – and some dairy free that are actually pretty good!
