What I Ate Without an Oven

I spoke too soon.

One day I’ll learn to knock on wood or something.

Last week I said we were getting to some form of normalcy.  HA!  Till the flaming oven happened… so here we are with a disheveled kitchen, no oven, and some random food.  We also have NO groceries since we were supposed to have gone to the farmer’s market Sunday.  Fires really are inconvenient…

Protein Lemon Squares with Cheesecake Frosting [Recipe]

Lemon squares are a totally normal thing.

Until I get ahold of them.

Vegas and I absconded from our citrus-picking adventure last weekend with a few samples.  Lemons, oranges, and sweet lemons.  Yes, sweet lemons are a thing.  No, it’s not just a Meyer lemon.  They’re so sweet you can sit down and eat a whole one!  Strange and incredibly good.  The bright citrus flavor is perfect for spring.

I immediately wanted to bake a treat using the sweet lemons.  If you don’t have sweet lemons, simply add more sugar (think lemonade).  Also of note is the coconut flour.  It makes these incredibly moist (that’s right – I said it); reminiscent of lemon bars.

Eating Local in San Diego + WIAW

We’re finally getting some normalcy post-move.

The term “normal” is used loosely for us.

The boxes are slowly disappearing.  Things have places on shelves.  There are curtains in the bedroom and dining room (the other rooms are another story).  We joined a gym… I joined a second gym.  We have groceries and are eating at home *almost* each week day.  And we have redneck Christmas lights strung up on the cabana.

San Diego Farmer’s Market Heaven

Just when I thought San Diego couldn’t get any better…

Seeing the 30 degree temps in Atlanta seals the deal too.

This weekend happened.  We started Friday with a new tradition: date night picnic in the park.  If you haven’t been to Balboa Park in San Diego, add it to your bucket list.  It’s huge – think Central Park on steroids.  There are 65 mile of trails, museums, a zoo, a theatre, and more gardens than I can count.

We packed turkey sandwiches, hummus, and veggies and set out for a picnic in the rose garden.  It’s my favorite part of the park.  The best part was laying around after we ate and taking in the view.

Peanut Sriracha Noodle Bowl [Recipe]

I’m convinced you can put peanut butter on anything.

It’s even good on bacon.

There’s not bacon in this peanut sauce, but now that I think of it… there night be next time!  This was strange enough for round 1 though, particularly when you add kelp noodles.

Don’t be scared of kelp noodles – they don’t really taste like anything and, for those that are concerned, they are gluten-free and nearly calorie-free.  The weirdest part about these noodles is the texture; they’re almost crunchy!  You could use this sauce with any noodle though.  And you could top it with anything.  I chose the tasty Sizzlefish Thai Salmon.

Banana Walnut Protein Pancakes [Recipe] + WIAW

WIAW is on the move again this week!

Because I haven’t had enough  moving…

Here’s the deal.  What I Ate Wednesday has been jumping around to give mamma Jenn a break.  She’s entrusted me this week with hosting duties (which may be a sign she’s taken up a crack habit… is rehab where she’s disappeared to?!). 

Since I’m sooooo known for sugar coating things, I’m going to come out and say that the link up got a bit out of control and Jenny from the block was suffering from exhaustion. WIAW was meant to just be a day of eats.  Don’t be linking shit from 5 weeks ago, everything you ate for the past 3 weeks, or some unrelated giveaway you’re trying to get more traffic for.  Follow the rules and don’t be greedy.  In short, don’t be a dick.

Spaghetti Fritters. Sort Of.

I’m full of good ideas.

Or maybe just ideas…

We had leftover spaghetti and bison red sauce from when Vegas cooked the other night.  I wasn’t about to eat it like a “normal” person.  Surprised?

I decided they’d be great as fritters if I added zucchini noodles and some egg to bind it.  A bit strange, but really when is pasta and sauce not good?
