Zombies are Coming + WIAW

May 30, 2012 By Laura

Zombies have taken over the South.

Well, the idea of zombies has.  Seriously – zombies are “cool” now.  Clearly I am not cool because I don’t get it.  They taped an episode of some zombie TV show outside of my office a few months ago, people are all about zombie movies… and today I saw this while driving:

If they are coming, at least I was behind a Zombie Apocalypse Response Vehicle.

Time for something I DO understand: What I Ate Wednesday.  How about a zombie themed WIAW next, Jenn?

Check out my eats below; then click here to hop on to Jenn @ Peas and Crayons to see what everyone else ate Wednesday!

Breakfast:

I had an appointment with a trainer later in the afternoon, so this morning I skipped over my traditional protein smoothie in favor of the last Pumpkin Zucchini Muffin in my freezer.

I topped it with a peanut icing (peanut flour, almond milk, and cinnamon), and enjoyed it with Banana Cream Pie yogurt… which I stirred more peanut flour and cinnamon into.  Nom.

Lunch:

Total salad porn.  It tasted just as decadent as it looks.

In my salad:

  • Spinach
  • Cabbage
  • Alfalfa sprouts
  • Tomato
  • Sprouted adzuki beans
  • Cashew pieces
  • Nutritional yeast
  • Local, farm-fresh runny egg

Dinner:

After the first Italian Baked Broccoli Slaw win, I had to try it again.

This one was similar, but I used a few different veggies.  I think I like this even better!  The red onion was the perfect addition.  Other additions:

  • 1/2 package broccoli slaw
  • Portobello mushroom
  • Alfalfa sprouts
  • Zucchini
  • Radishes
  • Red onion
  • Nutritional yeast
  • Red pepper flakes
  • Herbs de Provence
  • 1 C roasted garlic marinara sauce
I just realized how weird that combo sounds… but really, what isn’t good when slathered in marinara sauce?

Snacks:

It was a snack-y day.  This may not look like much, but check out my lunch and dinner.  You better believe I snacked on all those veggies while I was chopping them for each meal.

Clockwise from the top left: Sweet Potato Pie Protein Shake (in a bowl with a cherry on top), watermelon (the first perfect one of the season!), Fitmixer Berry BCAA Powder mixed in water, carrot sticks, and a new late-night muffin creation (recipe to come).

***

Needless to say, I just got carried away stocked up at the Farmer’s Market.  You would think I had a family of 5 with all the veggies in my fridge.

Are zombies “in” where you live?  Do you get it?

What is the best thing you ate this Wednesday?

I don’t know what’s up with the zombies but they are everywhere from cops shows to the news. Ugh…I don’t get it either. I love all the food you have here but I must admit I am a sucker for a salad with a runny egg on top! So going to try this! Thank you for sharing your eats for this week!

      May 31, 2012 at 11:38 AM

Thank you! I am a suck for runny eggs as well. 🙂

Well least the CDC has Zombie Preparedness and Response. Cool van.

You salad brought me over. Definite food porn. Looks wonderful. And a great way to get your eggs/protein into your diet.

So I have this conspiracy theory – we have crossfit to build strong people to prepare for the end of the world. Those will be the ‘new race’ of people. And zombies will lurk from the devastation and destruction. So the cross fit people will need to build the new world and get rid of the zombies. What do you think?

Hahaha I love the conspiracy theory Christine!

I think you may have uncovered their plot! totally makes sense. And fits with the Paleo diet.

Are you serious about those zombies? If it is supposed to be a joke, I’m not sure I get it, but I always take pictures of funny signs. Everyone eats that carb master yogurt and it comes in such good flavours! Has it got nonnutritive sweeteners in it? Where do you buy it?
and yes, everything is delicious slathered in spaghetti sauce. I love broccoli slaw + sauce!

    • Laura says

      May 31, 2012 at 11:54 AM

      Yup – Americans are zombie-obsessed. 🙂

The yogurt is sweetened with sucralose… I wish it was Stevia but it’s soooo good. Its from a grocery store called Kroger (store brand).

I have to say- I thought I made killer salads but clearly I’ve met my match! Your lunch salad looks to die for! My Wednesday has just started but in terms of eats, it’s off to a great start! Gotta love overnight oats with Vanilla Sunwarrior & peanut butter stirred in :)!

My brother and sister-in-law were talking this weekend about this Run for Your Life ZOMBIE race they participated in. You can either be a Zombie “attacker” or a runner. My brother got “killed” by a Zombie Santa Claus while running through a lot of mud.

It sounded hilarious, but I don’t get the zombie thing either. Why are we not all obsessed with, say…teachers? I’d love to be hip and cool.

Now that I have discovered an unopen package of peanut flour in my moving process, I will have to start covering things in peanut icing….

    • Laura says

      May 31, 2012 at 12:04 PM

I keep hearing about those races! I just want to go watch one. But I would also go watch a teacher race. 🙂

Hahah zombies are not “in” here, but someone on FB referred to the guy that ate someone else face (in FL I think?) a zombie…

I don’t get the zombie thing either…. I mean, vamps are handsome so that makes sense, but zombies are gross! I guess it takes all kinds.

I don’t think I’ve ever put an egg right on my salad before! hmmm… it’s lunchtime!

    • Laura says

      May 31, 2012 at 12:25 PM

About the zombie thing…I read an article the other day where a guy was eating another guy’s face. The headline had something to do with zombies…yikes.

  35. Holly says

    May 31, 2012 at 4:38 PM

I don’t understand the zombie thing either. But they say those that don’t believe are the first to die, so I guess I should pretend to believe… or something.

Zucchini muffins! I have so much zucchini in my fridge right now! I know what I’m baking tonight. 🙂
