Strange But Good: Thai Peanut Salmon

Fish is a diet staple for me.

Oddly, I refused to eat seafood until 2 years ago.

When you eat as much seafood as I do, it’s bound to get a little strange. Β I’ve had some fails, but often it pretty good!

Today’s recipe involves salmon and peanut butter, as I further attempt to prove that peanut butter is good on anything.

Thai Peanut Salmon

This isn’t so far out there. Β Many of you have had Pad Thai before. Β That’s just noodles and shrimp (or chicken/tofu) in a peanut sauce. Β This is a similar concept, but baked. Β I used my Thai Peanut Sauce as the topping. Β I think it work really well here with the rich, slightly sweet salmon.

I topped mine with fresh basil and ate it with raw asparagus and BBQ Cauliflower Bites. Β This would also be fantastic on a salad or on pastas. Β Maybe with red bell pepper and carrots? Β

Thai Peanut Salmon

Thai Peanut Salmon

  • 1 batch of Thai Peanut Sauce
  • 6-8 ounces of salmon

Preheat the oven to 450 degrees F.

Place salmon, skin side down, on a foil-lined baking sheet (you can use a non-stick sheet, but the foil makes for an easier clean up).

Prepare peanut sauce and spread evenly across salmon.

Bake until salmon is just cooked through, 10-12 minutes. Β This may vary based on the thickness of the filet.

Plate and enjoy!

Makes 2 servings.

    I love a good thai peanut sauce! I’m not quite sure why I haven’t tried your recipe, but pretty sure it needs to happen asap.
    And I’d replace the salmon with chicken;) For some reason I can’t do the fish thing!

      Chicken wold be a great sub! I think this would go well on just about any meat.

    Had a great peanut sauce last night with a stirfry – it was delicious, but I was out for dinner so no idea what was in it! I can’t wait to give yours a go. πŸ™‚

      I always order it when I go out! There are a bunch of recipes online – most include some soy sauce or fish sauce too, if you wanted to re-create what you had out. πŸ™‚

    Growing up from a half asian background, peanut butter in dishes was pretty common place- there is this one dish of steamed spinach with sesame seeds and peanut sauce- so good! although i’ve never tried it with salmon- I’ve always kept salmon to simple soy marinades or salt and pepper- going to give this twist a try!

    I initially contemplated the salmon/PB combo but you raised a good point about pad Thai – love it! Something PB doesn’t pair well with? Errrrr mint?

      Do you guys get Girls Scout cookies? They have one called Thin Mint (little chocolate min cookies) that are really good dipped n PB. πŸ˜‰

    One of my favorite meals to make is a Thai Peanut Salmon Salad. Very similar to your recipe for the salmon served over a bed of greens. And you are totally right, PB goes with everything!

    i can see how peanut butter would be good on salmon though i’m more of a sweet girl when it comes to topping salmon, i think! that being said, i’ve never had a peanut sauce on my fish!

    I LOVE LOVE LOVE FISH! And salmon is a favourite πŸ™‚ I don’t think this is strange either, BUT I can see that others would, so definitely good for your link up πŸ˜‰ Half the stuff I share isn’t strange to you probably, but I’ve gotten weird looks for it πŸ˜‰
    I’ll definitely be trying this recipe because I think it sounds amazing and pb is totally good on anything and everything. Like burgers πŸ˜€

    My taste buds have definitely changed over the years. I have always liked veggies, but I now find myself trying {and liking} veggies that I “hated” when I was younger.

    I need to try those cauliflower bites. I love cauliflower but the hubby doesn’t feel the love quite like I do so I forget to buy it. And PB would go good on paper.

    I’ve been sitting here for the last few minutes trying to come up with something that peanut butter wouldn’t be good on. Drawing a blank….sushi? Though a peanut sauce would still be good. Caviar? Yep, I think peanut butter would not be good on caviar.

    With all the seafood you eat, I cannot believe you have only been eating it for 2 years! HA! As I kid, I despised salmon. The look, smell, and you could not even get me to taste it. NOW…I could literally eat it everyday. It is so good and definitely one of my favorites to make. I typically just eat it plain with fresh basil, garlic, and Sriracha….To me the more simple the salmon, the better. HAPPY FRIDAY!

      I know! My mom used to try to force me to eat salmon but I refused. SHe even covered it with some sort of mayo-aioli mixture.

    Mmmm…this sounds so good!! Especially after I just finished snack of lox on sourdough – my mid-morning snacks have been the best this week (which includes your cinnamon roll on low-carb days!).

    It’s true, peanut butter IS good with everything! Recently I’m having a bit of a sauce dilemma (in that… I have none other than miso and butter on EVERYTHING) so this might be what shakes things up. I think you πŸ˜‰

    I’m shocked you didn’t eat fish two years since it’s a huge staple for you now. Then again, I couldn’t even have my food touch 10 years ago.
    I’m sure the fish and non-traditional sauce is great. I just want the cauliflower bites and asparagus though. Roasted veggies are some of my favorite things. Raw asparagus…I’m intrigued.

    I LOVE seafood – everything besides mussels and oysters, I just can’t do the texture! Also love peanut butter, so this dish makes a ton of sense! Is there a reason you eat asparagus raw? More detoxification? Or just like it better that way?

      I eat it both ways, but I prefer it raw. Actually, I prefer most veggies raw – they are so much sweeter and I love a crunch.

    Me too! I actually did not regularly eat fish until moving to Bangkok it was more of a rare thing for me and I have been missing out big time! Peanut butter and burgers? I am thinking that would not taste to good together but who knows maybe I have to give it a try one day! Hope you enjoy your weekend!! Lots of love C

    I love fish but recently discovered that I’m fish-intolerant. So bummed.

    Peanut butter isn’t so great in lasagna or with cucumber. At least to my taste buds. And peanut butter/mustard/cocktail onion sandwiches are pretty nasty. Learned that one night when we were desperate to go grocery shopping.
