Pear-Ginger Tofu Surprise

People always joke about the lunch lady and her “surprise” specialties.

Surprise and tuna should never be in the same sentence.

Dishes with unidentifiable ingredients can be a scary thing.  We all fear the unknown.  Rest assured, this is one surprise bowl you need not fear.

The first surprise is the ingredient in Heather’s Meatless Monday round-up this week – Spinach.  My favorite!

Spinach may be the most versatile veggie in the land.  I like it in salads, sautés, sauces, soups… apparently anything that starts with an S…  I especially like it in smoothies.  It’s the perfect way to sneak extra veggies in you diet and to make your drinks a very pretty color.

Today’s Pear-Ginger Tofu Surprise Smoothie is the thickest, creamiest smoothie you’ll ever have.  Guaranteed.  The tofu and avocado together make this reminiscent of a soft-serve treat.  The pear and ginger flavors are a fun, refreshing combination… and you’d never detect the green surprises if it weren’t for the color.

Strange.  But good.

The strange but goodness doesn’t end with the surprise ingredients.  How I stored the ingredients is also a thing of curiosity.

Do you ever eat half an avocado and wonder what to do with the rest?  No matter what I do, they don’t store well.  So I freeze them.  Remove the skin and toss it in a baggie for safe keeping in the freezer.  I toss the frozen chunks into smoothies for the added creaminess and healthy fats.

Warning: You can thaw it for use in a dip, but it won’t be the same if you try to eat it in slices.

Same goes for the pear.  I had a massive pear and only wanted half.  The other half went into my freezer, and was used in this smoothie.  Awesome, right?  We all knew this worked with bananas.  Don’t be afraid to try it with everything!  I’ve done oranges, cherries, berries, mango, peaches… beans….


Pear-Ginger Suprise Smoothie

Pear-Ginger Tofu Surprise Smoothie

  • 3 oz tofu
  • 1 C fresh spinach
  • 1 scoop vanilla protein powder (I use Sun Warrior)
  • 1/2 large pear
  • 1/4 avocado
  • 1/4 in piece fresh ginger
  • 1/2 tsp cinnamon
  • 1 small slice fresh lemon
  • 5-6 drops liquid stevia
  • Water + ice, to taste
  • Optional toppings: oats, muesli, cinnamon, etc.

Throw everything into a high-speed blender and mix until smooth.  

Add toppings of your choosing and enjoy!

Serves 1.

Week 1 of Junk-Free January was amazing.  It sounds funny, but I almost forgot how good it feels to eat clean.  Energy is awesome!  11 weeks until my next competition and I am PUMPED!

150 Calorie Chocolate Protein Cake

Kitchen failures are no fun.

Especially when they involve the microwave – an invention that is supposed to make things easier.

I’ve tried to make a good microwave protein cake over and over.  And Over.  And Over.  My attempts failed repeatedly.  God knows how much money I’ve wasted on protein powder.  But I’m stubborn (and obsessed with desserts), so I kept trying.

And, just like Dr. Seuss 98 and 3/4 percent guaranteed, I did succeed!  Finally a winner!

My only requirements for this cake were that it must be low sugar, less than 200 calories, and have at least 20g of protein.  The spinach was just the icing on the proverbial cake.  One can’t live on green smoothies alone.

This ever-so-slightly green-tinted treat is light, fluffy, and wonderfully moist (yeah, I said moist).  It’s sweet and chocolate-y.  Not flavorless, dry, and/or oddly flat like some of my other attempts.

Here’s what I learned in my experimentation:

  • It will work with 2T of applesauce or 2T of pumpkin puree
  • It will not work with Xylitol, but Stevia is delicious in it
  • Use high-quality cocoa powder (the Kroger brand is terrible)
  • You may need to add another tablespoon of cocoa powder depending on your protein powder  
  • Make it vegan using a flax egg rather than egg whites… be warned that it won’t be quite as fluffy
  • It can  be made in advance and transported to work for an afternoon delight
  • Yes, the spinach is optional 🙂

Did I mention it’s under 150 calories and packs 24.5g of protein?  Can I get a gold medal?

Another pleasant discovery was the baking powder I used.  My training plan has me watching my sodium intake, and typical baking powder has a TON of it.  I was lamenting this fact when Sarena located this Hain sodium-free powder!  I ordered it online and was thrilled when it worked just as well as the full-sodium stuff.  (If you aren’t concerned with sodium, the standard stuff work too.)


Chocolate-Microwave-Protein-Muffin

Microwave Chocolate Protein Cake

  • 2 T chocolate rice protein powder (~22g)
  • 1 C fresh spinach (optional)
  • 1 T unsweetened cocoa powder 
  • 1/4 tsp cinnamon
  • 1/4 tsp no sodium baking powder
  • 1/4 C unsweetened vanilla almond milk
  • 1/4 C egg whites
  • 2 T applesauce (no sugar added, can also use pumpkin puree)
  • 1/2 tsp vanilla
  • 1/8 tsp butter extract (optional)
  • ~5-6 drops chocolate liquid stevia
  • Optional: vanilla protein powder, cherry on top

Place all ingredients in your blender of choice and mix until smooth.  If not adding spinach, there is no need for a blender to mix.

Transfer to a large, greased (I use PAM) coffee mug and microwave for 3-4 mins (mine took 3:21).

Tip the cake out onto a plate and top as desired.  My cake was topped with a sprinkle of vanilla protein “powdered sugar” and a cherry.  I also really like to use melted cherries (cut into pieces and microwaved for 20 secs).

Makes 1 cake.

Approximate Nutritionals (will vary based on protein powder brand used; this is with Sun Warrior): 148 calories, 3g fat, 219.3mg sodium, 11g carbohydrates, 3.6g fiber, 3g sugar, 24.5g protein.

Manic Monday

I wish it was Sunday…

‘Cause that’s my fun day.

There was not an inch of free space on any Atlanta patio yesterday.  The weather was perfect – 70 degrees and clear blue skies.

My softball team, Laid Back, had our first games of the season.  We lost both by 1 run… but we had a great time!  I got to do my signature split off of 1st base.  I think I pulled my hip.

Here are a few more things that made this weekend fabulous:

1. My Sister, the Rockstar

Just when I thought I knew ever beer in Atlanta, I found this local craft brew from Monday Night Brewing at a local pub called Augustine’s.

The glass reads: “Weekends are Overrated.”

I should have stolen this glass.

It is called “Drafty Kilt Scotch Ale.”  A little smoky with notes of chocolate, I instantly loved this cleverly-named  Scottish-style brew.  Tasty beer and the company was even better. 😉

4. Tattoo Consultation

I have been planning this tattoo forever.  After procrastinating on the design, I finally asked my best friend’s husband, Greg, to sketch it out for me.  He did a great job on the sketches, and I had a clear vision to bring to the talented Danielle at Only You Tattoo.  It’s really special to me that Greg drew it; he and my bestie mean the world to me.

Danielle is a talented woman – April 28th was her first available appointment.  I’m 1 month away from new ink!

5. Whole Foods Hot Mess Bar

A little Sunday evening dinner treat.  The bar was LOADED with vegan options tonight – BBQ seitan, tofu cacciatore, vegan mac & cheese, vegan spaghetti with “meat” sauce… and raw kale salads galore!

I also ran into one of my favorite singers in the produce sections… I didn’t say hi…. but it was cool!

Last week I mentioned that I may have found the root of the problem with my knee.  I was told to take it easy this week… I kind of did.  Against advice, I did run in the softball game.  It was just short sprints between bases… but I didn’t feel pain!  *crossing fingers*

 

Running makes me feel more sane.  It’s my release.  Saturday morning 5Ks give me something fun and athletic to look forward to every weekend.  If Dr. Justin fixed it… I’ll set up a shrine to him in my room.  LOL!
