Ho Ho Ho, Ho + WIAW

December 24, 2014 By Laura

Tis the season…

To bake all the foods.

Cookies, fudge, Devil’s food cake, ricotta cheesecake, malted walnut pie… you name it, I’ve baked it.  I’ve been baking like a fool!  Or maybe a ho ho ho?

Beet Protein Pancakes [Recipe]

December 19, 2014 By Laura

The (Christmas) beet goes on.

I’m so festive-feeling that even I want to slap me.

But how awesome are red pancakes in the winter?!  Especially with they’re delicious and trimmed in white.

Oh… and they have a not-so-hidden healthy ingredient.  Beets lend their color to these festive ‘cakes.  It’s strange, yes.  But I’m telling you… it’s good!

Beet Protein Pancakes

I use the new Quest vanilla milkshake protein powder in my pancakes.  It’s flavor really is fantastic, and it bakes like a champ.  These tasted like a beet milkshake pancake.  In a good way.  Really….

Treat Yo’ #strangebutgood Self [Holiday Cookie Recipes]

December 12, 2014 By Laura

Happy Month of Indulgence!

You know it’s true.

A lot of people try to fight it… but this is the one month of the year when you have to indulge a bit.  I’m not saying go overboard with a bean feast, but don’t be trying to deprive yourself.  It will only drive you crazy.  Treat ‘yo self!

In the spirit of treats, today’s #strangebutgood is dedicated to some of my favorite holiday cookie recipes.  Some strange, some just indulgent, and one that’s even healthy.

Turkey Goat Cheese Lasagna [Recipe]

December 5, 2014 By Laura

Tradition has never done it for me.

Shocking.  I know.

I’ve mentioned before what a terrible Southerner I am.  I don’t like fried okra, creamed corn, or cornbread (with the exception of this recipe)… I can leave 99% of the traditional Southern stuff behind.  This includes traditional Thanksgiving food.

This year I fled to Arizona where these were the new classic appetizers:

Classic. And klassy.

Classic. And klassy.

Red Velvet Protein Balls [Recipe]

November 28, 2014 By Laura

Thanksgiving is over.

Officially… we’re still celebrating!

I am of the belief that you cannot begin with the Christmas festivities until Thanksgiving has passed.  And – for the love of god – don’t even think about Christmas before Halloween!

Now that we’re officially past Thanksgiving, I bring you Christmas Balls.  I’m not trying to discriminate and leave out Hanukkah… but I couldn’t get through a blog post about blue balls.  So these strangely good (for you) balls are red.  Red Velvet, in fact.

Red Velvet Protein Balls

I made these with my favorite flower-sender in mind.  Side note: the flower sender is hereby known as Vegas, as that is where the flowers originate.

Vegas loves red velvet cake.  Since I’m in Arizona with Vegas this Thanksgiving holiday (how’s that for confusing?) and these days my favorite activity is making Vegas smile, I bring you post-Thanksgiving, pre-Christmas balls.

Not just any balls though!  These red velvet-y delights are protein-packed and get their red tint from… beets!  How’s that for strange?

Red Velvet Protein Balls

In conclusion, Vegas and I wish you a pre-Merry Christmas (and Hanukkah) from Arizona the day after Thanksgiving.

Now, bust out your healthy balls and celebrate the most wonderful time of the year!

Merry Vegas

Guess who’s is who’s…

These red velvet-y protein delights are protein-packed and get their red tint from… beets! Perfect for a healthier Valentine's Day treat!

Red Velvet Protein Balls

  • 1 scoop chocolate protein powder (I used Growing Naturals Rice)
  • 1 T coconut flour
  • 1 scoop Cocoa Cardio*
  • 1/4 tsp cinnamon
  • 1/4 tsp honey
  • 1/2 T coconut oil
  • 4 Drops Capella Flavor Drops, Cake Batter (or 1/4 tsp vanilla)
  • 1/4 C unsweetened vanilla almond milk

Combine wet ingredients.  Mix in wet, adjusting milk as needed.

Roll into roughly 4 balls.  Put in freezer for your own safety storage.

Note: I order my Cocoa Cardio on iHerb (use discount code USO924 for $5-10 off your order!).  If you don’t have beet powder, you can use tsp beet powder and 1 T cocoa powder.  You can also use pureed beets here, but you’ll probably need to cut the milk in half (I haven’t tried it).

I can’t write about balls without giving Lindsay a shout out.  Thanks for inspiring me daily, my baller brother!

Do you ban and Christmas (or Hanukah) celebrations until after Turkey Day?

What is your favorite ball flavor?

Spicy Butternut Mac ‘n Cheese. With Bacon. [Recipe]

November 21, 2014 By Laura

I don’t always make mac ‘n cheese…

…but when I do, it’s for flower-senders.

When the sender of the flowers came to visit, I had to make mac ‘n cheese by request.  Of course,  I couldn’t just make a normal recipe.  This Spicy Butternut Mac ‘n Cheese has a strange twist or two, but I assure you it is good! Apparently I’m on a butternut squash kick!

Even done with a Laura-like spin, you don’t go wrong with a pan of cheesy noodles!  And… ahem… it would be the perfect side for a bird next week.

Butternut Touch My #strangebutgood

November 14, 2014 By Laura

Today is an adventure.

In more ways than one…

The focus of this particular adventure is a #strangebutgood soup.  The recipe for this spicy Butternut Squash-Apple Soup can be found on my beautiful Swiss friend Lucie’s blog.  The soup is delicious… but even better when done as a guest post for a bad ass blonde!

It’s sweet.  It’s spicy.  It’s everything you never knew you always wanted.  Just like my date last night. #twss

Red Velvet Protein Waffles [Recipe]

November 7, 2014 By Laura

There are few things I love more than cake.

Actually, I can only think of one…

One of the best things about waffles is that they are like cake… but with crevices for icing sauce.

My favorite cakes include: chocolate, carrot, red velvet, and banana-peanut butter-bacon.  In that order.  The only thing to do is to make all of these in protein waffle form (in no particular order).
