Irish Cream Protein Pancakes + WIAW

Moving is exhausting.

I’m mentally tired.

Organizing, cleaning, and decorating are not my favorite things.  Doing that while working and dealing with annoying shit that comes with closing on the sale of my condo has left me grouchy.  People commenting on my lack of cooking gets me fired up.  We just got a working oven and found time to grocery shop.  If I want to have some beers, then I will.  Jeeeeeeesus.

This isn’t a blogger rant.  These are Facebook friends.  I’ve actually been loving going out in our new neighborhood and trying out new things workout-wise.  I’ve taken up boxing and tried out jiu jitsu.  I’ve been running more.  Ending the day jogging back home to Vegas with this view makes me incredibly happy:

Irrational Aversions and Pancakes + WIAW

We can’t always be rational.

I may abuse this with my irrational aversions.

Water sports are fine, but as soon as you want me to dunk my whole head under water… no dice.  I abhor white potatoes… but I’ll eat hash browns and french fries if they’re burnt extra crispy.

There are certain words I cannot stand.  “Chunked” shouldn’t be allowed on any restaurant menu.  “Privileges” makes me relive a lot of teenage angst.  While I love my chocolate cake to be such, the word “moist” makes me want to gag.

Beet Protein Pancakes [Recipe]

The (Christmas) beet goes on.

I’m so festive-feeling that even I want to slap me.

But how awesome are red pancakes in the winter?!  Especially with they’re delicious and trimmed in white.

Oh… and they have a not-so-hidden healthy ingredient.  Beets lend their color to these festive ‘cakes.  It’s strange, yes.  But I’m telling you… it’s good!

Peanut Butter Marshmallow Pancake Recipe

Waffles distract me.

Ohhhhh…. sparkles! 

If I’m honest, lots of things distract me.  Having a new toy is just an enabler.  I went on a waffle bender.  However, getting new supplements from Cellucor brought be mack to an old favorite: protein pancakes.  Something about that Peanut Butter Marshmallow protein powder flavor screamed for fluffy pancakes.

These did not disappoint.  Peanut butter marshmallows should be a thing.  They probably are… I’d be shocked if Target didn’t have them.  That place is a black hole for my wallet. Much like Whole Paycheck Foods.  See what I mean about distraction?

Chickpea Protein Pancakes

These pancakes are sort of socca.

Or socca is sort of pancakes?

Either way, it’s a strange but delicious thing to have for breakfast!  I actually used to make these all the time, but I couldn’t find chickpea flour for a while at the farmer’s market and kind of forgot about ’em.  On a particularly fun trip to restock after being out of town, I located the flour and remembered the breakfast version of socca.

The chickpea flour resulted in a fantastic cake-y texture and the flavor didn’t overwhelm at all!  I added vanilla rice protein powder for a little more of a protein punch.

I’ve also added gelatin.  I’ve been incorporating it in my morning meals for it’s digestive benefits.  If you’re interested in learning more about it, Lindsay did a great post on it’s benefits.  Totally works for the “regulation” (read: helps you poop like a champ).  If you don’t have gelatin, just add a tablespoon of protein powder or coconut flour.

In a happy accident, my mini “tester” pancake looked like a thought bubble.

Chickpea Protein Pancakes

Chickpea Protein Pancakes

  • 2.5 T chickpea flour
  • 1 T (15g) protein powder (I used Growing Naturals)
  • 1 T gelatin
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 egg white (or flax egg)
  • 1/4 C water
  • Stevia or other sweetener, to taste

In a small bowl, combine the chickpea flour, protein powder, gelatin, baking powder, and cinnamon.  Mix until combined.

Whisk egg white with water.  Stir into flour mixture and add sweetener to taste.

To cook, pour 2-3 T batter into a non-stick skillet over medium heat.  It’s time to flip when it begins to bubble.  Cook until lightly browned. 

Plate and top as desired.  I used sugar-free syrup and fresh raspberries.

Makes 1 serving.

Starbucks Record & Illegal Birthday Eats

Nothing says ‘I love you’ like free.

 

Or cold, hard cash.  Either way.

By now we are all aware of the free Starbucks drink on your birthday.  Even though I didn’t get an offer this year – wtf?!  People like to make a game of how much they can get – whether its a birthday freebie or just to pay too much for already over-priced coffee.  The previous record for ONE drink was $54.74.  Child’s play!

A Florida woman managed to order a $60.58 Frappuccino.  According to Consumerist, the drink consisted of 60 shots of espresso, matcha powder (gotta stay healthy!), and caramel, white mocha, and hazelnut syrups. She even brought along a jug for the barista so it would all fit!  I’m assuming she didn’t drink it all… I didn’t see any follow up reports about her having a caffeine-induced heart attack.

Yet another way to order obnoxiously at Starbucks.  You’re welcome.

Blend Your [Growing Naturals] Protein

My Blends are Strange.

But oh-so-good.

Today I am in Utah for the annual Blend Retreat!  I look forward to this retreat all year… and I feel especially lucky because I get to represent Growing Naturals again this year.  I wish I could share them with everyone (but scroll on down for a sweet freebie offer).  You should all come to Blend next year!  If you can’t be there this year, be sure to follow along on Twitter and Instagram for the live action.

Last year they were a huge hit with the other bloggin’ ladies, but here are a few reasons I personally love them:

Growing Naturals truly is my favorite protein to use. I love to use it in all the things!  It’s fantastic raw in smoothies like my favorite Mocha Beet Frapp and Carrot Cake Batter Shake, or baked into Plantain Ginger Bread.
