Sweet Potato Mexican Pie

Some like it hot.

My food as a child

I like it really hot.

Spicy often means a craving Mexican food.  Most people think of Mexican as being unhealthy, but it’s actually one of the easiest cuisines to lighten up.  Latin cooking is derives flavors from spices and herbs more so than fats.  A little cumin, peppers, and cilantro can go a long way!

Ideas for ordering at Mexican restaurants

  • Tell your server not to bring chips so the temptation isn’t even on the table
  • Chicken or veggie fajitas, soft tacos, grilled shrimp or chicken, and ceviche are usually safe bets
  • Ask them to go light on the oil and salt
  • Choose soft tacos over chips, hard tacos, or rice; also request corn tortillas if available
  • Use salsa rather than cheese or sour cream to add flavor
  • Order black or pinto beans rather than refried
  • If you must have a margarita (and you know I must), order it with fresh lime juice instead of the sugar-y, processed sour mix

In keeping with my Kitchen Workout guidelines, I decided to satisfy my Mexican craving at home rather than go out to eat.

Spicy tomato sauce and sweet potatoes will forever be a favorite combination.  Those flavors were in my head all day as I thought about how I would attack dinner.

Adding spices is a quick and easy way to make a meal something special   One of my “secrets” to a good tomato sauce is adding a bit of cinnamon.  It lifts the flavors and gives the illusion of a hunt of sweetness.

While this ingredient list may look long, it comes together very quickly.  Make substitutions based on your preferences and what you have on hand.  Just be sure to add small amounts at a time and taste as you go!

This dish makes 6 servings.  I ate 4 over the course of the week and froze the remaining two to take to work.  They have been perfect as homemade frozen lunches.

To make this vegetarian/vegan, use tempeh or TVP in place of the ground chicken.


 

Sweet Potato Mexican Pie

  • 1 lb ground chicken
  • 1 medium onion, chopped
  • 1/2 jalapeño, seeded and diced
  • 2 T dried cilantro
  • 1 T garlic powder
  •  1 tsp black pepper
  • 1 tsp cayenne
  • 1 tsp ground cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 1 C chopped red pepper
  • 2/3 C chopped baby bellas
  • 2 C diced tomatoes (I used fire roasted)
  • 1/2 cup water
  • 1 medium zucchini, sliced
  • 2 C spinach leaves
  • 1 large sweet potato

Preheat oven to 350.

Brown the chicken in a pot with onion, jalapeño, and spices.

When chicken is cooked, add peppers, mushrooms, tomato sauce, and water.  Let simmer for 10 mins.

While that mixture is simmering, peel and thinly slice the sweet potato.

Grease a 9×9 baking pan with olive oil.  Layer a quarter of the meat sauce, followed by a layer of sweet potato slices, zucchini slices, and then spinach.  Repeat until you’re out of ingredients, making sure to leave enough sauce to top the dish.

Cover baking dish with aluminum foil and bake for 30 mins.  Remove the foil and bake for another 15 mins.

Let cool slightly before serving.

Makes 6 servings.

It seems like everyone has done a “September Superlative” post!  I’m being a copy cat… but in a unique way because I’m doing it late.  😉

 

1. Most Popular:

Microwave Protein Cookie + WIAW – This nutty, protein-filled 30 second cookie was the most viewed post in September.  I also loved this post because it highlights a few of the many reasons women should lift weights. 

 

 

2. Most Likely to Win a Bar Fight

This Tequila-Lime Tilapia would kick your dinner’s butt.  And it would walk out in a perfectly straight line ’cause the booze (mostly) cooks out.

 

 

3. Most Versatile

What isn’t better layered like a parfait?  I’m awarding my Protein Parfait the Most Versatile because I’ve made it a million ways.  The original was a Tiramisu Protein Parfait, but September’s flavor-of-the-month is a Pumpkin Tiramisu.

4. Most Unique

This is a no-brainer.  #sorryimnotsorry to be Captain Obvious, but most unique is all about the “Strange But Good” posts.   I’m craving peaches, so I’m going to call out the post with the Salmon-Peach Salad:

More Strange, Still Good

It’s a theme in my life.

 

Except in the dating scene.  Strange = bad.

Two Fridays ago I wrote a post of some of my favorite Strange But Good concoctions… and 2 weeks later I of course have more to share!

Ok.  Back to the strange fun stuff:

1. Salmon + Blackberry Salad

You guys may have seen this on WIAW…

 

I mixed 4oz salmon, 2 T fat-free ricotta, a little cinnamon, a little unsweetened almond milk, and blackberries.  It was strange but oh-so-good.

 

 

2. Mexican Hot Chocolate Protein Ice Cream

Hot ice cream?  Why yes… there is cayenne in it!  this sweet-heat treat was a fantastic midnight snack.  The green tint comes from spinach… but that’s standard, not strange.

 

Mexican Hot Chocolate Ice Cream

  • 1 scoop chocolate protein powder
  • 1 tsp cinnamon (or 2 sticks)
  • 1/2 in piece ginger
  • 1/4 tsp cayenne (can adjust to taste)
  • 1/4 C unsweetened chocolate almond milk
  • 2 C spinach
  • 5-6 drops liquid stevia
  • 1/8 tsp guar gum (optional)
  • Ice, to taste

 

It’s topped with Walden Farm’s Sugar-Free Caramel… but honestly… that’s more strange than good.

 

 

3. Bacon-Ricotta Stuffed Sweet Potato

After news of the impending bacon shortage… I was craving bacon.  I stuffed a locally-grown pre-cooked sweet potato with with ricotta and then crumbled a small piece of pre-cooked bacon on top.  Then I placed it int he oven under broil while I made a quick vegan tempeh stir-fry.

 

Vegan + Bacon = Tasty Dinner.

 

 

4. Zucchini Bread Protein Batter

This is Strange But Good PROOF!  Debbie @ Accidentally Delish gave it a try for WIAW:

5. Lightlife Portobello Burger with Sweet Potato-Chipotle Spread

This was strange but good on 2 counts.  First, this Lightlife Portobello Mushroom Burger tasted downright meaty.  I was shocked – I even went back to check the ingredient list.  All vegetarian!

The best part?  It has a full 20g of protein. 🙂

 

 

Second, the sweet potato as a condiment.  It’s addicting… I’ve topped my salmon tortilla pizzas with it too.  I love sweet with a little heat (as if you couldn’t tell from the Mexican ice cream), and that was perfectly balance here with the sweet potato and chipotle.  Cumin added a warm, earthy flavor that was especially good with the meaty ‘shroom burger.

My dinner guests and I enjoyed the burgers in a very green way – on a field of spinach, cucumber, cabbage, broccoli, cilantro, and a few cannellini beans.

Sweet Potato-Chipotle Spread

  • 1/4 C pre-cooked sweet potato, mashed
  • 1 tsp chipotle in adobo
  • 1/2 tsp ground cumin (or curry powder – both are good here)
  • 1 T unsweetened almond milk

 

Place all ingredients in a small bowl and mash to combine.

Use as a condiment on burgers, pizzas, sandwiches… or a dip for your favorite veggie sticks or chips!

Eat Your Tequila Lime Tilapia

Drinking is a training no-no.

Let’s be honest… I indulge on cheat day and sometimes at night I sacrifice a carb for a wine.

Booze isn’t just for drinking though!  It makes for a wonderful marinade.  So wonderful that I have made this Tequila-Lime Tilapia dish 4 times in as many weeks (that NEVER happens).  It is a great dish to make in bulk to take for lunch throughout the week!

My trainer insists that booze doesn’t completely cook out.  We should be so lucky.  I don’t believe it.  I’ve eaten a lot of this tilapia and didn’t feel the least bit buzzed.

A study by the U.S. Department of Agriculture’s Nutrient Data Laboratory  DID show that alcohol content diminishes with cooking time.  When food is baked or simmered for 15 minutes, 40% of the alcohol will be retained.  After an hour, 25% remains. I don’t think it’s that big of a deal here, as this is just a marinade and the amount of alcohol in an individual serving will be minimal.

Adding liquor and/or citrus to recipes has always made me a little nervous.  It seems all too easy to add too much.  The recipe has taught me to let go of that fear.  More is more (to an extent… that time my aunt challenged me to a margarita contest wasn’t my finest moment).

Like chicken or tofu, tilapia is a blank canvas; it will take on whatever flavor you soak it in.  The bright tang from the lime and smooth silver tequila really shine here.  I love the garlic and the warm, almost peppery quality of the cumin.

This is one place you don’t want to go overboard with the chili powder.  Remember, you can always add more but you can’t take it back.  Just a hint of heat on the end is all you need with the delicate fish.

Ever the Mexican fan, I served mine tostada style (read: I over-stuff what was originally going to be a taco) over a corn tortilla with salsa, spinach, red pepper, cucumber, and cilantro.  I guarantee you this is more fresh, healthier, and just as tasty as what you find at your local El Whatchamacalit.

I think this would also be good with tofu for my plant-based friends.  Please let me know if you try it!

*Important note* Don’t use this as an excuse to rid yourself of crappy alcohol.  Just like drinking bad booze, cooking with bad booze won’t have good results.  If you wouldn’t drink it, don’t eat it (this applies to cooking with wine, too).


Tequila Lime Tilapia

Tequila-Lime Tilapia

  • 3 T fresh lime juice (1 medium lime)
  • 3 T tequila (I used Patron Silver)
  • 3 T fresh cilantro, chopped
  • 2 T red onion, chopped
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • 1/4-1/2 tsp cayenne pepper
  • 1 lb tilapia (or other white fish)

Combine all ingredients except the fish in a resealable plastic bag.

Add fish, seal bag and turn to coat.  Refrigerate for 30 min – 1 hour, turning once.

Heat grill pan (or grill) to med-high, and spray with oil or PAM.  Remove fish from marinade and place in pan to grill for ~3-4 mins each side, or until the fish is no longer translucent in the center (it will vary depending on the thickness of the fillets).

Remove from heat and allow to rest a moment before serving.  

Optional: garnish with lime wedges and fresh cilantro.

Serves 4.

I would say something insightful about the nutritional content of seafood… but I’m feeling a little loopy after my fish tacos…. *hiccup*

Bacon, Bloody Marys and Pumpkin Parfaits + WIAW

How much bacon is too much?

Bacon coffee?  Add some protein powder and you could drink your hot breakfast!  Of course, then you would need to brush your teeth again.

Seattle’s Best Coffee hosted its Red Cup Showdown for the best coffee creations.  The winner created a  “How to Win a Guy with One Sip” drink that combined coffee with “caramelized bacon and subtle hints of pumpkin pie spice.”  Click here for the full story.

More than a Bloody, its hangover heaven.  This beast is adorned with pepperoncinis, jalapenos, tater tots, steak, a slice of toast, and a hard-boiled egg. you get all of that for $16… including a 6oz of pepper vodka and a Beef Strawto drink from.

This monstrosity can be found right around the corner from my building at The Nook.  No, I have not ever tried it.


Jenn is saving us from bacon mania with another heath-conscious  What I Ate Wednesday theme: “Fall Into Good Habits.”

I really love this idea because this time of year I have a tendency to slack a little.  The weather is cooler, the beer football is aplenty, and those first-of-the-year resolutions seem far away.

Fall doesn’t have to be like that!  This year I’m going to be inspired by Jenn to make fall a time for refocusing on my goals so that I don’t feel the need to desperately make resolutions for 2013.  My plan is for 2013 to be a continuation of good habits and a time for reaping the benefits of hard work.

Meal 1:

As usual, I enjoyed my morning cocktail with the added 1 tsp of glutamine.

Fall  was in the air this morning – it was gray and rainy.  I actually got chill bumps when I stepped out on the deck!

Obviously, this means it’s time for pumpkin!  I took  my Tiramisu parfait idea, but created a special pumpkin cream filling to make a Pumpkin Tiramisu Parfait.

I added a few extra spices to make it more pie-like.  The creaminess of the pumpkin and yogurt mixture was like a legit pie filling.  Paired with layers of mocha-flavored oats… I actually prefer this to pie crust.  I can’t decide which version I like better, but you should be your own judge ASAP.

Recipe at bottom. 

Meal 2:

No, this isn’t yogurt.  This is the container left from my breakfast.  I was making my mid-morning snack while eat breakfast, so I just recycled the container.

What was in the container was no salt added cottage cheese, cinnamon, allspice, nutmeg, stevia, Sun Butter, and chopped up apple.  Cottage Cheese Apple Pie.  *swoon*

Meal 3:

I had good intentions of branching out more, but last week’s tequila-lime marinated tilapia was too good not to do again.

Eaten out of tupperware conference room-style with a side of Chipotle BBQ Beanitos (thank you Blend Retreat for introducing me to these) and raw zucchini sticks.

Meal 4:

Tuna salad is a great way to pack in protein without adding carbs or fat.  This isn’t your mom’s tuna – I mixed mine with Greek yogurt to add moisture (ewwww… moist) and even more protein.

Then I went crazy with my spice cabinet.  Paprika, tarragon, garlic, turmeric, and fresh lemon juice all went into the mix, along with fresh red pepper, broccoli, cucumber, and a little bit of pickle.  Adding all the veggies makes this tune truly a salad.

Meal 5:

On my Instagram last night I promised to post the toppings for this grab-everything-in-the-veggie-drawer Mexican Tilapia Pizza.  I had something completely different planned, but when I got back from the gym all I wanted was more of that Tequila-Lime Tilapia… this time with a tortilla.

I crisped a low carb tortilla in a pan and topped it with a mash of black beans and chipotle sauce, spinach, parsnip rice, sautéed portobellos and red pepper, heirloom cherry tomatoes, cilantro, and goat cheese.

Yep – cheese.  That was forbidden but because I need to gain more weight, I get an extra “cheat each day.  You better believe I’m using it well!

Meal 6:

I couldn’t go all day without the incredible, edible egg!  You guys know how I love my Carrot Cake Batter … and my PB & Jeggs creations are a favorite addiction.  Last night I decided to try for a marriage of the two: PB & Caggs.

This was made just like the Jeggs, but with grated carrot.  In my peanut sauce I used a full teaspoon of cinnamon, some fresh nutmeg, vanilla stevia, and a bit of brown sugar extract (ordered online).

I’ve done this in a spicy-savory way before too… it’s hard to say which is better.  I guess it depends on your mood!

Meal 7:

The blog world is abuzz with the onset of Starbucks’ seasonal pumpkin beverages, but I’m hosting my own pumpkin fest over here.  Thank you, Vitamix, for completing my life.

Pumpkin Pie Casein Protein Ice Cream

  • 1 scoop GNC vanilla casein protein powder
  • 1/4 C pumpkin puree
  • Handful spinach (optional)
  • 1/3 C vanilla unsweetened almond milk
  • 1/2 in piece fresh ginger
  • 1 tsp cinnamon
  • 1/2 tsp almond extract
  • 1/8 tsp freshly grated nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp guar gum
  • Ice, to taste
 Topped with Kashi Cinnamon cereal, cinnamon, and peanut flour fluff (peanut flour and almond milk).


Pumpkin Tiramisu Parfait

For the Oats:

  • 1/3 C rolled oats (use gluten-free to make GF)
  • 2 tsp cocoa powder
  • 1/2 tsp cinnamon
  • 1/2 C water
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 cup strong brewed, cooled coffee
  • 8 drops liquid stevia (adjust to desired sweetness) 
For the Cream:
  • 1.5 oz plain Greek yogurt (use soy or almond yogurt to make dairy-free/vegan)
  • 1/4 C pumpkin puree
  • 1/2 scoop vanilla protein powder
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 5-6 drops vanilla stevia 

For the Oats:

  • Combine the oats, cocoa powder, cinnamon, extracts, and water in a bowl and microwave for 2-3 minutes, or until the liquid is (mostly) absorbed.
  • Add coffee and stevia. Stir to combine.
  • Cover and place in the fridge overnight (or at least 2 hours). 
For the Cream:
  • In a small bowl, combine yogurt, pumpkin, stevia, protein powder, and spices.
  • Stir until well combined.
  • This can be done the night before, or at time of serving. 
To Assemble:
  • Place a spoonful of the oats in a cup, followed by a spoonful of the yogurt mixture.
  • Repeat until you’re out of each.
  • Optional: Top with fruit of your choosing. I chose melted blueberries (cherries microwaved with a few drops of lemon stevia for ~20 secs).

Protein count for the day: 190.2g from good, clean eats!  That’s record!!!

Bacon.  Is it really the ultimate flavor? I know even my vegan friends dig tempeh bacon and bacon Torani syrup.

Sausage Making: Seitan Chorizo

No, this isn’t a turd:

Homemade Seitan Chorizo

It’s my seitan chorizo.

I love chorizo.  The spicier, the better.  When I quit eating red meat, it this spicy sausage was one of the things I continued to crave.  I do eat meat on occasion now; however, I discovered that meat alternatives can be just as good.

The ingredient list is long, but the spices come together quickly.  It probably seems like a lot of heat but after you mix it in the with other ingredients, it tones down a lot.  I would actually increase the amounts next time.  This was child-level spice.

Vital Wheat Gluten is the protein found in wheat.  It is the base for seitan, and can easily ordered online or found at most heath food stores.

Making Homemade Seitan Chorizo

When you wrap them to bake, be careful not to get them too tight.   It’s all fun and games until sausage explodes in your oven.

They should look like those wrapped sausages you see at the fair.

Homemade Seitan Chorizo

This seitan version of chorizo is just as good as the “real” thing.  I actually prefer it because it isn’t so greasy.  Not to mention the nutritionals are a million times better.

A serving of meat chorizo has about 23g of fat and 9g saturated fat.  This deliciousness only contains 1.4g of fat and 0.1g of saturated fat!  Not to mention the 20g of protein.

Homemade Seitan Chorizo

I’ve been eating it on salads at work all week, but last night I made a little Mexican breakfast for dinner.

It took all my willpower not to make a second helping.  

Homemade Seitan Chorizo

Mashed avocado on English muffin, sautéed spinach and tomatoes, a runny egg, and chorizo seitan.  Topped with cilantro, red pepper flakes, and white truffle salt.

In conclusion:  Don’t be scared.  Try my sausage.

Mexican Cauliflower “Rice” Bowl + Giveaway Winner

Rice has never been appealing to me.

It’s always been sort of boring to me.  Like a waste of plate space.  I’d rather have more veggies or a big piece of crusty bread.  I even order my burrito bowl from Willy’s without rice.

When I started seeing cauliflower rice recipes floating around Pinterest, I had to check it out for myself.  Finally, was way to re-create rice-based meals without having to waste space on actual rice.  Other benefits: it doesn’t take an hour to cook, it’s loaded with fiber, and one cup is only 28 calories!

I’d like to say that Cinco de Mayo was the inspiration for making this bowl Mexican… but really it’s just because I eat something Mexican-ish nearly every day.

This is the simplest recipe – you simply put the cauliflower in a blender or food processor and pulse until it resembles rice.  I added some red pepper to mine to make it more flavorful and festive-looking.

Topped with carrots, black beans, avocado, pineapple, and cilantro and then smothered in a spicy salsa verde, this bowl looked like a fiesta!  It made for a filling lunch that didn’t weigh me down and make me yearn for a siesta.

I really loved how the cauliflower really did resemble rice, and the way it took on the other flavors in my Mexican bowl.  If I hadn’t made it myself, I would have had no idea I was eating cauliflower!

Mexican Cauliflower “Rice” Bowl

  • 1 head cauliflower
  • 1/2 red pepper
  • 1/2 C black beans
  • 1/2 C pineapple, cubed
  • 1/4 C red onion
  • 1/2 avocado, cubed
  • 1 carrot, diced
  • Cilantro
  • Salsa
  • Cumin, cinnamon, red pepper flakes, S+P, to taste

Cut cauliflower and red pepper into pieces and place in a food processor or blender.  Pulse the pieces until they are the size and consistency of rice.

Transfer the “rice” to a medium bowl.  Top with remaining ingredients.  Sprinkle with cumin, a pinch of cinnamon, red pepper flakes, and S&P, to taste.

Enjoy!

Mexican Pineapple and Beet Salad

It’s hard to believe it’s almost Cinco de Drinko Mayo.

I didn’t actually realize it until I saw someone else’s blog post.  Maybe that’s why I’ve been craving Mexican lately?

This concoction is an unexpectedly Mexican combo, but a tasty one.  My pineapple was perfectly golden to the top, meaning it was on the sweet side.  That sweetness was wonderful with the earthy beets.

The colors were nice too – pretty food tastes better!

Mexican Pineapple and Beet Salad

You can use pre-cored pineapple from your grocery store, but I recommend buying pineapple whole.  Whole pineapples always intimidated me in the past because I wasn’t sure how to tell if it was ripe.

Then I found a fool-proof method.

There are 2 ways that – in combination – I have found to be fool-proof:

  1. Color: A ripe pineapple should be golden in color.  Yes, there will be some green, but there should be gold forming, particularly at the base (the sweetest part of the pineapple).  The further up the gold, the sweeter the fruit.
  2. Leaf: You should be able to fairly easily remove a leaf from the crown of the pineapple.  Some say this is a myth, but has never steered me wrong.

Cumin, red pepper, and a pinch of cinnamon give the salad its Mexican taste.  The cilantro and the lime juice on top set it off and balanced the stronger spices.  (If you don’t like cilantro, parsley would be an excellent sub here.)

Note: I didn’t include the measures for any of these because… well, you don’t really need them.  Make as much or as little as you like, as adjust the spices to your tastes.  I piled on the cilantro and the red pepper flakes.

Mexican Pineapple and Beet Salad

  • Pineapple
  • Beets, roasted
  • Cilantro
  • Cumin
  • Cinnamon
  • Red pepper flakes
  • Pepper
  • Fresh lime juice

Peel and core the pineapple and cut into half-moon slices.  Slice beets into rounds.

Arrange in layers on a plate.  Sprinkle with each of the spices, adjusting flavors to your palate.

Top with cilantro and fresh lime juice.  If it’s available, crumbled cotija cheese would also make a nice addition here.
