The reset is going well.

Vegas is even feeling good today!

After our impressive display of gluttony in Greece, it’s been good to give our bodies a break and reset some habits.  We are almost a week in and things are looking good!

As the toxins leave your body, it can leave you achey, grumpy, and cause some acne.  We’ve hit that point.  Day 3 for me was rough.  I was tired and grouchy.  Most of the day I spent working from the bed.  Day 4 was the tough one for Vegas.  She had a headache all day and took her turn with the inability to get out of bed.

Asian-Inspired Sweet Potato Lentil Loaf

2012 doesn’t mean I learned my lesson about making brown food.

 

It doesn’t photograph well.  At all.

 

 

Given the indulgence that December brought, I’ve decided to clean up in January and go vegetarian.  This isn’t a stretch for me – at home my diet is 99.9% plant-based.  It’s the dining out that gets me.  Social life should slow down now that the holidays are over, making it easier to stay in and stick to being vegetarian (my wallet could use a little break too).

 

Naturally, I decided vegetarianism is the perfect time to try meatloaf.  Veggie-style.  I’ve bookmarked many lentil loaf recipes to try over the past year or so.  For some reason they’ve always intimidated me – maybe because I have never cared for meatloaf or ketchup.  My mom made it once when I was in elementary school and I threw up during that dinner.

 

 

Ultimately I ended up taking the base from this loaf by Gena @ Choosing Raw and adding an Asian twist.  It’s vegan and gluten-free (I used gluten-free oats).  Served with roasted brussel sprouts, nooch sprinkles, and carrots.

Shredding the sweet potato would be a pain if you don’t have a shredder attachment for your food processor.  I have one and it was well-worth the effort.  The Asian flavors are especially satisfying in the cooler weather.  Don’t skip the ginger or the walnuts.

This may be an odd description… but the crunch and nutty flavor from the walnuts in this loaf is almost exciting.  Next time I’d add use an additional 1/4 cup.

 

 

My favorite part about this is the glaze.  Since I don’t like ketchup, there was so way I was going with the traditional meatloaf topping.  Instead I used garlic chili paste (like Sriracha with garlic added), miso, and tomato juice from the San Marzanos.  It was incredible.

This sauce could be used for so many things – tofu marinade, salad dressing, or to flavor soups.


Hands down the best thing I’ve made this year. 😉

Sweet Potato Asian Lentil Loaf

  • 1 T coconut oil
  • 1 C celery, chopped
  • 1/2 yellow onion, chopped
  • 1 serrano pepper, diced
  • 2 garlic cloves, minced
  • 1 in piece fresh ginger, minced
  • 2 3/4 C vegetable broth (I used low sodium)
  • 1 C French green lentils
  • 1.5 C grated sweet potato (I used garnet)
  • 1/2 C toasted walnuts, chopped
  • 1/4 C blended San Marzano tomatoes (or tomato paste)
  • 1/4 C cilantro, chopped
  • 1 tsp Chinese 5-spice
  • 1 T liquid aminos (can use tamari or soy sauce)
  • 1 C rolled oats
  • S+P, to taste

 

Miso Glaze

  • 1 T mellow white miso
  • 1 T chili garlic sauce (or sriracha)
  • 2 T tomato sauce

 

Heat coconut oil in a large pot, and sauté the onions and celery until soft and the onions are browning (~6-7 minutes).  Then add pepper, garlic, and ginger.  Sauté until fragrant (~3-4 mins).

Add lentils, veggie broth, and sweet potatoes.  Simmer, stirring occasionally, until broth has mostly absorbed and lentils are very tender (~30 mins).

 

Stir in walnuts, tomatoes, and spices.  Stir to combine and cook another ~2-3 mins.  Add oats and remove pot from heat. Salt and pepper to taste.

Allow lentils to cool a bit.  Place half of the mixture in food processor.  Process until mostly smooth.  Return mixture to pot and stir to combine with the non-blended portion.

For Glaze:  In small bowl combine all glaze ingredients.

 

Press mixture firmly into a loaf pan. Brush with miso glaze, if desired.

Bake at 350 for 45-50 mins, or until a knife finds it firm. If the top starts to brown, cover with foil midway through.

Serves 8-10.

Approximate Nutrition: 207 calories, 7.1g fat, 28.2g carbohydrates, 6.2g fiber, 3.2g sugar, 8.2g protein

Curried Carnival Lentil Stew

Have you ever seen a Carnival Squash?

 PYT, pretty young thing…

I have to admit that I am shallow.  I chose this squash knowing nothing about the Carnival variety other than it is one attractive squash.  It’s pretty… and who DOESN’T like pretty things?  This is one squash you can judge my the cover – it was reminiscent of an Acorn squash, but had the sweetness of a Butternut.

Even better: it can be microwaved and ready to eat in less than 10 minutes. Side note: do I use bold too much?   I feel like I overuse bold… but I am bold.  Hear me roar.

Indian-inspired dishes are a staple in my kitchen, so I made this Carnival a curried affair.  My curry is an extra-hot variety, but you can buy a more mild powder.  I, of course, added extra heat with red pepper flaked across the top.

 Breaking out of my brown food rut, I used red lentils in this curry.  They were fantastic!  I always heard the lighter colored (non-black or green) were mushier, but I left them al dente and added them to the mix in the last few minutes to ensure the bite remained.

The other flavors in this dish really made it pop – the sweetness from the cardamom and the richness of the cinnamon compliment the curry.  Adding a little basil at the end provides a pleasant surprise with every bite.  I really love basil in spicy Asian dishes. 

It is also delish topped with these Cardamom Roasted Seeds.


 

Curried Carnival Lentil Stew

Curried Carnival Lentil Stew

  • 1/2 tsp extra virgin olive oil
  • 1/2 yellow onion, chopped
  • 2 garlic cloves, minced or pressed
  • 2 tsp hot curry powder
  • 1/2 tsp cardamom
  • 1/2 tsp turmeric
  • 1/2 tsp fresh grated ginger
  • 1/4 tsp cinnamon
  • 2 C low sodium vegetable broth
  • 2 tsp apple cider vinegar
  • 1/2 cup red lentils
  • 2.5 C (1 medium) Carnival squash
  • 3/4 C water
  • 2 C spinach
  • 1/4 C basil
  • S & P, to taste

Stab the squash 3-4 times and cook in microwave 8-10 mins, until soft to touch.  Cut in half and remove guts/seeds.  Separate from skin and dice into ~1/2 in cubes.

Over medium heat in large pot, saute onion in olive oil until turning translucent (3-4 mins).  Add minced garlic and saute for additional 2-3 mins, until fragrant.

Stir in curry, cardamom, turmeric, and cinnamon and cook another 1-2 mins.  Add broth, cider, and lentils and bring to a boil.  

Reduce heat and cook for 7-8 mins. Stir in squash, adding water as needed.  Allow to cook ~5 mins, then add spinach and basil.  

Reduce heat to medium-low, cover, and cook until spinach is wilted (~5 mins).  Salt and pepper, to taste. Makes 2 servings.

Eggplant Lentil Indian Stew

Fall is in the air!

Despite the rainy weather, I’m excited for the fall/winter season.

It certainly makes running easier!  It could also be that the rain helped wash away the smog.  Either way, yesterday’s run was a fast one.

There is something so comforting about the chill in the air… it brings thoughts of curling up under blankets with a good book (holla at the single ladies) and hearty bowls of soup.

On the stormy end to the long weekend, I made an Eggplant Lentil Indian Stew.  Lots of spices made this dish special.

Preparing the eggplant by cooking it together stew-style (as opposed to roasting or sauteing it separately) allowed it to soak in the flavors and develop a wonderful texture.

Apparently a broken camera, yet another attempt at making brown food look appetizing, and new Picnik options resulted in photo-editing gone wild.

Don’t forget all the benefits lentils offer (in addition to being cheap).  This filling meal satisfied me for dinner and then again as leftovers at lunch.  I hardly needed my afternoon snack!


Eggplant Lentil Indian Stew

  • 1 tsp grape seed oil
  • 1 small yellow onion, diced
  • 3 large cloves garlic, minced
  • 1 T fresh ginger, minced
  • 1 T fresh thyme
  • 1 + 1/2 tsp ground cumin
  • 1/2 tsp cardamom
  • 1/2 tsp turmeric
  • 1/2 tsp red pepper flakes
  • 1/4 tsp cinnamon
  • 1 bay leaf
  • 1 cup dried French green lentils
  • 2 C vegetable broth
  • 2 C water
  • 1 large eggplant, cut into 1/2-inch cubes
  • 2 C fresh spinach
  • S+P, to taste

Warm oil in a large pot over medium-high heat. Sauté onion in the oil until translucent (5-6 mins).  Add garlic and sauté for another minute.  Mix in the spices.

Add 1 cup of the vegetable broth, stirring to combine.  Cook for another minute to allow flavored to combine.

Add the lentils, remaining broth, water, and eggplant.  Cover the pot, bringing the mixture to a boil.  Lower the heat to a simmer and cook for ~20 minutes, until lentils are tender and eggplant is soft.  

Add spinach allowing to cook until just wilted.  Adjust spices, adding salt and pepper to taste.

Ladle into bowls, top with red pepper flakes and fresh thyme, and enjoy!

Serves 4.

Chilly Weather Eats + WIAW

Wednesday comes quickly on short weeks!

Short weeks are good and bad.  I love the extra weekend time… but I was at work until 8p last night paying for it.

It’s chilly and drizzling rain here, so I had planned to go to kickboxing for a good, mindless workout.  The last class starts at 730p.

On the bright side, I hit the gym in my building and tried out a new back/bicep workout that I’ll be sharing soon. 🙂

On such a short week I nearly forgot to take pics for WIAW!

 

I did remember nearly everything in the nick of time.  Mas importante because I had a special treat for breakfast.

 

Breakfast:

I pre-gamed breakfast with some cantaloupe because it was going to take a minute before I picked up the main show.

 

FREE Chick-fil-A!!!  It is free breakfast entrée week (with a reservation).  I was pumped to try out their new oatmeal.

I came prepared with my own peanut butter (I never said I was normal).  They provided brown sugar, nuts, and dried fruit as toppings, but I’m not a dried fruit fan and the nuts were all sugar-coated.  Too much sugar in the morning!

The oatmeal itself was pretty good.  The fact that it’s multi-grain gave it a good texture.  It was cooked well – not watery, which I generally find to be the problem.  Only 120 calories and 5g of sugar, but I liked that it had 3g of fiber and 4g of protein.  That said, the serving was fairly small and I was really glad for the peanut butter!

 

Lunch:

Inspired by the cool, rainy weather I made a delicious Indian Eggplant Lentil Stew Monday night and thoroughly enjoyed the leftovers for lunch today.

Side note: Tech wont their first game against Western Carolina Girl’s School Saturday!!!

 

Lentils have many benefits.  They are:

  • High in protein an fiber = filling
  • Good source of iron and magnesium
  • Take on virtually any flavor from other foods/seasonings
  • Low-cost
  • Good left-over!

 

This recipe will be up tomorrow!!!

 

 

Snacks:

Not pictured, but I am pretty predictable consistent:

  • Chocolate-Toffee Think Thin bar
  • Nuts – I caved and ate the Chick-fil-A sugar-coated.  They were good.  🙂
  • Kombucha Green Tea
  • Broccoli and carrot sticks dipped in my new find: Spinach-Artichoke Hummus

 

This hummus is a new Whole Foods find by Nature’s Healthy Gourmet.  You really get the good artichoke flavor in it!

Nature’s Healthy Gourmet is a small company based out of Florida that specializes in vegetarian and Kosher foods.  Nature’s hummus is also dairy- and gluten-free.  If you can find it, this hummus is worth a try!

 

Dinner:

Since I got home from work so late I opted for a lighter dinner.  A salad with raw french green beans, sprouts, and mission figs.

 

Did you really think that’s all I ate?  Bwhahahaha!

 

That salad was protein’d up with sriracha-marinated tempeh and hummus dressing (the aforementioned hummus mixed with a bit of apple cider vinaigrette).

I finally learned how to spell sriracha!!!  Gotta celebrate the small victories. 😉
