Running and Winning

August 1, 2011 By Laura

It’s another Recap Monday!

Yes, I will reveal the lucky 4 NuNatural giveaway winners… at the end.  Bwhahaha.  (Yes, I realize you can simply scroll down.)

Saturday’s People’s Health Day 5K was a good one.  I was a little worried when I signed up because the wesite looks like a cult recruitment tool. 🙂  It turns out that it was a well-organized race and event.

The course was hilly, but fun because there was lots of scenery to enjoy.  Even better – I got to participate in it with fellow ATL bloggers Lee, Lindsay, and Carol!

Source: www.atlantarunningmom.com

Guess who else raced?  Mena Suvari (of American Beauty fame).  I’m not going to lie… I’m so out of touch with pop culture that I had to come home and google her.  She won 1st place in the 20-35 age group…

… because I  won an overall female award and they wouldn’t give 2 medals to you. 🙂  2nd place!!!  Admittedly, it was a small, slow race… but I’ll that what I can get!

Source: www.atlantarunningmom.com

Stats:

  • Distance – 3.14 miles
  • Time – 24:21 mins
  • Avg Pace – 7:45

The People’s Health Day didn’t end there.  5K participants were given 4 tickets that could be traded for goodies from about 10 vendors.  Juice Plus (my fav supplement!) was there, along with a few local restaurants and farms.

The blogger contingent went crazy for the 180 Farm tent (check out their website – they have really great story to tell).  I ended up with extra tickets from a friend who left early and I ended up with a rockstar bag ‘o treats:

  • Orange cherry tomatoes (they have a slightly citrusy taste!)
  • Peppers – cayenne, jalapeno, green bell, purple bell, and a mirasol
  • A dozen fresh eggs
  • Via Elisa pasta sauce (from the Nature’s Garden‘s booth)

All of that for 6 tickets and a $25 race number!  That pasta sauce alone is ~$7 in Whole Foods!  (Side note: Atlanta-based Via Elisa makes some of the best pasta sauce you can buy in a jar.)

We didn’t hang out much longer following the awards because we had to get to the Atlanta Blogger Lunch at R. Thomas.  (You can read about my obsession with thoughts on R. Thomas here.)

From left to right: Lauren, Carol, Alayna, Lee, Katy, Lindsay, me, Laura (reader), Tina, Kristy, Katie and Brooke.

Special thanks to Brooke’s husband for taking this shot and to Brooke for sharing the photo with everyone!

My meal was a delicious tempeh fajita:

We had a great time eating, taking pics of our food (patrons enjoyed staring at 12 women simultaneously taking pic of their meals), and chatting.

The last meet up had a smaller attendance AND we’ve added several more locals since.  I’m amazed and how big the group is now – and this wasn’t even all of the local bloggers!

Not Dreading Legs

July 26, 2011 By Laura

Legs are the hardest for me to workout.

Hardest weight-wise.  I run.  I ALWAYS take the stairs (8 flights to my condo, 9 between my office and the microwave).  Occasionally I use my kickboxing membership or hop on the stationary bike.

Other than that, my legs have traditionally been ignored.  I even ignored the fact that last week I promised a leg workout… errr… last week.

In order to encourage myself to do more leg-strengthening, I put together a routine that also focuses on core (which I LOVE to work) and so upper body.

This will make you sore.  If it doesn’t… you’re super-human you clearly work your legs more than I do. 🙂

______________________________________________________________________________________

1. 30 Second Warm Up

Alternate between 4 jumping jacks and 4 high knees for 3, 30 second sets.

2. Twisted Push-ups

Start in push-up position with a dumbbell in each hand and legs slightly wider than hips.  Step your left leg in under your chest (or as close as you can get it).  Be sure to keep abs tight as you rotate hips.

Source: Shape magazine

Return to starting position… you’re not done with the first rep yet!  Now lift your left elbow, bringing your dumbbell to your lower ribs.  Hold for 2 secs and lower it back to the floor.  Make sure your hips stay parallel to the floor and your core stays tight.

Source: Skimble

Complete 8-10 reps n your left side and repeat with right side.  Repeat for 3 seats (left + right = 1 set).

3. Wood Chop

Holding a weight (or medicine ball) with both hands, stand with feet slightly wider than should width apart.  Hold the weight up over the right shoulder (not back or behind you).

Lower the weight down low to the outside of you opposite ankle in a controlled motion.  Keep your chest up and eyes level to avoid back injury.  As you squat, be sure not to allow your knees to cross your toes.

Repeat 10x and switch side to complete a set.  Do 3 sets.

4. “Yes” and “No” Machine

If you have a gym with a Inner and Outer Thigh Machine, this is a nice “break” after those chops.

Complete 3 sets of 15 “yes” and alternate with 3 set of 15 “no.”  (Add more “nos” if you need it… you know who you are!) 🙂

No, it won’t keep your thighs from rubbing together (you have to do some cardio or lose fat first), but I like it because it strengthens my hips/thighs for running.  This keeps my knees from caving in with helps my overpronation problem.  It’s all connected!

5. Side Step Row Squat

Stand with feet hip-width apart, holding a weight in each hand.

Step out to the right with your right foot.  Your feet should now me shoulder-width apart.  Performa a squat, taking care not to allow your knees to cross your toes.  As you squat, bring bend your elbows so that they rise out to sides and bring weights to chest level.  Be sure to keep your core nice and tight!

Source: Fitness Magazine

Return to start position, almost springing off of right foot, lowering weights as you rise up.

Complete 8 reps and switch sides for a full set.  Do 2 sets.

6. Reverse Lunge with Lateral Raise

Begin in standing position with light weights in each hand at sides.

As you step back into a reverse lunge, raise weights out to your side at shoulder height.  Lower the weight as you return to the start position.

Do 12 reps on each side and repeat for 2 sets.

7. Seated V-Up

Sit with arms slightly behind you, elbows bent, and fingertips pointed toward your body.  Start with your knees together, legs extended, and heels raised slightly off the ground.

Pull knees into your chest, holding for 2 seconds at top.  Return to the starting point, keeping abs tight.

Complete 3 sets of 25.

8. Mountain Climbers

Start in a plank position with your feet hip-width apart.  Your body should be in a straight line – don’t stick your butt up!

Bend your right knee and pop up, bringing your right thigh under the left side of your torso and leaving your left leg out behind you.

Repeat, alternating legs for 1 rep.  Try to keep a quick pace and tight core throughout.

Complete 60 reps.

9. Bonus Round!!!

If that didn’t burn you out, find the Leg Extension/Leg Curl machine and rock out 3 sets of 12 reps each.

Be sure not to get your weight too high on that extension so you don’t put too much strain on your knees.

Check out more fitness ideas, tips, and trick on my Fitness page!

Now that you’ve completed that awesomeness, pat yourself on the back and be sure to get your 20g of protein to help the muscles recover!

I always, always follow up a weight routine with a protein shake.

Non-Evil Burritos?

January 5, 2011 By Laura

There should be a law that requires some ramp-up time before work gets insane again post-holiday.

After a slow couple of weeks, the need to focus and crank out work is a shocking blow.

But I can’t complain… no one will listen. 😉

____________________________________________________________________

The return to work means the return of fast, travel-friendly lunches.

I am a big fan of anything I can prepare the night before.  Some of my go-tos:

  • Leftover chickpea patties + salad
  • Grilled chicken + salad
  • Hummus + veggies with a slice of bread (bagged separately – soggy bread = foul)
  • Wraps with pesto/sweet potato butter/hummus/eggplant dip/anything else in my fridge (pre-bagged ingredients to be constructed quickly at work)
  • BIG smoothies (I have a new obsession with avocado+banana+ vanilla protein powder)

Sometimes my laziness is off the charts even these quickies aren’t quick enough.  That is when I go to my frozen meal collection.

One of the biggest problemos challenges with frozen food is finding tasty meals with decent nutrition content – they need to heat up without turning to rubber while not including ingredients I can’t pronounce.

As with any meal, if I can incorporate Mexican food I am a joyful girl.

Necessito el burrito en mi stomacho.

The mini Evol Burrito Veggie Fajita is anything but evil.  At 160 calories, 2g fat, and 5g protein, it makes a great afternoon snack.   A ingredient list in plain english makes it downright angelico.

Warning:do NOT over-do it in the mircowave.  The tortilla will get chewy.  I’d cook it half way and then cut it in half to finish heating (less nuking time = less rubber).

According to the website there are tons of flavor and size options.  My supermarcado didn’t carry the premium burritos, but when this one appears I’ll be first in line to buy it!

Thank you to everyone for your sweet comments and emails in response to my 2011 Goals.  I am so lucky to have such amazing family and friends. 🙂

In keeping with my fitness goals, I kicked it at kickboxing last night with the newly resolute.  Tonight we have derby practice.  Tomorrow… maybe some HIIT???

Do you look forward to March when people get bored of working out and the gym is less crowded?  It may be evol, but I look forward to the crowd levels returning to normal.

Toys and Tempeh

December 7, 2010 By Laura

This weekend marked the beginning of holiday party craziness.  Friday was a formal ball and Sunday was the famed Toy Party.

You can dress 'em up

The Toy Party is especially cool because you bring a toy as your admission (+ 3 drink tickets!).  All of the toys get piled up in the middle of the event space, so at the end of the night there is an overwhelmingly huge toy mountain.

... But you can't take 'em out!

Needless to say, it was a fun night. 🙂

Tonight was holiday kickboxing (“holiday” translation: hit the bag hard in an effort to balance out the party treats).

_______________________________________________________________________________________________________

Tonight I tried tempeh for the first time.

I also learned tempeh is not spelled like the AZ city.

Tofurkey’s Coconut Curry Marinate Tempeh gets two thumbs up from me!  I think I bought it at The Fresh Market, but I have seen it at Whole Paycheck Foods as well.

It was packed with flavor (the coconut was surprisingly pronounced) and came pre-sliced (read: easy prep).  For those that don’t like tofu due to texture issues, this is much closer to a meat consistency.

One package contains 2 servings – 130 calories, 3g fat, 5g fiber, 8g sugar, and 13g protein.  The sugar is a little higher than I like, but for 13g of protein, I’ll take it!

I put my tempeh slices in a pan with 1 T habanero-infused olive oil and 3-4 T red onion.  After they sauteed for a bit, I added an amazing black pepper (grown by my granddad!) and Cedar’s Chickpea Salad mix.

Cedar’s makes some fantastic mixes, but this stuff is my favorite.  Delicious heated or raw over a salad!

Then I piled the mix on top of some spinach and served it with a side of zucchini sticks.

I think I have a new addiction!

***

Then I did some banana-inspired baking… more tomorrow!  🙂

Thanksgiving Recap

November 28, 2010 By Laura

We finally made it back from our Thanksgiving tour of the Southeast!  I only got one speeding ticket fast driver award.  Is 80 mph really that unreasonable on the interstate?!

If anyone knows a lawyer in Shelby, NC… the cop suggests I get one so that I don’t get points on my license. 🙂

Anyway, we did make it to Charlotte and had a great meal with my cousins, aunt and uncle.  We walked in the door at 430p and started cooking Thanksgiving dinner and drinking red wine.

My uncle is a great bartender

Our fancy menu

My cousin Steve handed me a chef’s jacket to wear in lieu of an apron.  Rockstar.

Steve and me cutting up the butternut squash

I cubed the squash, tossed with EVOO, fresh rosemary, nutmeg, and cinnamon, and roasted it in the oven.  It ended up on this spinach salad:

Spinach salad with toasted almonds, raisins, and roasted butternut squash

Steven made a butternut squash, mushroom, and gruyere phyllo appetizer:

Cheesy appetizer goodness

The sides were: Sweet Potato Casserole, Wild Rice with Figs and Shiitakes, and Spinach Shiitake Bread Pudding.

Sides

The savory bread pudding was one I found in Food & Wine from Jean-Georges Vongerichten.

It was really good, but next time I would make it all in one large pan rather than ramekins like the recipe instructed.  Recipe here.

The bread pudding deserves a close up

I swear we had meat too!  Beef Tenderloin with Cherry Compote and 2 Roasted Chickens.

Steve did an awesome job – I didn’t sample the beef, but the chicken was perfect!

Steve appreciated the fact that he couldn’t take a bite until I took a pic!

And now for the important part.  Dessert.

My aunt made pecan pie, complete with homemade crust.  Crust is one of those things that I forget how good it is homemade until I have it.  This one was perfection.

Mom served up the Kentucky Derby Pie while Steve served up his homemade peppermint ice cream at record speed.

Steve’s bionic serving arm

I had a little taste of my Flourless Chocolate crack Cake with sea salt and a bit of ice cream.  I typically don’t even like mint ice cream, but was is GOOD.

Then I cleaned my sister’s plate and ate my cousin’s pie crust.

Chocolate cake would be my last request if I was on death row

Whew. I’m full just remembering this meal.

Because we didn’t get enough food on Thanksgiving, we  woke up the next morning and raided Dean & Deluca.  (It couldn’t be helped – it was right by our hotel!)

If you are in the neighborhood, don’t miss it.  Try the chocolates.  And the wine selection. 😉

Armed with a provisions and Christmas music, we got back on the road…

… to Thanksgiving meal #2 with my grandparents.

Grandmother made Pumpkin Pecan Biscuits.  She’s promised to send the recipe.

I’ll be making these all winter

We had homemade muscadine wine!

2010 was an excellent year!

My grandparents are really into healthy eating nowadays, so our (post) Thanksgiving dinner #2 was a refreshing one.  Thank god.

Salad Bar

Sweet potato, biscuit, salad, grilled chicken, black beans, and wild rice

It is really neat to have grandparents into eating local, healthy food.  And a much-needed break after all the rich food!

Not that it prevented me from a few dessert nibbles.

We also got to play with my grandfather’s kitten, Squeaky (it squeaks instead of meowing!).

I miss having a cat!

It was great to see everyone, but after all of that driving and eating I was ready to get home.

This morning I got up and went to a 10am kickboxing class… and got a much-needed butt kicking.  Hurts so good.

***

Unbelievably, I cooked tonight too – a mile-high lasagna pie… pics tomorrow! 🙂

What was everyone’s favorite dish this year?  Mine was the roasted butternut squash salad – that squash was tasty!

Drink Yer Squash

November 12, 2010 By Laura

I went to kickboxing last night for the first time in months.  Knuckle Up is a great local boxing gym that offers intense, sweat-inducing 50 minute kickboxing classes.

One of the many pieces of sporting equipment in the trunk of my car

It felt good to be back and the instructor even complemented my form!  Very exciting.

(I’m thinking about trying a boxing class… more on that if/when I get the kahunas to actually do it.)

My need to to hit something is dedicated to Excel.  Which I spent the entire day yesterday in.  And then stayed up until 3am working on the same document.  Needless to say, I am falling asleep sitting up this morning!  But it is done and I’m pretty happy about that. 🙂

Day 11 of the SP Cleanse (tomorrow) means we get to add chicken.  Strangely enough I haven’t craved meat.  I’m still really excited to get protein from something other than smoothies.

Speaking of smoothies… have you ever tried squash in a smoothie?

This butternut-cherry-chocolate combo sounds strange, but it was  almost cake-like.  And filling!

Drink yer SQUASH

Butternut Squash-Chocolate-Cherry Smoothie

  • 1/4 C Butternut Squash
  • 1/2 Banana (frozen)
  • 1/4 C Black cherries (frozen)
  • 2 scoops chocolate protein powder (I used Juice Plus)
  • Pumpkin Spice
  • Cinnamon
  • Fresh grated nutmeg

Throw it all in a blender, add ice, water (or milk – no dairy allowed on the cleanse), and spices to taste, and slurp away!

Makes 1 huge or 2 medium smoothies.

***

I know it sounds weird, but give it a try.  It was sweet, thick (even using the water), and a great way to use some leftover squash.  YUM.

Would you ever tried a non-conventional smoothie item?
