I’m starving.

Thank you, incessant cardio. 

I began my day meeting a new client, then I had to go to Whole Foods.  There was one right next door to my meeting… I couldn’t help myself.

It was a new-to-me location, so I wandered aimlessly for a good while taking pics of fun things like sparkling wine in a can.  I miiiiiight have purchased a 4-pack.  Curiosity killed the cat.

Cauliflower Tabbouleh Salad [Recipe]

I have a thing for tabbouleh.

A thing I didn’t realize until I began to write this post.

Cauliflower rice has been a thing for a long time.  I’ve been replacing the bulgur in tabbouleh for a long time.  Therefore, it was only a matter of time until – strangely enough – I decided Cauliflower Tabbouleh needed to happen.

Despite the fact that I have have three other tabbouleh recipes on this blog – Quinoa Tabbouleh, Tofu Tabbouleh, and Tabbouleh Pasta – I really don’t eat it that often.  Not that it isn’t good… I really love it.  I just get lazy.  However, this is the easiest tabbouleh hack yet.  And it’s good.  Strange, but good.

Purple Hair and the Move [WIAW]

Remember the mermaid hair?  I think Im even more obsessed with this color.

I cannot pass a mirror without staring.  Vegas keeps saying “did you know your hair is purple?!” and “I married a unicorn!”  She loves it.  I think.

Peanut Butter Banana Pops [Recipe]

There is no greater combination than peanut butter and banana.

Well, maybe chocolate.

It’s more than a little strange for me to be posting such a super-simple recipe, especially one involving frozen fruit.  It’s good, nonetheless.  A peanut butter banana pop in the heat of the summer couldn’t sound more perfect, no?

Plus, it’s really strange and hilariously good to watch Vegas eat one of these.  She forbid me from posting the pics, but they exist, trust me.

There are very few meals I repeat.

So much to experiment with, so little time…

Egg white oats are one of the chosen few things I keep in steady rotation.  Egg whites in your oats may sound strange to some of you, but I swear it’s good. #strangebutgood

You really don’t taste the egg whites at all – even Vegas will attest to that.  What you CAN taste is the fresh fruit and creamy oats.  I  used mango and blueberries, but you can change it up depending on what’s in season.

Cauliflower Crust Breakfast Pizza [Recipe]

Put an egg on it.

Instant breakfast.

Pizza with an egg on it seems to be catching on around San Diego.  I live right by the Italian section of town, and my favorite spot has an amazing brunch pizza.  Complete with an egg on it.  I was craving just such a pizza yesterday and made my own version for Vegas and me.

If an egg on a pizza isn’t strange enough for you, try it on a gluten-free, dairy-free cauliflower crust pizza.  It’s crazy good.  #VegasApproved
