Resetting My Diet + WIAW

June 3, 2015 By Laura

All good things must come to an end.

Until I figure out a way to live in Europe.

I’m a firm believer in balance and enjoying life.  Enjoying is just what we did in Greece.  There were tons of good eats, alllll the drinks, and a nice break from the gym (though we walked a LOT).  Vegas and I had a blast and soaked up every moment.  Coming off of that I have no regrets, but feel ready to get back to a healthier diet.

Peanut Sriracha Noodle Bowl [Recipe]

March 27, 2015 By Laura

I’m convinced you can put peanut butter on anything.

It’s even good on bacon.

There’s not bacon in this peanut sauce, but now that I think of it… there night be next time!  This was strange enough for round 1 though, particularly when you add kelp noodles.

Don’t be scared of kelp noodles – they don’t really taste like anything and, for those that are concerned, they are gluten-free and nearly calorie-free.  The weirdest part about these noodles is the texture; they’re almost crunchy!  You could use this sauce with any noodle though.  And you could top it with anything.  I chose the tasty Sizzlefish Thai Salmon.

Banana Walnut Protein Pancakes [Recipe] + WIAW

March 25, 2015 By Laura

WIAW is on the move again this week!

Because I haven’t had enough  moving…

Here’s the deal.  What I Ate Wednesday has been jumping around to give mamma Jenn a break.  She’s entrusted me this week with hosting duties (which may be a sign she’s taken up a crack habit… is rehab where she’s disappeared to?!).

Since I’m sooooo known for sugar coating things, I’m going to come out and say that the link up got a bit out of control and Jenny from the block was suffering from exhaustion. WIAW was meant to just be a day of eats.  Don’t be linking shit from 5 weeks ago, everything you ate for the past 3 weeks, or some unrelated giveaway you’re trying to get more traffic for.  Follow the rules and don’t be greedy.  In short, don’t be a dick.

Irish Cream Protein Pancakes + WIAW

March 18, 2015 By Laura

Moving is exhausting.

I’m mentally tired.

Organizing, cleaning, and decorating are not my favorite things.  Doing that while working and dealing with annoying shit that comes with closing on the sale of my condo has left me grouchy.  People commenting on my lack of cooking gets me fired up.  We just got a working oven and found time to grocery shop.  If I want to have some beers, then I will.  Jeeeeeeesus.

The Whole Foods has a bar. It really is like heaven here.

The Whole Foods ha a bar. It really is like heaven here.

This isn’t a blogger rant.  These are Facebook friends.  I’ve actually been loving going out in our new neighborhood and trying out new things workout-wise.  I’ve taken up boxing and tried out jiu jitsu.  I’ve been running more.  Ending the day jogging back home to Vegas with this view makes me incredibly happy:

Spiced Protein Fiber Bars [Gluten-Free Recipe]

February 6, 2015 By Laura

It’s strange to admit, but we all like to be regular.

I mean that in the most TMI way possible.

Fiber.  Are you thinking what I’m thinking?

Fiber helps you poop.  It’s strange to admit to in public, but being regular is nothing but good.  These Spiced Protein Fiber Bars are loaded with fiber, which helps you stay regular, which is good. #strangebutgood

Red Velvet Protein Balls [Recipe]

November 28, 2014 By Laura

Thanksgiving is over.

Officially… we’re still celebrating!

I am of the belief that you cannot begin with the Christmas festivities until Thanksgiving has passed.  And – for the love of god – don’t even think about Christmas before Halloween!

Now that we’re officially past Thanksgiving, I bring you Christmas Balls.  I’m not trying to discriminate and leave out Hanukkah… but I couldn’t get through a blog post about blue balls.  So these strangely good (for you) balls are red.  Red Velvet, in fact.

Red Velvet Protein Balls

I made these with my favorite flower-sender in mind.  Side note: the flower sender is hereby known as Vegas, as that is where the flowers originate.

Vegas loves red velvet cake.  Since I’m in Arizona with Vegas this Thanksgiving holiday (how’s that for confusing?) and these days my favorite activity is making Vegas smile, I bring you post-Thanksgiving, pre-Christmas balls.

Not just any balls though!  These red velvet-y delights are protein-packed and get their red tint from… beets!  How’s that for strange?

Red Velvet Protein Balls

In conclusion, Vegas and I wish you a pre-Merry Christmas (and Hanukkah) from Arizona the day after Thanksgiving.

Now, bust out your healthy balls and celebrate the most wonderful time of the year!

Merry Vegas

Guess who’s is who’s…

These red velvet-y protein delights are protein-packed and get their red tint from… beets! Perfect for a healthier Valentine's Day treat!

Red Velvet Protein Balls

  • 1 scoop chocolate protein powder (I used Growing Naturals Rice)
  • 1 T coconut flour
  • 1 scoop Cocoa Cardio*
  • 1/4 tsp cinnamon
  • 1/4 tsp honey
  • 1/2 T coconut oil
  • 4 Drops Capella Flavor Drops, Cake Batter (or 1/4 tsp vanilla)
  • 1/4 C unsweetened vanilla almond milk

Combine wet ingredients.  Mix in wet, adjusting milk as needed.

Roll into roughly 4 balls.  Put in freezer for your own safety storage.

Note: I order my Cocoa Cardio on iHerb (use discount code USO924 for $5-10 off your order!).  If you don’t have beet powder, you can use tsp beet powder and 1 T cocoa powder.  You can also use pureed beets here, but you’ll probably need to cut the milk in half (I haven’t tried it).

How have you enjoyed making co-workers, friends, or family stare with strange but good creations this week? The link up rules can be found here or by clicking on “Strange But Good” in the menu bar above. In short, I want to see what concoctions have earned you weird looks from co-workers, family and friends! Post your Strange But Good creations, grab the logo below for your blog, and link up here.

I can’t write about balls without giving Lindsay a shout out.  Thanks for inspiring me daily, my baller brother!

Do you ban and Christmas (or Hanukah) celebrations until after Turkey Day?

What is your favorite ball flavor?

Baked Banana Oatmeal Protein Bites

October 24, 2014 By Laura

Have you ever eaten warm banana?

Think pie… bananas foster… breads.

When you bake a banana it becomes a gooey, caramel-y treat.  You don’t even need to use sugar.  Like in these muffins.

I’m not one to take the time to make a baked oatmeal in the morning, but I love having it for breakfast.  Especially as it gets colder outside!  Bake it in advance and you have a delicious instant breakfast, portioned out perfectly.  That’s the idea behind these.

Roasted Brussels, Butternut, & Beets (Recipe)

October 17, 2014 By Laura

Fall gets me excited for new produce.

It’s the little things… am I right?!

While I’ve seen a lot of strange in Vegas (some good, some BAD), this strange but good meal was done in advance of the trip.

Side note: I planned ahead?!  Who AM I?
