Peanut Butter Banana Pancakes [Gluten-Free Recipe]

August 19, 2015 By Laura

Pancakes are never a bad idea.

Especially when you have a super-ripe banana.

My bananas have two speeds: too green or too brown.  How do I miss that window of a perfectly yellow banana?  I guess I can’t complain if it results in pancakes!

Roasted Garlic Matzo Ball Chicken Soup [Recipe]

August 5, 2015 By Laura

Soup in August?

When you’re sick, that’s a must.

The recipe I’m going to share today is for a hot soup often referred to as Jewish Penicillin… with my own special twist.  It’s a roasted Garlic Matzo Ball Chicken Soup.

Matzo Soup is often referred to as Jewish Penicillin. This Roasted Garlic Matzo Ball Chicken Soup is based on the one my mom used to make for me. It's the perfect cure whether you have a cold or are simply craving comfort food!

Vegas caught a summer cold.  How you can get a cold in the summer, I have no idea… but it happens to me about once a year.  And apparently to Vegas.  I decided to cure her with a big bowl of Matzo Ball Chicken Soup.

S’mores Protein Pancakes [Gluten-Free Recipe]

July 31, 2015 By Laura

S’mores don’t have to wait for dessert.

What ISN’T good in pancake form?

I still had graham crackers and marshmallows leftover from my S’mores Brownies… I had to use them some how!  Why not create a pancake breakfast?  Don’t S’mores Protein Pancakes sound divine?!

Maybe it’s a little strange to have a campfire dessert first thing in the morning,  but it sure is good!

Jerky Heaven [Giveaway] + WIAW

July 29, 2015 By Laura

I’m a snack junkie.

If I’m honest I’d rather snack and have a meal.

If you’re a snacker like me, you can imagine my excitement when I received a GIANT box of jerky from Jack Link’s.  Turkey jerky, teriyaki turkey jerky, chicken jerky… it is basically outdoor snacking deliciousness.

And by outdoors, I don’t just mean sports (though Vegas and my favorite softball snack is jerky).

Things I’m Loving + WIAW

June 17, 2015 By Laura

I haven’t felt like blogging lately.

Which is why on Monday I just didn’t.

If you don’t have anything to say, I find it’s best not to force it.  No that there isn’t a lot of awesome going on… I’m just busy living life!

Here’s a little bit of some things I’ve been loving…

Leg day… but I’m not going to lie. I still might order this shirt and take a shot.

Tabbouleh Pasta with Creamy Herb Dressing [Recipe]

June 12, 2015 By Laura

I’m taking some liberties today.

Relax… just with the word tabbouleh.

Tabbouleh Pasta with Creamy Herb Dressing

This dish is heavy on the parsley and tomato.  That immediately makes me think tabbouleh.  The “traditional” definition ends there.  The rest is strange… but good.

Strawberry Cinnamon Protein Pancakes + WIAW

June 10, 2015 By Laura

I lost Vegas.

Not literally, thank god.

We’ve been doing a little 21 day reset.  Vegas said she’d give it a week and then see if she wanted to keep going.  She lasted a week like a champion… but then I lost her.

Actually, we both went a little off the reservation Saturday night.  I got back on track Sunday, but Vegas was done.  She’s still been basically eating whatever I eat… just with a side of caffeine and peanut M&Ms.  She had no complaints about the protein pancakes we had for breakfast (more on that below).
