BBQ Quinoa Meatloaf [Recipe]

November 16, 2015 By Laura

I have a thing against meatloaf.

Fun childhood trauma story for you today.

Once upon a time, there was a small girl.  One night her mother made meatloaf for dinner.  The girl wasn’t feeling well and didn’t want to eat the meatloaf.  Despite her complaints, her mother made the girl finish her plate.

Then tragedy struck!  The girl ran for the bathroom and was sick to her stomach.  That was the last time the child ate meatloaf.  Until today.

Quinoa Zucchini Breakfast “Pizza” [Recipe]

October 23, 2015 By Laura

I can’t be satisfied with simply being right.

No, I have to drive the point home over and over and over again.

It’s no secret that Vegas thought she didn’t like quinoa.  She did.  And then she did again.  But the third time really is the charm.

Anyone with a sweet tooth can get on board with something sweet.  I proved that point, so now it was time to go savory.  I couldn’t see Vegas eating a giant quinoa bowl, so I went with her favorite food group: pizza.  For breakfast.  It’s a little strange but I swear it’s good – for breakfast or dinner!

Lemon Blueberry Breakfast Quinoa [Recipe]

October 16, 2015 By Laura

The best part about this Lemon Blueberry Breakfast Quinoa is that it’s easy. Make a giant pot of quinoa for the week and repurpose it as needed – in salads, breakfasts, or even in baked goods.

Pumpkin Quinoa Chia Pudding [Recipe]

October 9, 2015 By Laura

Strangely enough, it does rain in San Diego.

Especially when I make something pretty that I need sunlight to take pics of.

Chia pudding, pumpkin… none of that is strange.  Adding quinoa to the mix may be a little odd, but it is quite good! (As is the occasional rain.)

Our anti-inflammatory diet experiment had led to a lot of creativity.  Since we are grain-free, I’ve been using sweet potato and quinoa as our main carbs.  Vegas claims to not like quinoa, so naturally I’ve been sneaking it into everything.  Like this pumpkin pie-inspired breakfast.

Homemade Sugar-Free Lemonade Recipe + NuNaturals #Giveaway

October 7, 2015 By Laura

Some things are embarrassingly easy.

And some are embarrassingly hard.

Today I have an easy recipe for you.  Making lemonade in the blender.

Here’s the recipe: put a bunch of lemons in a high-speed blender (I’m biased towards my Vitamix) with some water and sweetener.  Blend.  Strain.  Drink.  Boom.

Spicy Pumpkin Chicken Salad [Recipe]

October 2, 2015 By Laura

Pumpkin season is upon us!

Too bad it is still ridiculously hot here.

Despite the heat, I’ve decided it’s time to bring the pumpkin back.  Given our new anti-inflammatory diet experiment, I didn’t start out with some decadent baked good.  No, this recipe is simple, healthy, and grain-free.

It also sounds a bit strange… but I promise you that adding pumpkin to chicken is good.

Anti-Inflammatory Experiment + FREE Online Health Advice

September 30, 2015 By Laura

I’m not a fan of wearing pants.

Since moving to San Diego, Vegas and I basically live in workout clothes.

This may seem lazy… I can’t argue that… but getting dressed in “real” clothes seems like way too much effort.  By default, anything requiring me to dress nicely gets left by the wayside.  I’m not a recluse!  I’ll go to the gym, ball games, casual dinners, the grocery store… anything beyond that is a stretch.

When I received the opportunity to try out an online dietitian with Amwell, I was thrilled.  Doctors typically require “real” clothes.  If I can get a consult in my PJs, I’m a happy girl!  With Amwell, you can speak with a doctor or RD from home via your computer.

I literally did the consult in bed, in my PJs.

Super Shoulder & Back Workout + WIAW

September 23, 2015 By Laura

The family workouts continue!

There’s something especially satisfying about making your loved ones hurt.

We’re wrapping up some loose ends this week in Atlanta.  I’m still enjoying my time at home and loving mom’s new digs.

We had a fun workout yesterday in her gym.  She said I worked her harder than any of the trainers she’s worked with.   Mwhahahah!  Here’s what we did:
