2012’s Popularity Contest + WIAW

2012 was a great year for discoveries.

 

I can’t believe I survived without some of these things before.

I feel like I’ve gotten to know so many inspiring people (like YOU).  Becoming a member of the FitFluential community has been a huge game changer.  The members of that community are constant sources of motivation and positive energy.  I’ve discovered new blog, learned a lot, and been able to learn about new products (shameless plug: perfect example is my Polar HRM from h.h. gregg – check out the review/giveaway here).

Another amazing discovery was Instagram.  It’s unbelievable how much it’s changed the way we interact.  I love that when I can’t decide what to eat, I can just scroll through my feed.  It has been a fun way to have conversations with people throughout the day!  It’s basically Twitter with pictures and open comment threads!  I also love seeing recipes people are interesting in.  I forget that just because I make a certain snack every week doesn’t mean everyone else does!

 

I also have to give a holla to my morning cocktail.  Apple Cider vinegar became an addiction in 2012.  I drink it every morning with my Fitmixer Aminos (fruit punch flavor).  It is delicious and has totally replaced my need for coffee in the morning.  Love.  It.

Stay Calm + WIAW

Try to stay calm.

There may  be a bacon shortage.  The LA Times reports that drought conditions caused a reduction in corn and soybean crops, which means less feed for swine… which means less bacon.  Stock your freezers now.

Despite my frequent posting about bacon, I really am not a fanatic.  Yes, I do enjoy the occasional Maple-Bacon Pancake Cookie.  And I think Bacon Toothpaste is funny.

HOWEVER… I bought a mere 2 slices at the farmer’s market to add just a little extra flava-flav to my food this week.  And, I worked bacon into a meal today.


It’s a really stressful week.  Today I craved comfort food, and having developed the habit of reaching for healthy comforts helped me keep it clean… and sticking with September’s What I Ate Wednesday theme: “Fall Into Good Habits.”

Meal 1:

Like every morning, I arose and had my morning cocktail: a mix of Apple Cider Vinegar, Glutamine and Fitmixer Aminos.  Then I almost panicked when I realized I’m almost out of my Aminos.

After a quick 2 mile walk, I enjoyed a Stuft Mama-inspired sandwich:

P28 Bread panini-pressed in the George Foreman with cinnamon and flax-scrambled egg whites, sugar-free strawberry jam, a little Daiya pepper jack.  With a side of golden kiwi.

Meal 2:

This is truly random.  Certainly a Strange But Good candidate.  Pre-baked lemon-dill salmon… mixed with ricotta cheese, a little cinnamon, and blackberries.

Strangely delicious leg-day fuel. 

Meal 3:

I spent my lunch break in the gym blowing off some steam busting out some leg work.  When I got back home all I could think about was a giant green smoothie bowl.

In my bowl:

  • Vanilla protein powder
  • Chocolate unsweetened almond milk
  • TONS of spinach
  • Cinnamon
  • Liquid stevia
  • Crumbled Zucchini Protein Muffin to top (recipe for that coming soon!)

Meal 4:

Did I mention work is really, really, really stressful this week.  It called for my protein-comfort snack: PB Cottage Cheese and celery (a riff on my childhood “ants on a log”).

I mix 1/2 C no-salt added cottage cheese with 2T of peanut flour, cinnamon, stevia, and butterscotch extract.  Then I dip my celery.  There may have also been a side of dark chocolate… shhhhh… 

Meal 5:

Clearly I can never get enough pizza.  This week’s pizza meal’s base was my beloved cauliflower crust.

Toppings:

  • Swordfish
  • Bacon (just a little bit…)
  • Avocado
  • Truffle oil
  • Radishes
  • Asparagus
  • Brussels

My crust “dough” felt a little too wet, so I added a little nutritional yeast.  It worked well to soak up a little moisture, and it was really good!

Meal 6:

Still working (it was a late night).  So stressed I had no appetite.  Late nights in college always meant Waffle House… so I made a healthier version of my old order – egg whites with red onion, jalapeno, and spinach.

Meal 7:

Comfort food is the name of the game for this post.  More smoothie bowls!  Meal 7 was a Pumpkin-Chocolate Vitamix ice-cream-like concoction.

In my Fall Smoothie Bowl:

  • Pumpkin puree

  • Cocoa powder
  • Unsweetened chocolate almond milk
  • Cinnamon

Stripper Heels + WIAW

I got 99 problems but a bench ain’t one.

Yep.  That’s on my workout play list.

Last week I talked in this post about focus at the gym, and how purposeful lifting increases results.  I attribute that to many of the gains I’ve been able to make since beginning figure competition training.  I’ve also talked a lot about diet and eating to fuel workouts.  I’m doing a little better with my increased meal requirements.  It’s still not easy… but seeing that it works is encouraging.

So now it’s time for the other part of training to begin.

If you ever want to feel totally awkward and like Bambi on new legs, try to balance in plastic heels while keeping your feet together, butt out, and shoulders “big.”

After last night – my very first posing practice – I learned that I have a LOT to learn.


This is the last summer edition of What I Ate Wednesday.  While I’ll be strutting my stuff in a bikini and stripper heels in the coming months, looking out my window at the rainy weather I know fall is in the air.

Meal 1:

I’ve been changing up my typical mix of aminos and 2T of apple cider vinegar but adding 1 tsp of glutamine and a couple drops of orange stevia.    I’m loving the hint of orange!  This combo has really replaced my coffee to aid in digestion and provide energy in the morning.

Something I have noticed since being on a training diet is that I get on food-kicks more often.  Right now it’s pancakes!  This morning I did a repeat of last week’s PrOATein Pancakes.

This week I spiced it up a bit by doubling the cinnamon and adding 1/4 tsp of ground ginger.

Meal 2:

Remember the apple cupcake from last week?  I made that frosting again, but this week I enjoyed it out of a martini glass with pumpkin seeds and golden kiwi.

The golden kiwi was a farmer’s market find.  It’s like a sweeter regular kiwi.  I love them!

 Side note: late in the day I knocked this glass off the counter and shattered it.  See how graceful I am?

Meal 3:

This is one of my favorite seafood creations to-date.  I marinated tilapia in tequila, lime and some other stuff before cooking it on a grill pan.

I continue to suffer from over-stuffing.  My “taco” was more of a flat bread.  Whatever… it was still good.  My toppings: black bean dip, spinach, red onion, cucumber, red pepper, jalapeno, and cilantro.

Meal 4:

This gazpacho was made using some late season tomatoes and my über expensive crab meat.  It’s what I ate pre-workout the night I hit my bicep PR, so I thought I’d try it again!

Meal 5:

One of the best modifications my trainer has made to my diet is meal switching.  If it is time for a carb meal, but I’m about to workout out I swap it for a non-carb meal.

Normally right now I’d be eating 2 veggies, a carb, and a protein; however, I had leg day with my trainer.  What I did instead is have a veggie and a protein and saved the carb for Meal 6.

This is what eating just to get my protein in on the whey to the gym looks like:

GNC whey protein mixed with Greek yogurt and cinnamon.  With a side of cauliflower.  It was an interesting combo, to say the least. 

Meal 6:

Post-workout I happily slurped on my Carrot Cake Batter Protein Shake on the way home.  I added spinach and celery to get my second serving of veggies.  You can’t taste either one at all!  I also blended in some rolled oats and topped it with cinnamon Kashi to get my carbs.

Meal 7:

This week I have been really FULL.  I think I’m making such an effort to increase meal sized during the day that I get to meal 7 and am over the limit.  There’s nothing like 2.5 hours at the gym to cure that!  After posing practice and a brutal leg day, I was more than happy to squeeze in one more meal.

This is Lauren’s recipe for Vegan Bread Pudding, slightly modified.  Instead of the pumpkin I used a mashed up peach, added 1 T almond milk, and used the end piece of my P28 High Protein Bread rather than Ezekial bread (I’ll be ordering more of that!).  I also left out the walnuts, as I don’t eats fats in Meal 7.

So.  Good.

I still need to get a little more in my day, but I’m well on my way with the 176.6g of protein from today’s eats!

Peanut Butter & Jeggs + WIAW

Two things make me euphoric: good food and hard workouts.

Yesterday I was on the receiving end of both.  My spreadsheet delivered today!

Breakfast was mind-blowing.  Meal 2 is a new go-to protein source.  Lunch – although it was inhaled – was delish. Meal 4 wasn’t exciting, but the GNC Vanilla Whey tastes cake batter-ish when mixed with water.  Dinner… well, if it was legal to marry pizza I would.  Meal 6 was fun and close to being a new staple.  Dessert was a new (to me) recipe from one of my fav bloggers.

On the training front, I had a GREAT workout with my trainer.  I squatted 1.5x my body weight.  That’s a HUGE jump in just over a month of training.

During a workout it can be overwhelming to push and go all-in.   That’s when you know you’re doing it right – when you are out of your comfort zone and breathing hard (provided you are using a good form and common sense).  I hit that point during my 4th drop sets of horizontal leg presses.

I looked up at my trainer and said “I don’t know how I’m going to do this.”  Then, with his encouragement, I just kept going.

It was HARD, both physically and mentally.  I was careful not to say “can’t,” but I won’t say the thought didn’t cross my mind.  I shoved it out of my mind, and after the workout was incredibly proud of myself.


Which leads me to the 4th installment of the Fitness-themed What I Ate Wednesday.  If you’ve been following, I’m aiming to get ~150g of protein each day as I train for a figure competition (hopefully in NOVEMBER!!!).

In an effort to vary my protein sources, I try not to repeat meals throughout the day (ex: I don’t want to have 7 protein shakes, or 4 servings of scrambled egg whites).  Today’s eats included a whopping 5 different sources of protein!

Meal 1:

Like I do every morning, I enjoyed a glass of my aminos mixed with ~2T of apple cider vinegar and water. I swear it gives me more energy than a cup of coffee… in fact, I no longer make coffee in the morning.

30 mins later I did enjoy a coffee-laced breakfast parfait:

It was a fabulous as it looks.  No joke.  Recipe tomorrow because I cannot hold this one in much longer.

Meal 2:

A new go-to: Peanut Butter & Jeggs.   I do enjoy savory eggs, but sometimes you just want a PB&J.  Meal 2 doesn’t get a carb, and PB&J doesn’t pack 20g of protein (the minimum I need at each meal)… so I got creative.

Egg whites, peanut flour, berries… it’s not as weird as it sounds.  Really.  Recipe at the bottom.

This might be weird: dose anyone else like the little crunchies left over from scrambles?  They’re especially good when they are laced with PB.

Meal 3:

Lunch was wolfed down.  I was slammed at work and running out the door for a lunchtime appointment with my trainer for the afore mentioned leg day.

This was a tasty combo… but I spent the drive to the gym wondering if eating all this so close to a workout would make me hurl.

On my plate:

  • Thai baked tofu
  • Spinach
  • Sweet potato
  • 3 bean mix 

Thankfully, I didn’t vom during my workout.

Meal 4:

This is what eating for fuel looks like:

GNC Whey Vanilla Protein I received as part of this Fitfluential protein powder review, mixed with water to form a “pudding.”

Followed by a giant carrot when I got home.

Meal 5:

I’m still swooning over this meal.  It’s one of the best I’ve had in recent memory… and that’s saying a lot.

Cauliflower pizza perfection (recipe here).

Topped with baby bellas, red onion, garlic, red pepper, French sorrel, and purple basil, and drizzled with nooch “sauce” (1 T nutritional yeast + 1 T water) before placing back in the oven for 15 mins.

Once cooked, I topped it with a balsamic reduction, red pepper flakes, and this KASS vegan grated parm (which is actually really good!):

Meal 6:

After being corrected by Coach last week (seriously… he busted me in the comments section), I did NOT skip meal 6.  This is a new creation… one I’m still working on.  As soon as it’s 100% I’ll share. 🙂

No coach, these aren’t protein macaroons. 

Served with celery sticks and “honey” mustard.  I say “honey” because it’s just Dijon with a drop of lemon Stevia.

I read this one someone’s blog but now I can’t remember where… please claim it if it’s your idea.  Sorry!

Meal 7:

Dessert was this Blueberry Protein Microwave Cake I’ve had bookmarked from my friend Sarena @ The Non-Dairy Queen.

Just a couple of modifications: I left out the oats, reduced the egg whites to 1/4 C, and used just 1/8 tsp  of baking soda.  I added 1/2 tsp cinnamon, and used lemon stevia in the coconut “frosting.”  Mine only needed 4 mins in the microwave.

It was friggin’ fantastic.


 

Peanut Butter & Jeggs

  • 1/2 C egg whites
  • 2 T peanut flour
  • 2 T water
  • 1/2 tsp cinnamon
  • 5-6 drops liquid stevia
  • 1/2 C berries

In a greased pan on med heat, scramble egg whites until 3/4 done (still a bit runny, ~2-3 mins).  

Meanwhile, mix together peanut flour, water, cinnamon, and stevia to form your peanut butter (note: you could always use 2 T of your favorite nut butter here).

Add peanut butter and fruit to the eggs.  Scramble together and allow egg whites to complete cooking (~1-2 mins).

Plate and enjoy!

Serves 1.

This day of eats was entirely vegetarian, and I managed 156g of protein.  And it included 2 of the best meals ever.  OMG.

Planning to Eat Healthy + WIAW

Eating healthy on the go takes planning.

I’m sure this isn’t news to any of you.  It’s become particularly evident to make lately as I’ve changed my habits to incorporate more protein and begun eating 7 small meals a day.  Serious training goals take serious planning.

For starters, I keep track of my meals in a spreadsheet.  This way I’m never stuck searching for ideas and/or desperate and hangry for food.  By keeping it on Google Docs, I can easily edit and make additions as I get ideas throughout the day.

It also makes for easy grocery shopping – I can make my list in record time now!  (P.S. check out yesterday’s post for a chart to navigate grocery store.) 

Last week I mentioned that I was struggling to find a wider variety of vegetarian protein sources.  The resulting increase in dairy resulted in my skin is breaking out.  Since then I’ve reduced my dairy to 1-2 servings a day, and my skin has magically cleared up!

One way I’ve kept up my protein intake without the dairy is to incorporate fish into my diet.  If you’ve been reading for a bit, you know that I’ve dabbled with being vegetarian and even vegan.  For me, it was about how much better I felt without meat in my diet.

Mom and I learned together how to bake fish in parchment last Friday evening!

While I do intend to keep my diet as plant-based as possible, I am enjoying experimenting with seafood (something I only started to like a few months ago), and haven’t noticed it dragging me down like I did with meats.

July is becoming my favorite months for a few reasons:

  1. It’s my birthday month  (4 more days!)
  2. The fruits and veggies we’ve been getting at local markets have been particularly delicious
  3. Jenn’s What I Ate Wednesday theme for July is of “Food, Fun, and Fitness.”  You guys know that’s perfect for me these days!

Pre-Game:

I woke up early, but my weights workout isn’t until late tonight since I have a date with my trainer.  I’ve grown accustomed to  moving in the morning, so I decided to jump on the treadmill for a power walk while watching a little GMA.  Not wanting breakfast yet, but needing energy I drank down a glass of my Fitmixer Aminos. mixed with ~2T of apple cider vinegar (great way to start the day for energy and errr… digestion…).

Meal 1:

Anytime I have an appointment with my trainer, I try to eat a little heartier throughout the day.  Not stuffing myself, but I want to be sure I have adequate energy because he pushes me to the limit and then some.

I don’t repeat many meals, but last week’s Blueberry Protein Tart was so delicious that I couldn’t wait to eat it again.

Same tart base and peanut butter icing, but I this time used peaches rather than blueberries and sprinkled the top with ground flax and cinnamon.

Meal 2:

Did you know eggs can be cooked in the microwave?  It sounded weird to me at first, but it worked out perfectly.

I microwaved 3/4 C egg whites mixed with black pepper and ~1T water (to make them fluffier) for 2 mins.  Then I stirred it up with some tomato and basil before popping it back in for 15 secs.

 

Topped with pumpkin seeds and red pepper flakes.  I’m positive the work microwaves have never been used for such a creation. 🙂

Meal 3:

Lunch was last night’s leftovers.  Here’s where the fish comes in.  I baked a halibut in parchment with rainbow chard, shiitake mushrooms, Chinese 5-Spice, and a little coconut oil.  It was pretty tasty.  Even though my boss said it smelled… that is a problem with seafood.

Enjoyed with some sesame Wasa crackers. 

Meal 4:

Here’s my serving of dairy – a mixture of no salt added cottage cheese, peanut flour (a.k.a.: my crack), and a bit of liquid Stevia.  Side of cucumber sticks.  This is literally the tastiest cucumber I’ve ever had.  Unbelievable amount of flavor. 

Meal 5:

Remember yesterday’s vegan Protein-Packed Ancho Bean Burgers?  I took one to work for dinner!  Yup – I ate dinner at work.  My trainer appointment was at 9p and I had a Genius Bar appointment at 7p… no point in going home.

All wrapped up in a giant piece of chard with artichoke spread and radishes.

Meal 6:

This was a post-workout shake to cure my leg shakes.

I received a couple of protein powder samples from JBT Labs.  This was a chocolate flavor.  My first reaction was that it was ok… I decided to add chocolate extract to the mix, as well as some Stevia.  There was also 1/2 a zucchini, spinach, and ice in the mix.

At first I was worried because the blender made it frothy. Some people like that… I prefer creamy.

I stored it in the freezer most of the day, but it thawed a good bit between my errand and the workout.  Lo and behold, after it had sat all day the mix and de-frothed and was DELICIOUS.  It seems obvious now, but when faced with frothier powders I will let the mixture have time to rest and settle post-blend.

Meal 7:

Last meal = dessert.  I almost didn’t eat this one because I was so tired from the gym.  But… I knew my muscles would thank me.  Especially when I have an early morning workout planned.

Mashed up strawberries, vanilla protein powder, cinnamon, and almond milk.  Let chill in fridge for 30 mins or so.  Devour.  Go to bed.

This day of eats contained 6 different protein sources, and I managed 157g of protein.

Habit Formed

Hiking is habit-forming.

Ever since the awesome hike in Boulder at the Blend Retreat, I cannot get enough!

This weekend I took off for North GA to a place called Tallulah Gorge with Heather, Kirk, Lindsay, and Nancy.

The gorge is a 2 mile long, 1000 ft deep canyon about 90 miles north of Atlanta.   They even have a suspension bridge and  a sliding rock!

After the crazy hike to the bottom (think lots of sliding down rocks on my butt), we were wishing we’d thought to bring swimsuits so we could use the rock waterslide!

Next time it’s on.

See the bottom right pic in the collage above?  That’s a snake skin.  Snakes are the only downside to hiking…

One 4 mile round trip and about a million stairs later, we were STARVING.  Like good bloggers, we already had a lunch spot picked out.  By we I mean Heather.  Anytime she picks a place you know it’s going to be good.  Grapes & Beans (not to be confused with frank and beans) in Clayton, GA was no exception.

Small town cafes can be surprisingly good!  They had a gorgeous patio where we ate while listening to jazz music.  As an appetizer we shared a delicious curry hummus (hummus + curry = win).  For my entree I had a portobello pita sandwich with mixed greens, tomatoes, carrots, and herb-garlic tofu dressing.

Yes, the dressing was as good as it sounds.


Wednesday I leave for Argentina.  Exercise there will consist of mostly sight-seeing/walking/jogging.  I love my weight though, so these next few days I’m going to squeeze in some good strength training workouts.

This past week I had a decent week of workouts on top of the hike, so I treated myself to a rest day Saturday.  I’m beginning to appreciate their value, and so is my body.

Workout Recap (5/28- 6/3):

  • Monday – 4 mile run/walk, Back, 100 push-ups
  • Tuesday – Personal trainer (full body), 5 mile run/walk with Carol
  • Wednesday – Bis/Back with plyo, 3 mile walk, 100 push-ups
  • Thursday – Shoulders with plyo, 3 mile run/walk 100 push-ups
  • Friday – 3 mile run, Ab Ripper X, 100 push-ups
  • Saturday – REST
  • Sunday –  4 mile hike, 100 push-ups

Having worked 60+ hours in the past week, I’m so ready for vaca that it almost hurts.

Are you afraid of snakes?

Do you take rest days regularly?  Have you found them beneficial?  I need encouragement.

An Accidental 7 Mile Hike

What started out as a 4 mile hike turned into 7.

I was so inspired by the hike we took during the Blend Retreat that I couldn’t wait to explore some of Georgia’s trails.  My partner and crime and I took off for Kennesaw Mountain, the scene of a few bloody Civil War battles.

Despite it’s history, the mountain is quite beautiful.  The views of the skyline along the way are stunning, and you run across several historical sights, structures, and cannons.

Naturally, I had to pose on a cannon labeled “keep off.”

We wandered about, having a great conversation.  Such a great conversation that we almost missed seeing a deer!  She literally ran right across our path!

We were following our intended trail as best we could without much signage.   Well, without much useful signage.  We missed the first turn off for our planned loop.  Oops.  

See the pic below?  Those arrows didn’t appear to be pointing to any logical paths.

Thankfully, we had provisions – the extra 3 miles weren’t so bad after all.  In fact, I’d like to do it again and make a 10 mile loop!

A few saving-graces:

1. We were well-rested.

2. Provisions were provided (thanks Blend Retreat goodies – that ProBar hit the spot!).

3. I invested in trail running shoes.  They aren’t hiking boots but the extra traction was perfect for me.

4. My ego is huge.  There is no way I’d ever a) admit to taking a wrong turn or b) give up.

5. Amino Energy.  This stuff works.  I swear by it. Post Cinco de Mayo, thankyouverymuch.

Always a glutton for punishment, I’m going hiking again this weekend!
