Work it Out: My Fitness Journey

Life is a jungle gym.

And I like monkeying around.

One of the biggest lessons I’ve learned lately is life isn’t linear.  This sounds obvious even as I write it, but over and over I’ve been surprised when my carefully laid plains deviate from the path I’ve plotted.  Things change – you grow up.  You learn new skills.  You have setbacks.  Life happens.

Plan changes have happened in all aspects of my life – career, relationships, fitness, etc. – and I’m sure you’ve experienced the same.  I gt a lot of questions about how I began competing, so today’s Work It Out is my fitness journey.  My jungle gym.

Before I get into it, I want to be very clear that this is my path.  I’ve done things that were right and that were wrong.  Some are tender subjects; they were part of my journey.  I know you all have your own stories.  I simply submit that I hope no matter where you are in your journey, that you stay true to yourself and have FUN.  No regrets. 


I love a competition.  Sports, spelling bees,  pie eating… you name it, I’m up for the challenge.  It’s how I’m wired.  This has taken me on many a fun ride in my life.

Related to fitness, I have tried just about any sport you can think of.  I was lucky to have parents who encouraged me to sign up for all sorts of things – from ice skating to horseback riding to softball.  Softball stuck – I still play every season!

Years later I still morn the day that bat broke.

In my college years, I wasn’t very active unless you count partying and working.  I was a bartender.  I smoked, drank too much, and ate crap.  Not surprisingly, I gained the “freshman 15” (and the sophomore 15) and was always tired.  When my dad was diagnosed with terminal cancer something clicked in my head.  His disease wasn’t related to unhealthy living; he had actually lost a ton of weight through diet and exercise a few years prior and never smoked a day in his life.

The message that life is short came loud and clear to me.  While my dad was getting treatments he continued light exercise to keep strength that allowed him to turn 6 months into 4.5 years with the disease.  Through his example, I was inspired to clean up my act a bit and started workout out casually.  It wasn’t a total turnaround… but it was a start.

Fast forward a few years and I discovered a new passion – roller derby.  I only wish my dad had been around to see that!  I had a blast, met some really cool people, and skated about 12 hours a week.  It was thrilling.  I’d found a sport I loved again!

It also proved to myself that it is impossible to out exercise a bad diet.  I was doing intense workouts nearly daily but gaining weight.  I am not saying I was “fat,” but I wasn’t healthy and, more importantly, I didn’t feel good.

Looking at my unhealthy habits, I decided it was time for a cleanse.  It was the derby off-season and I took the opportunity to give my body a break from getting beat up (literally and figuratively).  21 days of clean eating was amazing for me.  I reset some habits, had boundless energy again, and I learned to love running.

Then came a new season of derby.  I was still doing really well with healthy living and had come back for the next season with more energy and passion and ever.  Whatever was in stow, I was ready to jump on it.  Life had other plans.  

I broke my jaw during an expo bout (bout = a roller derby game).  It was miserable.  I looked like Jay Leno and it cost me a pretty important trip in my new job.

6 weeks later my jaw was as good as new but I decided it was time to find something a little safer.  Plus, I’d lost a TON of weight from not being able to eat solids, which was not good for playing a contact sport.  I looked unhealthy, and I’d basically forgotten how to eat.  All I’d been able to have was soup, pureed oatmeal, and smoothies!

I struggled with the aftermath of that injury for a while.  Rather than derby, I ran all the time.  I was faster and going longer than ever, but – even though I was eating – my new teeny body couldn’t keep up.  When you are at a deficit and continue to workout at the level you were before… well, you are just going to get skinnier (read: my mom was worried sick).

I almost didn’t post this pic. It pains me to look at it… but it’s what happened.

Unrelated to that, my knee decided to give out.  I got half a mile into a run and was in so much pain I had to stop.  The doctor told me my PCL was hanging on by a thread and if I wanted to run distance again I’d need to have surgery.  That may have been the best thing that could have happened to me.

Time for a new hobby!  Instead of going under the knife, I decided to go the route of building.  Body building.  If I could build up my quads, my knee wouldn’t bother me in daily activity and running short distances.  I’d always loved lifting weights and had done a round or two of P90X, so it seemed to be the perfect next bar to grab.

Two and a half years ago I met with my trainer the first time and started down the path of something that would forever change my life.  Lifting feels like it did when I fell in love with softball – I look forward to going to the gym, I want to talk strategy with anyone who will listen… it’s my passion!

Since then, I’ve gained 10 solid pounds of muscle, 2 pounds of  boob, and competed in 2 figure competitions.  Much to my surprise I placed in both!  Rounds 3 and 4 are in 3 and 4 weeks… they are on very competitive stages, but I’m excited just to have the experience.  I’ve been watching the success of others around me and am stoked (do people still say that?) for the off season and a sold year of building.

I feel great: inspired, focused, and having fun.

The Bottom Line

Fitness looks like a million different things.  What you do isn’t important, as long as it’s something you love and something that contributes to your health.  Don’t be afraid to change your course as you evolve.  Yoga, walking, lifting, cross-fitting… whatever.  Find something you are passionate about and embrace it.

Having been both active and inactive to my detriment, I can promise you that finding balance and the thing that turns you on will make all the difference.  That high, that endorphin rush, is sheer joy.  It’s worth it to make time for it.

Pumpkin Almond Protein Batter

The closer I get to my competition, the more fun I have.

Ask me again in 2 weeks and I may tell you different.

Right now life revolves around the gym, food, and work.  I love all three of these, so why wouldn’t I be ecstatic?  Here’s how my typical Saturday goes down:

1. Wake Up, Eat, Get Dressed

I started my day with a delicious combo of oats, TVP, egg whites, cinnamon, ginger… and cheesecake.

The cheesecake part was thank to a Loranne Cheesecake Flavoring.  I topped with frozen cherries and a sprinkle of cocoa powder.

2. Go to Competition Suit Fitting

3. Posing practice and Back/Tri Workout

I did this at my trainer’s gym, which I love because it’s an actually a training gym vs. a fitness club.  The icing on the cake was that I was the only one there for the last half of the workout, which was amazing.

Clearly this called for a photoshoot.

4. Meet with 1st Personal Training Client

I am SO excited to be working with a former roller derby teammate.  She is going to kick ass in the gym too!

5. Grocery Shop

I hit out massive Buford Highway Farmer’s Market and bought a TON of food for less than $70.  Including this new to me fish – Sheepshead:

6. Cook Dinner

I couldn’t wait to try my Sheepshead, so that’s what I had.  It’s delicious – a mild, meaty white fish that’s low in fat and high in protein.

Seafood is one thing I prefer to prepare simply.  I baked this fish with lime and a dusting of Indian spices.  Eaten with bok choy sautéed with garlic, green onion, and coconut oil, and roasted portobello with a runny egg, and a slice of Ezekial.

7. Clean Out/Organize Work Emails

This was a productive activity while watching FSU beat the you-know-what out of Clemson.  Goooo ‘Noles!!!

8. Eat dessert

I decided to create a pumpkin protein bowl using the ingredients.   What resulted was a Pumpkin Almond Protein Batter that made me a little sad when I was over.  It tasted like cake batter.

Overall, it was a marvelous weekend!


Pumpkin Almond Protein Batter

Pumpkin Almond Protein Batter

  • 1/2 C pumpkin puree
  • 1/2 C Greek yogurt
  • 1/2 scoop Vanilla Almond Protein Powder 
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • Pinch of cloves
  • 5-6 drops stevia
  • 1 T unsweetened almond milk (or other liquid)
  • Optional toppings: cocoa powder sauce (cocoa powder + liquid + stevia), cherries, cacao nibs, popcorn

Combine everything in a small bowl and mix until smooth.  You may need to add more liquid to achieve desired consistency.

Top with your favorites and enjoy!

*You can sub any vanilla protein and add 1/4 tsp almond extract

Here’s to Kids Who Are Different

Why are we so judge-y?

 

Seems to be a theme lately.

Anytime you go against what people view as “normal” you’re going to get remarks.  I have no problem with that.  I actually welcome them because it opens the door for a conversation.  And I’ve always been a little different.  #strangebutgood

Kids Who Are Different

 

Story number one.  

I ran into a friend this weekend who wouldn’t quit when I explained that I couldn’t join them for burgers and drinks 3 weeks out from a competition.  (Granted, she ad been drinking and we all know that when you’ve been drinking you can’t understand why everyone doesn’t want to join that party.  I’m sure I’ve been guilty of this.)  

She kept on and said something along the lines of “How long are you going to do this?  It can’t be fun.  I’d be miserable.”  Something clicked in me and I told her I choose NOT to go eat burger because I am in a good place.  I am focused and happy.  In fact, I’m happier than I’ve ever been.  She paused and said ‘I can’t argue with that!”  And let it go.

 

Story number two.  

I was in the gym locker room in my office building yesterday and a lady complimented me on my workout.  She called me a beast AND said she liked my hair.   I was totally flattered and thanked her… but then she said something that really struck me.

She said “No homo.”  I asked her to repeat herself and she explained “I’m not gay or anything.”  Okay…

I went to Pride this weekend in Atlanta.  I had a blast.  I have no problem with who you want to screw/marry/raise kids with.  If you compliment me, I’m going to be appreciative and feel good about it.  I’m not going to assume you’re trying to get in my pants (although it’s been a while, so if you are trying let me know 😉 ).

I appreciate the compliment, but I’m sad that women feel the need to qualify compliment – giving and receiving.  I’m guilty too!

 

Lately it seems there have been more unnecessary remarks than usual.  Lindsay wrote a great post last week asking why it’s so hard to compliment women.  I replied to her, realizing I am guilty.  It dawned on me that I have an easier time accepting compliments from men than from women too.  My chiro said I had good arm muscle and I said “I know.”  A lady in the elevator complimented my hair and I said “Oh no! I need a cut! It’s bushy.  But thank you so much for being kind!”  WTF?!

My point is… I think there’s a lot of judging lately.  People bitching about the pregnant bodybuilder lifting weights.  The article about a super fit mom I posted last night.  The stories I relayed today.  I believe it comes from insecurity about ourselves.  Lacking confidence.

No matter who you are and what you do, there’s going to be someone with an opinion.  Their opinion doesn’t matter.  Know what matters to YOU, who YOU are, and why you live your passion.  Be confident in those things.

Breakfast:

Typical start to the day I had my Aminos and ACV morning cocktail.

My breakfast was one that I never wanted to end.  I scrambled egg whites with turkey, pre-roasted kabocha, and blackberries mashed into pico de gallo.  Then I threw it into an almost empty no salt cottage cheese container for my ride to work.

Mid-Morning Snack:

I discovered the gym in my office building.  It’s made my life 100x better.  As such, I’ve begun bringing my post workout smoothie to work.  Today I had a Strawberry-Lime-Jalapeno Smoothie.*

*I had a killer workout and was too hungry to bother with a pic.  Pretend this is it.  It all looks the same after I add the spinach.

Lunch:

Turbot with cucumber and a delicious new recipe.  I made Janet’s Tamarind Roasted Eggplant and Chickpeas.  Just a few tweaks, but it was absolutely delicious!

My modifications:

  • Replaced the coconut oil with 1/2 T of olive oil
  • Added ~ 1/4 tsp cinnamon
  • Reduced tamarind paste to 1T (the flavor is too strong to me)
  • To save time, I cubed the eggplant before roasting (only took ~15 mins; I prepped the rest of this dish while I was waiting) 
  • Added chickpeas directly to the post without pre-heating or mashing

 

Mid-Afternoon Snack:

I have a little yellowtail sashimi (SO good) and a little turbot… so this became a  “I only have bits of things left” meal.  With sweet potato, snow peas, and chipotle hummus.

Does anyone else snack on raw snow peas?  They are so sweet it’s almost like dessert.  Not really – dessert is scared.  But they are really good and make a refreshing end to a meal.

Dinner:

Dinner was an experiment gone right.  I baked tempeh with my Thai Peanut Sauce. It was delicious with red pepper and kale chips.

Dessert:

Giant bowl of Zucchini Bread Protein Batter made with Greek yogurt as the base.  Topped with balls of Quest.  These balls were made from the new double chocolate chunk bar, rolled up and baked (I still like the cookie dough best). Also topped with blackberries, popcorn, and almonds

Peanut Butter Pumpkin Pie Eggs

This is the fall of orange.

 

My least favorite color to wear, but one of the most delicious.

Unbelievably, my palms aren’t orange.  My whole body will be orange in 3 weeks.  It’s almost competition time!  Food wise, I can’t get enough pumpkin, winter squashes, sweet potatoes, and carrots (many of you understand my addiction).  I eat one of those at almost every meal!  Including breakfast.

The orange pumpkin pie filling mix above was added to eggs.  I mixed together pumpkin puree with spices… and then decided it was missing something.  It tasted too traditional.*

Since PB & Peggs is taken, I thought calling it pie was appropriate.  It tasted like pie.  Breakfast pie.

It also earned me some fun looks when I walked into my gym eating it Saturday morning (please note the environmentally friendly mug).  Marvelous, no?

Which brings me to more marvelous – I am working on getting my personal training certification!  Even better, I am doing it though Lee Haney’s IAFS program.  I got to spend 8 hours at the gym learning from him on Saturday.

In case you don’t know Lee Haney, he’s an 8x Mr. Olympia.  This man is legit.  I love his real approach and emphasis on fueling with natural, whole foods.

In case the scramble wasn’t enough pumpkin for you, check out the Peanut Butter Pumpkin Pancakes my #strangebutgood partner in crime, Heather, posted this weekend.

I made them Sunday morning.  My modifications: reduced oats and peanut flour to 2T each, increased egg whites to 1/4 C, and used cottage cheese instead of yogurt.  For syrup, I mixed sugar-free syrup, pumpkin, and cinnamon.

This weekend of pumpkin was beyond marvelous.

Peanut Butter Pumpkin Pie Eggs

Peanut Butter Pumpkin Pie Eggs with Pear

  • 1/4 C pumpkin puree
  • 1 T peanut flour (or peanut butter)
  • 1 T unsweetened almond milk
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • Pinch of cloves
  • 4-5 drops liquid stevia
  • 1/2 C egg whites
  • 1/2 large Asian pear, diced

 

In a small bowl, combine first 7 ingredients.

Scramble the eggs until almost done.  Stir in the pumpkin mix and pear, cooking ~1 min to warm through.

Transfer to plate and tops as desired (I used additional pear and almonds).  Enjoy!

I feel like I went 100 miles an hour all weekend, but in a good way.  It’s fun to look up and realize you’re exactly where you want to be.

PB & Pear Eggs + WIAW

Technology gets me excited.

 

Clearly I need to get out more.

Being a figure competitor means my food scale is my most-used kitchen tool.  I need to weigh my proteins to make sure I have enough, and I can more easily get accurate serving sizes for other items.  Even if you don’t eat like a crazy person, scales are a HUGE help in baking.  I no longer use measuring cups!

I read about this Countertop + Prep Pad with glee.  This device can determine the exact nutritional content of whatever you’re making and track your eating habits.  Beyond the traditional accurate weighing of ingredients, it has a BlueTooth connection and an app which displays your data.  You place food on the scales, indicate what it is, and the app shows the nutritional data (with macros, micros, and ingredients).  It even tracks goals for you!

It’s available to pre-order now for $149.95 (delivery in November).  I’m soooooo tempted…

(I randomly ran across this… they didn’t pay me or anything.  It’s just cool.)

This is WIAW I am back to “normal.”  I food prepped well this week, and was able to keep on track through back to back meetings.  It’s a fun busy though. 🙂

Breakfast:

Ever the creature of habit, a had my Aminos and ACV morning cocktail.  Sam posted she’s been starting her day with ACV for a year… made me realize I’m at about 2 years.  Whoa.

My meal was a win.  Normally I go to bed thinking about breakfast, but last night I didn’t have an clear vision.  It came in the morning though!  Pear.  Cardamom.  Eggs.  Peanut sauce.  Totally normal.

Cardamom is one of those “a little goes a long way” spices, but just a pinch can make a dish something spectacular.  Especially when that dish involves pear.

I plated this for a pic before pouring it into a solo cup to-go.  See bottom of post for the prettier pic and full recipe. 

 

Mid-Morning Snack:

Crab salad with arugula, cherry tomatoes, hummus, and pepper.  I love crab.  I really love crab that is 20% off.

Lunch:

Dijon Baked Chicken (so glad I made a TON of froze it), roasted bok choy, and yuca fries with salsa.  I am newly obsessed with yucca fries.

Yuca (also known as Cassava) is a thick, starchy tuber.  It’s sort of like a potato, but a little sweeter and drier.  It’s also really hard to slice… but, like kabocha, it’s worth the effort.  I sliced mine into fries and roasted it on 425 til it was crispy (maybe 25 mins?).

Mid-Afternoon Snack:

I make a lot of food… which means sometimes I forget about recipes.  This week I remembered one I really loved: BBQ Cauliflower Bites.  Yesterday I ate it at work with asparagus and a veggie burger with beer mustard.  Happy girl, I was.

Dinner:

Dinner was a pleasant surprise.  I was SO SORE after leg day that I decided to take a rest day and detoured to Whole Paycheck Foods on the way home for some fresh fish.  I ended up with flounder, a fish I’d never prepared at home before.

I baked my flounder for 10 mins at 425 with fresh lemon, pepper, and lemon-thyme a co-worker brought me from her garden (thanks Allison!).  Eaten with half a roasted yellow acorn squash and broccoli slaw over a bed of arugula.

Dessert:

It’s finally feeling like fall in Atlanta, so a warm dessert was in order.  I Made my 150 Calorie Microwave Chocolate Cake (using pumpkin puree instead of applesauce) and topped it with berries and pumpkin fluff.

Pumpkin fluff is amazing.  It’s just equal parts pumpkin puree, Tru Whip (cleaner cool whip from WF), cinnamon, and butter extract.  Just do it.

PB & Peaggs

  • 2/3 C egg whites
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • Pinch of cardamom

For the Sauce

  • 1 T peanut flour (or nut butter)
  • 1 T unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 3-4 drops liquid Stevia
  • 1 small pear, chopped

 

Scramble together then first 4 ingredients.  Cook over medium heat until almost done.  Meanwhile, mix together peanut sauce.

Add the peanut sauce and pear, stirring to combine.  Cook just long enough to warm through. 

Devour.

Fun with Supplements: SD Pharmaceuticals

I’ve dedicated a post to the supplements I take in the past, but wanted to do a quick update today.  Warning: this Work It Out is largely educational/exploration.  If that bores you, check out this past post on The Gun Show.  Biceps are my favorite thing to work out. 🙂

You guys know by know that I don’t shy away from experimenting with my diet and routines.  When I was given the opportunity to try out some supplements from SD Pharmaceuticals, I was intrigued.

Some of the language used to describe the benefits gave me pause because I’m not on a weight loss mission.  However, they have done some fantastic in-depth research and use the highest quality plant-based ingredients.  The research on added benefits of these supplements to bodybuilders made me decide to give it a go.

Here’s what I was sent:

  • Dendrobium 600 – Derived from orchids; used in Chinese medicine as a tonic and strengthener; may increase congition, and promotes the health of the stomach, kidney, and lungs
  • Diindolylmethane – In the genus of plants that includes broccoli, cabbage, Brussels sprouts, cauliflower, and kale; supports healthy estrogen metabolism and hormonal balance
  • Garcinia Cambogia – Comes from a pumpkin-shaped fruit (yay pumpkin!); supports healthy serotonin levels and help reduce appetite; may impact enzymes related to fat metabolism
  • Green Coffee Bean – Green coffee beans (recently made famous by Dr. Oz) are coffee beans that have not yet been roasted, thus having higher chlorogenic acid levels; that component is thought to be responsible for inhibiting fat accumulation and assisting weight loss, as well as providing healthy antioxidants

So does it work?

I don’t think I’ve been on them long enough to have major strength gains.  I haven’t noticed a weight loss or a reduction in appetite.  Again, that’s not my goal.  I am extremely active and don’t have weight to lose, so I think my body overrides that effect.  (Others have noticed bigger changes in terms of weight loss; check out this review.)

I HAVE noticed a general mood lift, which I attribute to the Dendrobium and Garcinia.  I have more energy, but not in a caffeinated-I have-the-shakes-and-need-to-do-all-the-things way.  I also didn’t have any trouble falling asleep after beginning these.  Energy + sleep = awesome.

There is NO magic pill.  These things may assist you in reaching goals, but the only sure-fire way to get/stay fit is to eat right and exercise.

Sunshine and Pumpkin Pan-lettes

It’s a sunshine-y day!!!

Hey, we’re supposed to start the week on a positive.  #cheese

This weekend was beautiful and sunny in Atlanta.  I spent Saturday morning working out, then did some shopping. I purchased fresh eggs from the farmers market before heading to Fresh Market for some goodies:

I really love the wraps and the lentil hummus!  Hatch chilies aren’t new to me, but I was thrilled that they were grilling them fresh outside the store to sell.  Score!  They went really well with the shrimp I bought (pre-cooked and tails removed – I can’t stomach doing those myself just yet).

Then I got dressed to watch two of my favorite people get married.

Admittedly, I was a little anxious about the reception.  Open bar, lots of tasty reception food… and cake.  I mustered all my motivation and commitment.

I knew I wouldn’t last without my own treats, so I came prepared.

Bring your own food to a wedding?!  Why not?  I made a quick turkey salad with my hatch chilies, parsley, and tomato.  That was tossed in a sauce of nutritional yeast, apple cider vinegar, cumin, and smoked paprika.  I also brought some green bean chips, a chocolate calcium disk, and kombucha.  The kombucha was awesome to have so I felt like I had a “drink.”

Confession: I took a teeny cake sample.  It was worth it.  So there.

Sunday there was more marvelous with a great workout followed by a trip to Whole Paycheck Foods.  On bike.

It was supposed to help with self-control… but really it translated to weighted cardio on the ride home.  It’s 6.5 miles round trip!  The need for kabocha is not to be denied!

See that beer in the middle?  It’s a pumpkin beer.  I’m afraid it will all be gone by the time I can drink it after my competition, so I asked the beer man (Max) to recommend the very best.

I purchased a single and it will remain in my fridge until mid-November.  Wish me luck.

1. Do you believe in aliens?  Why or why not.

I don’t know… I’ll say yes.  Because who are we to think we’re all that’s out there?!

2. If you could do ANYTHING in the world and have that be your career and your skills, paycheck, or anything else was not an object… what would you do?

I’d travel.  That my one day get boring, but being able to explore and experience the world without the chains of time or monetary needs is my idea of heaven.

Like that time I ended up in Chile by accident and found myself on board a US Navy ship… 

3. What is your earliest childhood memory?

That’s tough… I don’t remember?  Maybe dancing around the living room to old records at Christmas time with my dad.

How about last night?  That’s what I have a picture of.  😉  It was one of my new wraps spread with salsa and topped with shrimp, broccoli slaw, and a little local #yolkporn.

5. What was the most fabulous vacation you have ever been on in your entire life?

Italy.  2 weeks traveling to small towns on a self-guided food and wine extravaganza.  I almost didn’t come home.

6. If you HAD to give up one of your senses (touch, taste, sight, hearing, or smell) which would it be?

NOT taste or smell!  Maybe hearing?  It seems like that’s the easiest one to accommodate for, especially if you’re able to hear prior.

I’d rather not hear half the shit that comes out of people’s mouths anyway… 😉

7. Would you rather always be super freezing cold or ridiculously overheating hot? (and no, you can’t have a warm blanket or AC to combat the issue!)

Bring on the heat!  I hate being cold.  I have Raynaud’s Disease and it’s uncomfortable and creepy when my fingers go white-purple.

8. Why did you start blogging?

My mom told me to.  Seriously.  I was reading a lot of blog and getting inspired to make all of this #strangebutgood stuff and my mom said “you should start a blog!”  So I did!

9. What was the last compliment you received and what was the last one you paid to someone?

Yesterday I Instagrammed a sneaky selfie from the gym and my girl Meg sent me the sweetest text that made my night:

“Wow girl you’re looking phenomenal.  Be proud of yourself.”

*Please don’t be offended, Zumba people.  I just thought it was funny.  I tried it at Blend and it was HARD for this white girl.* 

I’m struggling through this prep and someone noticing progress that’s hard for me to see in myself feels really, really good.

I paid it forward by telling a girl in the elevator that the homemade (paleo!) fudge she was bringing up looked amazing.  Then I tried to steal one.

10. What is your most favorite thing to eat?

I hate this question (sorry Janetha!).  I love different foods for different reasons, and it depends on the mood!

Right now I’m digging the Pumpkin Pan-lette (remember when I did it with sweet potato?) I made Saturday morning.  There’s no flour in it – the base is just pumpkin and egg whites.  Like a pumpkin omelette, but cooked like a pancake.  Pan-lette. Get it?

Whatever you call it, it is a fluffy cake of fall deliciousness.  I topped with a peanut flour sauce, which we all know I’m addicted to.


 

Pumpkin Pan-lette

Pumpkin Pan-lette

  • 1/2 C pumpkin puree
  • 1/2 C egg whites
  • 1/2 tsp butter extract (or vanilla)
  • 1/2 tsp pumpkin spice
  • 1/4 tsp cinnamon
  • Pinch of cloves
  • 4-5 drops vanilla liquid stevia (optional)

For the sauce:

  • 1 T peanut flour
  • 1 T Greek yogurt
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 2-3 drops vanilla liquid stevia
  • Almond milk or water, to thin

Combine all pancake ingredients into a medium bowl and stir until smooth.  Pour into a prepared (I used PAM) skillet and cook as you would a pancakes (~2-3 mins on each side).

Note: I made this as one huge pancake, but I’d advise you to turn it into 2.  It required some serious acrobatics and two spatulas to flip.

Meanwhile, stir together sauce ingredients in a small bowl.

Plate your pie-cakes, top with peanut butter syrup, and enjoy!

What I Ate in San Francisco (from home)

Leave it to me to go to a food city and bring my own.

 

Not my first choice.

A HUGE part of the commitment to compete is a commitment to your diet.  It’s not easy.  It’s not always fun. HOWEVER… abs are made in the kitchen.

This trip to has been especially hard for me because it’s my first with my new job… and I have a really fun team to hang out with.  So far I’ve been good, even working out twice in 12 hours due to scheduling.

Preparation is key.  This trip I packed up some old staples.  These are items that “save” me:

Travel foods

  • Homemade fro-yo: I take single serving containers of plain Greek yogurt, add my on mix-ins, and re-cover them to freeze.  Freezing the yogurt makes it easier to get through security (it’s a solid) and it acts as an ice pack for your other foods.  And it’s tasty.  This week I had peanut flour-strawberry and vanilla-mango.
  • Packaged foods: these are a great to have on had.  I pack up single-serving protein powders, bars, stevia, tuna, and rice cakes.
  • Oatmeal: Usually I plan to get this from room service, but I wanted to try something new.  I pre-measured out my oats and adding in ginger and cinnamon.  All I need to do is add water/protein powder/hotel fruit to make oatmeal in my room!
  • Jerky: I don’t often eat jerky, but Perky Jerky offered to send me sample of their (preservative-free) product.  I really like the turkey version only has 110 mg of sodium!  Score.

I’ve done detailed travel posts before, so this is WIAW travel food-edition going to be more of an overview.  I did manage some new (strange?) travel eats this time around.

On the Plane:

Overnight oats in a jar make getting up early just a little easier.  These were packed with fig, cinnamon, ginger, and vanilla protein powder.

Yes, they made it through security.

Round 2 on the plane was the baked chicken from my food prep (recipe coming tomorrow), carrots, and airplane pretzels.

Hotel Breakfast:

This has become an art.  The Westin St. Francis has been fabulous with my crazy food requests.  They brought up apple cider vinegar so I could have my morning cocktail!!!  I downed that along with half a muffin (brought from home) to fuel a morning workout.  Check out the view I woke up to!

Then the full meal was delivered: plain oats with a side of berries, cinnamon, and coffee.  I mixed in my own protein powder, and added coffee to thin it out.  Perfection!

Other Mini-Meals:

You can actually find acceptable food to eat in cities like SF.  I got to enjoy a kale-barley salad with chickpeas and shrimp for lunch on our first day here:

This was the peanut flour and strawberry fro-yo creation I brought from home.  Can you tell how fantastically frozen it was?!

I ended up having to do my workout at midnight east coast time… this was just the treat I needed after.  I spent half the workout thinking about it.

This next snack happened at the conference.  People seemed a little surprised when they discovered I brought the egg from home.  I can’t imagine why…

It turns out hard-boiled egg travels really well!  Tomato Brownies travel well too.  I took it straight from my freezer from home, and by day two it had thawed and tasted delicious!  I didn’t reveal the secret ingredient to my co-workers.  They’d have been too jealous. 😉

Of course, there have been other eats.  When we go to restaurants I order veggies with a plain grilled protein or I bust out my “emergency” tuna.  It’s really no too hard too eat out (temptation side).
