Shrimp Teriyaki Stir Fry {Recipe}

July 25, 2016 By Laura

We’ve been on a bit of an Asian food kick.

Trashy takeout teriyaki, to be honest.

I finally decided to class it up and make a healthier version of our current teriyaki addiction using our Sizzlefish stash.

When you eat the take out variety of teriyaki, you’re limited to chicken.  At home, you can teriyaki any protein you like.  I chose to make a Shrimp Teriyaki Stir Fry.

This yummy teriyaki stir fry recipe means you'll never need take out again. The marinade for the shrimp is just 3 ingredients!

Middle Eastern Spiced Chicken Skewers with Herbed Tahini Sauce

July 22, 2016 By Laura

These flavor-packed Middle Eastern Spiced Chicken Skewers with Herbed Tahini Sauce are the perfect summer dinner on the grill!

Middle Eastern Spiced Chicken Skewers with Herbed Tahini Sauce - these make a great summer dinner on the grill!I needed a vacation from my vacation.  So I took one.  I returned from my birthday adventures on Tuesday… but I was SO tired I couldn’t think of blogging.  Instead, I hung out with my sister who was in town, caught up on work, got back to the gym, and made something tasty – Middle Eastern Spiced Chicken Skewers with Herbed Tahini Sauce.

Like many Middle Eastern dishes, this one has quite a few spices in it.  Don’t be scared.  It doesn’t take long to throw a bunch of spices in a bowl, and the flavor punch is awesome.

Try these flavorful Middle Eastern Spiced Chicken Skewers with Herbed Tahini Sauce on the grill this summer!

This recipe’s bonus is that you’ll have leftover spice blend AND tahini dip to use in other dishes.  The spice blend makes an awesome addition to a frittata, and that tahini is really good mixed with shredded chicken or turkey for lunch.

I guess I’m still “vacationing” because I don’t have much more to say… it’s been a wonderful start to my 33rd year.  Thank you for all the birthday wishes.  xoxo

I Hate Losing + San Diego Ball Park Food {WIAW}

July 13, 2016 By Laura

Serena Williams is a beast.

(In the best way possible.)

I was on the elliptical (effing cardio) reading an interview with Serena Williams… and nearly stopped in my tracks when I read this quote:

I hate losing more than I like winning.”

I hate losing more than I like winning.…

Competitive Women Aren’t Bitches {WIAW}

June 29, 2016 By Laura

I’m the most competitive person I know.

With the exception of Vegas.

As women, it seems we often have a hard time with competition.  We’re too worried about being nice, well-liked, feminine… it reminds me of a quote I read long ago that went something like: Why is a woman a bitch and man is strong?

One of the most competitive women I’ve ever seen died yesterday at 64, just 5 years after being diagnosed with Alzheimer’s Disease.  She even coached and won the year she was diagnosed.  That’s something I loved about Pat Summitt.  She wasn’t afraid of being competitive and fighting to win.  She knew that competitive drive is what makes you great.

You can't always be the most talented person in the room, but you can be the most competitive. Pat Summitt

Walnut Pesto & Shrimp Cauliflower Crust Flatbread {WIAW}

June 22, 2016 By Laura

We’re big pizza fans.

But who isn’t?!

When I saw that this month’s Recipe Redux topic was to celebrate another ReDuxer, I knew immediately I was going with the pesto flatbread from the walnut round up.

At least once a week some form of pizza happens in my house.  Vegas would eat if for every meal if I let her!  Pizza, flatbread… same difference, no?  I added my own #strangebutgood twist by making it a Walnut Pesto & Shrimp Cauliflower Crust Flatbread.

Walnut Pesto & Shrimp Cauliflower Crust Flatbread - if you're a pizza-lover, you have to try this healthy, dairy-free twist on crust!

Hate Solves Nothing #prayfororlando {WIAW}

June 15, 2016 By Laura

I’m at a loss for what to say this week.

This weekend doesn’t seem real.

Hate has caused a lot of problems in this world, but it has not solved one yet.

What happened in Orlando… I just can’t comprehend how someone could be so evil.

Vegas and I were at THAT CLUB just 8 months ago.  We’d gone to Orlando to play in a softball tournament.  Our team won second place, and that’s where we went to celebrate.  We danced all night, Vegas blew out the heel on her shoe, we hung out on their patio, I used that bathroom a few times having had far too many bourbon and diets… it was so much fun.

Canned Wine, Cardio, & WIAW

June 1, 2016 By Laura

I’m starving.

Thank you, incessant cardio.

I began my day meeting a new client, then I had to go to Whole Foods.  There was one right next door to my meeting… I couldn’t help myself.

It was a new-to-me location, so I wandered aimlessly for a good while taking pics of fun things like sparkling wine in a can.  I miiiiiight have purchased a 4-pack.  Curiosity killed the cat.

Sparkling wine in a can - don't judge!
