Mexican Quinoa & Sweet Potato Casserole

New kitchen methods fascinate me.

The stranger the learning, the better!

This week’s ingredients aren’t necessarily strange, but the way I cooked it was strange to me.  It’s a quinoa casserole… but you don’t have to cook the quinoa first!  Perfect for the lazy chef.  Like me.

For some reason I have a mental block about cooking grains.  It seems like SO much effort.  I know this is totally irrational, and I make other things that take much longer.  It is what it is.  When I saw this recipe from Lee where she simply baked the quinoa uncooked, I knew I had to try it.

Mexican Quinoa and Sweet Potato Casserole

I used Mexican flavors here, but I’m excited to try the method with other flavor profiles (French is next on the list!).  It’s one of those magical recipes that seems like it took a ton of effort, but is incredibly easy.  It’s a one dish meal – I just tossed everything in a bowl to mix and transferred it to the dish.

Random story about my dish – it was just returned to me by a friend.  She’d had it for 2 years from when I brought over these Mexican Black Bean Brownies to an Oscar party.  LOL!

Mexican Quinoa & Sweet Potato Casserole

If you like heat, you’ll love this.  If you don’t, I’d keep the paprika but leave out the cayenne.  The smoked paprika is a must for me.  I love that smokiness with the Mexican spices and the slight sweetness from the sweet potato.

Between the bean and the quinoa, this makes for a fantastic protein-rich vegan dish!


Mexican Quinoa & Sweet Potato Casserole

Mexican Quinoa and Sweet Potato Casserole

  • 1/2 C quinoa, uncooked and rinsed
  • 1/2 C vegetable broth
  • 1/2 can (8 oz) salt-free black beans, rinsed
  • 1 can (15 oz) diced tomatoes
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp cayenne
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1 small white (or orange) sweet potato (~275g), diced

Preheat oven to 350F.  Prepare a baking dish with nonstick cooking spray.

Place all ingredients into a large bowl and miix until everything is evenly combined.  Pour into baking dish, spreading evenly to combine.

Cover with foil and bake for 75 mins, or until sweet potatoes are tender and quinoa is cooked.

Makes 9 servings.

Dijon Thyme Turkey Meatballs + WIAW

Meatballs are the ultimate winter food.

Too bad it’s normally more like spring by now!

With the weather still cold, I prepped a big batch of balls this week.  Rather than going the traditional route, I opted for a mustard-laced turkey version.

These Dijon and thyme balls were full of flavor.  Because I baked them, they were light enough not to put me to sleep after lunch.

Thyme is a herb that I love but rarely think to use.  It retains a fresh flavor even after cooking.  It’s pungent but not offensively so.  With the spiciness of Dijon, it made for the perfect turkey meatball mix.

7 Tofu Meatless Monday Recipes

I’m a big meat eater.

That’s an understatement.  It’s also what she said.

Oddly enough, I went vegetarian for a while and even vegan for a hot minute.  I realized my body does better with meat in my diet, but I learned a LOT about ingredients and creativity from those meatless months.

This Meatless Monday MMAZ Heather chose one of my favorite ingredients: Tofu.  In honor of my meat-free days, I opted to do a round up of some of my favorite tofu recipes.  I still include these in regular rotation!

5 Benefits of Drinking Water + WIAW

How much water are you drinking?

Some days I get half my steps in walking to the bathroom.

When I first met my trainer, he told me I needed to drink at least 124 ounces of water a day.  I’m not sure what I was drinking before, but it probably was barely half of that.

It was really hard at first, but after about a week my body adjusted.  I went from feeling like I was going to float away to finding myself craving more!

Waffle Tacos + WIAW

The green-eyed monster has struck.

 

Isn’t envy a deadly sin?

I see waffles everywhere.  All the cool kids are posting pics on Instagram.  I am big enough to admit… I’m jealous!  I know I could purchase a waffle maker, but I just don’t have room for more in my kitchen.  They aren’t really that different from pancakes and I can make those quite easily.  (<–That’s what I keep telling myself.)

Then I saw this:

Taco Bell announced it is coming out with a waffle taco; the “AM Crunchwrap.”  No, I don’t want Taco Bell.  I’ve actually never eaten at Taco Bell.  What I is to make my own Mexican waffle!!!

This weekend might bring a waffle maker to my house.  This WIAW I (happily) settled for breakfast nachos.

This WIAW I felt a little scattered.  Between a dentist appointment and work, I actually almost forgot to eat!  Almost.  Who could forget about a sandwich on pretzel bread?!

Sriracha Tours + Accidentally Gluten-Free WIAW

Working from home was nice, but the cold was no bueno.

This week we are finally thawing out down South (sorry about your luck, in the Northeast).  While I hope it’s here to stay, I find myself craving a getaway.  To some place thing warm.

Now that they aren’t shut down, California’s Huy Fong Foods factory (a.k.a. where Sriracha is made) is giving tours of the factory!  It’s purportedly to educate people about “how our Sriracha is made and how delicious it smells” after near-by residents complained that the spicy Sriracha production caused “unpleasant odors and burning eyes.”  Wusses.

A Morning Cocktail + Fitmark Giveaway

My city is shut down over the winter weather.  After the disaster 2 weeks ago, government leaders and business are taking no chances.  We shut down yesterday… when nothing happened but rain.

Today promises to be more entertaining, but with nothing to report as of the time of this post… we’ll get right to the food and the giveaway.


This WIAW was unexpected work from home day.  I love these days because it means I have time to put together meals and eat off of real plates!  It’s the small things…

Cod is a great choice for when you need something light.

 

By now, everyone has heard that a good diet needs to contain at least two portions of fish.

According to the NHS, we all need to start eating more fish, not just because they’re great sources of vitamins and minerals, but also because oily fish like salmon and fresh tuna are also high in long-chain omega-3 fatty acids, which the American Heart Association says is excellent at reducing risk of heart disease and arrhythmias….
