Attacking a Cold + WIAW

I will not get sick. I will not get sick.  I will not get sick.

 

Clicking my heels together 3 times…

I woke up Tuesday with a scratchy throat and stuffy nose.  I spent all day feeling like I was about to cough… you know, that tickle in the back of your throat?

Time to attack.  My solution (I hope):

  • Juice Plus – These are my ‘vitamins.”  It’s awesome because the pills are made from fresh fruits and veggies.  They juice them and then dry it into a powder, so you’re really getting a whole food-based pill vs. a vitamin (no, they don’t give me kickbacks… but they should!)
  • Bragg’s Apple Cider Vinegar (ACV) – You guys know I love this stuff.  In addition energy and digestive benefits, it is alkalizing.  this is important because when you’re sick your PH balance is off
  • Water – LOTS of water helps flush out the germs
  • Luden’s Wild Cherry Throat Drops  – I’m pretty sure these don’t do anything… but they taste good and have a comforting factor since my mom used to keep them on hand when we were kids #sorryimnotsorry
  • Zinc – Some studies have found that Zinc reduce the length and severity of a cold… some found that it does nothing.  I’m covering all my bases
  • Vitamin C – Also questionable, but it potentially can shorten the length of a cold.  Again, covering my bases
  • Bourbon – KIDDING.  I’m not drinking away my symptoms… but I have a friend whose grandmother says to take a tablespoon of bourbon and a tablespoon of honey every hour until you feel better or pass out.  In reality, I’m infusing this bourbon for a special Christmas cocktail… TBA

Today I don’t necessarily have holiday recipes to share… but I have recipes creations!  I’m exercising my Kitchen Workout (have you joined?), especially now that I’m feeling the ick.  Lots of  clean eats to heal and ward off sick germs.  During cold and flu season, I think this still fits with Jenn’s What I Ate Wednesday theme this month:

Meal 1:

This was my first ACV of the day: my morning cocktail (mix of Apple Cider Vinegar, Glutamine, and Fitmixer Aminos).

For breakfast I was inspired to repeat the cauliflower “grits” I shared Monday.  Carol suggested I add nutritional yeast to make cheese grits!  I followed the same recipe, but added a tablespoon of nutritional yeast and some cayenne (to help clear out my nose).

Served with a toasted P28 protein bagel and a runny egg, cooked in a bit of truffle oil.

 

 

Meal 2:

Goji berries have tons of antioxidants   I re-hydrated some to plop into a bowl of cottage cheese (yes, I am aware that diary isn’t good for congestion, but it’s what I wanted… and it’s about to expire).  With all the add-ins this tasted like a bowl of pie!

Goji Berry Pie

Goji Cottage Cheese Pie

  • 1/2 C no-salt cottage cheese
  • 1 T vanilla protein powder
  • 1 T goji berries (re-hydrated in water)
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • 1-2 drops english toffee flavor concentrate
  • 3-4 drops vanilla stevia
  • Blob of Sunbutter

 

Mix together in a small bowl, adding milk/water as needed.

 

 

Meal 3:

The worst part about feeling under the weather is not wanting to eat.  I LOVE to eat.  Just not right now.

But I forged on.  I used to love making pizza crust out of Kamut flour, and decided that would be a nice comfort food.  Until I ruined the crust by letting it stick in the pan.  Kamut toasts it is!

 

Served with a warm salad.  The dressing was a mix of ACV (heal me, vinegar!) and red pepper hummus.  My toppings were swordfish and sautéed red peppers, baby bellas, and onion.  I very lightly sautéed my spinach at the end.

Did you know that cooked spinach increases absorption of its calcium and iron?

 

 

Meal 4:

If you follow me on Instagram, you saw I got a little package in the mail after arriving home from the gym:

 

My Bulu Box this month contained C-Spray!!!  Perfect timing.  I don’t know if it works yet, but it was pretty tasty.

After my spray, I made a random post-workout meal.  Tuna burger from Whole Foods with sriracha, cucumber with fresh ground pepper, and a sweet potato topped with peanut butter.

 

I always eat the skin of my sweet potatoes for the fiber.  Plus I like it.  Is that odd?  I thought everyone did until someone at work commented…  Is this a Strange But Good?

 

 

Meal 5:

I wanted black bean soup.  I wanted cabbage.  I wanted brussels sprouts.  I had no patience.  This could only end in a stir fry.  It was a hodge podge… and it was pretty tasty!

 

Mexican Trash-Fry

  • Brussels, chopped
  • Red Cabbage, rough chopped
  • Shallots, diced
  • Garlic, minced
  • Tempeh
  • Black beans, no salt added
  • Apple Cider Vinegar
  • Cumin
  • Cayenne
  • Coriander
  • Cilantro

 

Start sauteing the brussels first, as they will take the longest.  I didn’t measure, I just tasted and added.  It’s be best kind of cooking.

 

 

Meal 6:

More C-Spray, followed by eggs.  PB & Ceggs, topped with muesli.  Except I didn’t make them vegan – I used real eggs.  and I used caramel extract rather than maple.  Yum.

 

 

Meal 7:

I managed to take a break from the 150 Calorie Chocolate Microwave Protein Cake.  I had to finish that cottage cheese!

It was a random mix, but one of my favorites:

  • Cottage cheese
  • Cocoa powder
  • Chocolate protein powder (1/2 scoop)
  • Cinnamon
  • Cherries (melted in the microwave)
  • Cake of rice

 

Brought to you by the letter “C.”

And yes, I ate out of the same bowl 3x today.  Anything to avoid dishes.

The protein count for the day: 165.0g.  A little low, but I’ll get it back tomorrow when all my “cures” work.

Kiss My Cauliflower

Do you ever wonder where expressions come from?

Rough as a cob?  Wait… I know where that came from…

In the South, but “kiss my grits” is accepted as a nicer way for asking someone to kiss your hind end.

I’m a terrible Southerner.  I don’t sugarcoat.  I’ll tell you to kiss my ass if you deserve it. 😉  Food preferences are another way in which I fail as a Georgia girl.

Things I don’t like:

  • Cornbread
  • Fried okra (or any okra)
  • Honey Baked Ham (it’s at EVERY potluck)
  • Jell-o molds
  • Ambrosia
  • Green bean casserole
  • Grits

Correction.  I like grits my way: strange but good.

In my family Christmas brunch is the most anticipated meal.  We break out the mimosas, crank up the Christmas tunes, and create a meal that is much larger than necessary.  Growing up, a traditional Southern brunch in my house included biscuits, hot choc (chocolate gravy), bacon, eggs, and grits.

The fun thing about my family is that we don’t feel the need to stick to tradition.  Variety is the spice of life!  Therefore, this Christmas morning instead of suffering through the sand-like, over-buttered Southern classic, I’ll be enjoying cauliflower.

Cauliflower Grits

I’ve long been a fan of using cauliflower as a rice or flour substitute.  It provides a neutral, low carb base for virtually any flavor.  I’ve used it for Thai-inspired bowls, my favorite Mexican Rice Bowl, and even as the base for pizza crust.

As I researched Christmas morning breakfast ideas, I thought why not use it as grits?  Cauliflower even looks like grits after a good pulse in the food processor.

Cauliflower Grits

Admittedly, I was even a little surprised when this strange but good take on grits actually worked.  You can add any flavors you like.  I was feeling a savory breakfast and added lots of black pepper and garlic.

It’s also much easier than grits.  There are no concerns about it sticking and you don’t have to wait 25 mins.  My “grits” were done in less than 10 minutes!

Cauliflower Grits

Topped with a runny egg and served with a vegan maple sausage and toast, this is a classic breakfast will never be the same!

Cauliflower Grits

Kiss My Cauliflower

  • 100g cauliflower florets
  • 1/4 C unsweetened almond milk
  • 1/4 tsp butter extract
  • Garlic powder
  • Freshly ground black pepper

In a food processor (or Vitamix), pulse the cauliflower florets until they are fine, like couscous or small rice.

Grease a skillet  (I used PAM) and place on stove top over medium-high heat.

Pour the cauliflower “grits” into skillet, add milk and butter extract (you can also use “real” butter).  Stir until combined.  Add garlic powder and pepper to taste.

Cook until the “grits” warm and become tender (~5 mins).

Taste and adjust seasonings as needed.

Makes 1 serving, easily multiplied.

My heart goes out to the community and families affected by Friday’s tragedy… I was going to post about it but cannot find the right words.  Take a moment today to send thoughts of light and courage to those that lost, and to appreciate all that we have.

Chili-Lime Crab Salad + WIAW

I’m full of it.

 

I also love a dual meaning..

No, today I am full of protein and carbs.  Last week I talked about my new, carb-heavy plan in effort to gain.  I also get a daily “cheat” vs. the one cheat day I was getting before.  At first I thought this was awesome, but I now realize that one full day of cheats was better.  It gave my brain a break from measuring out fat-carbs-protein 7x a day.

Which brings me to one reason I love my trainer: he’s open to changing strategy.  We talked about diet last night (during a brutal leg workout), and made a couple of adjustments:

  1. I don’t have to eat if I’m miserable – 6 meals is ok as long as I’m getting in the protein/calories needed to gain (read: no salad for dinner)
  2. Two 1/2 day cheats per week rather than the daily cheat – there wasn’t a point in the daily cheat when I was too full to even take it

 

Of course after complaining I wasn’t hungry at all and nothing sounded good, he killed my legs and I was ready to eat my arm by the time I got home.

I’m working hard on fueling my body right via my Kitchen Workout (have you joined?) and my training plan.  Jenn must have read my mind, but my goals fit perfectly with this month’s What I Ate Wednesday theme: healthy holiday recipes.  Below is one day of delicious, healthy eats.

Meal 1:

Of course I enjoyed my morning cocktail (mix of Apple Cider Vinegar, Glutamine, and Fitmixer Aminos), followed by a 2 mile incline walk.  I take a treadmill walk every morning while I’m going through my Reader and commenting on blogs and catching up on the royal baby gossip.

Today was an odd breakfast day.  I didn’t know what I wanted!  I was hot after the brisk walk, so I wasn’t relishing the thought of a warm breakfast.  However, I don’t like to have shakes or yogurt for breakfast (I have no idea when/why this started).  After drinking an ice water, I settled on a favorite: runny egg with a P28 protein bagel.  Cooked in truffle oil and served with a side of blackberries.

 

 

Meal 2:

If you follow my on Instagram, you may notice that I ate the same thing for meal 2 yesterday.  This combo was a winner!  Lindsay put the chili-lime flavor combo in my head Sunday night.  Eyeing my fridge, I decided that sounded like a great flavor for my lump crab meat.

 

Chili-Lime Mango Crab Salad

  • 3 oz crab
  • 1/4 large mango, cubed
  • 1/2 C edamame
  • Pumpkin seeds
  • Juice from 1/4 fresh lime
  • Cayenne pepper, to taste
  • Cilantro

 

 

Meal 3:

Nothing sounded good to me this afternoon.  I ate meal 3 (lunch) at 2:30.  Chicken Burgers, seasoned with my Mediterranean spice blend and mixed mushrooms and onions.  It was actually really good.  I’m glad I made 2 so I can have it again when I’m more excited about eating.  I ate it on an Ezekial pita with spinach hummus and cucumber slices sprinkled with pepper and paprika.

 

 

 

Meal 4:

Because I was so annoyed at my lack of appetite, I moved up my appointment with my trainer.  Leg day is a great cure for anti-hunger, right?  I whipped up a Zucchini Bread Protein Shake to have post-workout.  I mixed in oats for my carb.

(Random fact: I’ve always loved raw oatmeal.  I even ate them out of the Quaker container as a kid.)

 

Sorry for the bad terrible  pic.  I drank it in the car on the way home and it gets dark early!  And leg day so thoroughly cured my lack of appetite that I nearly forgot a pic.

 

 

Meal 5:

Dinner was leftovers.  This pic is a left over too… ’cause it was much prettier right out of the pot.  I have no real recipe – this Curried Tomato Chicken and Eggplant bowl was a “throw-together” dinner winner.

It involved curry powder, other Indian spices, ground chicken, fire-roasted tomatoes, Thai eggplant, onion, red pepper, and cilantro.  I ate it over shirataki noodles. 

 

 

Meal 6:

I repeated again.  Last week I made my beloved Carrot Cake Batter, using cottage cheese in place of the Greek yogurt.  This week I did it again, but also crumbled a salt-free rice cake into it and topped with a little sugar-free caramel (it’s by Walden Farms… and no, it’s isn’t near as good as the real deal). 

Meal 7:

When I drafted this post earlier in the day, I was ready to announce that I failed again at eating meal 7.  Behold, the power of leg day.  Meal 7 was an old favorite: 150 Calorie Chocolate Microwave Protein Cake.  Lots pf protein with cherries on top.

Work It Out At Home

We’re all busy.

My calendar is nightmare-inducing.

This time of year things get hectic.  You don’t have to sacrifice your fitness due to holiday craziness though!  Today’s Work It Out is something different – a routine you can do at home with NO equipment.

This quick, full-body workout is demonstrated by Jacklyn, a trainer at my gym, House of Payne.  She started doing figure competitions in her 40s.  When I met her, I thought she was 30.  Diet and exercise pay off!

Make time to run through this 4x to get a quick 20 minute workout.  Or just do one round – whatever you have time for!

On days when I’m in a rush or on the road, I’ll do one round of a simple workout like this just to get the blood flowing in the morning.  You can always find 5 minutes!


Remember last week’s Kitchen Workout?  It’s about eating to fuel your body properly.  Calee (who designed the awesome logo above) created a graphic with my guidelines!  Again, these are guidelines that work for me.  Come up with a list of you own.  Calee came up with these for her “Operation Pants Fit” goals.

Gift Guide for Food and Fitness Lovers + Giveaway

Gift giving is a big part of the holiday fun.

Almost as fun as gift-getting.

It is December 3rd whether the weather got the memo or not.  I went on a jog yesterday in shorts and a tank top and was sweating while passing houses decked out for Christmas.   Bizarre.  My iPhone said it was 66 degrees, but I think it cleared 70.

Since it is the month of giving, I wanted to share some of my favorite things (aside from whiskers on kittens – that goes without saying).  These are tried-and-true items – I already own most of them!

Whether you are brainstorming something for your favorite food-lover or for someone whose idea of fun is working out, I hope this will give you some ideas.

2012 Holiday Gift Guide

1. Shun Knife

This is my favorite knife.  It’s a fantastic tool, but what makes it even better is that they make a left-handed version!  Santa brought me one last year and it’s basically the only knife I use.  Speaking of… I need to get mine sharpened for Christmas!

2. Magic Bullet

I used this thing religiously before I got my Vitamix.  It can take some abuse, and you can blend smoothies right in the cup for a quick breakfast or post-workout refuel.  I still use mine for small tasks like whipping cottage cheese for Apple Cupcakes or single-serving dips.  But if you really loved the giftee… you’d buy them the $450 Vitamix.

3. FitBit

My FitBit inspires me to walk 10,000 steps and 20 flights of stairs a day, something I need since I am a cube monkey.  I don’t use all the features, but it also can track sleep and calories (though it’s not entirely accurate as it can’t tell when you’re lifting weights or at a standing desk).  Warning: If you are a little OCD, this may not be the best thing for you.

4. Handful

Greatest sports bra ever… if you’re a member of the itty bitty titty committee.  It’s not a super-support bra, but if your pecs are biggest part of your chest (like mine) it’s perfect.  There’s even a little layer of padding so you don’t like like a flat-chested 12-year old when you’re at the gym.  AND they are having a $12 closeout sale on the size large.

5. Peanut Flour

I talk about it all the time.  If I were to find peanut flour in my stocking, I’d be one happy girl.  Better yet, if I could just get a year’s supply… Mom, are you reading this?  If you order through iHerb.com, use discount code USO924 for $5-10 off your order!

6. Grow Your Own Wheatgrass Kit

Wheatgrass is awesome stuff.  It’s full of amino acids, chlorophyll, minerals, vitamins, and antioxidants.  It’s also expensive.  I want to grow my own!  You don’t even need a juicer to use it if you have a Vitamix!  It will blend up the grass like a champ.  The Wheatgrass Kit can be found on OpenSky at Robin McGraw‘s new Insider page (yes, it’s Dr. Phil’s wife).

Sweet Potato and Toasted Marshmallow Cake

A.K.A. The best thing I’ve ever put in my mouth.

I only wish I could take credit for this recipe.

While at the FoodBuzz Festival this fall I met Mai @ Butter and a Pinch of Salt.  She recently posted a link to this cake recipe and declared it the best cake she’s ever made.  Knowing she’s an accomplished baker, I had to try this out for myself.

Christmas is the perfect time to make the most fattening cake ever to share with friends and family!

This cake is incredibly moist thanks to the sweet potato.  The texture silky beyond your wildest dreams.  The toasted marshmallow layer is insanely good – especially when you get a little crunchy bit.  And the buttercream… I’ll just say that the bowl I mixed it in was clean before we put it in the dishwasher.

In the interest of full-disclosure, There are a few negatives to this deliciousness.

The Downside:

  • It took forever to make – I think I spent 4 hours on it
  • There are 5 sticks of butter in it
  • The Swiss buttercream icing can be tricky… I had to make it twice.
  • Splitting cakes to make the layers may induce a heart attack
  • It is addicting

 

All of that aside, you should make this cake at least once.  I know I’ll be making it again next year.

Some Notes/Tips:

  • Freeze the cake layers before trying to split it
  • When she says don’t let the water boil while making the icing… trust her
  • Don’t skimp on the pecans
  • Add more ginger pieces in the cake
  • Don’t stay home alone with it if you can’t be trusted around desserts like me

I have to agree with Mai – this is the best cake I have ever made.  One of my tasters said “it’s the perfect combination of a pie in cake!”  Indeed.

Strip Mall Chinese + WIAW

Short weeks throw me off.

It’s already Wednesday?  That means it’s already What I Ate Wednesday.  Jenn, you are a genius/exceptional round-up hostess… and I hope you feel better soon!

It was a random day of eats.  I can’t seem to get enough vegetables in my body post-Christmas.  Raw, crunchy green and orange veggies seem like treats right now.

That’s why I went to a burger joint and ordered a veggie sandwich.  Don’t judge.

Breakfast:

This morning was a rush to get out the door to the airport, but I managed to squeeze in a workout knowing this trip won’t allow time for one.  45 mins on the “glutes” setting of mom’s elliptical and a quick BodyRock – The One That Got Away.

Sweating in the morning almost always translates to a smoothie-breakfast for me.  It also means I’m starving and almost chugging the whole thing before I get a pic.

Served with a side of coffee, of course.

 

Green Apple Pie Smoothie

  • 1 scoop vanilla protein powder
  • 1 C spinach
  • 1/2 large banana
  • 1/2 apple
  • 1/2 tsp almond extract
  • 1/2 tsp apple pie spice
  • 1/4 tsp cardamom

A green smoothie has never tasted so good after all of the post-Christmas indulgence.

Lunch:

Our flight took off right at lunchtime, so technically my “snack” lunch and my lunch at 4p (yes, my stomach was eating my spine at the point).  Either way, I ate at 5 Guys Burgers.  And in the rush to shovel food in my mouth, I failed to take a pic.

I assure you that the veggie sandwich (with hot sauce) and Cajun fries were worth the wait.

Dinner:

Being adventurous eaters, Mom and I searched for the top restaurants in the small suburb of Annapolis we’re staying in.  A place called Golden Pavillion earned 5/5 stars on Google and Yelp… sold.

Chinese food from random strip malls always has the potential for greatness or food poisoning.

Miso Soup + Sake

Veggie Singapore Noodles for me – extra spicy 

Garlic Eggplant and Rice for Mom

Snacks:

Since I was on a place, I had my customary pretzels and Coke Zero.

Thank god I got some snazzy boots for Christmas – it’s pouring down rain up north!

It’s hard to believe it’s all over!

 

Christmas seems to have flown by.  While I’m always ready for the rush to be over, it’s a little sad too.  I love the lights and anticipation… and the baking. 🙂

 

I have to go out of town unexpectedly this morning, so today’s is a photo recap.  I hope everyone had a very Merry Christmas, Happy Hanukkah, Happy Kwanza, or Merry Un-Affiliated Holiday Weekend!

The fitness recap is a day late too… but I managed to NOT take a day off this week.  Saturday was a little light, but I still got moving.  That’s sometimes the hardest part this time of year – making the time for yourself to get out to do even a little fitness.  Once I do it I’m so happy I did.  It’s true what they say – you never regret a workout!

Two things to highlight:

  1. I’m still digging Body Rock – it’s a great resource when you only have a few minutes to squeeze in a workout
  2. I went running for the first time in a month – the worst part about not running is how very hard it is to get back out there.  My legs felt like sandbags.  I won’t be taking that much time off again!

Workout Recap (12/19 – 12/26)

  • Monday – P90X Biceps/Back, 100 push-ups
  • Tuesday – This BodyRock, Kickboxing, Legs
  • Wednesday – P90X Triceps/Chest
  • Thursday – This BodyRock (again), 4.5 mile run, 100 push-ups
  • Friday – Kickboxing, Elliptical
  • Saturday – All 3 of these BodyRocks, 100 push-ups
  • Sunday – This BodyRock (again), P90X Shoulders and Arms, Ab Ripper X
  • Monday – TRX suspension class, 100 push-ups

Later this week I’m going to share Christmas brunch and the details on that cake… it was insane.  I wish I could take credit for that recipe!
