Strange But Good: Tomato Brownie Cakes

You may think I’ve lost it.

And you may be right.

I made mini brownie cakes.  With a tomato.  It sounds strange, but hear me out.  Tomatoes are technically a fruit.  Baking with fruit is good.  So why not?  

These mini cakes were marvelously moist.  Fresh, in-season tomatoes from the market are juicy and pretty sweet on their own.  Between that and the banana, the resulting healthy brownie is a chocolate treat that isn’t overwhelmingly rich, but still clearly a dessert.  At the end there is the tiniest hint of something fruity… but you can’t pick out the tomato at all (I tested it with several people).

You might notice that I left the oats whole in my cakes; that’s because I like the extra chew.  I also added a little coconut flour because I’m addicted to the wonderful, almost silky, texture it lends.  There is also protein powder involved (I just can’t help myself). You can sub in more flour for any of these if you prefer.

Like all good cakes, I decided this needed icing.  And sprinkles.  My icing was a simple mix of Greek yogurt, a bit of stevia, and vanilla.

Try it.  You’ll like it.  Your friends will like it.  Your kids will like it.  Just don’t tell them what they’re eating until after they take a bite. 😉


Tomato Brownie Cakes

Tomato Brownie Cupcakes

  • 1 small tomato
  • 1 small banana (~6 inches)
  • 1 C water
  • 2 T cocoa powder
  • 1/2 C raw oats
  • 1/2 C spelt flour
  • 1 scoop (30g) chocolate protein powder
  • 2 T cocoa powder
  • 1 T coconut flour
  • 1 T stevia (or other sweetener)
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 T coconut oil
  • 1/4 C egg whites

Preheat oven to 350 degrees.

In a blender, blend tomato, banana, and water until smooth.  Pour into a bowl and mx in remaining ingredients except the egg whites.

Beat the egg whites until foamy (you can also use the blender for this), then fold them into the batter.

Pour into prepared cupcake tins and cook for 15-20 mins.

Makes 12 cupcakes.

Approximate Nutritionals (for 1 cake): 51 calories, 1.7 g fat, 34.6g sodium, 7.3g carbohydrates, 1.5 g fiber, 1.1g sugar, 3.3g protein

ChocolateLove: Chocolate Peanut Butter Pretzel Cookies

These are a few of my favorite things…

 

Really.  How can one possibly go wrong with chocolate, peanut butter, and salt?

 

 

Side note: the best thing about vegan cookies is the fearless eating of batter… not that egg in batter ever stopped me before.

 

The site of the flaky fleur de sel and crunchy pretzel bits poking out of fudgy dough may tempt you to eat an entire scoop raw. *Please tell me I’m not the only one that does that*

 

 

February is the month of foil-wrapped chocolates, Hallmark cards, and over-priced flowers.  I beg you, this Valentine’s Day skip the artificial red colored stuff and go straight for the dark chocolate treats.

No one will miss the boxes of processed chocolates and Forrest Gump metaphors for life..  I promise.  

 

 

At the very least they won’t be able to protest with their mouths full. 😉

Chocolate Peanut Butter Pretzel Cookies

  • 2 T softened butter (or Earth Balance)
  • 2 T unsweetened applesauce
  • 1/4 C light brown sugar
  • 1/4 C xylitol
  • 1/4 C peanut butter
  • 1 tsp vanilla
  • 1 egg (or flax egg)
  • 1 T unsweetened almond milk (or other liquid)
  • 4 T cocoa
  • 1/2 C all-purpose flour
  • 1/4 C whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 C crushed pretzels
  • Fleur de sel (or other high-quality flaky salt)

 

Pre-heat oven to 350 degrees.

With a hand mixer, cream together butter, applesauce, sugars, and peanut butter.  Add in milk, vanilla, and egg.

Sift together remaining ingredients (except pretzels) and incorporate into butter mixture.  Fold in pretzels.

Scoop dough in ~2T balls onto parchment-lined baking sheet.  Lightly flatten with palm and sprinkle with fleur de sel.

Bake for 8-10 mins.

Makes 15 cookies.

Note: My peanut butter was really thick, so I needed that 1 T of milk.  Depending on what you use, you may not – use your judgment here.

Resolution-Worthy Brownies

As always, I have started out the new year running.  Between work, derby, training, and family stuff, I have been home long enough to sleep 4-5 hours.

Just like I like it.

 

I really do try not to be a glutton for punishment, but I just have to own it: I hate to be still.

Does anyone else schedule their life to the very limit?!

Some where in between all the running around with my hair on fire, I did manage to find time to perfect (IMHO) a dessert recipe to address any lingering holiday-fudgy-goodness hunger pangs.

In the grand tradition of good intentions, many of us are beginning 2011 with renewed zeal for healthy living.

We are also coming off of a 2-month sugar binge.

Have we learned nothing from Intervention?  Addicts need to be weaned off of the juice! 🙂

 

What better way to do this than with bean-filled desserts?!

 

 

Beans, beans… good for your heart…

You can’t tell there are beans in these fudgy bites.  I even tested them out with a few discerning co-workers and my building’s concierge.  No one suspected anything was amiss.

Black Bean Fudgy Brownies

  • 3/4 C Cocoa powder
  • 1/2 C Salted butter
  • 1/2 C Applesauce (unsweetened)
  • 15 oz Canned black beans (1 can, drained and rinsed)
  • 1 C Walnuts (chopped)
  • 1 T Vanilla extract
  • 1 T Instant coffee
  • Shake of kosher salt
  • 4 eggs
  • 1½ C Light agave nectar

Preheat the oven to 325° F.  Prepare an 11 x 7 in pyrex dish by lining with parchment paper or lightly oiling with Baker’s Joy/Pam/butter/etc.

Melt butter in a small bowl in the microwave.  Stir in applesauce and  cocoa powder until combined.  Place the beans, 1/2 C of walnuts, vanilla extract, and 3-4 spoonfuls of the chocolate mixture into a food processor.  Blend until smooth (~ 1 min).  It will be very thick.  Set aside.

In a large bowl, mix together remaining 1/2 C walnuts, the rest of the melted chocolate mixture, instant coffee, and salt.  Mix well and set aside.

In a medium sized bowl, beat the eggs with a mixer until light and creamy (~ 1-2 min).  Add agave nectar and beat well. Set aside.

Add bean mixture to butter mixture, manually stirring until blended well.  Then add the egg mixture (reserving 1/4 C to drizzle over top if desired), and hand mix until just combined.  Pour the batter into prepared pan.

Bake for ~45 mins, until the brownies are set.  Cool completely in the pan before cutting.  You may need to refrigerate first – these are extremely soft.

Cholesterol: 49.6 mg

Sodium: 44.8 mg

Carbohydrates: 22.4 g

Fiber: 1.9 g

Protein: 3.0 g

There you have it.  Fudgy brownies that are under 200 calories and possess some redeeming qualities.
