Sticky Toffee Rum Balls [Recipe]

I hate to waste food.

Especially dessert.

While that Sticky Toffee Stout Pudding I posted last week was fantastic, it made a lot for two people to eat.  I couldn’t imagine letting it go to waste, so I starting thinking of alternate uses.

Leave it to me to reach the conclusion that I should add more booze and make it into balls.  Strange but good Sticky Toffee Rum Balls!

This isn’t much of a recipe – it’s going to depend on how much cake you have left and how much rum you like.  You could do this with any cake, but if your cake isn’t already sticky from date caramel, you’ll want to add something like it (caramel, honey, date puree, etc.) as a binder.

My balls were pretty big, so after I rolled them I ended up cutting each ball in half and skewering it with a raspberry.  The raspberry added some color and balanced the sweetness of the cake.

Rolling them in a mixture of cocoa powder and coconut flour helped to pull in some of the moisture and made them less sticky.  Almond flour would be really good here too!

Sticky Toffee Rum Balls Repurposing a cake as a rum ball may seem a little strange, but it worked well!  I brought these to a dinner party my neighbor had and they were a hit.  It was the perfect sweet bite after our meal.

I need to remember these for the next holiday – we always end up with WAY too much dessert.  Not that there’s a such a thing as too much dessert, but there’s only so much cake we can manage in one sitting.

Sticky Toffee Rum Balls

  • Leftover Sticky Toffee Stout Pudding
  • Rum
  • Optional coating: cocoa powder and coconut flour

Mash up leftover cake until mostly smooth.  Stir in rum until just wet enough to mold into balls.  

Scoop about 1 tablespoon of the cake and roll into a ball.  Repeat until you’ve used all the cake.

To coat, liberally sprinkle a sheet of parchment paper with a mix of cocoa powder and coconut flour.  Roll balls in powder mix and set aside.

Store in air tight container until ready to serve.  These keep well in the freezer for a quick sweet bite too!

    I hate to waste food too.That’s the reason I have been putting zucchini in EVERYTHING (including today’s recipe)!
    And using extra booze is never a bad idea 😉

    Happy Belated birthday lovely!!! What a wonderful birthday gift indeed – anything with booze is an A+ for me!!! (She says as she sips her vodka and club soda with lime juice…). “My balls were pretty big” – HAHAHAHA Love that line. Even for a girl, I have big balls too.
