Carrots really can turn you a bit orange.  When my sister was little she basically lived off of carrots and cheese.  As a result, she had an orange tint to her and was always constipated.  TMI?

Today’s #strangebutgood recipe is a carrot salad.  No lettuce.  Just carrots.  It’s really good.  Plus its winter and we’re all a little pale.  Eat this side at every meal and you’ll have a natural self-tanner!

Spiralized carrot salad

This recipe came about as a sort of accident.  I wanted to spiralize something, but it didn’t really go with anything else I was eating.  So I made it it’s own menu item.

With Vegas out of town, I wasn’t worried about it tasting too “strange” for her, so I busted out the nutritional yeast to use in the dressing.  It turned out not-so-strange tasting!  So much so that I re-made it for her to try the next night.  (I don’t even think she noticed.)

I loved the parsley in here.  It doesn’t compete with the mustard flavor.  It just lightens it up and gives the salad some green.  Plus it’s good for you!  Parsley is rich in vitamins, acts as a natural diuretic, can help control your blood sugar, promotes carbohydrate metabolism, and is an anti-inflammatory.

There’s one other particular benefit of parsley I always think about ever since Debbie told me about it.  Apparently, parsley makes your lady parts… errrr… smell pleasant.  You’re welcome.

    Love that tad bit of TMI about your sister 😉 I have a spiralizer, but I’ve only used it with zucchini, which was delicious. This carrot salad makes me want to dig to the back of my kitchen gadget drawer and give it another shot. I also love nutritional yeast, it’s tasty and great for you.

    I haven’t tried apiralizer get carrots. I always thick they’re too thin but you just proved me wrong!

      You just have to get the thick ones. The skinny ones definitely don’t work.

    I love carrots. i got to the point where I think I had a mild bit of carrotemia. Apparently my BIL actually did have carotemia and did turn bright orange. Considering that his is 6 foot, I think that would be quite terrifying. Like a massive Oompa Loompa

    I love that this carrot salad is so simple yet is looks so delish! I would love to add some chicken or fish and some more roasted veggies to this for a tasty dinner!

    YES!! I always remember this family friend of our parents. He was big into drinking carrot juice…and he said when you drink it and then go out in the sun, you turn orange 😛

      My mom is like that too. I think cilantro would be really good here too – Vegas thinks it tastes like soap though.

    Ummm excuse me while I go and make this RIGHT NOW. Holy crapballs woman – I love how simple this is but there’s still so much dang flavor in there! Plus Ive been wanting to use my spiralizer for something else besides zoodles!!

    Everyone always looks at me and says that my skin is a slight shade of orange… And it’s because I eat so much beta-carotene. I used to eat FAR MORE when I ate more veggies, but I cut back a lot due to stomach issues, and I think I have gotten a little paler because of it… Oh well, ORANGE or WHITE as SNOW…. Not sure what’s worse/better? LOL

    I just picked up the biggest carrot I’ve ever seen at the market today. It has tremendous girth. Now I just need a spiralizer.

    Also, being pregnant changes the scent of your lady parts as well. You’re welcome.

    this is kinda what i did with the carrot and celeriac salad. parsley made it! and mustard! Now we just need someone to clean up afterwards. haha. right? Gonna add nutritional yeast next time. YUM!

      Seriously. I do have to admit… Vegas WILL clean up… but I prefer to do it because she loads the dishwasher wrong. I am my mother… DOH.

    We had an elderly patient who was pretty yellow-orange-y once and we thought her liver had gone south until we realized that the only vegetable she liked eating = carrots! :O I can’t wait to try making this! :]
