Tortilla Pizza

Where do people come up with this stuff?

The search terms that lead my blog crack me up!  *Not that I’m not happy to have new visitors!  I’m just baffled occasionally.*

My Recent Favorites:

  • Rotating deodorants (I do… my body gets immune!)
  • “Love my stylist” short hair cut (go see Karen at Lava)
  • My black coffee and breakfast to go
  • Things that make me go mmm (click here for those)
  • Sweet bikini bellies
  • Pumpkin dumbbells images
  • Herbs that go well with cottage cheese (they all do)
  • PMS salty sweet (I hear you, sister… make these)
  • Schweddy balls (tee hee)

You guys know I’m on an airplane right about now (thank you, wi-fi).  Since the trip has begun, I can officially declare victory over my quest to only use what I have this week.

I haven’t dined out since Sunday – this is no small feat for me!  I’ve probably saved $200 (which I promptly spent on trip stuff).

My fridge is a wasteland of crumbs and stuff that never expires.

Some of the odd creative concoctions I haven’t shared yet:

Use-everything-in-my-fridge pizza(s):

Customize pizzas as you like!  The one above is chronicled at the bottom of this post with instructions.

Tortilla pizzas sound like such a silly thing to eat before getting the “real” thing in Italy.

Working lunch 

Pizza #2 (above) consisted of pressed tofu, sheep’s milk cheese, artichokes, marinara sauce, garlic, thyme, and red pepper flakes.

There was a dinner saute:

Pressed tofu, edamame, jalapeno, garlic, shallot, salsa, and liquid smoke.  Side of sauteed zucchini I’ve been eyeing here on Rufus’ Food and Spirits Blog… it has a twist of something you’d never guess: Peach Schnapps.  I followed the recipe, except I used olive oil instead of butter.  It was awesome.

And my favorite – Overnight Oats in a Jar.  Yep, I even used all the peanut butter.

PB jar with the “dregs” on the bottom, oats, sunflower seed milk (so glad to see this gone!), cinnamon, Biscoff granola, vanilla, and a shake of salt.

Tortilla Pizza

  • 1 tortilla (I used Ezekial)
  • 1/4 C tomato sauce
  • 1 handful fresh spinach
  • 1 T fresh thyme
  • 1 chicken sausage (I’m loving Bilinski’s from Whole Foods!)
  • 1/4 C artichoke hearts
  • 2 T nutritional yeast
  • Red pepper flakes (optional)

Preheat oven to high broil.

Lay tortilla on baking sheet or pizza stone.  Layer ingredients on top of tortilla.

Place in the oven, watching very closely (broil is no joke!).  Cook until just beginning to brown, ~7-8 mins.

BYOB Airplane-Style + WIAW

Getting up and seeing the moon makes me tired.

I dutifully packed my bag and headed to the Midwest.

Perfected packing for a one day meeting:

  • Breakfast
  • Sweater (conference rooms are COLD)
  • BlackBerry (try not to lose it… again)
  • Heels (wear flats for running through the airport)
  • Laptop
  • Charger
  • Files to bake into cake later 

16 hours later I was back home in that South after a successful day of meetings!

I did forget one thing… I didn’t take pictures of anything I ate after breakfast.  Breakfast was really the only thing picture-worthy though.

Instead I’m posting a WIA Sunday-thru-Tuesday for WIAW.


Breakfast:

I brought my own… but treated myself to Starbucks while waiting to board the plane and eat.  Technically the client treated me, but who’s counting.

Tip: add a little sweet in your coffee without adding much in the way of sugar and calories by ordering a black coffee (in this case an Americano) with light whip on top.

Sprinkle with a bit of cinnamon and nutmeg to add a little “fall” flavor.

Need other ideas to entertain yourself while waiting to board?  Take pictures of unsuspecting travelers in matching Hawaiian shirts.  Priceless.

Upon boarding, it was time to enjoy BYOB on a plane.  That’s bring your own beer breakfast.

I finally copied took the advice of Sarah @ Smart Kitchen and made my own yogurt in a recycled cup.

Sweet Potato Greek Yogurt

This container of orange fall deliciousness is Sweet Potato Greek Yogurt.  I don’t understand how every yogurt maker out there doesn’t offer this flavor – it may be the best idea ever.  Do you hear me, Atlanta Farm Fresh???

Add some vanilla, cinnamon and nutmeg and it’s like pie filling you can shamelessly eat for breakfast.  Recipe at the end of this post.

Lunch:

Here’s the part where I add some previous meals to replace the eats that weren’t worthy of picturing. 🙂

Vegetable Chickpea Soup.  Vegan, gluten-free, and damn good.

This recipe will be up tomorrow!!!

Snacks:

Not pictured, but snack time was pretty junky good:

  • Chocolate-Toffee Think Thin bar (side note: I’m sad – they changed the recipe and they aren’t as good.  I won’t be buying them again. 🙁 )
  • A few of my co-worker’s chips
  • Fun Size M&Ms (free in first class)
  • Beer (again, cheers to the upgrade!)

Dinner:

I was craving pasta on Sunday night so I took a little trip to Decatur to give No.246 another chance (I was totally underwhelmed the first time).  Round 2 was much better!  I sat at the bar, which turned out to be a great decision. The bartender, Brenda made some great suggestions and I enjoyed our conversation

I began with a tasty salad of radicchio, endive, granny smith apples, walnuts, and bacon (not pictured).  The pasta I chose was a Trofie.  Trofie is made with flour and water (no eggs).  It’s hand-rolled into little squiggly shapes.  246 serves it with a chicken liver, pork, and beef bolognese.

At first it was just good…  then Brenda gave me some chili infused olive oil.  That kicked it up and notch and gave the dish the “pop” it needed to succeed.

Pairing: Nebbiolo, Damilano, Alba 2008 – this was a great suggestion from Brenda.  It is a bigger wine, stony/earthy taste.  It stood up well to the meaty pasta dish.   OMG I’m going to be in Alba in a couple of weeks!!!

No. 246 is on it’s way.  The basics are there, the kitchen just need to get over this apparent fear of spices.

Sweet Potato Greek Yogurt

  • 1/2 baked sweet potato, peeled
  • 1/2 C Greek yogurt
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/4 tsp nutmeg
  • 5-6 drops NuNaturals Pure Liquid Vanilla Stevia
  • 1-2 tsp unsweetened almond milk

Combine everything in a blender (I used my Magic Bullet) and mix until smooth.  You may need to add more liquid to achieve desired consistency.

Top with nuts of your choice and enjoy!

Note: you can make this ahead – I did.  The flavors melded and intensified overnight.

Cheese, Nuttiness, and Raw ABCs

Confession:

 

I haven’t run at all this week because I pulled something in my calf area (still not sure how).

It is what it is… but now I’m about to walk out the door for a 5K.  I probably should still be taking it easy, I know.  However I’m all registered and I reallllly want to run after a week off.  Bring on the KT Tape and call me a glutton for punishment.

*Disclaimer: I don’t think it’s a serious injury.  I’m just going to prolong the healing process if anything.  I don’t advocate being as stubborn as I am being right now.*

Less controversial is the topic of peanut flour.  Particularly how fantastic it is.  I should have bought the 5lb bag.

 

In peanut sauce-form atop cottage cheese:

In the mix:

  • 1/2 C cottage cheese
  • 1/4 C raspberries
  • 1 T peanut flour, mixed with…
  • 1 T unsweetened almond milk

 

All that salty and little sweetness… it was like PBJ cottage cheese!

 

There was also a pea-nutty afternoon snack:

 Spicy Peanut Dip

  • 1 T peanut flour
  • 1 T unsweetened almond milk
  • 1/4 tsp Sriracha garlic sauce
  • 1/4 tsp ginger
  • 1/4 tsp cumin
  • pinch of salt

 

Veggie sticks will never eaten the same way.

 

Now that you know I like peanut flour in with sweet, salty, and spicy twists…

Here’s even more than you ever wanted to know about me (borrowed from Gina @ Choosing Raw).

 

The ABC’s of Me… the raw foodie’s version (yes, I’m fully aware that I am not a raw foodist… but am a foodie and I like raw food!)

 

A) Preferred way to eat avocados: homemade guacamole… or in a smoothie.

B) Daily banana intake:  typically 1/2 in a breakfast (oats or smoothies) and half in an evening smoothie

C) Cacao or carob? Carob!

D) Durian? I’m told it’s stinky, but I haven’t had the pleasure of making it’s acquaintance.

E) Essential to start the day: Water – I start everyday with a glass of ice water and a tsp of Bragg’s Apple Cider Vinegar.

It’s good for the the *ahem* digestion.

 

F) Favorite fruit: Watermelon or peaches

G) Guru you like: I march to my own drum.

H) Healthy meal: that’s tough… I like so many things… and this should probably be raw… I made a mango-avocado gazpacho that rocked my world.

I) Ice cream base: Banana soft-serve.

J) Juice or smoothies? Smoothies!  I drink them almost daily.  With spinach, always.

K) Favorite way to eat kale: Marinated so it gets a little soft.  YUM.  This was a tasty one:

L) # of Lemons in your house right now: 2, plus a lime

M) Muscle testing: hoax or real? I’m a skeptic – hoax.

N) Nut butter: favorite kind? CHUNKY TJ’s Roasted Flax Seed Valencia Peanut Butter or homemade Spiced Almond Butter

Like bar nuts... in dip form and with fewer germs.

 

O) Organic or conventional? I make an effort to only buy organic or local produce.

P) Pickled veggies: Love them!

Q) Questions you get asked about your diet: You really put spinach in smoothies?  Ewwww!

R) Recipe you love: Keeping with the raw theme – there are so many great things made within the blogging community that it’s hard to choose!  I’m going to have to go with one of Gena’s (who I got the survey from).  I made her Cashew Cheese with Meyer Lemon and Dried Cherries and ate it like it was my j-o-b this winter.

S) Skin brushing? I have not a clue what this is.

T) Type of water you drink: Atlanta’s finest (tap).  Extra lemon.

U) Unbelievable thing that’s related to eating raw: That “high” feeling you get after a good raw meal.  And how amazing the glow is of raw foodists’ skin!

V) Vegetable you love: Spinach!  My 10-year old self is judging me right now.

W) Why did you start eating raw? I don’t eat all raw, but I do make an effort to eat a good deal of raw foods.  I think the more pure/clean we eat, the better we feel.  My energy level is signinficantly increased when I’m eating clean.

X) X-rated vegetable or fruit: X-rated?!  I have just the picture…

 

Y) Yummy food you make: Raw… Peach Cobbler Chia Pudding, Brazilian Flax Cookies, Asian-Spiced Flax Crackers,  Mexican Raw Bulgur Bowl, and – most recently – Moroccan Raw Carrot Salad

Z) Favorite use of zucchinis: Sliced into sticks and dipped into peanut butter.  Simple and delicious.

Everybody’s WIAW

Happy Hump-WIAW!

With football season so close (Tech’s opener is 8 days away!) and the Italy trip in less than 5 weeks, I’m getting really antsy.  Ants.  In.  My.  Pants.

Here’s our high-level Italian wine region/city itinerary:

  • Days 1-3 – Veneto/Verona
  • Days 3-5 – Friuli/Cormons
  • Days 5-6 – Lombardy/Milan
  • Days 6-8 – Piedmont/Alba
  • Day 9 – Driving/Hike Cinque Terre(!!!)
  • Days 9-11 – Tuscany/Lucca/Sienna
  • Days 12-13 – Tuscany/Florence

 

Of course, there will be side trips to smaller towns.  We are working out the winery strategy now.  Our trip also falls at the beginning of truffle season and I couldn’t be more excited.  One stop in the Piedmont region includes 2 hours hanging out with the chef at a family run, Michelin star restaurant before enjoying dinner there.

It is looking like this will be a trip to remember!

After listing all of that my day’s eats seem anti-climatic, right?

 

Breakfast

 

 

A hodge-podge overnight oats mix in poor lighting at 7am:

  • 3/4 C unsweetened almond milk (a little too much… maybe just 1/2 C next time)
  • 1/2 scoop cookies and cream protein powder
  • 1/2 banana, mashed
  • 1/2 C uncooked oatmeal
  • 1/2 tsp cinnamon
  • Blueberries

 

Lunch

Here I go again with leftovers!

I made my Chili Nutty Tofu again – I think this is the recipe I repeat most often (which says a lot since I rarely repeat anything).  The spicy chili with the sweet, nutty peanut butter (use chunky!) is addicting.  It’s a baked tofu, which is my favorite way to eat it because of the way the tofu fluffs up in the oven while the outside becomes nice and crispy.  My only edit this time was to add freshly grated ginger to the marinade.

 

Served with a leftover raw kale and oyster mushroom salad (full recipe for the raw kale salad tomorrow).

Everybody’s Pizza

Mom and I ate dinner together in honor of my dad.  He would have been 56 yesterday.

Is it the best pizza in Atlanta?  No.  But it’s the most memory-filled.  My parents used to hang out at Everybody’s when they were in college.  Growing up, he would take the family there and sometimes as a special treat on Friday nights he would take just me.

Same front door they had when my dad was in college.

 

I always ordered the same thing – a pie with pepperoni and feta.  They are huge individual pies, but I conquered it.

20 years later… my order has changed!  Mom and I split 2 massive pies.

The Pizza Salad has a pizza base, but is piled with salad on top.  We chose the Panzanella – a pie topped with lettuce, basil and Roma tomatoes tossed with house roasted chicken, mozzarella, provolone, sun-dried tomato and onion on a pesto cheese pizza.  Yes, it was as good as it sounds.

 

Pie #2 was a Cheeseless Pizza.

 It consisted of oven roasted zucchini, fresh spinach, mushrooms, onion, fire-roasted red peppers, Roma tomatoes, broccoli artichokes, sun-dried tomatoes, sesame seeds, and hot pepper-infused E.V. olive oil.

My first helping:

 Dad didn’t like to miss dessert and we honored that tonight.  The last part of the tradition at Everybody’s is to order bread pudding.

It’s the only dessert they serve and it is rich amazing.  I often wonder how many they could possibly sell since it’s not even on the menu… but I like to think it as a cult following. 🙂

Celebrating Italy

How to run 8 miles:

 

Break it down.  Run 4 miles away from your house.  Then you have no choice but to run the 4 miles back.

Stats:

  • Distance – 8 miles
  • Time – 1:04:40
  • Average Pace – 8:05 min/mile

 

Not easy after a little Friday night celebration at Sotto Sotto (313 N Highland Ave NE , Atlanta, GA, 404-523-6678).  Italian-style.

The 2007 Valdicava Rosso di Montalino was incredible.  Tons of licorice up front.  After it had about 30 minutes to open up, the layers came through and revealed a big, complex red that couldn’t have paired better with our meal.

The mushroom risotto is life-changing, especially with that wine.  So is the spinach gnocchi.  You spinach-lovers will appreciate the amount of spinach in the gnocchi – it was like they simply rolled up a ball of spinach with some cheese-y, butter-y goodness.  The pappardelle with duck ragu was good… it just couldn’t compare to how fantastic the other two dishes were.

 

My partners-in-crime and I are off to brunch and then the Dekalb Farmer’s Market to pick up supplies for a homemade Italian feast tonight!

Monkeying Around

This week I feel like I’ve been swinging from vine-to-vino vine.

 

An airplane monkey, if you will.

I’ve also been a room service monkey.

Forgetting my razor made me a hairy monkey.

The security line in Charlotte made me WANT to be a poo-slinging monkey.

Even after all that travel, I have to go into the office today on a Friday and be an all-day meeting monkey.

It’s all good.  This weekend I am planning an Italian wine tour with my wine-drinking monkey-friends.

First I need to satisfy a caveman-like craving.  Due to travel, it’s been a smoothie-less week… and the last day of a loooong week necessitates the appearance of Coffee Monkey.

Coffee Monkey Smoothie

  • 1 banana
  • 1/2 C coffee
  • 1/2 C unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 1 tsp maca
  • 1 C spinach
  • 10 drops vanilla NuNaturals Stevia
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp guar gum
  • Ice + water, to taste

 

Toss everything in a blender/Magic Bullet/Vitamix and blend until smooth.  

Try not to spill while monkey-swinging your way through getting dressed and running out the door.

Indian-Inspired Tofu Scramble

Impromptu dinner parties are the best.

My friend Jessica stopped over to share a bottle of wine and dinner.  She’s pretty brave, as I was trying a new recipe.

How I’ve never made a tofu scramble before, I do not know.  What I do know is that I’ll be doing these a lot more in the future!  Much like scrambled eggs, you can throw basically anything into them.

 My first scramble had a decidedly Indian flare (surprise, surprise… it’s a little bit of an obsession).  

Garam masala with sautéed onion, fennel, and garlic were my starting points and I amped it fom there.

Red pepper flakes, turmeric, cumin, paprika… I’m hoping I remember it all!  Despite all of the spices, for once I didn’t add so much that Jessica’s mouth caught fire.

It turned out really well!  I loved the Indian flavors and the texture of the scrambled tofu against the crunch of the fennel.

She was an awesome guest and brought over some Whole Foods mango-pineapple salsa (if you haven’t had it, I highly recommend!), as well as dessert!

Red cherries and American Grafrutti Coconut-Chocolate balls!

Side note: American Gra-frutti is a great local gluten-free bakery with items that can be found at Whole Foods.  Try out their pimento cheese too – and my mini-review here!

The wine we shared was a 2008 Bodegas Ateca Garnacha “Atteca“ from Calatayud, Spain.

It was a great bottle, especially after it had a few minutes to open up.  Very drinkable, even with the spicier food.  The long finish was especially pleasing and I loved how the rich, berry flavor stood out when paired with the cherries for dessert.


Indian-Inspired Tofu Scramble

  • 1/2 T EVOO
  • 1/2 red onion, thinly sliced
  • 1/2 medium fennel bulb, thinly sliced
  • 2 cloves garlic, minced
  • 2 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1/4 tsp coriander
  • 1 (14 oz) package extra firm tofu
  • 1/4 C cilantro
  • S+P, to taste
Add olive oil to large skillet over med-high heat.  Stir in the spices, then quickly add onions and fennel.  Saute until onions soften (3-4 mins).  Stir in garlic, cooking until just before then brown (~1-2 mins).
Add crumbled tofu, stirring to combine.  Cook until warmed through (~5-6 mins).  Taste and adjust seasonings as necessary.  Remove from the heat and stir in cilantro.

Plate and enjoy!

Makes: 2 mains or 4 sides.

What I Ate (Last) Wednesday

Happy WIAW!

 

In lieu of telling you what I ate this week, I’m going share my dinner from last Wednesday night.  (You’ll understand when you see this deliciousness.)

 

My foodie friend, Corinne, and I attended another installment of the Summer Chef Series @ ONE Midtown Kitchen.  (Remember the 1st one with Chef Hugh Acheson and the 2nd with Chef Bruce Logue?) 

 

This was a special edition, as it was Corinne’s birthday!  Happy Birthday to you, Happy Birthday to you…

 

This night we brought along friends to help celebrate.  Including my hard-core friend Kathleen who miss my b-day due to breaking her writst via rollerblades.  Hi Kathleen! 🙂

Chef Ford Fry from JCT Kitchen was the guest tonight.

Sadly, he did not bring his guitar.

Ford is the chef facing the cameras with the guitar. Yes, this is local chef band - 5 Bone Rack.

 

The night began with a crisp Chenin Blanc.  Actually, it began with a couple of glasses and bread basket since the kitchen was running behind.   We didn’t complain.

 

They print out the menus – one of my favorite parts of the night is the menu reveal.

My inner fat kid spends the day dreaming about what might be on the night’s menu.

 

Amuse:

Crispy Pork Trotter with fois gras and beatrice eggplant caponata

It was heavy for an amuse, but good.  Trotter still creeps me out though.

 

 

1st Course:

Heirloom Tomato Ceviche with lemon verbena, white chocolate, & horseradish granita

Love, loved the ceviche.  The granita wasn’t bad, but there was a lot of it and chef Drew has done that granita a lot lately.

2nd Course:

Maine Lobster with Carolina gold rice “risotto” and buttered pullman toast

…or if you are allergic to shellfish (or think the alternative sounds good), you were presented with a mushroom risotto.

Really, really good; however, my bad because it didn’t get as well with the Pinot Gris pairing.  The lobster risotto was amazing (Corinne gave me a taste).

3rd Course:

Roast Black Bass with tiny tomatoes, tomato water, and herb salad

This was probably my favorite course of the night.  The fish was perfectly cooked – meaty rather than fishy.  The tomato water was a little much but that herb salad was fantastic with the fish.

The red wine pairing was surprising.  It was a nice Merlot, but didn’t wow.

4th Course:

Housemade Heritage Pork Sausage with crisp belly, Benton’s bacon-wrapped fig, and brown butter jus

The pork belly was some of the best I’ve ever had.  The texture was melt-in-your-mouth good.  The bacon wrapped fig was also delicious.  Perfectly crisped bacon!

The only thing keeping this from being my favorite was the sausage – it was so salty I couldn’t eat more than a small bite!

A South African wine paired with this was our favorite of the evening – it was a bigger, more complex red, my palate’s sweet-spot.

5th Course:

Warm 70% Chocolate with almond crisp, raspberry pate, and vanilla lime sorbet

Wellll… chef’s aren’t bakers.  That warm 70% chocolate hardened before it made it out of the kitchen and the almond crisp was more rocky that crispy.   I could have taken a bowl of that sorbet though!

The sherry pairing was too thick and rich for the dessert.  On it’s own I really enjoyed it.  It would have been a great one to serve between 4 and 5 courses or in lieu of the dessert.

Overall, we left sated and happy.  Most importantly, Corinne had a happy birthday!

Of course, I have another supper club-like even this Friday.  It should be epic!
