Coconut Banana Chocolate Chip Cookies

How in the world was I exhausted at 10 pm last night?

I’m a night person!  Then I remembered I left the house at 730am to play in a softball tournament and only came home long enough to shower and shovel one of these in my mouth.

My team didn’t win the tournament, but the game we lost was one of the most memorable I’ve had.  We went into overtime and lost… but the adrenaline and the plays made by my team were over the top.

We were down by 5 with 2 outs.  One girl got hit in the nose with the ball, bled a lot, and then came back into the game to bat so we didn’t have to take an out for her spot in the lineup… and she got a great hit!  Sadly, we still lost by 1. 🙁

In keeping with my new weekly recap tradition, here’s was last week looked like:

Workout Recap (7/4-7/9)

  • Monday – Peachtree Road Race – 10K – 51:08 mins
  • Tuesday – Yoga for Runners, stationary bike 30 mins, 84 push-ups
  • Wednesday – Biceps/Back, 5K run, 84 push-ups
  • Thursday – Intervals (2 mile treadmill, 1 mile elliptical), 84 push-ups
  • Friday – Tris/Chest, P90X Ab Ripper X, 84 push-ups
  • Saturday – 5 mile run (in 40 mins!!!)
  • Sunday – Softball tournament, 84 push-ups

NuNaturals was nice enough to send me some goodies to test out.

The package came with recipes, but I’ve had my eye on these Coconut Banana Chocolate Chip Cookies from Gracie @ Girl Meets Life.

It’s not often something so good for you tastes so decadent.

These are gluten-free and vegan.  The added bonus is that they are low-sugar.  If you omitted the chocolate chips, they would be sugar-free – you could do that and thrown in come walnuts for banana bread cookies.

NuNaturals Pure Liquid Vanilla Stevia drops worked like a charm.  My cookies were appropriately sweet and I didn’t notice an aftertaste.

Coconut flour has been a recent addition to my pantry.  I’m loving it.  You have to be careful as it has a different feel than “regular” flour, but it adds a smooth, almost silky texture to baked goods.

Some benefits of coconut flour:

  • Good source of fiber – At 58% insoluble fiber, it has the highest percentage found in any flour
  • Guilt-free baking (nearly… the other ingredients are your business 😉 ) – Insoluble fiber means your body doesn’t digest it (translation: your body can’t derive calories from it); these fibers basically magic eraser their way through you intestines doing what fiber should do to keep your digestive system healthy
  • Gluten-free and hypoallergenic – Many people without a serious gluten allergy and moving towards a low-gluten diet.  Subbing coconut for some of your regular flour is another way to cut down on gluten intake.  For those that do have an allergy, you can use this with rice flour to improve textures.

Be warned that coconut flour is very dry and doesn’t bond well.  Remedy this by adding binders like bananas or eggs to your batter.  This can also be accounted for by using subbing in place of just 1/4 to 1/2 with a “regular flour.”
Keeping that in mind… welcome to cookies so silky and light you won’t be able to stop eating them.  Which is fine, as they are pure doughy deliciousness at only 86 calories a pop.


 

Coconut Banana Chocolate Chip Cookies

  • 3/4 cup coconut flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 medium banana, well-mashed
  • 14 drops NuNaturals Pure Liquid vanilla stevia
  • 1/2 T coconut oil
  • 1/4 tsp vanilla extract
  • 1/4 tsp butter extract
  • 1 C unsweetened coconut milk (So Delicious-style)
  • 1/3 C dark chocolate chips

Preheat oven to 350 degrees.  Line baking sheet with parchment paper.

In a large bowl, combine dry ingredients.  Set aside.  
 
In a medium bowl, whisk together wet ingredients.  Slowly add the wet mixture to the dry, stirring as you go.  Fold in chocolate chips.
 
Scoop out 2 T of dough on lined baking sheet, pressing down lightly.
 
Bake for 25 mins, until cookies begin to brown.  Allow them to cool completely (they are crumbly!).
 
Makes 11 cookies.

Approximate nutritional info: 86 calories, 4.2g fat, 11.1g carbohydrates, 3.8g fiber, 4.9g sugar, 2.1g protein.

Peach Cucumber Gazpacho

Working out can actually help alleviate soreness.

DOMS soreness

That’s what “they” say anyway.  So I got up and ran a looooong 5K distance yesterday in hopes of working out some of that delayed onset muscle soreness (DOMS) from Monday’s Peachtree Road Race.

Stats:

  • Distance – 3.14
  • Time – 25:31 mins
  • Pace – 8:06 mins

DOMS is the pain/stiffness you feel 1-2 days after a tough workout.  It refers to the little tears in the muscle rebuilding after you’ve broken them down – and it is an important part of the muscle-building process.  Light exercise, easy stretching, and massages are all good ways to alleviate DOMS.

Note: DOMS is not to be confused with injury or pain from doing too much too fast.  If you’re experiencing that soreness, you need to REST.

The food you eat post-workout is also important.  Lots of nutrients are a must – I like to load up on protein, fruits, and veggies.

Peaches are all over my Peach State right now.  The season is ON and sweet, juicy peaches are everywhere.

Fun fact: after the July 4th Peachtree Road Race they hand out peaches in addition to the usual bananas and bagels.

For lunch I decided to use some of the peaches my grandfather gave me from his trees in a soup.  With a side of (not pictured) chicken.

This chilled gazpacho is a great light, summery started or side dish.  The serrano adds an unexpected bit of heat on the end of each crisp, sweet bite.

I didn’t add sugar/honey/agave, but you certainly could if you like a sweeter soup or your peaches aren’t as flavorful.  If you aren’t a fan of heat, reduce the amount of or leave out the serrano pepper.

Peach Cucumber Gazpacho

  • 1 large peach
  • 1/3 C cucumber, peeled and diced
  • 1/4 C yellow pepper, diced
  • 1/2 oz goat cheese
  • 1 T apple cider vinegar
  • 1 tsp olive oil
  • 1 garlic clove, sliced in half
  • 1/2 serrano pepper
  • 1/8 C cilantro
  • 1/4 C coconut milk (not canned – the So Delicious variety)
  • S+P, to taste

Combine sliced peaches, cucumber, yellow pepper in a medium bowl.  Add the goat cheese, vinegar, olive oil, a couple shakes of salt, and garlic clove.  Cover and refrigerate overnight.

In the morning, remove the garlic from the mix and throw away.  Pour the remaining contents of the bowl into a blender and add serrano pepper, cilantro, and milk.  

Puree until smooth and creamy.  Season with salt and pepper;  you may also add agave or honey for a sweeter soup.  

Refrigerate until well-chilled, allowing flavors to combined (at least 2 hours).

Pour into 1-2 bowls and enjoy!

Makes ~1 cup.

Mexican Sweet Potato Salad + WIAW

Have you guys been watching all of the Casey Anthony news?

I’m no lawyer, but I am shocked she was found not guilty.

 

How is it that people who are so terrible and that don’t contribute good to the world walk around alive and free?  Why are people who were amazing human beings, who gave back, who cared for others are taken too soon?

Mr. Billy Joel, why is it that only the good die young?!

I should probably have warned you that today marks 3 years since my dad was taken by cancer.  3 very fast years.  It’s hard to believe…

 

Not.  Fair.

Maybe I write about it too much, but my dad had continues to have such a huge impact on my life.  Not a day goes by that I don’t think of him.   On the 4th I ran the Peachtree Road Race wearing a ribbon (orange for leukemia) in his honor.

A big FU to the people out there who are just taking up space or – even worse – are harming others.  You’re lucky to have the opportunity to live.  Don’t waste it taking from others.

Breakfast

These Apple-Carrot Muffins I made a few months back are awesome.  Super filling, especially with the massive glob of PB I iced it with.

 

Lunch

Garden Lites Zucchini Souffle.  These are surprisingly good for frozen food!  Thanks to the egg, they are pretty filling as well.

Even though I microwaved it, the edges were a crispy (read: not rubbery) texture.  The egg helped make the inside of my souffle fluffy rather then mushy like any frozen meals.

Snacks

Pretty standard – I was super busy at work.

Side note: my dad used to love Think Thin bars.  He liked Chocolate Fudge, but I think Chocolate Toffee is the only way to go.

 

Dinner

I was underwhelmed by my dinner out, so instead I’m going to share a particularly delicious salad I ate this weekend.

It is no secret that I do NOT like white potatoes.  I do not like thick french fries, potato salad, mashed potatoes, twice baked potatoes.  I just don’t, Uncle Sam I Am.

 

The 4th of July is a potato salad-centric holiday… so I made a version that I like!

 

Obviously, it had to be Mexican-inspired.  Nothing says 4th of July like México.

Spinach also must be incorporated.  It is my salad.  Bwhahaha!  Of course there was cheese – I used Daiya
pepper jack but honestly it didn’t nearly spicy enough.  Use regular pepper jack if you eat dairy!

This was a winner.  The spices made the salad taste “special” and I was able to join the potato-salad eating.  Mine was better than that white potato stuff.

Mexican Sweet Potato Salad

  • 1 sweet potato, baked and cubed
  • 1/2 C black beans, drained and rinsed
  • 1 small tomato, diced
  • 1 C spinach
  • 1/4 C red onion, diced
  • 1/4 C pepper jack cheese (I used Daiya) 
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1/2 tsp chili powder
  • 1/2 tsp turmeric
  • 1/4 tsp coriander
  • Juice from 1/4 lime
  • Drizzle of EVOO
  • S+P, to taste

 

Prepare first 6 ingredients and mix in a medium bowl.  Set aside.

Whisk remaining ingredients together in a small bowl.  Adjust spices to taste.

Pour vinegarette over salad and toss to combine.  Enjoy!

Makes 1 entree ensalada or 2 sides.

Weekend Stars

Every once in a while, the stars align just right…

 

and a perfect Saturday is born.

This Saturday began with the 21st Annual Pride Run at the park across from my condo.

There was a special buzz in the air following the news that New York joined a growing number of states extending the basic right of  marriage to all of its citizens.

I’ve run this race 3x so far and it continues to be one of my favorites.  The course is great, it’s well-organized, the runners are friendly, and it gets strong crowd support.  Even the police blocking off the streets cheer the runners on!

This year’s race solidified the event’s place in my heart… it marks the first time I placed in the Top 3 Females Overall!

I earned 3rd place overall and 1st in my division!!!

Stats:

  • Distance – 3.14 miles
  • Time – 23:41 mins
  • Pace – 7:45 mins

 

I have NO idea where that came from, but OMG I was thrilled!!!

 

Post-race I walked across the park for some raw milk (I know it’s controversial… but it does have benefits and it tastes like a milkshake!), farm eggs, and peaches.  There is nothing more delicious than local, fresh food.

 

The afternoon was filled with softball and some quick pre-reunion weight lifting.

At the reunion I saw some people I was looking forward to reconnecting with, which was nice.  Overall… I don’t know what I expected, but was just ok.  High school seems like a lifetime ago, and it wasn’t the best of times for me.

 

In true foodie fashion, dinner was the best part of the night.

A small group of old classmates (we are now good friends) – myself, Mallory (my BFF), Greg (her husband), and Laura (another friend) – all met for a pre-reunion dinner at Bocado (887 Howell Mill Road NW, Atlanta, GA 30318, 404-815-1399).

Thank god because the only food they served at the event was a cold tray of chicken nuggets.

 

Bocado has been on my “to try” list for far too long.  Several have contended that they serve the best burger in Atlanta; however, the other menus items are the real standouts.

 

My jalapeno-infused tequila cucumber martini was light and clean tasting.  The flavors were perfectly balanced – a great start to dinner on this hot day.

We enjoyed our drinks with a cheese plate made up of:

  • Purple Haze (goat, California)
  • Humboldt (goat, California)
  • Ewephoria (sheep, Holland)
The Ewephoria took the prize as the favorite, and the best named.

 

Our cheeses were served with radishes, cranberries, honey, and perfect crusty bread slices.  I say perfect because often toasted bread is so saturated in olive oil or butter that it becomes a chewy, greasy mess.  These slices were brushed with just enough olive oil to compliment the flavors.

For dinner Laura and I ordered small plates to share.

These were the best Fried Green Tomatoes I have EVER had.  Normally I’m not a huge fan due the the soggy, greasy nature of the dish.

The chef’s interpretation of the dish did not suffer from this affliction.  The tomatoes were cut into spears and battered in corn meal, leaving them crisp and relatively light.  They were served over a bed of greens and radishes with hot sauce and a buttermilk herb dressing.

Our Beet Salad was served in a bowl with farro, orange segments, fennel, toasted hazelnuts, avocado, and goat cheese.  The flavors played together quite well.

Toasted hazelnuts added a dimension to the more typical beet-orange-goat cheese combo.  I especially enjoyed the different textures – the crunch of the nuts with the slightly chewy farro and creamy avocado and goat cheese.

 

The Burrata was the one dish that I wasn’t impressed with.  The eggplant caponata on top was great, but the burrata itself was a bit too rubbery.  It was the only dish we didn’t finish.  However, it was served with a kalamata olive country toast that was delicious.

Our waiter highly recommended the Summer Squash Salad.  As advertised, it was very good.  My only complaint is the heavy hand on the olive oil.  The squash was delicious and the cherry tomatoes were some of the best I’ve had this season.

Mallory and Greg both ordered the infamous burger.  It was quite good.  As good as Holeman & Finch?  My vote is YES… but it’s very close.

The burger is served with house-made herbed french fries and a side of a buttermilk herb sauce.  I’m not a HUGE french fry eater and I could have eaten an entire plate of these.

For dessert we chose a Banana Bread Cake layered with chocolate ganache and cinnamon icing.

We hated it.

Japanese-ish Hummus

It’s New Hair Thursday! 🙂

I love my stylist even more than I love chocolate cake (translation: love her a lot).

Karen worked in my old neighborhood salon, but moved to North Georgia.  I now drive an hour to go see her at her own salon called Lava Hair Studio.  Check our her new ad:

Karen and I have been together since I was 15.  It was only fitting that I go see her right before my high school reunion this weekend.  I cannot believe it has been 10 years!

Always have to have some red in it. Somethings never change.

Today was especially good because I feel SO much more human.  Thank you all so much for the get-well wishes!

I busted out a easy run during lunch to sweat out the rest of my sick germs.

Stats:

Sweet Potato Praline Cheesecake @ Apres Diem

When I saw this recipe for Caesar Hummus at Healthy Exposures I was intrigued.  Then I saw Jess continue to mention how good/addicting it was… I knew I had to try it for myself.

Jess is right. This may be the best hummus ever.  Seriously – I don’t use extremes often.

Once I began tasting and mixing, I determined that this had a decidedly Asian taste to it.  So I went with that and added soy sauce and Japanese red pepper blend called Shichimi Togarashi.

This farmer’s market-find is a blend of: red pepper, sesame seed, orange peel, Japanese pepper, seaweed, and rapeseeed (<– I have NO idea what that is and I’m too scared to google it).

I added 1/4 – 1/2 tsp of this and then sprinkled it on top of the final product.  Heat is my BFF, so be sure to adjust to your preference!

You know those sauces they bring out at Japanese restaurants?  I’m going to start bringing this instead.

Japanese-ish Hummus

  • 1 C garbanzo beans
  • 1 T tahini
  • 1 T capers + brine
  • 1/2 tsp herbed dijon mustard
  • 1 garlic clove
  • Juice of 1/2 a medium lemon
  • Liberal drizzles of soy sauce
  • Shichimi Togarashi (or red pepper flakes/cayenne/paprika), to taste
  • Olive oil and/or water

If using dried chickpeas: soak chickpeas overnight (or 12 hours) at room temp (water should just over top of chickpeas).  Rinse and place in a large pot with 3-4 garlic cloves and salted water.  Water should cover chickpeas.  Bring to a boil and them simmer for 50-60 mins.  You may need to add water to keep peas covered.  When desired tenderness is reached, remove from heat and allow to cool in cooking water.  Drain and rinse before using.

Add chickpeas, tahini, capers, mustard, garlic, and lemon juice.  Pulse until beginning to come together.  Taste and add soy sauce and spice to taste, processing again to combine.  With processor running, drizzle in olive oil and/or water (I used ~2 tsp oilve oil and ~1/8 C water).  Continue processing until smooth.

Makes 3/4 cup.

I can’t stop eating this hummus.  Is it too abnormal to eat an entire cup of it in one sitting..?

Spinach-Walnut Pesto + WIAW

It’s cherry season!

Cherries are one of my favorite grab-and-go snacks, as well as a favorite dessert addition.

Apparently they have a ton of health benefits too!

  • High in anti-oxidants
  • Act as anti-inflammatories
  • May help fight cancer
  • Loaded with minerals (potassium, iron, zinc, copper and manganese)

It’s also WIAW!  This is one of my favorite “events” (Jenn @ Peas & Crayons is a genius for thinking this up) because I love getting inspiration from what others are creating/eating, and I love finding new blogs to read in all my spare time.

You know when you’re sick, have no appetite, and nothing sounds good?  This lead to a day full of eclectic snacks and small meals.

Why did my immune system miss the memo that it’s 90 flippin’ degrees outside?!


Breakfast

Sick –> comfort food –> oatmeal.

Sweet berries + salty cottage cheese = oatmeal deliciousness

Cherry oatmeal!  I made this the old-fashioned way on the stove top.  In my comfort oats:

  • Almond milk
  • Cottage cheese
  • Cherries
  • Blueberries
  • Cinnamon

Lunch

Salad on the road:

  • Spinach
  • Orange sections
  • Edamame (which sunk to the bottom)
  • Liquid aminos

To dress this salad, I used the orange juice and Bragg’s Liquid Aminos.

If you haven’t tried this yet, I highly recommend doing so.  Liquid Aminos are NON-GMO soybeans and purified water.  The taste is similar to soy sauce, though its much more mild and less salty.  Added bonus: it comes in a spray bottle!

My spaghetti squash with it’s leeks and lovely Spinach-Walnut Pesto looked like this when I started:

Then I attacked it!  Mmmmm…

I  love spaghetti squash to begin with, but adding a bright, lemon-y, flavorful pesto made it amazing.  I also tossed it with some sautéed leeks.  Topped off with freshly ground pepper to set it all off.

Never tried spaghetti squash?  It’s mild flavor and spaghetti-like texture means you can use it in place of pasta in virtually anything. Click here for a “how to.”

Perfect welcome for Summer on the solstice. 🙂


Spinach-Walnut Pesto

  • 2 C fresh spinach
  • 1/4 C fresh basil
  • 1/4 C walnuts
  • 1 T extra virgin olive oil
  • 2 garlic cloves
  • 1 jalapeno, seeds removed
  • Juice from 1/2 a small lemon
  • S+P, to taste

Toss all ingredients into a food processor and pulse until mixed.  You may need to stop and scrape down the sides occasionally.

Makes 9-10 tablespoons.

Master sommelier Andrea Robinson says the perfect solstice pairing is a glass of champagne.  Had I felt better, I would have indulged!

Blue Cheese-Stuffed Bean Burgers

In Atlanta we have weekly events called “Screen on the Green.”

 

They put up a giant screen in the city’s largest park and project classic films.  Everyone comes out early with their Frisbees, dinner, and bottles of wine.  It’s a lot of fun!

Last night’s movie was Imitation of Life.  My beverage of choice was a beer from one of my breweries – Hitachino.  I noticed on of their beers on a menu at The Porter and had to try it, as I’d never seen a Japanese white ale!  They make a fantastic ginger ale as well – unlike many gingers, it isn’t too sweet for my taste.

Last night I tried the Red Rice brew for the first time.  I really liked it!  It is a light, crisp red beer with a bread-y taste and a refreshing hint of strawberries.  YUM.

It was fun hanging out with my friend and celebrating (almost) making it through another work week.  Too bad we can’t do this every night!

Wayyyy back in the day (translation: college), I used to eat burgers weekly.  I also ordered the bacon-blue cheese version.  With fries and a side of ranch.  It’s been a while since I’ve eaten that much red meat in one sitting.  I’ve nearly cut the stuff out of my diet completely.  Way before cutting out the red meat, I did stop the blue-cheese-bacon-bomb burgers.

Fast-forward to the healthier life and I’ve learned to love homemade bean burgers.  One of my favorite parts about a good burger has always been melty cheese and a salty-spicy bacon taste.  I’ve come to realize that my lifestyle change doesn’t mean I can’t still enjoy those flavors!

 

Top 3 Tips for Bean Burger Enjoyment:

  • Use high-quality blue cheese – the flavor is more pronounced, so you don’t need such a massive amount
  • Add paprika for a spicy-smoky taste that satisfies almost like bacon
  • Add other fun flavors to make the bean burger more “fun” – make them spicy, herb-y, Mediterranean-inspired, Italian… beans actually allow added flavors to shine more so than beef does.

My blue cheese of choice?  Montchevre Chevre in Blue.  It was suggested to me by Matt, who has never led me astray in the cheese department!  Roaring 40’s Blue would also be great, or a cheese from another family.  I’m thinking a sun-dried tomato herbed goat cheese…

 

As far as the fries and ranch… I think I grew out of that (ranch now sounds soooo unappealing to me).  I enjoyed my burger with my Butternut Rosemary Hummus and celery.  And a side of work.

Then, after a tricep/chest workout, I went back for Round 2 with a fried egg on top.  Gotta get that protein!

 

Tomorrow I’m going with a side of sweet potato chips to compliment my leftover burger.

Blue Cheese-Stuffed Black Bean Burgers

  • 1 can black beans, rinsed
  • 1 tsp apple cider vinegar
  • 1/4 C walnuts
  • 1/4 C whole wheat flour
  • 2 garlic cloves
  • 1/3 C cilantro
  • 1/2 C red pepper, chopped
  • 1/4 C onion, chopped
  • 1/2 tsp paprika
  • S+P, to taste
  • 1 oz blue cheese

Preheat over to 400 degrees.  Line a baking sheet with parchment paper or foil.

Pulse black beans, vinegar, walnuts, flour, cilantro, and garlic together in food processor until beginning to stick together. Add red pepper, onion, paprika, salt, and pepper and lightly pulse until just mixed (can also mix by hand).

Form 4 patties, leaving ~1/3 of the mixture behind.  Place patties on prepared baking sheet.  Top the burgers with blue cheese, keeping the cheese closer-ish to their centers.  Add remaining bean mix to the top so that the cheese is covered and press lightly to mold together.

Bake 10-12 mins on one side.  Using a spatula, flip and bake an additional 5-6 mins.

Makes 4 burgers.

WIAW Pride

Happy WIAW! (What I Ate Wednesday)

There seem to be a lot of posts lately where people are talking about their accomplishments.  I think that’s awesome!

 

The part that makes me sad is that many of these posts are pre-faced with something along the lines of:

“I don’t want to sound like I’m bragging…”

Or:

“Not to sound full of myself…”

 

Why do we have such a hard time sharing our “wins?” Charlie Sheen certainly didn’t and he isn’t even a winner.


Maybe it’s a female thing.  Not to stereotype, but I have never heard a dude apologize or hesitate before talking about a success.

Women tend to be raised to support and nurture.  Society tells us we are “caretakers.”  This doesn’t have to mean we need to keep it to ourselves when we’ve accomplished something!  We are allowed to be proud of ourselves and receive support and kudos from others.  Personally, I love sharing in your successes and cheering you on!

 

Share a personal success one person today.  I dare you.

Today I am proud of myself for 3 reasons:

  1. I got out of bed and ran twice as far as I promised myself I had to
  2. I remembered to take pics of everything I ate for WIAW!  (Yes, I take my pics on Tuesday… I’m told that’s ok. 🙂 )
  3. I made some serious deliciousness with the other half of my butternut squash

 

Here’s the story of my 3 prideful moments on what I’m now creatively dubbing Terrific Tuesday:


1. Run

Promising low mileage is one way I coax myself out of bed for morning runs.  I don’t really enjoy going right from the bed to the street (that’s what she said), but on work days I don’t have time to chill first.  So I make myself promises:

“If you get up, you only have to run a 5K. It will be easy.  Get up!”

 

I had some verrry filling Mexican last night, so I didn’t need a snack other than to take my B-12 (awesome AM energy booster) before taking off.  Apparently this was just what the Dr. ordered for me today.

 

Stats:

  • Distance – 6 miles
  • Time – 49:22
  • Pace – 8:20

 

I think that’s my fastest time yet at this distance!  Admittedly my leg was shaking on the brake pedal while driving to work, but in a good “I pushed myself” way.

 

2. WIAW

 

Typically I realize half way through my food-eating for the day that I’ve forgotten to take pics of everything I ate.  Not the case today!

 

Breakfast:

My name is Laura and I am chia pudding-obsessed.

Blackberry Almond Chia Pudding

A few days ago I made Peach Cobbler Chia Pudding.  I’ve also done Banana Cashew Chia Pudding.  Today was Blackberry Almond Chia Pudding.

My favorite so far is still the Peach, but this was not bad.  I added a bit of butter extract which make it more pie-like.  Not bad at all, my friends.

Because everything tastes better in a martini glass

 

Blackberry Almond Chia Pudding

  • 1/2 C blackberries, cut in half
  • 1/4 C unsweetened vanilla almond milk
  • 1 T almond butter
  • 1 T chia seeds
  • 1/4 tsp butter extract
  • 1/2 tsp cinnamon

Place all ingredients in a bowl and mix well, mushing blackberries slightly in the process.  Store in refrigerator overnight.  In the morning, stir and enjoy!

 

Lunch:

Eaten at my desk, but it was so good I didn’t care.

Roasted Butternut Red Pepper Lentils

Leftover Roasted Butternut Red Pepper Lentils… which may have been even better than they were on day one.  The flavors had a chance to meld, I topped it with the last bits of fresh mozzarella… and I was one happy camper luncher.

Snack #2:

Peanut Butter Creme-filled Chocolate Newman-O's

Yesterday I got these in the mail from Mary @ Bites and Bliss.  I won a recent giveaway she hosted… talk about bites OF bliss.  What could be better than FREE Chocolate + PB cookies!?

Dinner:

Easy salad with a couple more of my little kid hidden veggie Chicken Bites.

Chocolate-Banana Green Creatine Protein Shake w/ Fiber
