Gift Guide for Food and Fitness Lovers + Giveaway

December 3, 2012 By Laura

Gift giving is a big part of the holiday fun.

Almost as fun as gift-getting.

It is December 3rd whether the weather got the memo or not.  I went on a jog yesterday in shorts and a tank top and was sweating while passing houses decked out for Christmas.   Bizarre.  My iPhone said it was 66 degrees, but I think it cleared 70.

Since it is the month of giving, I wanted to share some of my favorite things (aside from whiskers on kittens – that goes without saying).  These are tried-and-true items – I already own most of them!

Whether you are brainstorming something for your favorite food-lover or for someone whose idea of fun is working out, I hope this will give you some ideas.

2012 Holiday Gift Guide

1. Shun Knife

This is my favorite knife.  It’s a fantastic tool, but what makes it even better is that they make a left-handed version!  Santa brought me one last year and it’s basically the only knife I use.  Speaking of… I need to get mine sharpened for Christmas!

2. Magic Bullet

I used this thing religiously before I got my Vitamix.  It can take some abuse, and you can blend smoothies right in the cup for a quick breakfast or post-workout refuel.  I still use mine for small tasks like whipping cottage cheese for Apple Cupcakes or single-serving dips.  But if you really loved the giftee… you’d buy them the $450 Vitamix.

3. FitBit

My FitBit inspires me to walk 10,000 steps and 20 flights of stairs a day, something I need since I am a cube monkey.  I don’t use all the features, but it also can track sleep and calories (though it’s not entirely accurate as it can’t tell when you’re lifting weights or at a standing desk).  Warning: If you are a little OCD, this may not be the best thing for you.

4. Handful

Greatest sports bra ever… if you’re a member of the itty bitty titty committee.  It’s not a super-support bra, but if your pecs are biggest part of your chest (like mine) it’s perfect.  There’s even a little layer of padding so you don’t like like a flat-chested 12-year old when you’re at the gym.  AND they are having a $12 closeout sale on the size large.

5. Peanut Flour

I talk about it all the time.  If I were to find peanut flour in my stocking, I’d be one happy girl.  Better yet, if I could just get a year’s supply… Mom, are you reading this?  If you order through iHerb.com, use discount code USO924 for $5-10 off your order!

6. Grow Your Own Wheatgrass Kit

Wheatgrass is awesome stuff.  It’s full of amino acids, chlorophyll, minerals, vitamins, and antioxidants.  It’s also expensive.  I want to grow my own!  You don’t even need a juicer to use it if you have a Vitamix!  It will blend up the grass like a champ.  The Wheatgrass Kit can be found on OpenSky at Robin McGraw‘s new Insider page (yes, it’s Dr. Phil’s wife).

Here’s the giveaway part….

To celebrate Robin’s new healthy living collection, OpenSky has offered to give one reader a $25 credit to use anywhere on the site!

OpenSky is a “social shopping site that helps people discover, buy and share unique goods that match their individual taste. Users can connect to friends and industry insiders in Food, Style, Beauty, Healthy Living, Electronics and Home Décor for exclusive information, advice and insider product recommendations.”

I’ve been a member for over a year now and have found lots of great products.  They will often have sales on my favorite vegan protein powder (Sun Warrior), and its where I found my Kombucha homebrew kit (I’m on batch 8!).   My favorite Insiders include: Robin McGraw, Bobby Flay, Dorie Greenspan, Tracy Anderson and Jackie Warner.

Receive up to 4 entries by:

  1. Join OpenSky
  2. Tweet: You could say something like: I entered to win a $25 @OpenSky gift certificate in the @sprint2thetable #giveaway http://wp.me/p16jDn-1OI
  3. Be Social: Pinterest Follow Me and/or Pin Something of Mine, Instagram Follow Me, Follow Me and Open Sky on Twitter
  4. Comment: What is on your wishlist this year?

Please leave a *separate comment* for each entry!

Contest ends at 11:59pm EST on Thursday, December 6th.  The winner will be announced on Friday, December 7th.

I quit posting a workout recap on Mondays… it seems like it was getting too repetitive/boring to read.  If anyone has thoughts on that… feel free to share.  For now I’m going to do away with it.

Is it still warm where you live?

Have you ever tried any of the things on my gift guide?

The Long Run + Peppermint Mocha

November 15, 2012 By Laura

Perspective is important this time of year.

Today’s guest post from Kat is all about the Long Run.  I love that she chose this topic at the beginning of the holiday insanity.  Sometimes it’s all too easy to get caught up in the rush and forget to enjoy the moment.

I’ll be keeping this in mind over the next few crazy busy days!  I’m off on a work trip before heading out of town for Thanksgiving.  If you saw the disarray my kitchen is in (food prep and office Thanksgiving party baking).  And let’s just pretend the rest of my condo doesn’t look like a tornado of clothes and suitcases…

Here’s Kat!!!

________________________________________________________________________________________

Firstly, I have to say that after the rash of comments from my last post, I was surprised, happy, and blushing!  Seriously!  I love that people want to read what I have to say.  Thanks for the extra cheek work-out!  No wonder so many of you are hooked on blogging.  It’s a feel-good mechanism!  (Editor’s note: agreed!  All you guys ROCK!)

Because the past two weeks have been SO crazy, I have had to focus on the long run.  I baby-sat a very time-consuming young puppy, Maggie.  She had to be crated and couldn’t be left alone for more than about 5 hours.  This is typically not conducive to my schedule, but sometimes you have to make things work!

It was time to focus on what would help me succeed in the long run (both metaphorically and actual running).  Three things I have kept in the front of my mind in the past two weeks were to relax, be present, and set no expectations about results.  I know I will get it all done, I just have to believe in myself.

In the long run, stressing will NOT help you succeed.  Besides adjusting my schedule for the bundle of joy that is Maggie, I also had to go to Arizona for my cousin’s wedding.  That same weekend, I also had to write a 15 page paper, coordinate with a partner to draft a buy-out agreement, and do business tax problems.  (This is in addition to my usual and regular workload. UGH!).  Initially, this all felts extremely unmanageable, but ….dun dun dun… it all got done and I did not stress.  I found an hour here and 20 minutes there to fit it all in.

However, I almost had a fit when the flight attendant on my flight to Phoenix told me I was not allowed to use the blue tooth keyboard on my iPad!!!!!!  That almost added some stress to the weekend, but I seriously made it work! The three things kept me sane.  Relax, be present, and set no expectations about results.

In the long run, you will remember the special moments with your family if you are really able to allow yourself to just be with them.  At my cousin’s wedding in Arizona, I was a bridesmaid, met my cousin’s baby, my god-daughter (luckiest girl in the world!!).

What is the point of pushing yourself if you cannot relax and be present, and enjoy the moments you get with friends and family.  Stress happens, but keeping perspective on things that are truly important can really help.  I hardly ever get to see my family, so with a little effort to shove my work into the back of my mind, I was able to really be there and enjoy moments with my family, and the new additions to my family through the marriage.

In the long run, not planning your run might just make you happier.  I also squeezed in some GREAT runs.  On Saturday, I ran the wrong way.  Not that there is a wrong way to run, but I didn’t realize that if I ran the other way, I could run all the way to the mountains and unsuccessfully look for a trail to run.  Sunday, I did this, and was my longest run since my ultra, and it left my IT band screaming a little (thank god for my foam roller!), but the beauty, scenery, and peace of mind it gave me were priceless! It really helped to go out, relax, and not set any expectation about pace, distance, or how I might feel afterwards.

On my run in phoenix—someone is a lucky girl (me!)

In the long run, the little things add up to a LOT of happiness.  That being said, enough about craziness.  Today I actually want to share something I’ve been DYING to write about since it’s inception, and I think it’s perfect timing with the holidays around the corner.

Coffee is one of my favorite things in the entire world.  Honestly, I can turn anyone into an addict if they have my coffee.  It’s the way I make it… OMG. Coffee is a production at my house.  I recently started doing my own version of a peppermint mocha (but with fewer calories than Starbucks or your local coffee shop).

Please try this – you will not regret it – and do you like my very first edited/stitched picture? – *becoming a blogger*

It might look like I dropped some illegal (now legal in Colorado and Washington) substances in with my coffee grounds, but it’s not… it’s dried peppermint leaves from Penzy’s Spices (a favorite).  I bet you can do this in a regular coffee maker, or a French press, but I use what I refer to as a “drip drip”.  I have no idea what it is actually called.

I make it with two scoops of coffee grounds, a half-ish or more scoop of the peppermint leaves, then just pour on the hot water to brew.  IN THE CUP: I add a pinch of sea salt, a scoop of dark chocolate cocoa powder, and splenda/stevia/sugar to taste. It’s the most peppermint-y delicious cup of coffee you will ever have, and this little thing will add up to a LOT of happiness!!!  I Promise. 🙂  (Editor’s Note: Kat… do you deliver?)
In other good news, Maggie was actually a foster dog, and she got adopted today!!!  Yay!  See the picture of her with her new mom:

Tooooo adorable

***

I’m continually blown away by Kat and her productivity.  I’m working on a recipe to bottle her energy!

What helps you in the long run?

What little happiness-es help you get through stressful days?

What I Ate Without a Plan + NuttZo Winner

November 14, 2012 By Laura

Eating is fun.

Sometimes too much fun.

My trainer still hasn’t sent my new nutrition plan… he was going to this past weekend.  I could remind him… but I’m kind of enjoying designing my own.  I still feel like I deserve it after all that asparagus.

So happy to be back in the gym!!!

Eating several small meals is something I enjoy, so I have kept that concept.  I did eliminate one meal… 7 was a LOT to fit in.  I am also trying to keep the protein count high.  My new workout plan is all about building muscle through low reps and heavy weight.  It’s important to fuel that muscle growth properly!

_______________________________________________________________________________________

This month’s What I Ate Wednesday is about good habits.  I’m learning what that looks like for me on the off-season.  While I do enjoy a small treat each day to avoid feeling deprived, my focus is on eating a clean, low sugar diet filled with protein, complex carbs, and seasonal foods.

Check out my semi-good habit eats below, and then click here to head over to Jenn @ Peas and Crayons to get to see how everyone else ate on Election Day.

_______________________________________________________________________________________

Breakfast:

After the usual morning cocktail (mix of Apple Cider Vinegar, Glutamine, and Fitmixer Aminos) I did a little kitchen experimenting.  This baked oatmeal recipe is still in draft-mode, but let me know you… it’s going to be epic.

I also ate a mixture of Greek yogurt, peanut flour, flax, cinnamon, and stevia (that also the “icing” on my oatmeal creation).  That was topped with melted blueberries (frozen berries microwaved until juicy, ~15 seconds).

Mid-Morning Snack:

I legit love salmon.  This one I baked with lemon, pepper, sage, and dill.  Eaten with fresh raspberries. I can’t believe how bright and flavorful these winter berries are!

Lunch:

I have been craving brussel sprouts and parsnips.  Roasted in the oven until they are close to burned.  Tempeh is another oven-roasted favorite.  It gets crispy on the outside – almost like eating a crouton.  Which is why the whole thing went on top a bed of spinach with some leftover Kiri squash.

I loved the mix I tossed the veggies and tempeh in pre-roast:

  • 1.5 tsp salt-free BBQ spice blend (you could sub any mix here)
  • 1 T nutritional yeast
  • 1 T coconut vinegar

Afternoon Snack(s):

Today was leg day.  My workout was scheduled right at snack time.  I hate workout on of a full stomach, but I really didn’t want to feel hungry half way through my workout – especially on a leg day!  So I split up my snack

Pre-workout I had a raw French green beans, pumpkin hummus, and a ground chicken slider.  Why I’ve never used ground chicken before?!  These burgers are awesome.  All I did was mix in some spices, diced red pepper, and onion before tossing them in a pan (~4 mins each side).  Easy, delicious, and SO much better than cleaning up raw chicken breast.

Post-workout I drank a lot of water and an EAS drink.  I haven’t been drinking these lately, but I do really like the Chocolate Fudge flavor… and I had a call with my boss, so fast and easy was key.

Dinner:

Cold weather makes me want Italian food.  This is the simplest of Italian foods.  I layered red wine tomato sauce with eggplant, zucchini, mushrooms, and red pepper in a baking dish and cooked it in the oven (@ 375 convection) for 45 mins.  I also added some Cabot clothbound cheddar to the top.

My protein was swordfish.  Despite eating it daily during my competition prep, I’m not sick f it.  You really can’t go wrong with the steak of the sea.

Dessert:

Brass monkey, that funky monkey… I made Zandra’s Spunky Monkey Pumpkin Pie.  I only had 1/2 a can of pumpkin left, so I but the recipe in half and  made muffins.  I also added 1 tsp of apple pie spice, 1 tsp of butter vanilla extract, and 8 drops of Stevia.  Instead of an egg I used 1/4 c egg whites, and I didn’t use the baking soda.  And it was fantastic – like a pumpkin-peanut butter souffle.  I ♥ you, Zandra.

These came out to 8g of protein, so I made some maple-cinnamon protein ice cream to go with it.

Maple-Cinnamon Protein Ice Cream

  • 1 scoop vanilla protein powder
  • 1 tsp cinnamon
  • 1/4 tsp maple extract
  • 7-8 drops liquid Stevia
  • 1/4 C unsweetened almond milk
  • 1 C spinach (optional)
  • Shake of guar gum (optional – used to thicken)
  • Ice
This was a fantastic combo.  I almost made seconds.  Thank god I was too tired.

I didn’t forget… the winner of the NuttZo giveaway has been selected!!!

Congratulations to…

Layne!

Email me your name and address and I’ll get that over to the NuttZo crew ASAP.

The off-season protein count for the day: 150.9g  I’m sure my trainer would have it higher, but I’m listening to my body and eating what I want.  Within reason… ‘cause one does not simply eat only one chip.

Do you prefer to eat several small meals, or 3 squares?

What have you been baking lately?

Last Chance to Be Productive

November 9, 2012 By Laura

Friday.

That day of the week where you can make a final push to get your work done and start Monday with a clean inbox.  Your last chance to be productive for the week.  Or you should screw around on the internet reading surveys like this.

Everyone seems do have done this Last Chance survey this week.  I think the first place I saw it was on Brittany’s blog.  I’m joining the party today!

Last food you ate?

Vitamix money shot

A post-workout protein shake.  Butternut-Cherry Bomb.  I started making this 2 years ago and it remains on of my favorites.

Last beverage you drank?

Water.  I drink 120 oz a day.  Constant peeing.

Last workout?

Leg day!  It was my FIRST workout post-competition (except for some walk/runs).  I was so thrilled to get back in the gym that I didn’t complain that it was legs.  Next competition is March!

Last thing you pinned?

Alexandra’s Spunky Monkey Pumpkin Pie.  Protein, peanut flour, and pumpkin.  Does it get any better?

Last text message you sent?

A text to my trainer complaining that I now have to take 2 weekly rest days.  Lame.

Last blog you visited?

Some random blog while in search of a homemade cottage cheese recipe.

Last tweet you sent?

A reminder to ever my NuttZo giveaway!

Last place you visited?

The ATM.  I walked through the drive thru on my way back from the gym.  Only slightly concerned I was going to get mugged.

Last time you did ab work?

Wednesday.  It was my last “off-plan” day.  Normally I’m not allowed to do much ab work, so before I got my new training plan I planked.  Am I really that neurotic?

Last show you watched?

Grey’s Anatomy is on as I’m drafting this post.  It’s a half-assed effort at watching… I’m paying more attention to writing this.

Last thing you baked?

Mama Pea’s Pop Tarts.  Last Friday I promised I’d make the post-competition.  So glad I did.  Instead of her strawberry filling, I made a pumpkin-cinnamon center.

What is the last thing you Instagramed?

My new Harbinger weightlifting gloves.  A little post-competition treat to myself!

Last item on your to-do list today?

Review an Excel model in advance of a client call.  It’s as much fun as it sounds.

Do you like sprints, or do you like steady state better?

If I have to be on a treadmill, sprints.  Outside I like to steady run and watch the scenery.

Do you need coffee to get going in the morning?

No.  I like my morning cocktail (apple cider vinegar and FitMixer Aminos), but I do prefer to have a cup after lunch to warm up (why must they keep it so cold in my office?!) and get me through the afternoon.

Nuttzo Over Nut Butter + Giveaway

November 8, 2012 By Laura

Lame jokes are my favorite.

Q: What did the fish say when he hit a wall?

A: Damn.

I’ll spare you more jokes and get right to the point. Remember my post competition treat of choice?

NuttZo was a big treat for me because I hadn’t been “allowed” nut butter on my training plan for a while, and because at ~$15 it’s a pricey jar of creamy, nutty deliciousness (worth every penny, btw).

That’s not a problem for one of you… The lovely people at Nuttzo have offered to give away a jar of the good stuff!  this is a jar of the Original flavor (my favorite).  It contains peanuts, cashews, almonds, Brazilian nuts, sunflower seeds, flax seeds, hazelnuts, sea salt.  All organic.  No added sugar or oil.

Other reason NuttZo rocks:

  • Legumes + nuts and seeds = a complete protein (all your amino acids)
  • Provides 50% of your DV of ALA Omega 3 per serving (650 mg)
  • A 16-ounce jar of NuttZo Original provides 14 servings – less than $1 per serving of organic nut-nutrition

Receive up to 4 entries by:

  2. Tweet: You could say something like: I’ve entered to win a jar of nut butter in the @NuttZoCEO giveaway at @sprint2thetable http://wp.me/p16jDn-1hN  #giveaway
  3. Be Social: Facebook Like NuttZo, Pinterest Follow Me and/or Pin Something of Mine, Instagram Follow Me
  4. Comment: What is your favorite way to eat nut butter?

Please leave a *separate comment* for each entry!

Contest ends at 11:59pm EST on Tuesday, November 13th.  The winner will be announced on Wednesday, November 14th.

Just in case you need some ideas for using nut butter, here are my top 5:

(Note: many of these call for peanut butter or peanut flour, but you can sub in NuttZ or your favorite nut butter.)

1.  Nut Butter & Aggs

All-time favorite breakfast invention.

 2. Nut Butter-Baked Oatmeal

Perfect on a cold morning.  Like now.

3. Chili Nutty Tofu

Lauren can vouch for me – baked tofu is fantastic fluffy goodness.

4. Chocolate Zucchini Muffins

These are only 100 cals and have just 2g of sugar.  And you’d never know it.

5. Sweet Potato Nut Butter Ice Cream

To my fellow addicts: this is also amazing with pumpkin.

I get my new nutrition plan today… I’m at once relieved (this has been a junk food bender) and sad.

What’s the most #strangebutgood way you eat nut butter?

What is your favorite lame joke?

Learn Something Every Day

November 6, 2012 By Laura

You learn something new everyday.

Some days you learn lots of “somethings.”

#1 When it comes to hotels, trust but verify.  Especially when I comes to hotels.  Next time I choose.  And it will NOT be La Quinta.  That place is filthy.

#2 If someone wants to keep your bikini bottoms in place by sticking them to you skin with craft glue, say no.  I lost at least 2 layers of skin peeling my bottoms off.

At least I had my post-competition Nuttzo treat to make me feel better.

#3 Cupcakes and greasy cheese after following a very strict diet will give you a rumbly in your tumbly. #sorryimnotsorry

Thank you to Jenn Hendershott for having these backstage!

There are no pics of the nachos… but I ate 2 plates.  The first plate had tofu on it.  I also drank a beer.  Or two.   Thanks to my cousin for coming out to cheer me on a for sponsoring my post-competition treat-fest.

#4 Fake eyelashes feel like little aliens on your eyelids.

#5 Never say never.  Just 5 years ago if you had told me I’d be walking across a stage in stripper heels and a bikini doing a fitness competition… I would have laughed in your face.  This former beer-guzzling girl refused to wear a bikini for years (it took me until grad school to do so willingly).  Anything is possible.

#6 Keep it simple.  Sometimes there’s nothing better than toast with peanut butter and sliced banana for breakfast.  Don’t fight it.

#7 When the heavyweight winner stops to get 3 BBQ sandwiches and a milkshake on the way home, do not be surprised if he doesn’t offer you a bite.

I was perfectly happy with my Subway egg and cheese sandwich.  Mmmm… eggs…. add avocado, jalapenos, and tomato.

#8 There are no excuses.  The man in the picture below is in a wheelchair.  This is his second competition.  Any time I think about slacking or making an excuse, I’m going to remember him and the “sticktuitiveness” he displayed.

***

The professional pics aren’t up yet, but I’ll post them when I get them.  You guys are going to be SO sick of me…

Can you tolerate a sub-par hotel?  I’m a hotel snob… my idea of camping is the Holiday Inn. #sorryimnotsorry

What have you learned lately?

Healthy Traveling Food (BYOP)

October 25, 2012 By Laura

Operation Bring Your Own Protein (BYOP) is in full swing.

Keeping it clean while traveling is daunting.  Traveling while on a competition diet is downright terrifying.

When I realized I was going to have to fly to a client meeting at 3 weeks out from my competition, I immediately panicked started planning.  Eating 7 meals per day is hard enough without throwing airport security, conference rooms, and clients into the mix.

10 Healthy Travel Tips

I had to think about what I could transport, how I could keep it at a safe temperature (food poisoning isn’t the ideal way to cut pre-contest), and what I could do to avoid disrupting meetings when I needed to eat.

The packing process was simple.

I gathered all of the dry/room temperature foods and packed most of them in my suitcase.

The refrigerated stuff I measured out in advance and divided it into baggies.  This was my effort to avoid the last-minute panicked rush to get out the door.  All I needed to do was pull everything out and put it in a cooler when it came time to leave (the panicked rush still ensued… but food prep wasn’t the cause).

The following 8 meals were all eaten on the fly (tee hee).  I thought a meal-by-meal explanation would be easiest to follow, but there are bullets tips at the bottom if you don’t feel like reading the whole post (I know it’s long).

1. Airport Dinner

My flight was scheduled to depart at dinner time.  For this meal, I needed a protein, a carb, and 2 vegetable servings.  Of course, my flight was delayed… which was fine since it enabled me to spread out and eat dinner at the gate.

  • Chicken
  • Spinach salad (squirted with lime just before leaving the house)
  • Zucchini and celery sticks
  • Butternut squash cubes

2. Plane Snacks

No peanuts for me!  This meal required a protein and a vegetable.  I enjoyed homemade fro-yo.  The night before leaving, I mixed peanut flour, cinnamon, and a little Stevia into a single serving container of Greek yogurt.  Then I wrapped foil around it and stuck it in the freezer.

By the time I was ready for this snack, it had thawed just enough to be a fro-yo treat!  It was also dark on the plane – sorry for the fuzzy pic.

Added bonus: the frozen container helped keep my other items in my bag cool.

3. Dessert

I bought an orange, but spied apples in the hotel lobby and opted for that instead.  I made a peanut butter-chocolate protein “pudding” dip for my apple using protein powder, peanut flour, and water.  Stirred up in a hotel cup (I never use the glass cups – according to an ABC expose those are NOT properly cleaned).

4. Room Service Breakfast

The night before I filled out the breakfast order form and hung it on my door.  (Tip: time the delivery so that it also acts as wake up call.)  Breakfast consists of fruit, a protein, and a carb.  I request oatmeal prepared with water only (no milk, butter, or salt), fresh fruit, and coffee.  Pretty basic, right?

Then I request some special sides: ice water and tons of lemon (a cleansing way to start the day since I couldn’t bring my apple cider vinegar cocktail), and cinnamon.  Sometimes I ask for peanut butter too, but that wasn’t on the meal plan this week.

In my oatmeal went ground flax seed and protein powder brought from home, the hotel cinnamon, and blueberries from the fruit plate.  Brown is beautiful.

5. A Bathroom Snack

Meal 2 had to be eaten at an awkward time.  No one else in the meeting was eating, and I needed a protein and a fruit.  I packed my Curried Tuna Salad (sans apple) in a baggie.  It is delicious, but curry and tuna have a strong scent.

One of the benefits of being female is that I can bring my bag to the bathroom without anyone questioning me.  this is exactly what I did.  I camped out in the Ladies with my tuna and a fruit squeeze.  I promise it tasted better than it looks in that baggie.

6. Bringing In Lunch

Predictably, they ordered sandwiches for lunch.  I needed a protein, a carb, and a vegetable.  I can’t have “regular” bread or deli meat, so I brought my own carb and protein.  Curried chicken and butternut squash cubes.

I took a gamble that they would have vegetables and I was right.  Carrot sticks and celery, courtesy of the deli.

7. Taxi To-Go

My afternoon snack is a protein and a vegetable.  I had one last serving of chicken – this time it was an herbed flavor.  I saved celery to eat at the end of the trip, as it’s the most travel-friendly veggie.  It can take a lot of abuse!

8. Airplane Food Doesn’t Have to Suck

Well, it doesn’t suck when you bring your own.  I had a packet of low-sodium tuna, peanut flour, a seasoning packet, red pepper flakes (stolen from pizza day at my office), and previously frozen edamame.  In the airport I purchased a salad.  They didn’t have a plain one, so I had to throw out the deli meat.  I hate to waste, but what was I going to do with all that salty deli meat?

On the plane I assembled my meal.  From the flight attendant, I requested water to mix my peanut flour and seasoning.  I put the tuna and edamame on the salad, then drizzled my spicy peanut dressing on top.  Delicious and pretty!

The lady next to me was a sleep and didn’t even stir at the smell of tuna.  😉

See?  Not that hard, as long s you plan!

Here are the 10 things I keep in mind on every trip.

Strange But (Mostly) Good

October 12, 2012 By Laura

Strange is good, but not always.

I don’t know if I can get on board with this.  Maybe the Cinnamon & Sugar.  Pumpkin Pie Spice is really pushing it.  Certainly NOT the White Chocolate & Peppermint.

The Huffington Post agrees with my assessment.  They compared the Cinnamon & Sugar to Cinnamon Toast Crunch.  They couldn’t take more than a bit of the White Chocolate & Peppermint, calling it a “horrible abomination to humanity.”  These interesting chip flavors are set to debut in November.

Who am I to judge?  Some of you may think items on this Friday’s “Strange But Good” list are just as revolting.

1. Banana-Cottage Cheese Toast.  With Bacon.

I mixed up some no-salt cottage cheese, 1/2 a mashed banana, cinnamon, peanut flour, and just enough almond milk to keep it from being dry.  Then I slathered it on top of a toasted piece of P28 High Protein Bread… and topped it with a teeny bit of crumbled bacon.

Sweet, salty, creamy, and crunchy.  This breakfast was everything I could want.  Clearly this was before the great sodium cut.

Side note: one of my favorite ATL chefs, Kevin Gillespie, now has an online show.  Check out “The Bacon Show.”

2. Dilly Salmon and Raspberry Salad

After the blood orange and curried salmon salad success I posted on Wednesday, I decided to keep going with the salmon combos.  This salmon was pre-coked in dill and lemon, them I shredded it and mixed it with raspberries, fresh basil, and crushed Marcona almonds.  Ah-mazing.

That bite from the raspberries was perfect with the salmon and the crunch factor from the almond sent me over the edge.  A healthy fat win.

3. Vegan Softserve with Sriracha

While Allie was in town last weekend, we hit up Dough Bakery, one of my favorite vegan spots in Atlanta.  They offer vegan softserve cups, cones, or shakes. I opted for the cone with sprinkles… and then I eyed the Sriracha left over from our biscuits.

Sweet and spicy… I wanted it to be better than it was.  It needed another component.  Maybe if it had been a sriracha chocolate sauce?  Strange… still mostly good.

They also had zombie cupcakes.  I refrained, but I had to share this picture of Halloween strange But Good-ness:

4. Semi-Homemade Hotel Breakfast

PSA: The Homewood Suites in Ft. Worth, TX doesn’t serve oatmeal everyday.  They alternate them with grits (welcome to the South).

Luckily I had a BYOP (bring your own protein) back up plan.  I’m surprised the TSA didn’t take my bag with all the goodies I packed.

Into my bowl went:

  • 1/2 a mashed banana
  • Mini-box of Cheerios
  • 1 serving protein powder (pre-mixed with flax before I left)
  • Sugar-free syrup (first time I’ve seen that on a b’fast bar!)
  • Peanut butter

It wasn’t half bad!  I wish there was cinnamon, but the stuff they had was pre-mixed with sugar.  Remember to mash the banana first if you’re working with one bowl.  It gets messy if you try mashing with the cereal in the bowl (not that I would know…).

My awesome boss didn’t even blink an eye. 🙂

5. Vegan PB & Zeggs*

I know I posted this with the recipe on Wednesday, but I have to give it another shout out.  Since the loss of egg whites, I needed a new way to enjoy my PB& Jeggs creations.

Scrambled tofu is a great, low sodium alternative to eggs!  I am so in love with my Peanut Butter and Carrot scramble (PB& Ceggs)… naturally I had to try it with zucchini too.  New favorite Meal 6 is PB & Zeggs.

My only changes were to use grated zucchini in place of carrot and used almond extract in place of the maple.  Topped with extra cinnamon because I’m an addict it’s good for you.

*I suppose I should name this PB & Zofu… but that just doesn’t sound as good!

Bonus Round:

This is a bonus because I’m not telling you what it is until Monday!  Let’s just say it was delicious.  Any guesses?  2 hints: it was for Meal 2 on Thursday…. and it contained 20g of protein. 🙂

I’m thinking of hosting a bi-weekly (weekly?) “Strange But Good” round-up.  Would anyone be interested in participating?

Would you try those funky Pringles flavors?

What’s the strangest thing you’ve eaten this week?
