My city is shut down over the winter weather.  After the disaster 2 weeks ago, government leaders and business are taking no chances.  We shut down yesterday… when nothing happened but rain.

5 Things I Love

Last week was a long one.

 

Understatement of the year.

This past weekend I made sure to savour every blissful moment.  I took an extra moment to appreciate new product finds, watch my sister’s music video on repeat, and enjoy dinner at a special restaurant for no particular occasion.

In this month of love, I wanted to share a few apples of my eye with you guys! ♥

1. Jojoba Oil

It is saving my skin from winter.  My skin is dry in this crazy weather, yet it is also oily in spots and prone to breakouts.  Slathering it with oil was a terrifying thought… but I trusted my sister’s advice and gave it a shot.  Lo and behold, it works!  

I now use Jojoba oil as a nightly moisturizer, along with a bit of tea tree oil on any acne spots.  Both can be found at Whole Foods or most natural food stores.

Coca Cola’s Super Bowl + WIAW

Sometimes I am oblivious.

Ok, a lot of the time…

I’m not one to get too riled up over political issues.  At least not in the “the world is going to hell in a handbasket!” way.  I DO get fired up over discrimination and stupid political moves.  When Coca-Cola’s Super Bowl ad aired, it didn’t cross my mind that it was controversial.  I actually tweeted that it was too long and boring.  My attention span only wants short, funny ads, dammit!

So why were people fired up?  They thought it was offensive that “America the Beautiful” was sung in different languages, featured many cultures, and *gasp* included a gay couple.

Really?!  Last I checked the English language didn’t originate in America.  Next year they should air the song being sung in a Native American language with all dark-skinned people.

I’m proud of my hometown’s company for embracing our melting pot country.  Even if it was a boring commercial.


 

 

This WIAW was decidedly uncontroversial.  Someone at work even told me my fish smelled good.  And she was sincere!

Breakfast:

The usual apple cider morning cocktail was followed by a new-to-me oatmeal.  I got Purely Elizabeth Ancient Grain Oatmeal as part of a deal when I ordered more Nuttzo a couple of weeks ago.  I will definitely be buying more! I use it to make cinnamon-vanilla egg white oats and topped it with blueberries and Nuttzo.

Mid-Morning Snack:

This week I prepped a big batch of Chili Nutty Tofu.  I followed my original recipe, except I used sriracha and made a peanut flour sauce rather than the Valencia PB.  It was awesome with an Asian-inspired Napa cabbage, mushroom, and red bell pepper stir-fry (also a part of Sunday’s food prep).

Lunch:

Rotisserie chicken, carrots, and celery dressed with homemade BBQ sauce.  My “dessert” was a Korean sweet potato topped with cinnamon.  Pretty food tastes better, no?

Mid-Afternoon Snack:

Cod with a side of asparagus, zucchini, and parsley mixed with my wasabi-blue cheese dressing.

Dinner:

Trout has become a new staple thanks to SizzleFish.  I broiled it for 7 mins with pepper and lemon juice.  Meanwhile, I sautéed Napa cabbage and mushrooms in the juice from a jar of kimchi.  Quick and easy!

Of course, I needed something sweet, so I made a pre-dessert dessert of my favorite cocoa-roasted kabocha topped with peanut flour sauce (I get my peanut flour on iHerb – use discount code USO924 for $5-10 off your order) and cacao nibs.

It was so good that I didn’t remember a pic until I was almost done.  #sorryimnotsorry

Dessert:

I stopped on my way home from work for a little treat.  The Cookies & Cream Quest bar.  I can’t believe I had the restraint to wait until almost midnight to eat this.

Mine was broiled for about a minute with the intent of using it to scoop up a Zucchini Batter Protein bowl.  The bowl was forgotten based on the favor of the bar.  Best.  Flavor.  Yet.

Touring Atlanta + Sizzlefish Holiday Giveaway

Staying in town can feel like a vacation.

 

Not quiiiiite like going to Tahiti… but you know.

This weekend Sarah graced me with her presence.  She drove in Monday night from Birmingham and we spent the next 2.5 days touring rainy Atlanta.  It’s fun to entertain out-of-towners because you get to see your city in a whole new way!

Sarah arrived Friday afternoon with cookies in hand.  She shared the Vegan Carob Peach Fudge Cookies from her #strangebutgood post Friday.  They were the perfect appetizer before we headed to dinner.  We did so much I have to break it up into 2 posts.  Today is the “doing,” and the Atlanta food tour will happen Wednesday.

Saturday morning we hit my gym for a glute workout.  Check out this IG video for a taste of what we did.  Sarah hung like a champ!  She’s a natural.

After a solid hour of hard work, I told Sarah she was ready to compete… so we practiced a pose (this is why I don’t do bikini):

Naturally this had to be followed with a trip to Buford Highway to shop the massive international farmer’s market, where we met up with Sarena.  We were there for 2 hours… only a food-friend can understand how grocery shopping is an entertaining sightseeing activity.

I had told Sarah how cheap it is, but she was still shocked at how little her market finds were!  The new-to-me treats this time were a Ponkan orange and some sort of Korean puffed rice crackers.  I also found a giant bag of my favorite Chimes peanut butter ginger chews!

That market is massive – it’s like the size of Wal-Mart.  You can browse an entire aisle of Mexican hot sauces, or sample baklava at the Easter European bakery or peruse greens you’ve never heard of before. Watching my friend wander around filled with wonder at all the international delights was the best part of my weekend.

Sarah left yesterday.  After trying to convince her to stay, I sent her on her way in true blogger fashion – with a to-go container of protein oatmeal. More to come later in the week… I need to leave room to tell you about an amazing giveaway!

I have been obsessed with Sizzlefish ever since I had the opportunity to try a box via Fitfluential.  The fish is delicious – it surprised me how fresh it tastes despite being frozen.

Last week I pulled out a piece of the salmon to cook when I was short on groceries.  It thawed while I was at work, so all I had to do when I got home was squeeze some lemon juice, dill, and pepper on top before broiling it for 7 mins.  Easy dinner!

Insta-Mallow + WIAW

Instagram is everywhere.

 

No judgment – I’m 100% addicted.

There is a printing company in the UK, Boomf, that has developed an app allowing Instragrammers to print their images onto marshmallows.

So you can take a picture of your food, print it onto another food, and eat it.  Would that be considered leftovers?

The service isn’t available in the U.S. yet.  They’re trying to work out how to get it through customs.

Breakfast:

As always, the day began with my apple cider morning cocktail.  Still searching for a new amino powder I like…

Breakfast was a little random.  A delicious banana-peanut butter fluff wrap, heated in the microwave.  The peanut butter fluff was a mix of peanut flour (from iHerb – use discount code USO924 for $5-10 off your order!), vanilla protein powder, cinnamon, vanilla, and Stevia.  With a side of turkey because it was going to go bad.

Mid-Morning Snack:

I am oddly addicted to this Matcha bar found at Whole Foods.  It’s almost buttery with its healthy fats!  Really good pre-workout fuel with a side of almonds.

Lunch:

Shredded rotisserie chicken (naked from Whole Paycheck) mixed with kale and a really random “dressing.”  It was the end of a cottage cheese container, mashed avocado, nutritional yeast, apple cider vinegar, cumin, smoked paprika, garlic power, and pepper.  I mixed it up the night before and used half here and half in the next snack.

I discovered the toaster at work, so I’ve been loving hot  Ezekial sesame toast.  Today’s was slathered my favorite Roots spinach hummus (also a Whole Foods find).

 

Mid-Afternoon Snack:

The other half of the afore-mentioned cottage cheese mix was used in a turkey salad with broccoli slaw.  I’m pretty surprised and how good the cottage cheese mix was, now that I think about it. I wish we had a toaster oven at work so I could crisp it up…

And then I had a pity party.  I’m getting a cold.  Extra water, green tea… and a Snickers should fix it, right?

Dinner:

Dinner was rotisserie chicken tossed with BBQ sauce, with a side of roasted mushrooms and crisped kale.

I turned my roasted buttercup squash into dessert, tossing it in a sauce of peanut flour, cinnamon, Stevia, and almond milk.  And chocolate chips.

Dessert:

Pumpkin-Zucchini Bread Batter was my midnight snack.  It was another “use all the foods” creation that turned out better than expected!  I love using protein powder in these – it really lends to the batter consistency.

  • 1/2 C shredded zucchini
  • 1/2 C Greek yogurt
  • 1/4 C Pumpkin purée
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 scoop vanilla protein powder (I use Growing Naturals rice protein)

 

Mix everything together and top as desired.  I went with a cocoa powder sauce, popcorn, and cacao nibs.

Competition Weekend Through an iPhone Lens

I don’t even bring a camera when I travel anymore.

When I got my first smart phone, it changed my world.  I’ve never liked having to carry multiple devices or go to more than one source for tasks.

Verizon offered me the chance to upgrade from my iPhone 5 to a 5s and I pounced on the opportunity.  From the solid, light-weight of the metal-casing to the fingerprint-reading lock, I am impressed.  I also love the new iOS7 system.  It offers iTunes Radio, which is like Pandora but better because you can tag songs as favorites to remember to purchase later.  I’ve wished for this feature on the radio SO many times!

The light weight and the radio features allow me to travel light on a plane or the gym – just grab the phone and my in-flight entertainment or energy-inducing jams are there.  I love being able shake up my music songs – my playlist was getting OLD after all this competition training.

Since I spent the weekend with Heather in Colorado for our competition, I joined her for a final workout.  Radio up and headphones in, I killed the last back/tri workout I’ll do for 2 weeks (it’s REST time!).  It was SO much fun to be able to do it with a friend, and to shamelessly ask gym employees to take iPhone pics for us.

Best of all is the super-fast Verizon 4G LTE service.  I’m extremely impatient, so being able to over-share instantaneously via Instagram, Facebook, and Twitter is a must.  I did just that alllll weekend long from Colorado!

 

I’m drafting this on a flight home and the internet is painfully slow, so the full recap will have to wait.  In the meantime, here’s the iPhone-powered Cliff’s Notes:

Heather and I didn’t get top 5, but we had a blast.  AND we got to cheer Lisa, who placed 4th in Bikini Class C.

We celebrated in style at one of Denver’s best restaurants, Fruition.  Kait joined us too – it was so great to meet her for the first time.  I ordered pasta carbonara with hand-made cavatalli, pork belly and a 6 minute egg (I ordered that solely for the #yolkporn) and duck confit pierogi with caramelized brussels, kumquat marmalade, and roasted apple pan jus.

The food was great, the service was perfect, and the company couldn’t have been better… but I’m still amazed I didn’t fall asleep in my (unpictured) dessert.

Sunday was a beautiful morning – not a cloud in the sky!  Heather, Kirk (her husband) and I slept in and headed out for coffee and a hike.

We headed back to meet Lauren and Greg (her husband) for brunch.  We sipped on a Kirk-and-Heather whiskey barrel-aged homebrew (out-of-this-world good!) and shoveled a cheese plate in our mouths while Kirk prepared the meal  The smoked salmon eggs benedict was one of the best I’ve had!

I’m sad to leave, but made a ton of good memories… and rekindled my desire to MOVE to Denver!  It was all pretty marvelous.

Mocha Mint Protein Muffins + Giveaway

I swear I didn’t plan this.

This weekend had an M theme, which happens to work really well for Katie’s Marvelous Monday link up.  See what I did there? 😉

1. Meringues

My company is a cloud-based technology. Rather than handing out boring collateral like pens at the executive meeting, I ordered cloud-like meringue cookies!  Dyed blue and stuffed in pumpkins for Halloween.

2. Muscles

Speaking of 2 weeks to go, I had my second to last posting practice with my trainer before my competitions!  I have never loved posing, but I’m learning to look forward these Saturday sessions – I get to spend the day posing and training with some of the most inspiring competitors around.

This Saturday’s session made me more excited than ever for these next competitions, and for the next year where I’m 100% committed to hardcore BUILDING.  I love lifting.

3. Mom

This weekend was my mom’s birthday.  She’s turning 29, once again. 😉

I was really excited to have her over for brunch.  She opened presents  and I made her my jicama nachos with shrimp, pico, yellow tomato, and #yolkporn.  She save this #strangebutgood creation two thumbs up, which means the world since she is the one I have to thank for my love of food and creating in the kitchen.

4. Muffins

Not just any muffins.  I accidentally made Mocha Mint Protein Muffins.

These were going to be a version of my coffee pancakes.  I accidentally added too much egg, so I decided to bake them instead. This is what a Thin Mint would taste like as a muffin.  Talk about an awesome mistake!

I used Dunkin Donuts’ seasonal Mocha Mint coffee, but you could use any flavor and add extracts.  I added peppermint extract because the DD coffee isn’t actually very mint-y.

Mocha Mint Muffins

  • 2 T oats
  • 1 T coconut flour
  • 1 T (10g) chocolate protein powder
  • 1 tsp chia seeds
  • 1/2 tsp cinnamon
  • 1/4 tsp no-salt baking powder
  • 1/4 C egg whites
  • 1/4 cup brewed coffee (I used mocha mint)
  • 1/4 tsp peppermint extract
  • 6-8 drops vanilla liquid stevia
  • Optional: chocolate chips, cocoa powder, nuts

In a small bowl, mix dry ingredients. Add wet ingredients and stir to combine.

Pour into prepared muffin tins and bake ~25 mins.

Makes 2 muffins (or 3 squares in my slightly smaller silicone mold).

Note: I learned that this recipe can be doubled when I made more to have for breakfast this coming week.

This mistake was even sweeter because it gave me a recipe to link up to Heather’s MMAZ.  She told me seeds could count as nuts.

5. Munchies

It’s Halloween.  You have candy coming out the you-know-what.

Just in case you want to give your blood sugar a break, I have a giveaway for one of my favorite bars.  One of you will win a whole box of thinkThin High Protein Bars.

Normally a “thin” bar wouldn’t appeal to me; however, my dad actually got me into these.  When he was getting chemo, all he wanted where the chocolate fudge bars.  Random craving, right?

I came to love them.  The 20g protein is perfect for a quick fix post-workout or on the run.  It keeps you full, gives you a pop of energy, and has 0g of sugar.  They’re also gluten-free!

My favorites right now are the Cookies ‘n Cream and the Chocolate Toffee Nut, but you can choose your own!
