Kabocha Bacon Drop Biscuits [Recipe]

May 1, 2015 By Laura

Kabocha and bacon are two of my favorite things.

Vegas and chocolate are also on that list.

Speaking of Vegas, these were Vegas-approved!  I always consider that an accomplishment – my pasta-loving lady gives me the side-eye if I try to get *too* healthy on her.  However, She can always be won over with bacon.

These muffins were inspired by the bacon grease I had leftover from breakfast at this past weekend.  I always save it for cooking; you can use it in place of butter to grease a pan.  It may sound strange, but why not use bacon grease in place of butter in baked goods too?  It really is good!

Spring into Strange (But Good)

April 17, 2015 By Laura

I always look forward to spring.

Except the pollen.  Who knew San Diego had pollen?!

Spring food is the best.  Don’t get me wrong, I love a roasted winter squash and the orange glow that comes with it.  The lighter, fresh spring fare has my heart though.

Today’s #strangebutgood is a round up of some of my favorite spring recipes.  Some stranger than others.  All good.  In my not-so-humble opinion.

Grand Marnier Cranberry Cookies [Recipe]

April 10, 2015 By Laura

One of my favorite parts about living in California is the food.

My inner fat kid is in heaven.

Aside from all of the restaurants we’ve been trying, I’ve also loved all the produce.  Citrus is amazing here!  These protein lemon squares didn’t last long in my kitchen… but the Gran Marnier Cranberry Cookies I’m sharing today disappeared almost immediately!

If you like a soft, doughy cookie, these Gran Marnier Cranberry Cookies will be your favorite too!…

The One Where the Oven Caught Fire

April 6, 2015 By Laura

There’s never a dull moment for us.

Thankfully more often than not it’s in a fun way.

I was going to write an awesome post today about some cookies.  Then the oven caught fire.

Protein Lemon Squares with Cheesecake Frosting [Recipe]

April 3, 2015 By Laura

Lemon squares are a totally normal thing.

Until I get ahold of them.

Vegas and I absconded from our citrus-picking adventure last weekend with a few samples.  Lemons, oranges, and sweet lemons.  Yes, sweet lemons are a thing.  No, it’s not just a Meyer lemon.  They’re so sweet you can sit down and eat a whole one!  Strange and incredibly good.  The bright citrus flavor is perfect for spring.

I immediately wanted to bake a treat using the sweet lemons.  If you don’t have sweet lemons, simply add more sugar (think lemonade).  Also of note is the coconut flour.  It makes these incredibly moist (that’s right – I said it); reminiscent of lemon bars.

Oatmeal Jam Cookies [Recipe]

February 27, 2015 By Laura

The fun part about moving is using all the baking supplies.

Flour, and sugar, and buttah…. oh my!

I made Cat’s browned butter cookies for the gym crew.  Then I did the Fudgy Brownies that Juli linked up to last week’s #strangebutgood to have as road snacks for Vegas and me.  For ease, I made them as peanut flour-dusted balls (and because balls).

Next up is my own concoction – Oatmeal Jam Cookies.  Jam may sound strange… but – in fitting with the Friday theme – it’s good!*

*Don’t take my word for it – my boss said it’s one of the more delicious things I’ve ever brought in to work.  The he asked if I used “real” butter.

Strange But Red Velvet [Recipes]

February 13, 2015 By Laura

Red Velvet isn’t so strange.

Until I get a hold of it.

I’ve always been a fan of red velvet, but I went on a bender when I remembered it’s Vegas’ favorite.  Of course, I couldn’t just do it the normal way (though I did once win a cake baking contest with my great grandmother’s “normal” recipe).  I made it healthier and used beets.  A little strange perhaps, but good!

In honor of Valentine’s Day, I am doing the obligatory red post.  Like I apparently do every year.*  But these red velvet treats won’t leave you so full that you won’t want to participate in and romantic activities.  Who am I not to follow good advice?

*One day I’ll be more original with V-Day food.  This year I’m being original by actually having a Valentine. 🙂

Spiced Protein Fiber Bars [Gluten-Free Recipe]

February 6, 2015 By Laura

It’s strange to admit, but we all like to be regular.

I mean that in the most TMI way possible.

Fiber.  Are you thinking what I’m thinking?

Fiber helps you poop.  It’s strange to admit to in public, but being regular is nothing but good.  These Spiced Protein Fiber Bars are loaded with fiber, which helps you stay regular, which is good. #strangebutgood
