I have a visitor!!!

No, I don’t mean Aunt Ruby.

Lucie arrived late Tuesday night to stay with us for the holidays.  I’m actually writing this in advance for a change… it’s Wednesday at 3pm and jet-lagged Luce is passed out snoring.  I am so excited she’s here.  We’ve got to spend her birthday together this year, now we get Christmas and New Years!  Please someone hire her in the States so she can stay…

Peanut Butter Flax Protein Pancakes #Recipe + Fit Body Bakery #Giveaway!

We’re rivaling a certain international pancake house this week.

Do pancakes ever really get old?

We got back in town from the softball tournament late Sunday and two days later I STILL hadn’t been to the grocery store.  No eggs, no milk, no bacon (just a well… apparently that causes cancer now) in the house.

Thanks to Fit Body Bakery and Fit Approach, Vegas and I had plenty of Power Up Pancake Mix to sustain us.  You’re supposed to simply add eggs and water… but seeing as how we had no eggs, I made a flax egg.  It worked like a charm!

Sticky Toffee Rum Balls [Recipe]

I hate to waste food.

Especially dessert.

While that Sticky Toffee Stout Pudding I posted last week was fantastic, it made a lot for two people to eat.  I couldn’t imagine letting it go to waste, so I starting thinking of alternate uses.

Leave it to me to reach the conclusion that I should add more booze and make it into balls.  Strange but good Sticky Toffee Rum Balls!

Rainbow Layer Cake [Recipe]

It’s my birthday week!!!

So I made myself a cake.

Actually, I made this cake on the 4th of July… but I consider the whole month my birthday.  Therefore, this was a marriage equality-4th of July-birthday cake.

Regardless of the occasion, there’s no better show-stopper than cutting into this Rainbow Layer Cake at a party and revealing the vivid layers of color.

Rainbow Layer Cake - it takes some time to make, but I promise the end product is well worth it. Plus I have a few tricks to make it easier!

Sticky Toffee Stout Pudding [Recipe]

Occasionally I have a good idea that just keeps on giving.

And occasionally I take it too far an have a disaster.

On this occasion I’d set out to bake with a peanut butter stout I’d gotten from Belching Beaver.  You might remember this Peanut Butter Stout Caramel Corn.

After making the corn, I still had a good amount left in that stout bottle.  The perfect opportunity to create something strange, but decadently good.  Particularly something that I could top with said caramel corn.

This 4th of July I have no clue what we will do… it’s my first not in Atlanta.  Usually I run the Peachtree Road Race… maybe I’ll run my own 10K?  Or maybe I’ll just have a marathon cooking session…
