Raw-ish Vegan Jerky + WIAW

All day yesterday I thought it was Monday.

Funny how now that it’s Wednesday, I’m feeling like Friday is not so far away.

This week has really been awesome –Β tons of cooking, which means I have LOTS to share with you. Β More to come!

For now, lets cheers to chalkboard wine glasses, kick-ass workouts, being half way to Friday, and my friend Jenn’sΒ What I Ate Wednesday.

Breakfast:

After last week’s hotelΒ oatmeal ick, this more than made up for it:

Overnight oats in an almond butter jar. Β Pure bliss.

  • Oatmeal
  • Unsweetened vanilla almond milk
  • Chia seeds
  • Pumpkin puree
  • Almond butter jar remnants
  • Cinnamon
  • Vanilla
  • 4-5 drops of vanilla liquid Stevia
  • A little TBA chocolate something crumbled in. πŸ™‚

Lunch:

Another bit of amazingness. Β Citrus ChickpeaΒ Cilantro Salad Β with carrots atop an eggplant patty.

Dinner:

You may be familiar with a little problem I have. Β When I go out I sometimes get so excited about the meal that I forget to take pics. Β This is all that remained of my post-workout dinner last night:

That WAS a side salad, 2 veggie tacos, a chips and salsa trio, and a Patron Silver margarita. Β Whoops.

More proof that Taqueria del Sol remains my favorite intown taco joint.

Snacks:

Continuing with last week’s blogger recipes, I tried Gena @ Choosing Raw’s Portabello Jerky. Β It was a fantastically salty, satisfyingly chewy afternoon snack. Β Seriously – Gena is a genius.

My raw-sih version of Gena’s raw jerky is at the bottom of this post!

Lucky me was asked to taste-test a new cookie recipe for Cookie Underground. Β I mentioned trying these veggie-based cookies at the Atlanta Underground Market here.

My test-kit included an original recipe and 4 alternatives for their Parsnip Vanilla flavor. Β In my mind there was a clear winner. Β Check them out on Facebook to read more!

Apparently I need to rename this blog dessert underground because my pre-workout snack was on of these vegan Granola Cookies:

At just 3g of sugarΒ andΒ over 1g of protein, can you blame me? Β P.S. They freeze perfectly.

Last, there was a vegan, gluten-free post-workout dessert.

I promise to share next week – I want to make one more batch to test with more soda. Β Let’s just say they are silky in texture, impossiblyΒ chocolate-y, and inspired by a Cookie Underground concept. πŸ˜‰


Raw-ish Portabello Jerky

  • 1 large Portabello mushroom
  • 1 tsp soy sauce
  • 1tsp apple cider vinegar
  • 1/2 tsp ancho chili powder
  • 3 drops liquid Stevia
  • 3-4 twist of freshly ground pepper

Mix all ingredients. Β Slice ‘shroom into 1/2 inch thick sticks and marinate overnight in refrigerator overnight.

Place on foil-lined baking sheet and cook in 170 degree oven* for ~3 hours.

*Note: Gena had a dehydrator – check out her instructions for raw jerky details. Β For those of us without… just set your oven at it’s lowest temp (mine is 170 degrees). Β It’s raw-ish. πŸ™‚

I’m really into vegan/low-sugar cooking and baking lately! Β It’s fun to try different style and I love feeling so clean.

    I want to be a cookie taste tester! And yes, Wednesday is definitely a relief that the weekend is coming. I think Tuesday is the worst day of all. At least on Monday, you are well-rested.

    Is the Underground Market this weekend or next? Do you want to go?

    I used to LOVE real jerky before I went vegan. The mushroom version sounds delicious and fun. I just got some chalkboard wineglasses I’m in love with, too (except mine look a little more like so: http://forgottenbeast.wordpress.com/2012/01/09/an-ode-to-chalkboard-glasses/ ).

        Nope, considered it, but those were a whopping $2.50 each, no way making them would have been any cheaper. Instead I went classy and Pier One ;D

    I haven’t tried vegan jerky, but that sounds intriguing and delicious πŸ™‚ Will have to try!
    Real jerky I like a lot if it’s not too salty.
    And no, no relief, because I’m fighting a fierce battle with radiation safety and will have a ~12 hour radioactive experiment tomorrow, provided my intimidation powers work on the ordering idiots.

    I never even considered the idea that you coud make jerky out of something besides meat! I’ve used my dehydrator to dry out some fruits but never anything like this. Thanks for sharing!

    I love Taqueria too! πŸ™‚ Jerky is too salty for me and makes me feel like I have a rock in my belly, but I’ve only had the “real” kind. Sometimes Wednesdays feel relieving, but usually I don’t get that feeling til Thursday.

    LOL, I almost never remember to take photos of restaurant meals. The vegan jerky is intriguing…portobellos are so meat-like, though, that I can see where that would work!

    Not going to lie, vegan jerky freaks me out a bit…. I guess for no particular reason! I used to love beef jerky when I was younger, but now I am not a fan!
    Your citrus chickpea salad looks so pretty and I am sure it was GOOD πŸ™‚

      It’s really not bad because it doesn’t try to be meat jerky… at least I don’t think it does. I never liked the real thing!

    Um, yes – please pass the jerky! Jerky was one of my favorite pre-vegan treats & I love trying new substitutes. I saw Gena’s recipe and hadn’t thought about making it in my oven (no dehydrator either) – glad to see that you did and it tasted good! I need to give that a try!

    And VERY cool that you are testing cookie underground’s treats! How did you get to do that?!

      I always try my oven to dehydrate – it (mostly) works, but I haven’t pushed it.

    I love the idea of making jerky from portabellas! Brilliant! I always put them in my roasted veggies and love when I overcook the batch. The mushrooms get all chewy, just like jerky… but I’ve never thought to just make it alone! Can’t wait to see what recipes you’ve been enjoying lately πŸ™‚
