Strange But Good: Peanut Butter Cake in a Squash

Cake can be an acceptable breakfast.

It’s cooked in a squash, so it’s practically a vegetable dish.

Microwaves are the greatest invention since sliced bread.  Or sliced squash?

The idea of a freshly baked breakfast was particularly appealing in Atlanta’s ice/snow disaster.  I was eyeing Kierston’s bites, but was having a hunger problem.  It takes too long to pre-heat the oven and wait for something to bake!

Thanks to my meal prep, I had half a butternut squash pre-roasted and ready to eat.  I whipped up my peanut flour cake batter and poured it in.  Less than 1 min in the microwave later, I had a fancy-looking cake for breakfast.  You could even make this quick-cake vegan with a flax egg!

Take a big bite.  The fluffy, warm peanut butter cake paired with the natural sweetness of the softened squash is fantastic.  You’ll be hard-pressed to figure out what to save for the last bite.

Peanut Butter Cake in a Squash

Peanut Butter Cake in a Squash

  • 2 T peanut flour*
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla
  • 2-3 drops liquid stevia
  • 2 T egg whites (or flax egg)
  • 1/2 small butternut squash, pre-roasted

Mix dry ingredients in a small bowl.  Add wet ingredients and stir to combine.  

Pour mixture in the “bowl” of the squash.  Microwave ~45 seconds.

Top as desired (I used sugar-free syrup and pomegranate arils).  Enjoy!

    I absolutely LOVE the combination! Guess I need to carry some spaghetti squash in my house! And I’ve only ever made a mug cake in the microwave that took 2 min to make. was divine. not healthy though. 😉

    Oh how i love microwave cakes!! The best part is watching them grow in the microwave. Can you believe I only work with one since a little more than a year?
    I once almost burned down our office when making microwave popcorn and then shied away from it for years, lol.

    okay, so sometimes i just steam everything in the microwave. Yep, too hot in TX to use the oven during summer. So, can i steam the squash there first too? Please say yes.

        You can! I linked to the micro instructions for a spaghetti squash on the gratin post the day before this post. you can also do it with a whole squash – just pop it in and go! It’s a good way to soften stubborn kabochas too. 😉

    Oh this sounds good! I haven’t roasted up squash in awhile, I was eating it all the time this fall. This sounds like it would be a perfect late afternoon snack. I often eat a big afternoon snack and then small dinner if dinner is after 10 on class nights.

    I eat kabocha with Peanutbutter – so this recipe of yours sounds pretty darn fantastic!
    Hope you were not caught in any of the 11+ hour commutes I have been hearing about. Snow is forcasted for us again this Friday – hope it doesn’t stick.

    Could you use Almond flour in lieu of peanut flour??

      Maybe… it would be a different texture, and you may need to cut back on the liquid since almond flour is not de-fatted and hold more moisture/oil.

    Dude, I would seriously die without my microwave! Screw all those micro-haters out there! Mug cakes are my jam! Favorite hot breakfast? The whole spread: eggs, biscuits, hashbrowns, and BACON! I’d say pancakes, but I take so long to take pictures that they’re almost always cold! Ha!
